Here in the south of Australia, we’re in the final home straights of winter. Our bees have spent the winter tucked up in their hives close to Beechworth hibernating but still sneaking outside for a short fly when the temperatures have been above 14 degrees.
Winter is my favourite season. We get to take a short rest as beekeepers and the cold weather keeps us closer to home. There’s always a hustle and bustle amongst our honey packing team as the winter honey wellness, crumpet and porridge season unfolds and we ship out bigger loads of our delicious honey to cater for the winter peak of honey eating across the nation.
Speaking of traditions, we celebrated National Tree Day in July, adding to our annual ‘trees for bees’ planting initiative. This year we focused on our ‘Banksias for Bees’ campaign. We did a small banksia planting as we prepare for our new ‘Beekeeper’s Cottage’ accommodation opening soon. We also did a lovely Banksia ‘take over’ at our flagship store in Beechworth. It’s been three long years since our beekeepers have been able to gather any single varietal Banksia Honey and so we decided this was something to celebrate. Our ‘Banksias for Bees’ campaign was a way to inspire others to think about planting banksias for bees. They’re such a great plant to attract bees and birds to backyards and they give an abundance of nectar for the bees and interesting long-lasting flowers to cut for the household.

is such a simple and natural process that many people overlook. The importance of bees and their non-honey collecting work is the essential byproduct of honey. National Tree Day
Celebrating National Tree Day
While we often emphasise the important role of trees for bees, we should also recognise how pollinators play a vital role in the lives of trees and plants.
This July at the Beechworth Honey Shop, we celebrated National Tree Day by showcasing a stunning array of banksia species for our customers. These beautiful native plants are essential for supporting bees through the colder months, offering abundant nectar when other food sources are scarce.
We wanted to highlight the importance of banksias in the garden. With their long-lasting, nectar-rich flowers and low-maintenance nature, they’re the perfect choice for bee-friendly gardening. Customers were encouraged to purchase and plant these remarkable plants to create a haven for local pollinators and support the health of our planet.

Pollinators: The First Step to a Healthy Ecosystem
Pollinators, like bees, transfer pollen from flower to flower fertilising the plant ensuring it can effectively produce fruits, nuts, and importantly, seeds for new trees to grow.
Seeds
Seeds germinate in the soil, creating life and the continuation of forests and other natural habitats.
As forests grow, they provide food and shelter for other animals, insects and birds. They create green corridors that allow these animals to move between different habitats.
Temperature Soil Environment Air
Tree roots hold soil particles together, preventing them from being washed away by wind and rain. This helps to maintain healthy, fertile soil.
Ecosystems Water
The root systems of trees help to filter pollutants from water as it seeps into the ground, providing clean water supplies. Trees act as natural filters, removing dust, pollen, and other pollutants from the air we breathe.
Trees absorb carbon dioxide from the atmosphere and store it in their biomass. Ultimately helping to mitigate the effects of climate change.
Trees reduce air temperature by evaporating water, absorbing carbon dioxide, and blocking sunlight.
Pollinators play a vital role in creating and maintaining healthy forests and ecosystems.

What is Single Varietal Honey?
Single varietal honeys are a true reflection of nature, with each plant species creating distinctly different colours, tastes and textures of honey. Every batch of honey is different and directly linked to the nectar source and the proportions of nectar from the floral diversity of the site. This is part of the magic of natural honey.
Australia’s floral diversity makes it the bee utopia of the world but it also makes it one of the most complicated places to be a beekeeper. The flowering patterns of Australia’s native flora are wide and varied.
How is single varietal honey collected?
On each trip to gather nectar, the foraging bee will only visit one type of flower. This ‘floral fidelity’ is one of the endearing characteristics of the honeybee, and helps us to identify and produce a honey that will reflect one unique source.
How do we know it is single varietal honey?
To ensure the authenticity of single varietal honey,
beekeepers must carefully manage their beehives and strategically place them in regions abundant with a specific flower or plant species during the flowering season. This allows the bees to collect nectar primarily from that particular floral source, resulting in honey that represents the true essence of the plant.
How many Australian single varietal honeys are there?
Beechworth Honey has the largest collection of single varietal honeys in Australia, with over 40 to choose from, including rare and limited edition honeys. Australia has more than 780 tree species, which were historically known as eucalypts. Each of these species has the potential to produce food for honeybees and other insects.
In addition to the eucalypt group there are hundreds of other natives; wattles, bottlebrushes, melaleucas, mangroves, banksias, leptospermums, grevilleas and hakeas that bees can visit. Then of course there are all the flowers, trees and western food producing crops introduced to Australia that bees may visit in Australia.
Honey Flavour Profiles

Delicate
These honeys are generally very light in amber colour and deliciously sweet. They are soft on the palate and with a buttery mouthfeel.
Warm Fruity Bold
Expect flavours of toffee, caramel, and stewed fruits. However not all of these honeys are intensely sweet. Great for cooking.
Bright and fresh flavoured honeys with aromas of citrus, berries and the distinct characteristics of the Australian bush. Bold honeys offer deep, complex flavors. Colours range from light to dark amber, with notes of wood, nuts, molasses, and even menthol.
Bee Delicate Ironbark Honey Jar 350g
Ironbark Honey is extra light amber to pale amber. It is delicate and very sweet with aromas of fresh beeswax. It has buttery, creamy flavours with very little aftertaste.
