roulade Meringue

Method

4 egg whites 200g caster sugar 1 tsp vanilla extract (oop) 1 tsp cornflour 1 tsp white wine vinegar

Preheat the oven to 160C/gas 2-3.

Cream 600ml labne (oop labne maker) 200g marscapone 1 tbsp icing sugar

Filling 400g mixed fresh berries 1 tbsp slivered roasted almonds or pistachios

Line a Swiss roll tin (approx 23 x 30 cm) with a large sheet of baking paper. Whisk the egg whites in electric mixer with a pinch of salt until they begin to firm. Add the caster sugar to the whisking whites in a slow steady stream, until you achieve a firm, glossy meringue. Add the vanilla extract, cornflour and white wine vinegar.

Spread the mixture into the lined tin and level with a palette knife. Bake for 20-25 mins until a crust forms and the meringues cooked through, but still soft to the touch. Leave to cool, then tip the cooled meringue on to a fresh piece of baking paper and peel off the lining paper. Whisk the marscapone and icing sugar until smooth and add the labne. Whisk until the mix holds its shape. Spread the mixture onto the meringue mix leaving a small border around the edges, reserving about 3 tablespoons. Scatter most of the berries over the mix and using the paper roll the meringue along its long edge until you get a log shape. Once transferred onto a large serving plate chill for at least 1 hour before serving. Then cover top of roulade with remaining cream mix, nuts and any other seasonal fruit.
