Dear Premier Club Members, There’s so much happening at the Club these days – including many great new programs – that it can sometimes be overwhelming! To make sure our Members don’t miss any of our wonderful opportunities, we’ve created multiple ways to communicate with you. This issue includes an Artist in Residence profile, so you can get acquainted with one of the fascinating people who have been invited to share their talents at the Club. Profiled Artist in Residence Colin Hay, former front man for Men at Work, takes the stage for a concert at the Club on February 12. Colin and numerous other Artists in Residence will visit the Resort & Club throughout the year. Looking ahead to March, our Artists in Residence include the performers at our Rock ‘n’ Roll Lobsterbash and our big Billy Joel Tribute concert, so be sure to mark those events on your calendar. This month, we also have an Artist in Residence headliner for our highly-curated Corks & Conversation wine/ gourmet dinner series: celebrity chef Jason Santos. Jason has appeared on The Talk, The Today Show and The CBS Early Show, and was runner-up on Season 7 of Hell’s Kitchen. He’ll be heading up several events in early February, including an appetizer cooking demo and a romantic couples’ dinner with aphrodisiac and champagne pairings. Act quickly if you want to get in on any of these special events! In March, our Corks & Conversations experiences will introduce participating Members to Jankara (March 6) and Silver Oak Winery (March 12). We’ll soon be underway with our beach renourishment project, which will result in a widened coastline and an elevated beach experience. Members will be able to enjoy new beach chairs and umbrellas as well as new options for ordering food and beverages. This month, we wrap up our year-long 90th anniversary celebration with a story about the Senior Pastor at Boca’s Community Church, who spoke to me about his families lifelong experiences with the Boca Raton Resort & Club – from the time of his parents’ involvement with the Resort and friendship with founder Addison Mizner. The Mitchells have now been part of the Resort family for four generations! I’m sure many of our Members will relate to the Mitchell family’s story (see page 32). The Resort & Club has long been a much-loved venue for memorable family gatherings and milestone celebrations, and I hope that the Mitchells’ story will inspire many of you to make membership a multi-generational family tradition. Finally, I hope you and a loved one will celebrate Valentine’s Day at one of our many fine restaurants. And good luck to your Super Bowl pick!

The Boca Beach Club Introduces a Team with an Abundance of Good Taste Troy Bonghi, Boca Beach Club Executive Sous Chef Troy really has worked his way up the culinary ladder. He started working in the kitchen at a young age, washing dishes at a country club in Pennsylvania. After graduating from Indiana University of Pennsylvania for Culinary Arts in 2000, he joined the team here at the Resort & Club, where for 10 years he continued his climb. After a few years away, gaining valuable experience as executive chef at both the Shula Hotel in Miami Lakes and the Mardi Gras Casino in Hallandale Beach, he’s back and he’s excited about the opportunities at the Boca Beach Club. Troy and his wife live in Boynton Beach with their 8-year-old daughter.

Donna Wynter, SeaGrille Chef de Cuisine After attending the French Culinary institute in New York City, Donna landed a job at the famous Tavern on the Green Restaurant in Central Park. She went on to cook Italian cuisine at Toscana in the city’s distinctive Lipstick Building. Her next stop was Miami, where she worked as the chef de cuisine at the Biltmore Hotel’s Palme d’Or. “I like to work with very simple, fresh, good-quality ingredients,” she says. “And here at SeaGrille I have the opportunity to work with fresh-caught fish, right off the boats!” Gary Schenk, General Manager of SeaGrille and Ocean Bar When Gary was in college, pursuing a career as a director/writer, he took a job as a dishwasher and prep cook. As his Hollywood aspirations fell by the wayside, Gary fell in love with wine and decided to become a sommelier. “Just to learn more about wine, not as a career,” he says. “But the more I learned, the more I wanted to be involved.” Twenty-five years later, he’s still in the hospitality industry, enjoying a career he had never envisioned. “I love what I do,” Gary says. “And I’m really excited about the opportunity to get to know the Members. For me, this business is all about relationships.”

As with all fine cuisine, there is an art to preparing tempura. The use of cold water is essential in preparing the batter, which is mixed with chopsticks for only a few seconds. “Pinot Pioneer”

Rollin Soles

R

Rollin Soles is a believer. The co-founder of Argyle Winery has a passion for Oregon’s Willamette Valley. “I wish you could be here right now,” he said during a recent phone call from his home. “There’s ice in the trees and the air is just so pure, it’s flowing from the Columbia River gorge into the valley. Very cold air, but it’s just so fresh and bracing and delicious.” He’ll bring that imagery with him – as well as a wealth of knowledge and more than a few stories – when he heads south for this month’s Corks & Conversations event at the Resort & Club, scheduled for Tuesday, February 7 at the Marina. Resort & Club chefs, led by Chef Lee Sonsky, will craft a multiple-course meal with some of Argyle’s finest wines in mind. “I don’t really do any [wine] dinners anymore, so this is really a rare occasion,” Soles said. “And what’s fun about this dinner is there won’t be any clunkers. There’s not another wine maker up here who has Top 100 for sparkling, for white wine and for red wine, other than me. From one single small producer, you’re going to see extraordinary sparkling wine, chardonnay and pinot noir. That’s pretty exciting.” Argyle opened in 1987, as part of what Soles calls the second wave in the development of Oregon’s wine industry. “The first wave proved you could grow grapes and make some decent wine on occasion. The second wavers were the people who noticed,” he said. “What we brought was capital, wine experience, wine training and route to market.”

The Willamette Valley provided the rest. “The beauty of the soil and the cool temperate nature of the climate allow us to grow such a great diversity of fruits and nuts and vegetables. It’s extraordinary,” Soles said. “Our fruits, if you put them in a lineup of fruits from around the world, you’d be able to pick them out because we have such vibrancy and beautiful acidity here – natural acidity.” Eric Hammer, the Resort & Club’s beverage director, is also a fan of what is now the fourth largest wine producing region in the country. “The growing conditions in Oregon are very similar to that of France, where Champagne, Chardonnay and Pinot Noir come from,” he says. And those are the wines that Argyle – and now Roco, a winery Soles opened with his wife, Corby, in 2003 – produces. “There are American characteristics to the wine but the quality is on a level with some of the best houses in France.” The menu for the dinner will also have an American accent. When it comes to finding the right wine to pair with the very best the culinary team has to offer, Hammer says Argyle Winery was an easy choice. “American wines, with their New World sensibility, are the obvious choice to pair with an elevated yet all-American approach to food,” he explains. “When it comes to Argyle, they provide comfort in the glass while still demonstrating a level of elegance not seen in every wine.”

He may have come in second to a dog act in season 7 of America’s Got Talent, but standup comedian Tom Cotter is having the last laugh. His runner-up finish on the show was more than enough to catapult him into the comedic stratosphere.

Prime-time network television is a completely different beast, and it’s almost unfair with America’s Got Talent because it’s on during the summer. So the ratings are just through the roof. There’s no other vehicle for comedians to do during prime time except a sitcom to get that kind of exposure.” Cotter is not one to rest on his laurels. In the years since he became the first comedian to ever reach the AGT finals, he moved to New York City, filmed his very own Comedy Central special and was featured in the Miramax film Next Stop Wonderland. The first line in Colin Hay’s bio may always refer to his success as front man and guiding force behind ’80s pop sensation Men at Work, but a new generation of fans know him as a singer-songwriter. The frequent use of his music in TV and film – including hit shows such as Scrubs (on which he has made several cameo appearances) and Modern Family as well as the Grammywinning soundtrack to the indie film Garden State – has helped Hay reinvent himself as a solo artist. Whether they first knew him as a guy from “Down Under” or as the solo artist “Waiting for My Real Life to Begin,” audiences rave about Hay’s live shows. He has performed on The Tonight Show Starring Jimmy Fallon, Jimmy Kimmel Live! and ABC’s Greatest Hits, sharing the stage at various times with Of Monsters and Men, Choir Choir Choir! and Kings of Leon. He’s toured with Barenaked Ladies and the Violent Femmes. Fierce Mercy – Hay’s 13th solo release – is due out March 3. “It was a thrilling record to make,” he told BCL in a recent phone interview from his home in California. The CD is packed with songs animated by pensive, honest and impassioned lyrics. A sense of urgency runs through “The Last to Know.” “Come Tumblin Down” displays flourishes of Americana. Pop sensibilities infuse the ballad “A Thousand Million Reasons.”

In “I’m Going to Get You Stoned,” Hay draws on memories of the year 1967 – a year that “felt like heaven” – when, at age 14, he and his family moved from Scotland to Australia. “When you go to the other side of the world at that age, it’s like living in a kaleidoscope. There are so many new things to see,” he told us. “It did have kind of a heaven-like quality to it. Scotland’s very beautiful, but it’s quite a grey place for the most part. In Australia, you would go down and surf with your friends on, say, a Tuesday, you’d have this beach to yourself with the waves rolling in. It was like the world’s best kept secret.” Hay, who became a U.S. citizen last year, still visits Australia when he can. “I go back and just go for drives, different places – either with a friend or by myself,” he told us. “It’s still the same, relatively speaking.” When the road he’s on brings him to the Resort & Club on Sunday, February 12, Members can expect to hear a mix of new music and favorites from Hay’s days with Men at Work. “It’s like if you go to a party, you want to know if there will be people there you know or if it will just be a room full of strangers.” For this show, Hay said, “There will be strangers but there will be some friendly faces as well.”

This historic property has played a significant role not only in the life of the community but also in the lives of countless individuals who have walked its hallways, gazed out its windows and savored a meal or sipped a fine wine within its walls.

S

Sometimes the history of the Resort & Club has become entwined with the history of a whole family. Bill Mitchell, senior pastor at the Boca Raton Community Church, and his family are a prime example of the kind of relationships that are as much a part of our heritage as Addison Mizner’s iconic architecture. As Bill told Resort & Club President John Tolbert at a recent meeting of the Boca Raton Chamber of Commerce, his family’s ties to the property date back to some of its earliest days. His paternal grandparents, Floy and J.C. (Joe) Mitchell arrived in Boca in 1923. It was the height of the Florida land boom, a time when many people came to Florida from throughout the U.S. to make a new life. Within five years, the young couple survived a lack of indoor plumbing and a pair of hurricanes. And, Bill tells us, they knew the hotel’s founder, Addison Mizner, and Clarence Giest, one of its earliest owners. In the 1930s, J.C. Mitchell became active in local politics. He went on to serve as mayor of Boca Raton for 11 years. Bill’s mother’s family moved to Boca Raton in the early 1930s to run the Cabana Club. “My mother (now 83 years old) grew up in and around the Resort,” he says.

Thirty-five years ago, Bill followed in his parents’ footsteps. “When I began dating my future wife, Elizabeth, we had many dates at the Boca Resort,” he says. “Even now, from time to time, we spend an anniversary weekend at the hotel.” The family’s links to the Resort & Club now extend to a fourth generation. This past summer, Bill’s son Gregory and his fiancée, Kimberly, became engaged here.
