A NOTE FROM THE CEO It is the time of year again for you to renew or collect your new multiyear 16s membership card.

Being our Centenary year, we felt the inclusion of a tribute to our beginnings was appropriate for the design of the 2022 Membership card and as such it carries a historical image of the Clubs first race, held on October 7 1922. More detail around this image and about this race can be found further into this magazine.

Summer is in full swing and now is a perfect time to dine and relax at your Club. With a broad range of menu offerings and plenty of space, we will always have something for every taste. The new year sees the extension of the dine and discover vouchers. We encourage the redemption of these throughout the Club’s dining options as well as towards tickets to one of our many concerts and shows currently scheduled for 2022

Aligned with this years renewal period, we have incorporated two exciting memberships promotions totalling $17,000 in value. The first announced on March 31 is not one but two Hamilton Island getaways. Each including accommodation, flights and $1000 in spending money. In addition, our “One Hundred Cash Draw” that will be held April 4, will provide 100 Members a share in $10,000 cash.

Eligibility for both these promotions is by simply swiping your 2022 16s card at one of our Ascent Rewards Kiosks and updating your details. More information can be found on pages 10 and 11 . If you prefer to avoid the queues there is always the option of renewing online.

Although there have been recent setbacks in NSW due to COVID-19 outbreaks, lockdowns and restrictions over the past six months, we have been resourceful and agile understanding that our community needs our support more than ever.

We proudly awarded $20,000 to our member nominated Helping Hands recipients on page 26, and donated weekly meals to the tireless staff at the Belmont Vaccination Hub throughout lockdown and beyond, on page 22.

We have been thrilled that our recent sailing calendar has been brimming with events. Details on pages 6 and 9 outline the specifics of the upcoming Byron Bay Premium Lager Sprint Series, our own club sailing updates, information about our newly established kids learn to sail “Tackers” program and the results from the recent 2021 – 2022 Australian 13ft & 16ft Skiff Championships hosted here at Belmont 16s.

Lastly and by no means least this Member’s Magazine shares more exciting information relating to the next steps of the planned alterations to your Club. Alongside new design images on page 12, you will also read about how we plan to capture the transition of the Club’s profile.

An Update from

The 2021 – 2022 Red pumps Australian 13ft & 16ft Skiff Championships held here on Belmont Bay in early January was an exciting start to 2022, proving to be a thrilling event that saw local talent compete closely with the calibre of SailGP stars and Olympians alike. With eight complete heats and one race abandoned in the ninth in just 6 days of sailing, early favourite Ronstan secured the regatta’s first place, followed by IMEI in second with Moonen Yachts securing third place. The 2021-22 Flying 11 Nationals were this year held at Gosford Sailing Club. Congratulations goes to “Cheeky” sailed by Marshall Day and Leo Pirret, the 2021- 22 Flying 11 Australian Champions. Additional recognition must go to Marshall who also won the First Year Junior Skipper and First Year Skipper. Well deserved felicitations to “Giggle & Hoot” sailed by Keisha Day and Amy Ellis, the 2021-22 all Girl Flying 11 Australian Champion.“Team Belmont” as a whole sailed exceptionally well in light, tricky conditions.

Looking forward, Belmont 16s is getting ready to host the annual Byron Bay Premium Lager Australian 16ft Skiff Sprint Series on Saturday 5 February. After a successful Australian Championships we look forward to seeing all the Skiffs battle it out once again on Belmont Bay. Come and enjoy the racing from the Club’s deck.

Last year’s Champions East Coast Marine & Sail will be looking to defend their title!

TACKERS: KIDS LEARN TO SAIL Our January Summer Tackers was a sell out and a success! With those new to the sport enjoying a week of learning, fun, fitness, and no doubt new friendships. We still have spaces for our term one tackers starting Wednesday afternoons February 2, that will continue for 10 weeks. We have just released Tackers Stage 2 dates and will be taking registrations for those who have ideally completed Tackers 1 already.

It is with great pleasure that we officially announce an overdue congratulations to Nadine Steenson on her appointment late last year to Belmont 16s Sailing Manager. Nadine has been engrained in our sailing community since she herself was a junior sailor.

We are proud and excited that she is now leading “Team Belmont” with expertise and passion into our centennial year!

Don’t miss our annual Pirate Race on February 26. We encourage all junior sailors to grab their pirate costumes, water pistols and sail out for an epic treasure hunt! CENTENARY PROJECT

FORGES IT’S TIMELINE The Best gift that we can provide our Members to celebrate their Clubs centenary is to provide them with modern and sophisticated facilities that meet their needs and showcase our magnificent location” - Scott Williams After years of planning, we eagerly await the commencement of the Centenary Project that will transform Belmont 16s as we celebrate 100 years of sailing on Belmont Bay in 2022. To minimise disruption, this milestone redevelopment will be undertaken in various stages with new facilities gradually coming online throughout 2022 and 2023.

A selection of specialist builders are currently poring through the design documentation to enable them to submit a tender price to undertake this project with work to commence over the next few months. The $23 Million Centenary Project is expected to transition through five major stages, ultimately delivering an all-inclusive dining, event,

and entertainment precinct unlike any other in our region.

Upgrades of the Clubs existing five dining outlets are anticipated to be included in the initial phases of the redesign. The reconfiguration of the first-floor function facilities is designed for sophisticated waterfront events and weddings and will be developed in the secondary stages in conjunction with the addition of a unique roof top bar. Furthermore, a contemporary dining space will offer a final yet highly anticipated expansion point.

2022 Membership Card

holds our history THE SIGNIFICANCE OF OUR CENTENARY YEAR WAS NOT LOST WHEN SELECTING THE ANNUAL MEMBERSHIP CARD DESIGN. The chosen image, unanimously voted for by The Board depicts three of the seven vessels that entered the very first Club race.

The Opening Day Race held on Saturday 7 October 1922, was documented as having a total of seven 16ft Skiffs. The Starter commenced the race on time, from the west end of Macquarie Street Belmont with the course heading south towards Marks Point.

Crossing the finish line first was “Clift” skippered

by Jim Parker, followed by “Aeneas” just 2.5 minutes later. Interestingly while all Skiffs used their “extra’s” ( i.e Spinnaker or Ballooner ) third place was secured by “Linnet” who’s spinnaker was carried away, leaving her to rely on only her jib for much of the race.

VACCINATION HUB With the snap state-wide Covid lockdown announced on August 5 2021, Belmont 16s, like many other hospitality venues abruptly closed for trade for the second time in as many years.

Left with uncertainty surrounding what the coming weeks and months would hold for our Club & community our established “Covid shut down strategy” kicked into gear. Initial actions encompassed staff, supplier, member communication and how to best utilise our already delivered perishable stock in a way that aligns with our Club’s ethos.

Having held ongoing relationships with local food rescue groups for years, donating our raw produce was an obvious and immediate solution.

However, it was felt there might be others in the community who could also benefit from the donation of not just food, but our teams to create mindful meals while in lockdown.

It became clear in the days following, that vaccination milestones were pinned as crucial steps to the restoration of social normalcy. The nearby Belmont vaccination hub was challenged with delivering the lion share of vaccination to the broader Hunter Valley Region by aiming to inject up to 20,000 people a week in a never-before-

seen mass vaccination environment. It was easy to recognise that these target pressures would weigh on the frontline health care workers. The kitchen team admitted that they enjoyed the weekly creative outlet during this time as well, cooking up authentic zesty and sweet Thai soups and traditional veggie packed cottage pies, at the clinic, relaying into long days with limited access to nutritious meals once onsite.

With fridges and dry stores stocked and staffing rosters loaded, Belmont 16s Executive Chef Tony Maher and his team approached the Belmont Vaccination Hub Management with an offer to donate lunch once a week throughout the lockdown period to all 50 of the Hub’s team, as a sign of thanks from our community.

Commencing August 26, the Belmont 16s kitchen team committed to making and delivering 50 healthy lunches to the Belmont vaccination hub every week.

“The staff at the Hub are working hard to vaccinate our community quickly and smoothly, hopefully our token of thanks also means that there is one less thing for those workers to worry about each Wednesday” - Chef Maher

The Wednesday lunch delivery continued until November 17, several weeks after the lockdown concluded and changed weekly. This overall contribution period of 13 weeks totalled 650 meals that were delivered to many grateful health workers.

“We had a food supply chain that still needed our support and Club Staff who otherwise would have been stood down, all the while providing a small act of kindness to deserving members of our community.

BELMONT 16S GAVE A $20,000 ‘HELPING HAND’ TO GRASSROOTS GROUPS For many years Belmont 16s has supported various not-for-profit organisations through the NSW Club GRANTS platform. It has been during this process that the Club’s Board and Management have recognised that there is a greater need for funding to be allocated to grassroots, non-profit groups in our local community. From this, the “Helping Hands” community support initiative was developed, pledging to donate $5,000 each to four local groups to help them achieve their 2021 vision. We asked you, our members during last July to nominate local charitable organisations, sporting groups, community groups or programs that they felt could utilise this funding. The “Helping Hands” program received 63 member nominations during a four week period. Once vetted we asked the Belmont 16s team of 159 staffers to vote for which groups, they felt were the most worthy of a helping hand.

The process of allocation for this initiative, involving firstly Member recognition and then letting our staff vote meant our “Helping Hands” program was truly a Belmont 16s community driven project” says Belmont 16s CEO, Scott Williams. Immediately after the nomination process Belmont 16s was closed, affected by the 2021 10 week state-wide lockdown.

While not operational it was determined to be more important than ever to move forward as scheduled with this community funding program and subsequent donations, announcing on September 1 the four recipients of our “Helping Hands” funding.

Two local Belmont women started making blankets from donated materials and distributing these to local charity and refuge organisations.

WE NOW HAVE FIVE BEAUTIFUL NEW SEWING MACHINES WHICH WILL BE USED FOR THE SOLE PURPOSE OF HELPING OTHERS. WE FEEL SO BLESSED AND HUMBLED AND LOOK FORWARD TO USING THEM AND WANT YOU TO BE SURE THAT YOUR DONATION WILL BE PUT TO FRUITFUL USE.

ASIAN PORK BELLY WITH FRESH ZESTY SALAD PREP TIME 2 HOURS (OR OVER NIGHT ) | COOKING TIME 15 MINUTES | SERVES 4

INGREDIENTS • • •

SALAD & DRESSING

1.2 kg pork belly spare ribs 1 Lime cut for garnish Fried shallots (Found in the Asian section of your local supermarket)

2 Coriander roots 1 Small piece ginger (2 cm cube ) 2 Kaffir lime leaves 2 Garlic cloves 1 Red chilli ½ Stick of lemongrass chopped 1 tsp Ground cumin 1 tbsp Turmeric powder 2 tbsp Light Brown Sugar 1+ ½ tbsp sweet soy sauce 1 tbsp fish sauce

150g Spinach leaves 1 Mango, sliced 1 Cucumber sliced ½ Punnet of cherry tomatoes 1 Red onion, sliced 1 Bunch mint, leaves picked 1 Bunch coriander, leaves picked

60g Unsalted roasted peanuts 2 Limes, juiced 1 tbsp rice vinegar 2 Cloves garlic crushed 1 tbsp fish sauce

METHOD Marinade 1. Grate ginger and garlic. Finely cut the chilli, lemongrass and kaffir lime combine in a food processer.

2. Pick the leaves from the coriander (save for garnish), wash then finely chop the stalks and add to the mix 3. In the food processor, add the turmeric, cumin, sugar and soy sauce. Combine all ingredients, mixing into a fine paste adding a little water to help puree.

4. Rub the marinade into the pork ribs. Leave for at least 1-2 hours or ideally overnight in a covered dish.

Cooking Place BBQ pork belly in a pan on medium heat. Turn often as it will burn with the sugar in the marinade. Once cooked through, slice the pork into bite size pieces.

Toss all salad ingredients together with the pork. Dress the salad and serve in bowls garnished with a lime wedge, coriander leaves and fried shallots.

Our ever-changing Cocktail of the Week has gained momentum over the years and we thought it was about time to share the secret ingredients of one of our most popular cocktails – the Aperol Spritz – this is the epitome of Summer in a glass! A perfect palate cleanser at the start of your night, this cocktail is easy to build and perfectly pairs with any fresh seafood like a half dozen of our SALT Steak & Seafoods Port Stephens rock oysters or our Salt and Pepper Squid.

WHAT YOU WILL NEED

• Spirit measure • Cocktail shaker & strainer • Chilled wine glass

INGREDIENTS

60 ML Aperol 90 ML Prosecco Ice and Orange slices Top with soda or lemonade

METHOD

• Fill the cocktail shaker with ice cubes.

• Add all liquid ingredients.

• Shake and strain into wine glass with ice and garnish with orange slices.

• Final touch with a top of soda or lemonade.
