4 oz butter 3/4 cup sugar 1 teaspoon vanilla essence 2 eggs, beaten 2 cups SR flour pinch salt 2/3 cup milk

360ml cream 180ml milk 400g chocolate 2 whole eggs

Place patty cases in patty tins. Set oven to 190ยบC Cream butter. Gradually add sugar and beat until light and creamy.

Add vanilla. Add eggs gradually, and beat well after each addition. Sift flour and salt 3 times and fold lightly into creamed mixture alternately with milk to make a smooth dropping consistency.

Spoon into patty pans. Bake for approximately 15 minutes. Cool and ice. (left) A selection of our must haves for your kitchen: Italian pasta maker 79.95, Pizza Maker...cooks pizzas in around 5 minutes!

Base: Blind bake your sweet paste base at 170ยบC for approximately 10 minutes until base is cooked. Remove blind baking beans and set aside.

Filling: Bring cream and milk to the boil.

Remove from the heat and stir in the chocolate until all melted. Whisk in 2 eggs. Pour into your base and bake for approx. 30 minutes at 100ยบC. Remove and cool before eating.

Topping: Cover with fresh mixed berries.

Serve with Greek yoghurt, drained in Labna Maker....$29.95 (see page 48)

by Jordan Theodoros of Peel Street 1kg lamb mince 100 ml olive oil 1kg onions chopped finely diced 1kg red capsicum finely diced 1kg tomatoes, skinned and chopped 2 tablespoons ground cumin 1 tablespoon ground allspice 2 tablespoons ground coriander seed 1 bunch parsley 125gr melted butter 2 tblspoon tomato paste Fabulous generous sized wooden red pepper (cayenne) and salt antipasto platter 149.00

To Garnish: pine nuts, sliced red onion, yoghurt, fresh mint, sumac, chopped fresh tomato.

Heat a heavy based pan and heat the olive oil, then sear the lamb mince until it is lightly browned, remove from the pan. Heat the butter in the pan and sweat the onions and capsicums until soft. Add the lamb mince back along with the ground spices, salt, pepper, tomatoes, tomato paste and a pinch of cayenne. Cook until it is thick and rich. Finish with the chopped parsley.

To Serve: Grill some long strips of Turkish pita, and spoon over the lamb mince. Finish with some roasted pine nuts, chopped tomato,yogurt, sumac, red onion and fresh mint.
