Caring for Your Kidneys

E

ach day many things get our attention. Unfortunately kidney health is not one of them. In the United States as many as 9 in 10 adults with Chronic Kidney Disease (CKD) do not know they have it. This disease is easy to treat in early stages. I am hoping with more awareness we can detect any issues and make necessary changes. A body has two kidneys, each about the size of a fist, located on either side of the spine at the lowest level of the rib cage. Each kidney contains up to a million functioning units called nephrons. A nephron consists of a filtering unit of tiny blood vessels called a glomerulus attached to a tubule. When blood enters the glomerulus, it is filtered and the remaining fluid then passes along the tubule. In the tubule, chemicals and water are either added to or removed from this filtered fluid according to the body’s needs, the final product being the urine we excrete. The kidneys are powerful chemical factories that perform the following functions: • remove waste products from the body

ord is out that Chuck’s Seafood, that cornerstone of the Fort Pierce dining community, has changed owners. But before everyone gets all nervous and worried, let me tell you the rest of the story. It truly is exciting and upbeat. Chuck’s Seafood, on the Seaway Drive Circle of South Hutchinson Island, has been a fixture on the Treasure Coast for over 60 years, featuring a quirky charm and excellent food. Peter Angelos took over ownership from Chuck and Elodie Tabor in 1984. This past April Peter retired and his daughter Georgette assumed ownership. Georgette literally grew up in the restaurant. She remembers as a toddler taking naps on two barstools pushed together. Georgette Angelos returned from a successful film making career in L.A. to take on the challenge and in just a few short months, under difficult circumstances what with a pandemic, supply issues and rising costs, has done a fabulous job. She just added an outside covered patio area, with a full bar, an oyster bar, beautiful high top tables, a corn hole court and live music on the newly constructed stage. The nighttime views of the crystal clear water are breathtaking, as you can see from the picture. My dinner started with FRESH FLORIDA LOBSTER succulent Steamed Clams

and super fresh hush puppies. The entrée of Atlantic yellow fin tuna, sesame seed crusted, and parsley potatoes was unbelievably delicious. Dessert was a fabulous slice of authentic Florida key lime pie, made by Mike’s Pies in Tampa and is delivered fresh several times a week. The biggest treat of the evening was owner Georgette, so poised and mature. It was obvious she is well liked and respected by her staff, some of whom followed her from L.A. There is a genuine aura of kindness, teamwork and engaging happiness among them all. She knows how to run the family business the Old School way, to keep quality up and prices down. To quote Georgette, “They wanted music. I gave it to them. They wanted an outside bar. I gave it to them. But the food will always remain quality! I will never give less than that.” “Life in Paradise,” she continued, “can’t beat it, can’t mess it up.” And she won’t. eorgette plans to continue her father’s legacy of philanthropy in the Fort Pierce community. She just completed producing a film documentary for the new Highwaymen’s Museum off of Avenue D, dedicated to Jackie Canyon. Orange Pineapple Chicken on the Grill S pringtime in Florida! Perfect weather for grilling outside. Today we’re making Orange Pineapple Chicken; boneless skinless chicken breasts marinated in extra virgin olive oil, Natalie’s squeezed fresh orange juice, brown sugar, and spices, and charbroiled on the grill. Served with grilled skewers of colored bell peppers, red onions, and chunks of pineapple. This recipe ensures that your chicken will be tender, juicy, and bursting with flavor. Our Mise En Place & Recipe: CHICKEN AND MARINADE 3 boneless skinless chicken breasts 1 cup pineapple chunks 1 cup colored bell pepper chunks 1/2 cup extra virgin olive oil ¼ cup Natalie’s orange Juice ¼ cup dry marsala wine or sherry ¼ cup chopped red onion 3 Tbs soy sauce 2 Tbs balsamic vinegar 1 Tbs Worcestershire sauce 1 tsp each garlic and onion powder 1 tsp Italian seasoning 1/4 cup brown sugar 1 tsp each salt and pepper 4 sprigs of chopped cilantro FRUIT AND VEGE SKEWERS Pineapple Chunks Bell Pepper Chunks Red Onion Chunks THE SAUCE Chopped Onion (from the marinade) Chopped Cilantro (from the marinade) Pineapple Bits (a few from the marinade) 1 Cup Chicken Stock Two Tablespoons of Butter • Our first step is to get the marinade ready. In a large bowl pour in the olive oil, the orange juice, dry marsala wine, soy sauce, Worcestershire sauce, balsamic vinegar,

spices, brown sugar, garlic puree, chopped cilantro, and give everything a nice stir. Add in the chopped onions and get the chicken breast ready by poking holes in the breasts with a fork. Add the breasts to the marinade and stir them around so that they are completely coated. Add in the pineapple chunks next. This is optional; some people like their pineapple grilled plain. Cover the bowl with plastic wrap and put it in the refrigerator for at least five hours. Overnight would be even better. • Let’s gets our skewers ready. Add the pineapple, onion, and peppers alternating the colors. Time to get the chicken ready for the grill. Remove the marinated chicken from the fridge and put the breasts on a plate. We’ll make a sauce with the marinated onions and pineapple bits. Add a piece of butter to a pan and put the heat to medium. Using a slotted spoon, put the bits on onion, cilantro, and pineapple into the pan. Sautee it for about five to six minutes. Make a cup of chicken stock and pour it into the pan and bring the heat to medium high so that it will reduce by half. Turn off the heat and add in a chunk of cold butter and give it a stir. The sauce will thicken as it cools. • Let’s get the grill ready. We’ll turn our flames up to medium high. Place the marinated chicken breast onto the hot grill

and cook for six minutes. Flip the breast over and cook them for an additional six minutes. We’ll also add the skewers on to the grill. Now if you like your pineapple, onions, and peppers more charred and well done, you could have put the skewers on at the same time as the chicken earlier. • Once the chicken has reached an internal temperature of 165 degrees, remove the breasts from the grill and wrap them in aluminum foil to stay warm. While the chicken is resting, continue to cook the skewers until you reach the desired level of char. Then remove the skewers and put them onto a plate. • Back in the kitchen, begin to slice the chicken breast. Once the chicken breast is sliced, its time to plate our dish.

And there it is. Orange Pineapple Chicken on the Grill. Boneless skinless chicken breast marinated in olive oil, dry marsala wine, Natalie’s orange juice, brown sugar, and spices, charbroiled on a gas grill, topped with a sauce made from sauteed red onions, pineapple bits and cilantro, and plated with chargrilled skewers of pineapple, red onions, and colored bell peppers. Delicious!

The Path Forward for Non-Profits

BY ANTHONY MAYNARD Treasure Coast Communications & Marketing Inc / National Non-Profit Center Communication is priority he COVID-19 pandemic has created an evolving situation that has impacted non-profits, funders, and governmental leadership around the world and across the states. In such challenging times it can be difficult to know and understand the pathway forward for your non-profit whether you are a start-up or established organization. At the National Nonprofit Center, we are working hard to provide you with what we know about the path forward, and well as providing you with regular updates, information, and resources that nonprofits can use as guideposts during 2022. If you have scaled back or shut down during the pandemic, your priority in getting back up to speed in 2022 must be open lines of communication with your funders, staff, boards, volunteers, collaborators, and the community you serve. It is critical that you identify and share information and resources from credible sources, such as the Centers for Disease Control and Prevention as well as your local municipality. Your organization has to transparent about your decision-making, particularly if your organization provides emergency or life-saving services to your community but has had to scale back due to supply chain delays or shortages in staffing.

Non-profits should bear in mind that staff and volunteers will have different realities in their day-to-day personal lives, and some staff may require additional months of flexible work schedules. Work areas where people previously worked in close quarters have to be reorganized to provide adequate physical spacing. Your organization may also want to gauge lunch periods and breaks to minimize the numbers congregating in their break and lunchrooms.

The right time to return to a pre-COVID workplace? The answer to this question will vary from nonprofit to nonprofit, but whatever your organization’s purpose is should drive your decision making. Has the pandemic created circumstances that require you to now change your operations to accommodate your clients, partners, and personnel? And if it does, what additional support does your organization and to move forward safely? If you are reopening your doors, you’ll need to consider factors such as the size and capacity of your floorplan – for employees, clients, and visitors – in common spaces and at conference areas. Some of your timing will also depend on your geographic location, the spread of COVID-19 in your area, and any public health orders by your state and local government. You will need to consider not just the easiest ways to take action, but also ways that seek the highest effectiveness for what’s needed by your staff members and the people you serve who may be at higher risk of contracting the virus/developing severe complications. What are the changes your organizations may need to make? Each organization should be sure to have hand sanitizer, cleaning/disinfecting supplies, and personal protective equipment available for visitors and staff. While testing supplies are available it is advisable to have test kits in case of emergency. PPE tends to be some of the first items to sell out, so even as we hopefully move towards a reduction in cases and an end

Plead your case n both the state and federal levels, policymakers are making decisions that could impact your organization for years to come. Advocacy for your mission as a requirement for all nonprofit leadership. There are no unions in the nonprofit space to advocate on behalf of the organization. It is paramount that you plead the case for your organization’s mission and funding to state and federal stakeholders. Absent of advocacy from those occupying the nonprofit space, organizations would have to solely rely on the federal government. Therefore, it is key that your organization has a seat at the table as local, state, and federal leadership create policies that will dictate the protocols for nonprofits moving into the future.
