From the Editor... Welcome to October Edition LL&L Legends When you plan your holidays, be it on the road, on the water or overseas do you put as much time into your holiday health as you would working out outfits to pack, itinerary, planned stops, and boat and or car maintenance? My guess is most of you will say no. Truth is most of us probably go as far as doing the exact opposite. Holidays for most would be eating out, eating on the road, consuming a few beverages at “happy hour” and not doing any or very little exercise. We have an article in this month’s edition where we go over some basics of being prepared for your road trip and we mean preparing yourself through what you eat, keeping fluids up (and we mean water here), taking breaks etc. It is reported that an estimated 20-30% of all fatal crashes on our roads are caused by fatigue. As we all spend a lot of time utilising the roads, why not put your own travel health plan in place. While on this topic of travel safety, we have an awesome article, on pages 50 and 51 where one of our team took part in the towing course through Learn 2 Tow. This course was such an experience and our team member learnt so many important aspects and grew his confidence in towing so much. Dan had just purchased a camper trailer and with not much experience in towing and wanting to start taking his young family away camping more it was something he is very thankful he went and did. There are so many aspects to keep yourself and family safe when on holidays. What it means to me is the time has come to start prepping and planning our December

trip, organising Christmas plans and where to see in the New Year. So much planning comes into October for me however what I do love about what this brings is the anticipation and the excitement. Anticipation – the feeling of excitement, Excitement – the feeling of enthusiasm and eagerness These two feelings are so important and it is even more important to absorb them and enjoy them. We quite often over step them in our efforts to get organised and by being busy that we forget to actually talk about what we will love so much about the holiday. Talk to the kids, your partner your friends, whoever you are travelling with in the lead up and to look forward to something. Don’t get so busy in the lead up to your summer holiday and Christmas that you don’t take the deserved time to appreciate this time of year. As I said October for me flags this and I am guilty so guilty of this but not this year. This year, it is all about the lead up, the being in a moment, being content with that moment and enjoy the anticipation and excitement of what is ahead of me, while enjoying each day for what it is. Not needing to wish away the days to be on holidays again. Best thing we can teach our kids let our kids experience these feelings and emotions that are attached to preparing for these ventures and not to skip past them to get there. Caravan Industry Association of Australia recently conducted a Real Richness survey which found that the notion of ‘Happy Campers’ is actually based on some truth. With a panel of Australians covering both regular caravanners and campers and those who hadn’t camped within the last 20 years the results showed that the diverse range of people who enthusiastically choose to experience nature and enjoy Australia’s great outdoors are actually happier, and that getting outside helps them lead a more healthy, connected life.

While it seems pretty obvious for those already out enjoying the great outdoors, this information gathered on behalf of industry helps us to understand the trends and changing demographics of who is taking off camping or caravanning across Australia and what the benefits are. WHAT TO LOOK FOR

IN AN OFF ROAD CAMPER TRAILER Few things compare to hitting the road on a 4WD adventure, knowing that you’ve got everything you need (down to the kitchen sink) right there with you. Off-road camper trailers are similar to their on-road counterparts in many ways but have some key differences that enable them to travel over rough terrain. Korean Tacos GOSUN STOVE RECIPE - KOREAN TACO Sharing a meal with family & friends is a fundamental part of my life and Taco’s are one of my go to meals for entertaining guests. In both Korea & Mexico dining is a very important part of their culture, with many meals being served in a communal style setting. As you will learn I love the cuisine fusions & Korean vs Mexican is one of my favourites. We are so fortunate to be living in a time where cultures are colliding opening us to a world of food experimentation. These Korean Taco’s are a delicious combination of sweet & spicy Korean style chicken, grilled capsicum & onion, vibrant red cabbage, fresh coriander & topped with some spicy chipotle mayonnaise. 1. 1. Slice chicken breast into thin strips and add to a mixing bowl. Combine soy sauce, sesame oil, garlic, sriracha, mirin, salt & pepper into the bowl. Mix well & refrigerate for a minimum of 1 hour.

8 soft taco tortillas 2 chicken breasts 1/2 red capsicum 1/2 green capsicum 1 red onion 1/2 red cabbage 1 cup fresh coriander leaves 2 tbsp olive oil 2 tsp crushed garlic 3 tsp sriracha 2 tbsp mirin 2 tsp kosher salt 1 tsp pepper 1/4 cup soy sauce 1/4 cup brown sugar 1 cup chipotle mayonnaise

2. Slice capsicum & onion and combine with olive oil in a separate mixing bowl, season with salt.

4. Once you start to smell the aromas of the capsicum & onion this is a good time to pull it out, empty tray into a servicing bowl and cover with aluminium foil. 5. Add chicken to the the GoSun Stove tray and cook for 20-45 mins. Break a piece of chicken apart to check if it’s cooked (salmonella is not our friend). Remove & from tray & add to a serving bowl.
