hat a relaxing experience it was to sit in the Guitar Room at Chuck’s Seafood, enjoying a delightful meal and stimulating conversation. The walls are covered with photos and autographed musical instruments donated by past entertainers at Fort Pierce’s own Sunrise Theater. Charlie Daniels even signed a fiddle for the Angelos family a mere week before he passed. Notice the stars on the generous tabletop. They have been inlaid to recognize the celebrities who have actually dined at that exact spot. (With the likes of Kevin Costner, Shania Twain, The Beach Boys and many more). Think about reserving the room for your next special event. Truly, the energy in this cozy alcove is like the energy felt at a concert. Georgette Angelos celebrated her One Year anniversary of owning the Fort Pierce landmark this past April 19th. She eagerly stepped into the role after her father Peter Angelos’ retirement. And in typical Georgette style, she took off running. Recently, Peter circulated throughout the dining room, greeting patrons, and shaking hands. When one said “Oh, you’re Georgette’s dad”, he walked over to her beaming, slapped her on the back and said “It’s YOUR place now. I’m the Dad.” As hard as she has worked, she is the first to admit she could not have reached this milestone without the loyal support of her managers, and the whole teams’ commitment to the legacy of exclusively offering Quality with a View. Georgette Angelos’ inaugural project of opening the raw bar, the beautiful terrace with cornhole games and a music stage

is doing well. Music is now offered EVERY evening, not just the previous Thursday through Sunday schedule. Year Two will see the installation on the patio of an overhang, making outside dining available rain or shine. She envisions not only an elaborate trellis, creating an ecosystem for butterflies, but has already added a floating dock specifically for the locals, with dockside take-out available for your favorite Chuck’s specialty drinks and food To-Go. Notice the new drink menu, featuring Chuck’s Painkiller and Rum Buckets. I personally can highly recommend the appetizers of lobster bites and the Lobster/Crab Delight, with Uncle Nicky’s savory secret recipe calypso sauce (locals will remember Crazy Nick’s). Chuck’s is the only place in town with fresh grouper (which I had – lightly blackened – excellent) and the best stuffed lobster in season. In her own words, Georgette says “I did what I came to do – building off what was already good and making it better.” We agree. Now that Chuck’s ownership transition has stabilized, Georgette has the time and the energy to expand her community philanthropy efforts. She is putting together a fundraising gala with Lori Murphy of Rising Tides, a 501(c) (3) organization dedicated to quarterly fundraising events will continue for Rising Tides at Chuck’s, as the family passionately supports this environmental initiative.

er commitment to the Highwaymen Museum continues, and she is assisting in their upcoming Silent and Live fundraising Auction. The community has come forward with many, many donations. Tickets are reasonably priced but limited. “My main focus is to keep our little slice of paradise intact, for our children, the next generation, that will be taking care of the rest of us pretty soon. Making the world a better place.” Congratulations on your first anniversary, Georgette. You are indeed living your vision, constantly putting yourself out there for the community and for the children, the future generation of Fort Pierce. You are an ongoing inspiration.

It is critical, no matter your age, that you work with your circadian rhythm in order to have good health. Circadian rhythm is regulated by small nuclei in the middle of the brain that act as control centers. The circadian rhythm is a natural internal process that regulates the four systems of the human body and repeats every 24 hours. CareBag Inc. is an award-winning 501(c)(3) volunteer organization whose mission is to bring dignity to individuals in need and improve the lives of the homeless and marginalized through their mobile showers and mobile hygiene pantry. Since 2017 by giving viable solutions and utilizing outreach services in our community. Our Mobile shower program has provided over 1500 showers since its launch in 2019, and we acquired a new shower unit in 2020. In addition, we provide all our clients with new undergarments, toiletries, and towels. We launched our Mobile Hygiene Pantry in 2019, the first in Florida. The value that this brings to families to receive essential items such as soap, depends, toothpaste, and feminine product, which government assistance does not cover. In addition, we need to expand our van to a bigger unit as a Sprinter Van to accommodate more items and reach more individuals as our elderly shut in and many of our Veterans. COFP: The City of Fort Pierce has witnessed a lot of growth the past several years. What has been the most rewarding project you’ve had the privilege to work on and why? (SH): Fort Pierce is in the midst

of momentous transition, and I am extremely proud of the work we are doing to help propel the City forward. To me, it is not just a job, it is a chance to make an impact in the city that I love. I am working on several redevelopment projects that have the ability to transform our community with their economic impact and knowing that I am a part of this resurgence is exhilarating.

With many new projects planned or underway, it is important for us to have a strong vision for the future with a plan that is both comprehensive and relevant. The updated master plan will seek to create a clear vision for future development within the Central Business District and adopt an implementation strategy to guide (re)development efforts. We’re looking to foster sustainable growth while preserving and enhancing the City’s unique character. The slogan for the Downtown Master Plan is Charting our Course: Honoring our Past; Building our Future.

Bringing a Taste of Ft. Myers to the Treasure Coast

Baked Swordfish with Lemon Caper Butter Sauce

F

FROM THE KITCHEN OF CHEF MARK

t. Myers is a coastal city located on the west coast of Florida. We’re taking a fresh swordfish steak, adding salt & pepper, and marinating it in extra virgin olive oil, lemon juice, garlic, rosemary, and thyme. We’ll season it with a homemade blackening seasoning made from paprika, onion powder, garlic powder, thyme, oregano, and cayenne pepper. We’ll bake it in the oven and top it off with a sauce made from the marinade, capers, and butter. This steak from the sea with be served with sauteed spinach and black lentils. And why are we making this dish tonight? Well, we were in Ft. Myers Florida. Ft. Myers was the winter home of two notorious American inventors; Henry Ford and Thomas Edison. Their homes are still here today and visited by many tourists each year. Ft. Myers also has a rejuvenated downtown area only one block from the Caloosahatchee River, and with the abundance of fishing at the nearby marinas, the local restaurants have plenty of fresh fish and seafood. This week we went to two Ft. Myers hot spots; Oxbow located right on the river, and Izzies, located in the heart of downtown. Swordfish the first night and grouper on the second; both were good; but we had to choose one, so we’re going with the swordfish, which brings us to our dish tonight. OUR MISE EN PLACE IS The Fish 1 Fresh Swordfish Steak The Marinade A Few Tablespoons of Colavita Extra Virgin Olive Oil 1 Oz of Natalie’s Lemon Juice 2 Cloves of Chopped Garlic 2 Sprigs of Fresh Rosemary 2 Sprigs of Fresh Thyme ¼ Yellow Onion Chopped The Blackened Seasoning ¼ Teaspoon Each of Cayenne Pepper, Paprika, Onion Powder, Garlic Powder, Ground Oregano, and Ground Thyme 2 Tablespoons of Colavita Extra Virgin Olive Oil 2 Pieces of President Brand Unsalted Butter Salt & Pepper The Lentils 1 Cup of Black Lentils 2 Tablespoons of Olive Oil 2 Pieces of Butter ½ Cup of Diced Carrots ½ Cup of Diced Yellow Onion 2 Cloves of Chopped Garlic ¼ Teaspoon Each of Coriander, Cumin, Tumeric, & Black Pepper 2 Cups of Chicken Stock The Spinach 1 Small Bag of Fresh Spinach 1 Oz of Natalie’s Lemon Juice 2 Tablespoons of Colavita Olive Oil 1 Chopped Clove of Garlic Salt & Pepper ½ Cup of Chicken Stock For The Sauce We’ll use the onion, garlic and herbs from the marinade along with 2 Teaspoons of Capers 1 Oz of Natalie’s Lemon Juice ½ Cup of Chicken Stock

O

ur first step is to marinate the swordfish. In a bowl, combine a few tablespoons of olive oil, an ounce of lemon juice, two chopped cloves of garlic, some chopped onion, the rosemary and thyme. Add the swordfish steak to the bowl and coat it on all sides. Cover the bowl with plastic wrap and put it in the refrigerator for 20 minutes. Remove the bowl from the refrigerator and place the swordfish onto a plate. Place the bowl of marinade aside; we’ll use it later. Add salt & pepper, and the blackening seasoning. In a large pan, add olive oil and butter and turn the heat to medium high. Add the swordfish and cook for three minutes per side. Place the swordfish into aluminum foil, cover, and put into a 170-degree oven to keep warm. For the lentils, place a few pieces of butter and a few tablespoons of olive oil into a medium sized pot, bring the heat up to medium. Add the onions and carrots, and cook them for four minutes. Add a teaspoon of the chopped garlic and cook it for one minute. Add the lentils into the pot and stir them into the butter and oil thoroughly. Add the seasoning and stir it in well too. Add in the two cups of chicken stock, stir everything together well, and bring to a simmer. Cover and let the lentils cook for 10 minutes (or according to the package directions). For the spinach, add a few tablespoons of olive oil to a small pot and medium low heat, add the garlic and cook for one minute. Place the spinach into the pot, add the chicken stock, stir, and cook the spinach for a few minutes on low heat. Cover when done. For the sauce, add the bowl of marinade to the pan and turn the heat up to medium high. Deglaze the pan with a wooden spoon, and cook the marinated bits for about four minutes. Add in the capers and cook for another two minutes. Add the lemon juice and the chicken stock and bring to a simmer.
