Welcome to the official start of summer here at Bay Creek. We’re fortunate to have the kind of weather that invites summer activities long before the actual season begins. In my travels around the community, I’ve stopped to chat with neighbors who are headed over to the Life Center for a dip in the pool, seen folks coming back in from the beach, and glimpsed some well-honed golf swings on the driving range, while grabbing lunch at the Coach House Tavern.

Once you’ve spent a little time here, you realize that all these things are just part of the fabric of life at Bay Creek. From the amusing— like our lighthearted golf scrambles and get-togethers—to the truly amazing – like Bay Creek’s coveted ‘dark sky’ principles, ideal for Milky Way stargazing.

It’s Summertime on the Eastern Shore FROM THE CLUB

It’s that time of year again when the Eastern Shore bursts into bloom. Hearty laughter fills the salty air, sandy feet are in fashion, and life floats along like the lazy clouds that dot the summer sky. Cape Charles and Bay Creek have donned their summer finery: bright wildflowers and fragrant blooms, ice cream cones stacked triple-high in happy little hands, the glassy blue ‘cool’ of the Life Center pool, and all around, a sense that life is very, very good.

General Manager of Bay Creek Resort & Club, Bob Ewing, is a big part of summer here in the community. His concoction for a successful season of fun for members and guests comes from the result of constant behind-the-scenes planning, an expert Club team, and a club manager who’s focused on the big picture, the smallest details, and ‘the smile factor.’ Bob Ewing shares what excitement lies ahead this summer at Bay Creek:

“We’re thrilled to usher in another amazing summer at Bay Creek. The season is well underway and I’m seeing a lot of joy out there! Our team is out there every day with the goal of providing world-class Club experiences for our members.

One of the greatest rewards for our team is to see genuine smiles. It can be a family that arrives at the beach and lights up when they see their Club chairs ready and waiting for them. Sometimes it’s a golf group that tells us the greens were running perfectly that day, or a member who tells us that they appreciated the special touches we brought to their Club-catered event. Their smiles are what it’s all about.

There’s so much excitement in store—from poolside fun to fantastic golf—and we’re ready to give our members and guests the best summer yet. I’d like to share a few of the many great things that have been happening around the Club and the community.

The Good Life, Front and Center

“The Life Center is, once again, ‘summer headquarters.’ With extended hours from 7 am to 8pm Sunday through Thursday, and food delivery to both the pool and beach, we’re making it so afternoons can effortlessly stretch into relaxing evenings.

“The first splash of the season happened early this year for our dedicated lap swimmers. With the heater in full operation and a new custom solar cover, the lap pool was primed for those cool, refreshing early sessions. The Memorial Day Pool Bash officially kicked off the season a few weeks ago, and the party was, as they say, ‘epic.’ We truly love offering events like these for our members and guests. Apart from ‘fun,’ new friends and memories were made, and new connections were forged.

“I’ve always thought The Life Center was perfectly named. There’s so much happening here that enriches every facet of life—from the resort-style pools to the impressive Bayfront-view fitness facility, professional instructors in Tai Chi, Yoga, Spin, Pilates, Tabata, to great community events.

“Summer Movie Nights under the stars is an example. Folks can also come and enjoy a variety of lawn games, crafts and events nearly every day this season. Then there are special events—like the ‘Patriotic Pool Party and Golf Cart Parade’ for Independence Day. The sheer joy of the season is happening here every day, sunup to sundown and then some.”

The Beach, the Vibe, the Views

Summer wouldn’t be summer without ‘toes in the sand’ and that warm Chesapeake Bay breeze from Bay Creek’s private beaches. Beach access is as effortless as ever, with enhanced service, new food delivery options, and Bay Creek’s upgraded digital reservation system.

“Ease and enjoyment are what we want for every guest’s beach day. The systems we’re putting in place are all about creating a seamless experience for our members and their guests. Chair Service is a good example. It’s our pleasure to offer chair service with an easy-to-use reservation system. Bay Creek makes it easy to be at the beach in minutes and Club chair service makes it even simpler. Just arrive and enjoy.”

Tastes of Summer: A Fresh Menu Debuts

“Bay Creek’s culinary team has been curating a new menu at The Coach House Tavern for the summer season. Guests will enjoy creative new dishes and weekly specials designed to keep things exciting. Our summer menu reflects the season, fresh and flavorful. The reservations system ensures you’re seated and enjoying the Coach House’s great food and sweeping views as quickly as possible during this exciting summer season!”

Excellence of Course

Bay Creek golf has been turning heads lately— for good reason!

“Bay Creek’s golf courses are in top condition, thanks to our dedicated maintenance team and their passion for excellence. We began a series of course conditioning in the spring to elevate the experience. New and enhanced red tees at Palmer #7 and #16 are now complete. Over on the Nicklaus course, Belgium block has been installed along walking paths at Holes 4, 5, and 6. We’re sure regulars will enjoy this functional and attractive addition.

“We’re staying ‘ahead of the game’ this summer with aggressive mowing schedules and turf management to ensure tee to green and everything in between runs just right.

Also new this season: We have implemented GPS tracking across carts to monitor play speed and enable a smoother pace across our 27-hole rotation. With starters now placed at each of the three nines, and enhanced communication via GPS messaging, our team is focused on keeping play moving and enjoyment high.”

Are you ready to level up your game? Our Director of Golf, Zach Pfingst, PGA, is an incredible instructor. His experience and expertise, along with the amazing Trackman Simulator, can have you swinging confidently for your best game yet.

Bay Creek’s own Ranger Stan Osmolenski shares the many unique and rewarding experiences that await you beneath the shady forest canopy, among the wild meadows, and tranquil waterways of this place we call home. Stan’s passion for nature is unmatched. Being Bay Creek’s full-time naturalist is a vast—and exciting—job. He helps people experience nature in ways that foster appreciation and wonder. Whether it’s your first visit to Bay Creek or your hundredth, Ranger Stan invites you to immerse yourself in Bay Creek’s natural beauty this summer.

Base Camp is where many outdoor activities begin here at Bay Creek. But great outdoor adventures can take you to destinations you’d never expect. As with any nature explorer worth his salt, Ranger Stan can be found anywhere and everywhere among the forests, waterways, shores and habitats of Bay Creek—helping guests connect with nature and enjoy outdoor experiences both great and small.

Great Trails Are in the Details

“We have over seven miles of hiking trails here at Bay Creek. More than half of them are only accessible for bicycling, walking or running. There’s an incredible variety of terrain and views. A few of the trails are also designed for golf carts. Perhaps one of the prettiest is the Shoreline trail overlooking Plantation Creek. It zig-zags through the woods all along the water with great vistas and stopping points. It’s nice too because you can hike it in the summer, and it’s all shade with a good breeze coming off the water.

“You can look out and see people paddling along the shoreline. If you’re into birdwatching, it’s ideal. There’s a little mask of trees that keeps you hidden, making it easier to observe the shorebirds.

“The residents of Bay Creek feel a deep connection to the environment and nature that surrounds them—as such, they do a great job of acting as stewards of the trails and beyond— packing in and packing out and walking with their leashed dogs. Trail stewardship is good for our owners and guests and for the wildlife that call this place home, too.”

Easy in, easy out: As with all its amenities, Bay Creek accommodates every need—from things as simple as maintaining easy to use pet waste stations, to responsible upkeep of forest growth and trail conditions, engaging wayfinding stations and information about the vistas, unique flora, and fauna guests may encounter as they explore the Nature Preserve.

Catching the Big One

“We’re surrounded by water here, so of course there’s a lot of interest in fishing. Besides the Chesapeake Bay, we have a lot of great fishing spots right here in Bay Creek. With the sensitive nature of the environment here, there are specifically designated spots for fishing.

“With summer coming, there’s been a lot of talk about fishing lately. So, I cleared a new path—a fishing path, that’s along the big Preserve Loop, next to Foster Pond. The meandering path is about a mile long, and it leads to a shoreline that was otherwise inaccessible. It’s a great chance to get out and try out some brand-new fishing spots!

“And there are a lot of varieties to catch. Largemouth bass—those are the most fun to fish for—there are some very big ones in there! We also have bluegill, which is a type of sunfish, also a native variety called the pumpkinseed sunfish. You don’t see them often, but we also have American eels in these freshwater ponds, and surprisingly, blue crabs sometimes make their way in, too.

“Not all ponds are for fishing, of course. A good example is the Duck Pond. It’s an important, sensitive habitat that we preserve just for wildlife. We have many ducks that overwinter there, and turtles are now coming up to nest and lay their eggs.

“Fortunately, Bay Creek’s true fishing ponds in the Preserve are beautiful and full of naturally occurring species. So, there’s no shortage of fishing fun and a good possibility of reeling in— and then releasing—a BIG one! It’s a great place for a memorable family fishing adventure.”

Winging It!

“The Eastern Shore is home to an incredible variety of birds. We have many species of birds here. Now that it’s nearly summer, the ospreys have come back, and the brown pelicans that migrated have returned. You’ll also see rails and plovers.

There’s a specific spot out by the overlook where American oystercatchers’ nest. These birds are quite rare. Virginia’s Barrier Islands are a crucial habitat for these unique birds. More than half of Virginia’s oystercatcher population nest on our barrier islands. The barrier islands are good nesting grounds for the oystercatchers because they have little to no human interaction there. The birds put their nests right along the shoreline, and their eggs blend into the sand. We’re fortunate to have the protected environments of the barrier islands and natural areas here in Bay Creek, too, as a safe harbor for several species.

In The Water

Look out from the shore of Bay Creek’s private bay beaches or along the shoreline in the Nature Preserve, and there’s a good chance you’ll catch a glimpse of sea life. Bottlenose dolphins are a common and charming site.

“The dolphins you’ll see in the Chesapeake Bay are slightly different than those you’d find a few miles out in the Atlantic Ocean. There’s a study that suggests that the bottlenose dolphins we see in nearshore areas may be a different species than their ocean relatives. Either way, it’s always exciting to spot the glistening silver arcs of dolphins among the waves.”

“Groups like the Nature Conservancy do a lot of good work preserving the barrier islands and the species who call it home. And of course, we enjoy observing and cataloging all kinds of species in the community of Bay Creek.

The Community

The Bay Creek community turned out in a big way to help protect and conserve the Chesapeake Bay! For almost 30 years, the Chesapeake Bay Foundation has organized an enormous oneday cleanup of the Bay and adjoining waterways. This year’s ‘Clean the Bay Day’ took place on June 7th and was one of the best yet. At Bay Creek, we had boat-up sites where participants could come up to our shoreline at Base Camp or borrow a Bay Creek kayak to collect refuse in the water. Besides promoting awareness about the importance of a healthy, clean Bay, the event promotes stewardship of this special place we call home. Thanks to all our residents and friends who dedicated their day to cleaning the Bay.

Connecting with Friends & Nature

“One of the most interesting pastimes in the community is simply nature: kayaking, walking and running along the nature preserve trails, birdwatching, and even getting involved with the Bay Creek Stewardship Club. The Stewardship Club is an active group of friends and neighbors that oversee many fun and rewarding projects.

“We’re working on a meadow restoration demonstration site where we show how to bring back a native meadow, which, in turn, becomes a valuable habitat for wildlife. We also have a group that observes and maintains multiple bluebird houses and documents the birds that nest there. During our trail maintenance events, we clear out invasive, non-native species like bamboo, so other species native to the Eastern Shore can be reestablished and thrive.

“At its core, the Stewardship Club is about appreciating and caring for nature and connecting with one another as a like-minded community. All are welcome! We hope to see you out and about at Bay Creek during this exciting season. See you on the trails!”

Extending from the headwaters in Cooperstown, NY to Fisherman Island, VA, the Chesapeake watershed is around 64,000 square miles long and stretches over parts of six states as well as all of DC. The 2025 Clean the Bay Event was another great success.

Nature Talk Campfire at BaseCamp

Gather ‘round the campfire with friends and enjoy a discussion on various topics concerning the natural, cultural, and historical wonders of Bay Creek and the Eastern Shore.

Preserve Owl Prowl

Discover the nocturnal side of the Bay Creek Nature preserve during this 1-mile guided hike in search of signs of owls. The preserve provides an uncommon and much-needed habitat for these reclusive and specialized critters. Through experiential learning, we can help them thrive in our common environment.

Plein Air Painting

Let nature inspire you to create a work of art that expresses yourself and the world around you! Beginner and advanced artists will enjoy this guided painting workshop. Capture the natural landscape around you in our Plein Air setting. All art supplies, canvas, and one glass of selected red and white wine will be provided. Cheers!

Bicycle Mimosa Tasting

Mimosa tasting has never been more fun! Enjoy a guided bicycle tour through the Nature Preserve to four scenic tasting locations. Sample a curated variety of mimosas at each stop, then finish strong at the Coach House Tavern and continue the sipping fun!

Bay Creek Executive Chef, Christian Lofland, really knows how to capture the delights of summer—from catering special Club events to curating new menus that complement the season for the Coach House Tavern.

The menu at the Coach House Tavern is designed to make the ‘everyday’ something special. This summer’s menu is a perfectly curated combination of the light, fresh flavors of summer and the hearty, bold entrees that are the ideal reward after an amazing day of kayaking, beachgoing or golfing.

Christian’s time-tested culinary skills are attuned to the seasons—and summer offers incredible opportunity for refreshing flavors and fresh fare: “I like using what’s on the vine or in season. We make a point to source as many fresh seasonal vegetables as possible. Zucchini, asparagus, yellow squash...this region is a powerhouse of produce.”

The menu at the Coach House Tavern reflects the unique combination of textures, taste, and showcases Christian’s natural talent for flavors. Thinking of having a salad? The options are impressive. Enjoy combinations like arugula and pear with walnuts and goat cheese, or a tangy beet salad with fried goat cheese, almonds, dried cranberries, and mandarins topped with a honey thyme vinaigrette they make inhouse. Expect fresh ingredients like heirloom tomatoes, and authentic touches, too, like house-made focaccia croutons.

Then, of course, there’s the seafood. Here on the water in Bay Creek, it’s no surprise that seafood is featured front and center, making impressive appearances for both lunch and dinner. The Coach House’s Eastern Shoreinspired menu celebrates the flavors of this bountiful region. Christian’s extensive history in the industry, often in coastal locales, has given him ample opportunity to do amazing things.

“We take responsible sourcing seriously—we go as local as possible as often as we can. As dedicated stewards of not only the Bay but all coastal waters,

we are committed to serving sustainably sourced fish and fresh seafood to the greatest degree we can. We like to offer a lot of variety in our seafood dishes—from peel and eat shrimp and fresh oyster appetizers to Little Neck clams with shallots in white wine, Oysters Rockefeller, and cedar plank roasted salmon, just to name a few.”

It isn’t just the seafood that keeps guests coming back. The Coach House does many things well, not the least of which is striking the perfect balance of all kinds of spirits, brews and local craft beers, delightful dinners, great breakfast, and elevated pub food you’ll want to come back and savor again and again. “One of the favorites of our many Coach House guests is the crab dip. It’s creamy and tangy and is great for sharing with friends. We do pork bellies, drizzle them with beer cheese, and serve them with fresh Pico and sour cream on the side. That’s a definite favorite!”

There are a lot of names for this special region we call home: the Eastern Shore, Cape Charles, Virginia’s Cape…

And perhaps you’ve heard that the town of Cape Charles has been awarded several titles of her own, like ‘Best Little Beach Town in Virginia’ by Southern Living, for example. Then there’s Cape Charles’ rank as one of the top three ‘Happiest Seaside Towns in America’ by Coastal Living.

But at Bay Creek, the name we love to hear most for Cape Charles is, ‘my town.’ Whether you’re a full-time resident, a part-timer, a first-timer, or a

loyal summertime guest, Cape Charles makes you feel right at home. Part of it is the place itself: it isn’t hard to settle into a town that’s equal parts beautiful beach, historic charm, warm neighbors and an incredible, creative vibe.

Cape Charles will again put on its beloved Summer Concerts in the Park series, offering live music every Saturday evening. Bring a blanket or a lawn chair and enjoy live music on the gazebo in Cape Charles’ Central Park, an ideal gathering place in the heart of the picturesque Historic District. Disco, folk, blues, southern rock—get there at 7 pm and enjoy music under the stars.

Fourth of July Parade & Festivities

Independence Day in Cape Charles is something to behold. It’s a true old-fashioned Americana celebration. The parade begins on Bay Avenue and culminates on Mason. Enjoy a street fair, games, contests, and impressively decorated golf carts (with plenty of Bay Creekers participating!), plus all the fun and patriotism you’d expect from our bighearted hometown. Then, when the sun goes down, the fireworks display fills the beach and harbor with a sparkling show to remember! Don’t miss it!

LoveFest in the Park

SATURDAY, AUGUST 30, 2025 | 6 PM – 9 PM

Can you dig it? Get your flower power, tie-dye, and go-go boots ready! Bring a lawn chair or blanket and prepare to shake your groove thing at 7 pm. with the fab English Channel Band. This annual fest is one of the many special events brought to you by Cape Charles Main Street. With live music, food, and prizes for best 60’s costume, LoveFest is outta sight!

A Fresh Take on Southern Comfort in Eastville

The Eastern Shore is an interesting place: its history is vast, and its traditions run deep. But it’s also a place where ‘the new’ is welcomed and embraced. Maybe that’s why it attracts so many artisans and mavericks, and why it’s an ideal place to launch a new creative endeavor.

Restaurateur and creative force, Khaki Kinsey and her family have done just that—and their dream is now in full, beautiful bloom. Buttercups, just off Highway 13 in Eastville, (a comfortable drive from Bay Creek), began a little more than a year ago in June of 2024. It’s not your run-of-the-mill café or eatery. As Khaki puts it, “We bring people together through great food and a sense of good ole fashioned southern comfort.”

What does that look like? Just take a peek at the menu. ‘The Southern’: a sweet potato biscuit with Virginia country ham, fried green tomato and pimento cheese; ‘The Redneck BLT’: buttermilk brined fried chicken, applewood smoked bacon, greens, green tomato relish, and cream cheese on a bagel; sweet potato snickerdoodle…the variety and flavors are incredible and endless.

You might not expect to enjoy such tantalizing and creative flavors from the tidy, white farmhouse-style café that sits just across the street from Northampton County’s historic Courthouse. But Buttercups is one of the most delicious spots in the region, hands down. Guests dine beneath

the shade of bright yellow patio umbrellas that ruffle in the breeze like the buttercups that grow wild throughout the region.

There’s an air of freshness that accompanies the atmosphere here. For Khaki Kinsey, hosting neighbors and serving up very good food has always been a way of life.

Born Into the Business

Khaki’s mother, Penelope “Penn” Kinsey, grew up in a restaurant family operating The Seahorse, a legendary eatery in Delaware’s Rehoboth Beach. Penn pursued a career as a classically trained chef before she and Khaki’s father, Derrick, (a Chesapeake and Outer Banks native), launched their own restaurant in 1998. Far from their beloved East Coast roots, they opened a small seafood restaurant called Blind Dog, named for their beloved black lab, in Park City, Utah.

“It was meant to be a small endeavor—just for when the Olympics were there in 2002,” Khaki explains. “I grew up there behind the sushi bar and in the kitchen. When I was old enough to work, I ran the front of the restaurant. I really loved it, and it felt very comfortable to me.”

That ‘small restaurant’ in Utah started at 65 seats and is more than 500 now, with plans for an expansion this fall.

“It's nothing like Buttercups, of course!” laughs Khaki. “But it’s where I grew to love the restaurant business.”

After moving back to the East Coast for school in Middleburg, Khaki fell in love with Virginia. Growing up, she spent time between the two places—here and in Utah with her parents. When her mother wanted to move closer to family in 2020, they decided on the Cape Charles/Eastville area. Khaki was back in the region she loved and ready to dive into her next adventure.

Bloom Where You're Planted

It began simply enough… “I was trying to decide what I was going to do for work once we moved here. It seemed like I was always searching for a place to get a great cup of coffee and a bagel. I think the more we all talked about it as a family, the more Buttercups became a reality.”

“Finally, we realized that we’ve done this before, so we took the idea of Buttercups and made it happen. My family has backed me one hundred percent. My younger brother, Ketch, who is in college, is also a big foodie. He works with me in the summer and helps me with all the menu changes. We collaborate on everything as a family.”

“For me, the most important part of Buttercups is that we’re a family-owned and operated business. We are a from-scratch restaurant. We use products that are local to the Eastern Shore as much as possible. All our products are from the East Coast. We always try to work with companies that give back to the Shore in some way, too. Our coffee roaster, Chesapeake Coffee Roasters, for example, donates to Chesapeake Bay Oyster Restoration programs and the Bay Foundation. That’s a huge selling point for me.”

“Those are our core values—being a family-run company, giving back to the Shore, and utilizing companies and other small brands local to the East Coast.”

Go for the Good Stuff

“I learned all my cooking skills from my mom, but when it comes to baking, that’s more my realm,” says Khaki.

Walk into Buttercups and you’ll see what she means. Every baked item is a masterpiece, so no matter what you choose, you can’t go wrong.

“Our banana bread is a dish to behold! We top it with whipped honey mascarpone and brûléed bananas. We go through a lot of banana bread on a weekly basis!”

Then there’s the Mac Daddy cookie, sea salt chocolate chunk cookie and…scratch-made biscuits: buttermilk and/or sweet potato…you’ll want to try them all—from the sweet to the savory.

It’s the ideal place for a sweet treat and a refreshing drink, too. There’s a huge selection of yum: from house green juice and ‘superfood’ beetroot lattes to the super-decadent Tiramisu

latte and everything in between. Khaki’s favorite thing on the menu? That’s a tough one.

“It’s hard to pick! But one that always sticks out for me is the ‘Bo Bo’, named after my golden retriever. He loves fried chicken! It’s a buttermilk biscuit and fried chicken, topped with our own red pepper jelly and dill pickles that we make here. It’s a fan favorite but also my favorite.”

In the short time since it opened, Buttercups has become a new ‘old favorite’ for locals and visitors alike.

“I couldn’t be happier with the response we’ve gotten,” says Khaki. “It took more than a year to build with permitting and the construction process. We’re fortunate to have amazing regulars who have kept us busy during the high season and throughout the winter.”

Their location right off Highway 13 on Eastville’s main drag makes it an easy stop for travelers coming from all over. They have enjoyed a lot of word-of-mouth promotion from loyal customers. And their billboard on Highway 13 attracts hungry and adventurous foodies from Virginia, North Carolina, Delaware, and points far beyond. In just a year, the Eastville eatery has amassed a large and diverse following.

“We really enjoy being only 10 or 15 minutes up the road from Cape Charles,” says Khaki. “We’re right across the street from the original historic Northampton County Courthouse, which is open to the public, so you can visit and learn a little history about the Eastern Shore while you’re here.”

Wondering how Buttercups got its name? It’s a story as wholesome as the amazing food they serve.

“We wanted to incorporate something that was meaningful to our family in the name,” Khaki explains. “Growing up, since as far back as I can remember, my dad always called me ‘Buttercup.’ And buttercup flowers quite literally surround Eastville. It was perfect.”
