nique, fresh, friendly and community are a few words that come to mind when customers think of Dominick’s Italian Market & Deli. Dominick’s opened in 2004 after owners Dominick and Raquel Bellizzi. decided to stay in the Sacramento area to bring a bit of the flare that they grew up with to the area; a deli that was community based, where everyone knows everyone and provide that to the community. “When we moved from the East Coast, we couldn’t find good bread; Sunday din-

ners for Italians are huge — we would get the meats from a deli, bread, whatever else and started cooking,” Raquel recalled. “We could not find that out here, particularly the bread; a good rustic, Italian roll.” Raquel adds that it is very common to grow up in New York or New Jersey and have an Italian deli or restaurant on almost every corner of the neighborhood. With that, they are traditionally family owned, so the delis are not a franchise. In line with this tradition, their daughter,

Daniela and son, Jerry, help with the business too. When they opened they knew that everything would be made fresh and in store only. They run their business with a simple philosophy: if they aren’t going to eat it, they aren’t going to serve it. “We bake our own bread, you can see them taking it out every hour on the hour,” Raquel said. “The produce is sliced in the morning and it isn’t all sliced at once and the cold cuts are sliced when the

specific meat is order for the sandwiches, so it stays fresh.” A couple years after the success and establishment of the deli, the space next door to the deli became available. By that time, customers were telling them to open a restaurant; they decided to expand next door and now, 14 years later, they have accomplished their goal, creating that community feel and being a part of the neighborhood. “This community has been so wonderful to us,” Raquel said. “When I look back when we first started, they have cradled and supported us all of these years.” When it comes to their food and menu items, in the deli and in the restaurant, they think about their family and how to make it as personalized as possible. “We designed a menu with a lot of our favorites and our family’s favorite dishes,” Raquel said. “We have a very close connection with our family, even though they

are in New Jersey, we wanted to make sure to include them somehow.” The restaurant offers a variety of lunch and dinner items. The lunch menu offers some of the dinner favorites. While the deli offers pre-cut food that just needs to be heated up when you get home. The deli is very relaxed and lively while the restaurant side is more family-oriented. When it comes to the deli, Raquel explains that the sandwiches are by far what people come for: the Italian Combo, the CONTINUED ON PAGE 12

Items like the Chicken Parmesan is cooked to order, so is the meat lasagna and the meatballs. “The meatballs are 95 percent beef and a little bit sausage,” Raquel explained of their homemade meatballs. “The other 5 percent is the filler of Parmesan cheese, bread crumbs, herbs and garlic.” In terms of the restaurant, there are many favorite options to choose from including the Pappardelle alla Bolognese, Linguine and Clam Sauce, the Mussels El Diablo, and the Halibut over a fourcheese risotto with a lemon butter sauce. The halibut was intended to be a temporary special but was so popular with customers that it has become a regular menu item. As Raquel reminisced about what they have accomplished so far, she explains that Dominik would go out to the kids in the restaurant and would give them little gelato cups. She would also teach the children how to twirl the pasta with a spoon and fork. Since then, those kids have come to the restaurant all grown up, ready for more Italian meals.

R

attlesnake alerts have been prominent in the news and are a creature that are known to come out in the warmer months. While the topic is not a fun one, it is important to know what to do, not only for adults and children, but also for pets when encountering a rattlesnake. Dr. Tamsen Taylor has been a veterinarian and owner of Sunset Whitney Veterinary Hospital in Rocklin for 37 years. Over the last two years, she co-hosted dog trainings with Get Rattled, a rattlesnake avoidance training for dogs. One class was recently held in Granite Bay. A couple of characteristics of a rattlesnake bite is quick swelling and bruised looking puncture wound, which she has seen before in pets that have been brought in. Taylor explains that just because you can’t see the venomous snakes or hear them, doesn’t mean they aren’t there. Sometimes people have a false sense of security because they live in a city or the suburbs. She has had pet owners finding the snakes under their washing machine, planters, backyards or walking trails.

While dogs can die from a rattlesnake bite, Taylor has not had that problem because dog owners get their dog in and with the help of various treatments they are able to heal. Get Rattled uses live, healthy rattlesnakes placed in a variety of scenarios designed to focus the dogs on the snake to teach it to avoid the sight, sound and smell of rattlesnakes. She explains that the snakes in the program have had their venom surgically removed and the dogs are guided

continued from page 14 by one of the trainers to focus solely on the snake. There are three trainers, one is walking the dog, one is handling the snake and the other is working a shock collar. Taylor adds that while some owners may not like a shock collar, it is how they teach the dog that a rattlesnake is bad and not to go near it. The dogs and owners go through multiple stations that teach the dog not only to recognize the snake but to also leave that area where the snake is. After one of the courses, Taylor had an owner reach out and tell her while hiking her dog reacted that same way and was able to alert the family that a rattlesnake was up ahead. “Some dogs don’t remember the train-

ing and sometimes they do, it just depends on the dog,” she explained. While a training session may not be the right avenue for some pet owners, it is important to make sure that your dog is taken care of and that the area is checked for rattlesnakes, Taylor said. If you are out on a trail or at a park, it is important to keep your dog on a leash where they can’t wander off.

handling the restaurant side and Andy handling the bookwork. Susie’s has an upwards of 90 percent regulars who come in to enjoy meals with friends, families and with their regular servers. As the regulars continue to bring in new customers, these also end up becoming regulars, Vince said. There are many delicious, classic breakfast options to choose from and their specialty items are popular. Vince explains that the Southwestern Omelet is the most popular omelet and the High Sierra Frittata is the most popular frittata.

“We have whole wheat, made-fromscratch pancakes that are very good,” Vince said. “We have a country-fried steak that people really enjoy.” Vince’s favorite part about co-owning and working at Susie’s are the people there. Currently, there are no new plans for the business, just continuing to enjoy the guests, staff and smiling faces. “It’s casual dining, quick service, great food and a great price,” Vince said. T

he Thunderbots team, a Sacramento-based team made up of Folsom and Roseville residents, has been participating in the FIRST Lego League robotics since 2013. As a team, they inspire youth in the community to get involved with the league as well as engineering in general. In April, FIRST Lego League announced that 20 semi-finalist teams would advance to the eighth annual FIRST Lego League Global Innovation Award. This is significant as 32,000 teams and more than 255,000 participants in 88 countries across the globe participated in the competition. The Thunderbots was selected for their outstanding innovative solution project which demonstrated originality while having the potential to add significant

value in the world. The Thunderbots invented the “UltraOrganix Filter” for the hydrodynamics season, which focused on improving the human water cycle. The team has plans to travel to San Jose for the Global Innovation Forum from June 19 to June 21 where they will present their innovation solution along with 20 other semi-finalists from around the world. The “UltraOrganix Filter” removes bacteria and metal contaminants from even the most turbid water using natural, low cost components in filter bags in a quick and easy to use, effective way. The innovation in their proposed method is coming up with a simple three-step process which uses a pour through filter, Solar Water Disinfection (SoDis), and the filter bags for soaking, and combining the right mix of ingredients in the right proportions to create an effective combination. Filter bags can be created by villagers with minimal effort and cost and are reusable. By removing detrimental pathogens and contaminants including lead from water, it can prevent the spread of disease caused by people not having access to clean water. When asked how the team feels to have placed this high, they were very excited. “It’s unbelievable,” said Ramraj Thanapandian, who has a daughter on the team. “We can’t even describe how big of a dream it is to be in the top 20. The Thunderbots chose this problem as there are more than 323 million people worldwide that rely on polluted water sources like rivers and wells and can’t afford other water purification methods that need power and specialized equipment. They have filed a provisional patent for their idea and are piloting their filter bags in a village in South India. “What the Thunderbots is doing is they see many schools and communities don’t have this program, so they are working with the State Legislature, Kevin Kiley, to see if they can make it a requirement that every school have a program like this,” Thanapandian said. “They think they have a good chance at it. Sustainable, wild caught fish available at local farmers markets

hen you buy that filleted piece of salmon at the farmers market, chances are that fish was swimming in the ocean just a day or so before. Brand and Laura Little, owners of Little Fish Company, stress the freshness and quality of their product. “We source sustainable, wild-caught fish,” Brand Little said. “No farmed fish. It’s all ocean caught. We get it to the farmers market in 24 hours from the time it is caught. It is really high-end seafood.” The Littles sell their catch at the farmers markets in Auburn, Nevada City, Placerville, Tahoe City, Truckee, Roseville and Sacramento. Their boat trolls waters up and down the Northern California coast. In addition, the Littles purchase from other fishermen. Little grew up in Northern California and moved to Colorado when he was in high school. He worked in the dairy business there. When he returned to Northern California, he worked for the Associated Press in its advertising division. But fishing was something he had always loved. “I fished and hunted with my dad from

an early age,” he said. “I always liked the outdoors.” That’s why, in 2004, he took advantage of an opportunity to purchase a commercial fishing boat. He had never fished on the ocean before, but he had built up a lot of vacation time and used it drifting on the Pacific, fishing pole in hand. At first, he sold his catch to brokers but soon decided to switch to direct selling at farmers markets. “By 2007, it had really taken off,” he said. “At that point, I bought a larger boat and then in 2011, upgraded again. ” He recently purchased his latest boat, the Kvins. In 2015, he bought a second boat that had a crab permit. Since then, he has moved the crab permit to his main boat and sold the other one. In addition to crab, Little has permits for salmon, halibut, black cod, rock cod, ling cod and albacore tuna. “That’s what we fish for off my boat,” he said. “We source prawns, scallops and other things we don’t have permits for from other boats.”

The catch varies by season and the weather. “Salmon is predominantly May through October. Dungeness crab is November to April,” he said. “Those are our two best sellers. Other stuff mixes in.” His fishing trips last from one to five days. “We come back in and take the freshest fish we have and that’s what we bring to the farmers markets,” he said. “We catch a lot more than we can sell, so we also sell to brokers.” The crab is held in tanks on the boat. The salmon and halibut are hook and line caught. “We bring them into the boat, and they are gilled, gutted, pressure bled and packed on ice within 10 minutes,” he said. “From there, it is back to the dock and into our refrigerator truck. Everything is cut and packaged in San Francisco.” Black cod is a trap-caught fish. “We fish traps for those off the edge of the continental shelf where the water is a half-mile to a mile deep,” he said. “Those are way out. From San Francisco, it is about 40 miles out. Going out of San Fran-

cisco, (the water is) about 100 feet deep, 30 miles out it is 200 to 300 feet deep. When when you get to the edge of the shelf, it drops to 2,000 to 3,000 feet. Along the edge is where you find those black cod. It is literally like the grand canyon.” In the earlier years, Little’s focus was salmon. But times have changed. “When we first started, we were selling them at $15 a pound. Now we are at $45,” he explained. “We’ve had to find and source other fish because people can no longer afford (salmon).” Availability drives the price and there are fewer and fewer salmon. Little encourages his customers to try other fish and to pay attention to what they are buying. “There are lots of other fresh fish,” he said. “Be aware and ask questions whenever you buy it. If you aren’t paying a premium price for a fish, it’s not wild caught.” That’s because the boats that catch the fish can get premium prices from brokers on the dock and are not going to sell it for less at local markets, he added. If a piece of fish seems to be a bargain price, it is because it was farm raised. He also encourages customers to pre-order at his website. “We sell out of everything,” he said. “Reserve it ahead of time and it will be there waiting for you with your name on it. We’ll weigh it for the exact cost and give you a discount as well.” After nearly 15 years in the business, Little’s love of fishing has not waned. “I still love the thrill of the catch,” he said. “It is the competition out there. People watch some of those fishing shows and see how it is done. They are competing for bragging rights. It is the same for me and the crew. We want to be the top boat. It’s a very competitive environment. … It is hard work. During crab season our boat doesn’t stop moving for literally a week. It is 20-hour days. We will come back and unload the boat and go out again — constantly moving from one site to the next. You do it because you love it.”

Spicy grilled salmon for summer nights KITCHEN VIEW |

ummer barbecues can be more than just burgers and dogs. Throwing a few filets of marinated salmon on the grill is a delicious alternative to more traditional main dishes. And this spicy, tangy marinade really brings out the rich flavor of the fish. Grilled fish is one of the healthiest ways to cook fish. The healthy fats in salmon hold up well on the grill without the added butter when cooked in a frying pan. Some types of fish that handle a grill better than others. The best fish to grill are swordfish, halibut, tuna and salmon. When the fish is on the barbecue, be sure to let it cook several minutes before trying to lift it off the grill or it will stick. Once the fish starts to release some of its juices, check for color and flip the fish when grill marks begin forming. If the fillets are thin and even in the cut, they may not require flipping. This will also depend on your desired level of doneness. It’s easy to overcook fish because it cooks so quickly, so be sure to watch it carefully. When fully cooked, the fillet

will begin to flake and break open easily, changing in color from translucent to opaque. Finding fresh, quality fish is the best place to start. Fresh fish should be stored on ice in the display counter and well drained so that water doesn’t pool around it. I picked up a few filets of salmon at a local fish market for this recipe, and it made a big difference from the store-bought or frozen salmon. If you do buy frozen salmon, allow 24 hours to thaw a 1-pound package in the refrigerator. Thawing at room temperature or running under hot water tends to drain the moisture and break down the texture of the fish. If you fish in the ocean or river, or know someone who does, that’s even better. This marinade is flavorful, but not overpowering, so the taste of that melt-in-your-mouth salmon still comes through just perfectly. The recipe can easily be modified for desired spice level, too, depending on your heat tolerance. The current spice level is about a two out of five, so if you want to kick it up a few notches, go right ahead. Although it only calls for a 30-minute marinade, it can be left to soak up all those flavors for much longer — even overnight. But at minimum, it should be marinated for the required 30 minutes. This full-flavored recipe pairs well with a vegetable like broccoli and a hearty side of wild rice or pasta. A chilled pinot noir or viognier pair nicely with the grilled salmon, and if possible, I’d recommend eating it on the back porch in the cool of the evening.
