Bright Futures We shine a light on one of Bunzl’s charity partners, Soldier On. Every year, an average of 6,000 Australian Defence Force (ADF) personnel leave their military service. The transition from military to civilian life can present significant challenges for our service men and women including loss of identity and purpose, career uncertainty, social isolation, mental health difficulties, trauma, and an increased risk of suicide. As Australia's only national fully integrated and holistic veteran support services provider, Soldier On offers mental health and wellbeing services, education programs, employment and transition support. Following recent events in Afghanistan, Soldier On has also extended these services to members of the Afghan Security Forces and those who have played key roles in the ADF’s responses to this conflict, including those who have supported our troops in Afghanistan, such as interpreters. “Many Afghan citizens have acted as key supporters and allies of our Australian forces in Afghanistan. These individuals face many of the

challenges that our Australian troops have faced, including mental health difficulties, career uncertainty and social isolation," says Soldier On CEO Ivan Slavich. "As we have done with our Australian troops, we must support our veteran community." Since its establishment in 2012, Soldier On has grown into Australia’s foremost support-services provider for serving and ex-serving members of the ADF and their families with support available in every state and territory across the country. Through the charity’s Pathways Program, thousands of veterans have been able to retrain, upskill, gain formal qualifications, and find meaningful long-term civilian employment. Soldier On is also helping many veterans and their families manage mental-health issues, using in-house evidence-based psychology treatments to tackle such concerns as PTSD and social anxiety, as well as feelings of loss of identity and purpose on leaving the ADF. The not-for-profit organisation hosts events and social activities across the country to encourage the veteran community to interact and connect with others who have served, or continue to serve, in the ADF, as well as Defence family members. A Greener Tomorrow A little help in understanding the different types of sustainable product and packaging alternatives. Paper, sugarcane, bamboo, bioplastic, rPET… when it comes to sustainable food packaging, there are more options than ever before. But for many businesses this can lead to choice overload – what are the differences and how do you know which one is right for your needs? Here’s a guide.

PAPER

Paper packaging, which for years has represented a viable substitute for plastic, is made from a renewable resource – trees. It’s widely recyclable and also compostable.

BAGASSE, BAMBOO AND BIOPLASTICS

Bagasse is sugarcane pulp – a by-product of sugarcane harvesting that can be moulded into packaging using heat and pressure. Bamboo is a natural, renewable resource that requires less water, pesticides and labour than harvesting wood (for paper). Bioplastics, meanwhile, are made from plant sources such as corn starch. These materials are compostable in industrial facilities under specific conditions and are made from renewable materials.

RECYCLED PET

Recycled polyethylene terephthalate, or rPET, is another fresh alternative that’s seen a surge in recent popularity when it comes to food packaging, as it’s made from recycled content and can be endlessly recycled. It’s also lightweight, strong and resealable.

MAKING A CHOICE

The most sustainable solution for your business may come down to what type of waste collection is available in your area. If you and your customers have access to organics waste collection, sugarcane plates and bowls may be the right option for you. On a Roll Every kitchen has it - but not all baking paper is created equal. If you work in a busy kitchen, it can be easy to take for granted the tools and accessories you use every day to perfect your job. TEQUILA SUNRISE

The perfect brunch cocktail, a fruity Tequila Sunrise not only tastes great but is perfectly Instagrammable, too.

INGREDIENTS 60ml tequila 120ml orange juice 15ml grenadine 1 orange slice (for garnish) 1 maraschino cherry (for garnish) Method Fill your glass with ice cubes and pour in your tequila and orange juice. Stir well. Slowly pour the grenadine around the inside edge of the glass. It will sink before gradually rising to mix with the other ingredients. Garnish with an orange slice and maraschino cherry before serving.

The Tequila Sour is a mashup of the classic Margarita and a Boston Sour, delivering a sweet-tart combo with a foamy top. INGREDIENTS 30ml tequila 2 tablespoons lemon juice 1 teaspoon caster sugar 3-4 ice cubes 1 orange or lemon slice 1 maraschino cherry Method Combine all the ingredients except the fruit slice and maraschino cherry into a cocktail shaker. Shake mixture vigorously for 15 seconds. Strain into your glass and garnish with the fruit and the maraschino cherry.

The Paloma is the most popular tequila-based cocktail in Mexico and a summer favourite. Refreshing and colourful, this is a perfect addition to any drinks menu. INGREDIENTS 30ml tequila Juice of half a ruby grapefruit 15ml agave syrup or sugar syrup 75ml soda water A dash of lime juice Salt (to garnish the glass) Method Shake the grapefruit juice, tequila and sugar syrup until well mixed. Rim your glass with lime juice and dip it in some salt, then fill with ice. Pour your well-mixed cocktail into your salted glass and top up with soda water.

Sometimes the best things are simple – this Margarita uses just three ingredients to let each flavour shine. INGREDIENTS 45ml tequila 30ml orange liqueur 15ml lime juice Kosher or flake salt for the glass Ice cubes Lime wedges (for garnish) Method Pour some salt into a wide bowl or small dish. Take a wedge of lime and generously rub it around the rim of your glass. Dip the rim into the salt. Place the tequila, orange liqueur and lime juice in a cocktail shaker filled with ice. Shake for 10 seconds and then strain into a cocktail glass. Garnish with a lime if desired.

n Australia and New Zealand, the growing consumer awareness surrounding sustainability has led to a market trend of purchasing products that reduce individual waste. ating food has always been a multisensory activity – from the way it looks and smells to the way it tastes. What does your role at Bunzl involve? I’m part of our Hospitality & Retail division working closely with some of our largest customers. I deal directly with head offices on strategic projects such as product rationalisation programs, innovative product changes, sustainable initiatives and contract compliance. There’s a big focus on sustainability at the moment, with some states legislating against single-use plastics, so I’ve been busy working with clients to ensure their sites are compliant with these changes. How has your previous experience been of benefit? I started my career at Bunzl 11 years ago as a Customer Service Representative in Brisbane, before transitioning into an Account Management role and later moving to Melbourne as National BDM. Working across many functions of the business has given me a great understanding of what goes on behind the scenes to achieve the great service we provide our customers daily. What’s the most interesting thing about your role? I love the diversity. I come across many changes and challenges that push me to think outside the box to come up with solutions – and I have the added benefit of being able to deal with so many great people. Tell us about one of your career highlights. Last year, CoVID-19 presented many challenges for the industry. Foodbuy is one of our largest hospitality customers whose supply chain was heavily impacted, so we worked to provide solutions and alternative products to ensure that their sites were not impacted, and more importantly that their staff were equipped with the right PPE. This was a great example of all our teams within Bunzl working together to support our customers. In 2021 we were recognised for the hard work and commitment throughout this unprecedented time and were awarded with a Partnership Award for 2020. Left to right. Andrew Brightmore This pilot-turned-executive has ensured many food services have stayed operational, even in times of crisis. As one of the leading lights of Compass Group Australia and the standalone procurement business Foodbuy, Andrew Brightmore is scaling the heights of his profession. Compass has more than 11,500 employees across the country, delivering food and support services to a range of industries, from mining and aged care to education and quarantine hotels. Foodbuy is the sourcing partner for Compass, and ensures the seamless running of supply chains up and down the country. As an executive director for both companies, Brightmore is a key figure in the Food and Hospitality Procurement industry. Perhaps becoming a high-flier was inevitable, as Brightmore first trained to be a pilot. Hailing from a family that for generations had deep connections with the UK’s Royal Air Force, he initially looked to join the “family business”. However, an opportunity to help establish Toyota’s first bases in the UK saw him leave the military to begin a career that would span numerous industries in 17 different countries, before landing in Australia 10 years ago. It was with Toyota that Brightmore got his first taste of procurement and

supply chain management – winding up with Compass in 2016 and leading Foodbuy since 2018. With Foodbuy, Brightmore has helped secure a wide range of clients who are now benefiting from the organisation’s supply chain network and expertise. “We have invested in this procurement function at a level not seen in many industries,” he says. “We’re a procurement organisation that has our own customers and clients, so we are very customer focused.” One of Foodbuy’s key supply partners is Bunzl, with whom Brightmore has spent a large amount of time establishing a partnership based on mutual trust and respect. “We have taken a long-term view and built a strategy that allows us to work together as two organisations for our customers,” he explains. And it is Foodbuy’s focus on people and values – under Brightmore’s stewardship – that has enabled the company and many of its clients to weather the storms thrown up by CoVID-19. Explains Brightmore: “We have over 5000 suppliers and over 200,000 products inside the Foodbuy business. Our job during CoVID has been to make sure not one single site has had to close, or the service has been negatively impacted because of the supply chain. “The ability to do that successfully is very much linked to the quality of relationships we have with our supply partners and our work with them over a number of years, not just the last five minutes. “We’re a hospitality business, so it’s always about relationships. The quality of the relationships comes from the quality of the people, and the quality of time you spend with each other, even when the subjects are difficult. “We focus on our people and the people in this organisation are absolutely amazing. I couldn’t thank or appreciate them enough.”
