VERY NAPA VALLEY We sincerely hope that you enjoy this magazine and that it inspires you to taste, see and feel Napa Valley—whether you are local or from out of town. In the pages of this first issue, we have focused on a variety of fun and interesting topics: follow the tips for planting a vintner’s garden (page 15); explore the numerous spaces and shapes of the valley (page 21); experience magic and get the kinks out with local rock star masseuses (page 33); and learn how to pop the question ‘Napa Valley style’ (page 39). Planting A Vintner’s Garden Pick your crops according to your wine preferences for the ultimate in farm-to-table food and wine pairing at home. Living the Napa Valley lifestyle means that even the simplest of meals should be somewhat decadent. To impress friends and family, culinary masterpieces can be artfully paired with complementary wine styles, but what herbs should be used when creating a dish for a specific varietal of wine? The best way to ensure a fully stocked supply of culinary herbs is to grow them on your own! From windowsill planters to small pots, or even open patches of ground in your backyard, planting herbs is easy and rewarding—both for you and your dinner guests. Visit your local nursery to ask about herb “starters”—young plants that are healthy and have a decent enough rootstock to plant into a small pot or straight into the ground. Planting is simple! Remove the starters from their small trays and tease the roots gently; water the soil, dig a small hole, and gently place the starter into the hole. Be sure to bury the roots well and delicately press the soil down around the base of the plant. In no time, your culinary herb garden will be thriving. By seasonally planting and rotating an array of culinary herbs, you can be prepared to whip up any dish and pair it perfectly with a wine from your cellar that you’ve been anxiously waiting to open. – BY MELISSA VOGT –


... Sauvignon Blanc ... For Sauvignon Blanc, a crisp white wine with decent acidity and fruit flavors, herbs with a bit of pungency and earthiness bring forward a nice spiciness in the wine that is pleasurable on the palate; rosemary, oregano, parsley, sage and thyme are excellent choices. Softer and subtler herbs such as basil, cilantro, and tarragon will work to enhance the fruit flavors in the wine. Chives, dill and fennel—herbs that have distinct flavors that can be overwhelming if too much is used—go a long way with a wine like Sauvignon Blanc. Use just a small amount of these herbs for added complexity to the flavor of the dish, as well as the wine.

... Chardonnay ... Whether the Chardonnay is oaked or unoaked will determine which herbs to use when pairing with this versatile varietal. For unoaked Chardonnay, herbs with fresh and bright flavors such as basil, cilantro, and tarragon will complement the wine beautifully. In the same case with Sauvignon Blanc, it is best to use small amounts of dill and fennel when pairing with unoaked Chardonnay—this way the unique flavors of the herbs do not overpower the wine. For oaked Chardonnay, which is richer in body and texture, the pungency and earthiness of parsley, thyme and chives can withstand the rich flavors of the oaked wine.

... Sparkling Wines ... Although many people might typically think of sparkling wines as a celebratory beverage, they actually pair quite well with a wide range of cuisines. The effervescent acidity and freshness on the palate make sparkling wines a playful companion for herbs such as basil, cilantro, parsley, tarragon and even dill. Depending on your palate preference, use at least a couple of these herbs in combination with each other for maximum pairing pleasure.

... Rosé ... Rosé is not just a fabulous afternoon-sipper kind of wine, but also a light, food friendly wine with great pairing potential. It’s often a go-to choice for lighter style foods, such as salads and dishes that include raw vegetables. Basil and tarragon give the wine a bit more depth, while parsley provides a pungency that is nicely contrasted against the often fruit forwardness of these delightful wines.

... Pinot Noir ... This is a varietal with incredible pairing potential; pork, duck and salmon are delightful when paired with Pinot Noir, but become even tastier when spruced up with complementary herbs. Try using intensely flavored herbs, such as parsley, rosemary, thyme, sage, and chives to bring out the rustic quality of an earthy Pinot Noir. For more fruit forward Pinot Noir, gentle herbs like cilantro and tarragon will enhance the body of the wine and blend in nicely with the range of fruit flavors that Pinot Noir can express. If your palate desires something unique, whip up a dish that calls for dill or fennel and be prepared for an excitement of flavors on the palate.

... Merlot ... Merlot is a full-bodied, powerful wine that demands strong flavored herbs when being paired. Go for the hardy, earthy herbs such as rosemary, oregano, sage and chives when pairing with richer dishes that include red meats. Basil, tarragon and thyme will also work, if prepared with lighter foods such as tomato-based sauces, roasted vegetables and chicken.

... Cabernet Sauvignon ...

Cabernet Sauvignon is a Bordeaux varietal, like Merlot, so this wine also does well with stronger herbs. Pair this robust varietal with rich dishes full of red meat and earthy herbs like rosemary, oregano, thyme and sage; these flavors will complement the richness and herbaceous flavors that can sometimes be found in Cabernet Sauvignon. Basil, though lighter and fresher, can bring a bit of levity and freshness to a Cabernet Sauvignon pairing. If you prefer to strengthen the rich, herbaceous notes in the wine, add some chives to the dish for additional complexity.

... Zinfandel ... Zinfandel is an awfully robust wine, with a lot of intense, fruity characteristics; to properly pair this wine with complementary herbs, reach for a few earthy classics like rosemary, oregano and thyme. These hardy herbs will withstand the often-higher alcohol content and fruitiness. For a bit of contrast, go with dill—this will liven up the sometimes peppery characteristics of Zinfandel. For herbs that will give subtle complexity to the wine, go with softer flavored herbs like basil and cilantro.

... Syrah ... Syrah is the most robust of these red wines. This varietal is often paired with rich, fatty and roasted dishes. Since the wine is so intense, it is good to pair it with the stronger, earthier herbs: rosemary, oregano, thyme, sage and parsley. The flavors of these herbs will be strong enough to stand out, even as they intermingle with the intense flavors of the wine. Since Syrah tends to have decent smoke and pepper flavors, lively herbs like chives, basil, cilantro and dill are also good options to introduce a bit of contrast to the pairing.

Napa Valley Spaces Wine Country Shapes When people think “Napa,” what immediately comes to mind for most is “wine,” but I am as equally interested in “wine country” and how space is used to bring this concept into existence in the building and estate designs of the valley. The quintessential California wine country design is the modified barn shape, an A-line with an added, extra high crossbeam, creating a two- or three-tier building with an almost steeplelike shape in profile. Equally as iconographic is the European chateau style, its large front door, columns, and multiple windows identifiable across the world as “winery.”

Castello di Amorosa Moving afield from these shapes brings us to some of the more memorable wine country designs throughout the valley. Dario Sattui spent fourteen years assembling all of the stone and support pieces necessary for the creation of the stunning Castello di Amorosa. The 107 rooms of the 13th-century-styled castle contain ramparts, hand-painted murals, a torture chamber and a labyrinthine cellar amidst their 121,000 square feet, making "The Castle" a winery like no other anywhere in the United States. There's even a chapel which houses a weekly public Sunday Latin Mass, too, and all this takes place inside a structure of imported European brick, wood and iron, as well as over 8,000 tons of local Napa stone. – BY JOSH STEIN –

Opus One Continuing on with non-obvious spatial shapes, Opus One's perfectly manicured, grass-covered, shallow inverted cone comes immediately to mind – its central column rising out and above the rotunda, the winery is literally one with its vineyards. Designed to match the work taking place within, its elements blend Old World and modern sensibilities: California redwood, stainless steel, and Texas limestone in combination with thousands of French barrels and art works to match. As with the single wine produced by the estate, no appreciation of the valley would be complete without Opus as a touchstone. 22

Artesa Vineyards & Winery Artesa continues with this use of horizontal space, but in a Carneros context; this means making use of a hillside, within which is set the ziggurat steps and fountains of the winery’s face, almost sphinx-like in repose. Looking over 350 acres of vines gives great contrast to the views of the Bay, a sea of green leading to one of greys and then the distant silhouettes of the San Francisco skyline. Inside, the use of light and glass gives an airy feel, a glossy, glassy futurism set alight by shimmering industrial artwork pieces and light-filled open air.

Whitehall Lane Winery & Vineyards Equally, Whitehall Lane and its angles and geometric block stack came straight from the mind of an architect-turnedvintner, Art Finkelstein, who passed away a few years ago. His design, though, has stood the test of time. It is a statement of clean lines, not in imposition to, but in converence with, the train tracks of the road, Whitehall Lane and Highway 29. Redesigned a few years ago, the current exterior playfully uses color to enhance the geometric shapes, and the extensive wood pergola serves today as a launch tube into the winery’s world from the busy highway beside it.

Darioush Darioush is also a standout in pushing away from the road, its buildings modeled on the ancient Persian capital Persepolis and led into by a private fountain-lined drive culminating in a blazing raised torch. Five years were spent gathering the materials for this palace’s elements, including the sixteen freestanding exterior columns leading up to the front entrance. The yellow travertine stone used externally and internally was quarried near Persepolis and cut in Turkey and Italy before being sent to Napa to cover the entire building. Amongst various architectural elements are an amphitheater for events, multiple exterior and interior fountains, and my favorite detail, a threestory wall of water to accompany the main staircase. Sterling Vineyards Continuing this influence, Calistoga’s Sterling combines the white walls, plaster, and curves of the Aegean with the most unique of literal last miles: the winery’s aerial tram and its gondola up to the winery itself. Modeled after Mykonos, home of Greek civilization, the stucco shines in the afternoon light, visible from miles away on Highway 29, perfectly framed by the v-shaped confluence of the Mayacamas and Vacas at the top of the valley. The winery’s eight bells are from London’s Church of St. Dunstan’s-in-theEast, originally founded in the 10th century, and the tolling of these firescarred antiques sounds down through the upper valley on the quarter hour. Stroll amongst the white walkways at the right time of the afternoon, and you will feel as if the Mediterranean is right outside.

You buy yourself a good guitar, take some lessons and practice for years. After awhile, you might actually call yourself a musician. But the truth is, you are not likely to ever become another Eric Clapton or Carlos Santana. That takes magic. For these five people in the Napa Valley, their path was headed in a different direction but the goal was the same—to be the best. They made it. They are the rock stars of the Napa Valley massage world. Each in their own time—after years of training and practice, would discover that they had the magic. And it had been with them since birth … literally in their hands. Finding the magic, however, is not always easy.

Debbi Hamilton Like so many others who follow their passion, for Debbi Hamilton, her riches have come in a form she calls “a psychic salary.” For two decades, Debbi has been amassing a fortune in good karma. As a massage therapist at the iconic Silverado Resort Spa, she has reached the top level in her field, but it is the gratitude of her clients that tells Debbi that she has reached the status of a rock star massage therapist. Being a specialist in Lomi-Lomi, a flowing, rhythmic and deeply healing massage that has been an important element of Hawaiian culture for centuries, Debbi is able to extract the tension out of every tight muscle she encounters. She also practices Tui-Na, an ancient form of massage from China that was once used to prepare soldiers to go into battle, leaving them relaxed but energized. “A lot of therapists are right-brained. I’m a little more left-brained. I take a studied approach to things. I tend to incorporate a little of everything I’ve learned in each massage I perform. I also have a lot of years of listening to people and I’m good at picking up on non-verbal cues, as much as what people tell me.” But it is still the love of what she does, the payment in gratitude that she receives every day, that keeps Debbi into her work, heart and soul. Magic seems to just come with the territory.

Deeana Buck Deeana Buck had worked hard to become a physician in her native country of Russia. However, as her young son began to approach his college years, she knew that he needed the opportunities that America offered in order to reach his goals. She also knew that she would have to give up something she loved—the practice of medicine. Her fourteen years of work, all the years of training and schooling, would have to be left behind. The expense and time required to obtain a U.S. license put it completely out of reach. She’d have to find another job. When a friend suggested that she might like a career as a massage therapist, Deeana was intrigued. After all, in Russia if a physician determines it to be beneficial, a patient will often receive a massage every day during a hospitalization. The Russian medical community has a long held belief that therapeutic massage is a vital tool in the healing process. “I realized that, through massage, I could still help people. As a medical professional, I have had extensive training about how a body works. I know anatomy.” What Deeana didn’t know was that she also had the magic. As she began her career in massage, she realized that she truly enjoyed helping people to feel better, healing them in a way that brought joy to her as well. “I love hearing people say ‘I feel so much better!’ and knowing that I was able to relieve their pain and stress.” Deeana Buck has been at The Preserve Spa at the Napa Valley Marriott for eight years now. “Deeana cares deeply about the guest experience,” says spa director Trudy Smith. “That defines everything. She is our lead massage therapist and she gives that same level of care to all of the staff which enables them, in turn, to give their best work to our guests.” 34

David Vagnerini Twelve years ago David Vagnerini was visiting a couple of friends. The mother and daughter duo had just finished massage school and they offered to use some of their new found skills on his sore neck. “My friend told me all about the muscle groups and how different massage techniques were used. It was fascinating and I really began to think this might be what I wanted to do with my life. I was right. From the moment I began school, I just loved it and I’ve loved it ever since.” The decision to become a massage therapist literally transformed his life. “I’m so lucky. I have been given a natural touch to give massage and to do it well. I can make a difference in people’s lives. How many people get to do that every day?” At Health Spa Napa Valley, where David has worked for eleven years, he has chosen to specialize in deep tissue work, working primarily with athletes, as well people who are dealing with chronic pain problems. He, too, incorporates many Tui-na techniques, including hand movements, stretching and mobilization into his massages. “I had a woman come into the spa about two years ago. She had been dealing with severe chronic pain down her arm. I found the muscle from which the pain originated, got it to release the tension it held and the pain went away immediately. She was so thankful. I’ve never forgotten the good feeling that gave me.”

New Arrivals Great Eating in Downtown Napa There was a time when one had to head at least to Yountville, if not points further north, in order to find new and innovative restaurants in the Valley; I am more than happy to report that such is truly no longer the case. Here are just a few of the newest faces in the Napa dining scene—proof that one can indeed have an evening’s enjoyment without the travel. Whether one is looking for relaxed comfort, upscale dining, or world-influenced cuisines, the Napa city dining scene is robust and exciting as 2015 begins. Some may remember that Yountville’s Ad Hoc was originally supposed to be temporary, but its popularity changed those plans. Well, the latest of Thomas Keller’s string of valley spots—Ad Lib, at 1600 Atlas Peak Road, within the Silverado Resort’s Royal Oak—is truly a temporary pop-up, meaning get there soon or miss it forever. Offering a classic menu of traditional recipes prepared the Keller way, the dishes present a selection of Americana on the plate: oysters on the half shell, shrimp cocktail, clam chowder, even kielbasa, for starters; pot pie, schnitzel, lamb chops and beef wellington for mains; glazed carrots, creamed spinach, mac and cheese and whipped potatoes for sides. – BY JOSH STEIN –

Not far from there, the eastern edge of the city has finally had its solitary restaurant space open again with the arrival of Cordeiro’s Bar & Grill at 2025 Monticello Road. Blending a classic steakhouse menu with a fresh farm-to-table approach, Executive Chef Chris Johnson insists on using only the freshest local ingredients; the Mesquite grill and brick oven add versatility to the extensive menu, which includes Oysters Rockefeller, duck confit flatbread, mushroom ravioli, and a lot of grilled meat and seafood options. The unique four-acre lots offers multiple dining rooms, a full bar, and outdoor dining and lounge areas, making it a wine country local spot. Just a block down from there is Napkins Bar and Grill at 1001 2nd Street, which also houses its latenight club iteration, Napkins Nights. With the munchie-desiring in mind, the menu, happy hour bar menu, and late-night menu offer a lot of fingerfriendly plates, including bison sliders, habañero wings with avocado, and fried chicken and Wagyu beef brisket sandwiches. Equally, the brunch menu offers latin-influenced omelets, huevos rancheros and chiliquiles, perfect opportunities to help recover from the Napkins Nights festivities the previous evenings. Around the corner is TORC at 1140 Main Street. Chef Sean O’Toole parlayed his fifteen years of international restaurant experience into TORC, a contemporary, ingredient-driven American restaurant with global influences. Designed as a relaxed gathering place, the menu offers Asian and Europeaninspired platings of seasonal produce and proteins, including roasted chicken for two, multiple styles of ocean and freshwater fish, and handmade pastas. Presented within the dark woods, brick and stone of its two-story downtown space, the overall effect is enjoyably pub-in-wine-country, comfortable and comforting. Moving toward city center, overlooking the Napa River is the newest upscale hamburger spot, BurgerFi, at 967 1st Street. These premium burgers are made from all-natural Angus beef, giving the flavor of steak in a hamburger without any antibiotics, hormones or additives. BurgerFi takes the same approach to specialty items like Wagyu Kobe beef or chicken-apple hot dogs, a half-dozen fry options, craft beer and wine—all with an emphasis on environmentally sustainable best practices, which extend beyond the food itself. So, these are just a few of the new spots, awaiting your hunger and sense of adventure. Do yourself a favor and skip the time and distance of heading up-valley the next time dining out beckons: the Napa food scene awaits with plenty of delicious, often surprising options. St. Helena Appellation Discover All That It Has to Offer

W

hether you are a Napa Valley local or an out of town visitor, one thing is certain—both groups have an insatiable appetite for captivating cuisine and wonderful wine. In the appellation of St. Helena, a sea of

expansive valley floor vineyards surrounds the appellation’s namesake tiny town. St. Helena has it all: artisan craft boutiques, artisanal food purveyors, fashionable clothing shops, exquisite jewelry stores, delicious bakeries, quaint coffee shops, stunning art galleries and phenomenal restaurants that will leave your taste buds wanting more. Many people may not know that St. Helena is actually where the Napa Valley wine industry first got its start. St. Helena is home to the oldest winery in all of Napa Valley— Charles Krug Winery, which has existed in its current location on Highway 128 since 1861. Not long after Charles Krug himself built the first commercial winery in the valley, he began producing some of California’s first varietal-labeled wines. Krug was a major advocate for the wine industry and even founded the St. Helena Viticultural Association (SHVA). Although the SHVA was disbanded during Prohibition, the organization is back in action today—with more than eighty winery and grower members upholding incredibly high standards for Napa Valley’s wine industry. Although Charles Krug passed away in 1892, it wasn’t until after Prohibition ended that the Mondavi family entered the scene in 1943. They purchased the winery, renovated it, added a cold fermentation room and replanted the vineyards. This would be the beginning of the revival of Charles Krug Winery. Only a year later, they produced their first vintage of Cabernet Sauvignon. Brothers Robert and Peter Mondavi shot the winery into stardom with many modern innovations, viticultural practices, winemaking techniques and their impressive collection of wine. Today, members of the Mondavi family have won countless awards and inductions into various halls of fame in the wine industry as a result of their incredible influence and significant impact in the Napa Valley wine industry. Today, Charles Krug Winery is a must-see, historic destination in the valley. With a beautiful, onsite culinary garden for students of the Culinary Institute of America to use, state-of-the-art winemaking facilities, 140 acres of luscious estate vineyards, pieces of Napa Valley winemaking history, and a tasting room with just the right blend of elegance and historical rusticity, Charles Krug Winery is the kind of place tourists get excited about and locals can’t get enough of. Inside the beautiful tasting room, the welcoming hospitality members greet visitors right away. Various levels of wine tasting are offered—everything from a $15 barrel tasting to a $50 limited release tasting. Those looking for a glimpse of the history and estate can schedule the $60 tour and tasting. Current releases at Charles Krug Winery vary in both vintage and style. They pour everything from newly released wines to older vintages, which have seen extensive time in the cellar. Classic Napa Valley Bordeaux varietals like Sauvignon Blanc and Cabernet Sauvignon grace the tasting list, as well as other coveted wines such as Pinot Noir and Zinfandel. The 2013 Sauvignon Blanc, made form estate grown fruit, has an annual production of a small 300 cases. The wine sees seven months on its lees during aging in stainless steel tanks, which translates to a round mouthfeel and a smooth texture. On the nose, kiwi, lemon and unripe melon rind are present. The palate shows beautiful notes of bight lemon, cantaloupe, honeydew, ripe pear and a touch of kiwi on the finish. Though the wine is creamy at mid palate, it finishes quite crisply. One of their newly released Cabernet Sauvignon wines is their 2011 Family Reserve from the Howell Mountain appellation. Fruit is sourced from two different vineyards for this wine: Cold Springs Vineyard and Rocky Ridge Vineyard. The vines sit at an impressive 1,600 feet above sea level in the mountainous vineyards, which are planted in rocky, volcanic soils. The final blend of fruit is 95% Cabernet Sauvignon, 3% Petite Verdot and 2% Malbec—all traditional Bordeaux varietals. The wine sees nineteen months in new French oak before being bottled. The 2011 vintage is the inaugural release of this wine and it is a fantastic first impression. The nose boasts notes of cedar, currant and dark cherry. On the palate, the chalky texture fills the mouth with a sense of terroir; soft, black cherry and blueberry fruit provide a nice flavor for the voluptuous body and dry, mineral finish of this luscious wine. Make it a Destination: V. SATTUI WINERY Another winery with a long history of winemaking in the Napa Valley is V. Sattui Winery. Going back more than 125 years, Vittorio Sattui— Italian immigrant and founder of V. Sattui—began making wine in San Francisco in 1882. When he first immigrated from Italy, winemaking was only a hobby, but patrons of his boarding house enjoyed the wines so much that he decided to make it his full time job. Following his passion for winemaking, Vittorio established his first winery—named St. Helena Wine Cellars—in 1885. He named the winery after the small town in which he sourced his fruit from. Back then, St. Helena was a small, agricultural town with a lot of vineyards, but very few wineries. It wasn’t long before he expanded his business and upgraded to another location in the city, renaming the winery V. Sattui Wine Company. Though his wines were a smashing success, when Prohibition hit in the 1920s, V. Sattui wine production was halted until it was both safe and legal to continue making wine again. Fifty-five years later, Dario Sattui would resurrect his great grandfather Vittorio’s dream of winemaking in Napa Valley. In the 1970s, Dario apprenticed for many wineries in the valley before finding investors to help purchase land and begin building his winery. By 1976, V. Sattui Winery in the appellation of St. Helena was a reality. Wanting to preserve a bit of Italy in California, Dario insisted on including an artisan cheese shop and deli on the estate property. In the subsequent decades that followed, Dario and the Sattui family were able to purchase more vineyard parcels throughout Napa Valley; they 56

expanded their wine production to the current average of about 40,000 cases per year. This case production sees roughly sixty different varietals, making each bottling an exclusive, small production treasure. Today, V. Sattui Winery does not distribute their wines to local retailers or restaurants, but focuses strictly on a direct to consumer approach. To enjoy and purchase V. Sattui wine, tourists and locals must either visit the winery directly or order wines from their website. With a cheese case that holds 200 local and imported cheeses, an onsite deli, roughly sixty varietals of wine to taste and purchase, and stunning picnic grounds in the heart of Napa Valley, who would pass up on an opportunity to spend an afternoon at V. Sattui Winery? The answer is no one. At V. Sattui Winery, there is always a hustle and bustle in the air, and it is clear that tourists and locals recognize V. Sattui as a treasure in the St. Helena appellation—as well as the perfect “destination” winery in the heart of Napa Valley. The winery boasts three impressive tasting rooms for various experiences: the general tasting room, a wine club member only tasting room, and a reserve wines tasting room for those who are interested in experiencing the very limited production wines that V. Sattui has to offer. The estate is both kid and dog friendly, making this the perfect haven for families who live in the area or are visiting from out of town. With roughly sixty-five varietals to choose from when tasting, V. Sattui really does a wine for every palate.

LONG MEADOW RANCH WINERY & FARMSTEAD The St. Helena appellation is lucky enough to be graced by the presence of Long Meadow Ranch Winery & Farmstead (LMR). This destination has got it all; in the tasting room, guests can enjoy an array of LMR wines and olive oils, before heading over to the Farmstead restaurant for one of the freshest, most locally sourced meals in town. That’s not all though, because LMR also offers extensive tours of their winery, caves and farms at their three locations in Napa Valley. Between the three properties in St. Helena, Rutherford and the Mayacamas Mountains, LMR operates extensive wine, olive oil, cattle and farming production. For their Farmstead restaurant at the St. Helena estate, LMR grows the majority of the produce that they use in their country, home-style dishes—served daily from 11:30 a.m. and 10:00 p.m. The olive oils used to prepare the delectable dishes are produced from their estate grown olive trees at the Mayacamas property—many of which date back to more than 100 years ago; they even cold press and mill the olives onsite before bottling. In addition to the olive oil production on the Mayacamas land, LMR also raises grass-fed beef, chickens for eggs, and they grow produce and fruit for the Farmstead restaurant. Before jumping over to Farmstead for bunch, lunch or dinner, guests should enjoy wine tasting and olive oil tasting in the historic Logan-Ives farmhouse, which dates back to 1872. Beautifully crafted and well maintained, this quaint house is the perfect setting for wine tasting in St. Helena. With several tasting options that range from $15-$35, there is an experience to suit a variety of preferences. Of their white wines, the 2013 Chardonnay is both well balanced and flavorful. A long 2013 growing season with moderate temperatures contributed to the high quality characteristics of this wine. Fermentation in stainless steel tanks, followed by malolactic 58

fermentation in neutral oak barrels, gives this Chardonnay an impeccable balance between crisp acidy and creamy textures. Subtle baking spice, minerality, and sweet lemon give way to flavors of green apple and a touch of caramel on the finish. This Chardonnay is delightfully creamy at mid palate, but finishes with beautiful bright acidity—finding just the right balance. Of the red wines that LMR produces, their 2010 Cabernet Sauvignon—a blend of 77% Cabernet Sauvignon, 20% Merlot and 3% Cabernet Franc—is drinking quite nicely right now. The aromatics of this wine are classic Bordeaux varietal, with boundless aromas of herbs and bell pepper. The palate expresses excellent notes of sage and leather, alongside flavors of currant and gentle blackberry fruit. With excellent structure, pleasurable tannins and a voluptuous body, this is a Cabernet Sauvignon that can easily be enjoyed now or put to rest in the cellar for a bit longer. Dining at Farmstead is a truly authentic taste of Napa Valley. In the welcoming, rustic atmosphere of the restaurant, diners delight in the hardy, country-style meals of Executive Chef Stephen Barber. With delicious starters like the lamb sliders and salad, even the beginning of the meal is packed with serious flavor. The lamb sliders are of course made with grass-fed lamb and served on a warm potato bun with local Redwood Hill Farm goat’s milk feta cheese, caramelized onions and sweet tomato marmalade. Biting into the warm, homemade potato bun as it wraps around the tender, juicy grass-fed lamb is like tasting a piece of heaven. Sweet, salty and savory flavors mingle as the caramelized onions and tangy feta cheese grace the palate. With both complementary and contrasting flavors, these sliders are an instant classic at the start of the meal. One of the best main dishes at the restaurant is by far the slow cooked short ribs with broccolini and grits. Crispy on the outside and tender on the inside, the ribs are texturally flawless and packed with flavors that suit the homemade grits, which are mixed with vela cheddar cheese and Fresno chiles. For the earthy, vegetal component, the broccolini provides just the right amount of greens to balance out the richness of the ribs and grits. This entrée is chock full of succulent, smoky and sumptuous flavors that will leave even the toughest food critics wanting more. For dessert, the classic beignets are warm, delightful pillows of flavor that only become tastier when dipped into the Bourbon and caramel dipping sauce that boasts an array of baking spices. For those looking for a bit of zest in their life, the stunningly prepared lemon meringue pie is out of this world good. The texture of the graham cracker crust contrasts against the smooth, lemon custard filling that is sure to be more flavorful than another other lemon custard you have ever tasted. Not too tart and not too sweet, this delectable filling finds just the right balance of deliciousness. On top of the lemon custard is the classic Swiss meringue—the egg whites are warmed, whisked steadily until cooled and then torched in crème brûlée fashion. The result is decadent pie perfection. Educate Yourself with Wine Enthusiast Courses: CULINARY INSTITUTE OF AMERICA

There’s no doubt that in Napa Valley, there are a lot of incredible options for wine enthusiasts to educate themselves about wine. With that being said, St. Helena is by far the premier appellation for wine education experiences. In St. Helena, none other than the Culinary Institute of America (CIA) hosts a plethora of wine education courses that both consumers and wine industry folk can attend. Though from the outside, the enormous, stone architecture of the CIA can be daunting, don’t let its majestic presence intimidate you. The CIA is, of course, one of the elite institutions for culinary enthusiasts to sharpen their skills before entering into the world of fine cuisine—but the CIA is also open to the general public. Locals and tourists can enter the sturdy, wooden doors to experience their onsite wine tasting bar, casual café, culinary marketplace and two fine dining restaurants. These features, in addition to the vast offerings of wine education courses, make CIA an excellent place to spend an afternoon and enhance your wine knowledge. One of CIA’s most incredible wine education courses—highly revered by all who attend—is the Marriage of Food and Wine course, taught by John Ash. You may recognize his name from the highly acclaimed namesake restaurant in Santa Rosa, John Ash and Co., which he founded back in 1980. Since then, he has become a renowned wine educator with a highly dynamic and engaging teaching style that wine enthusiasts can’t get enough of. The Marriage of Food and Wine with John Ash is held once a month on a Sunday, between 1:30 - 4:00 p.m. The course is open to both CIA students as well as wine enthusiasts and structured in a highly instructive manner, though Ash’s presentation of the material is incredibly fun and engaging. Of course, there is plenty of food and wine to go around throughout the three and a half hours of instruction. The class begins with the highly cooperative experience of guessing the aromas of specific wines. Ash explains that each of the eight wines in front of the students has been doctored to overwhelmingly smell like one common wine aroma. Students gather in groups to smell the wines and use their olfactory senses (no tasting, just yet!) to deduce the right aroma, with the help of the A.C. Noble Aroma Wheel—a learning tool commonly used in the wine industry to familiarize people with wine aromatic terminology. Of course, the team that guesses the most aromas correctly goes home with a bottle of wine—produced for the CIA by Greystone Cellars in Oakville. After the aroma challenge, five fresh glasses of wine are poured—ones that haven’t been doctored—for the food and wine pairing portion of the class. As Ash discusses the senses of smell and taste, and what factors influence the aromas and flavors of wine, students are encouraged to “play” with the food and wines that sit before them. Ash playfully walks students through the way sweet, sour, salty, bitter, pepper and Unami flavors interact with various varietals and styles of wine. Throughout the course, students experience pairing with Sauvignon Blanc, Chardonnay (oaked), Pinot Noir, Cabernet Sauvignon and Riesling. From start to finish, Ash is incredibly engaging and knowledgeable; he answers everything from basic to advanced questions, and always makes sure that learning about wine is both enriching and fun.

Learning about Wine is Fun: TRINCHERO NAPA VALLEY At the picturesque winery of Trinchero Napa Valley, decadence knows no limits when it comes to interior design and stunning architecture. The twenty-two acre estate is home to the brand new winery, hospitality center, tasting room and thirteen acres of Cabernet Sauvignon vines. Trinchero Napa Valley is without a doubt one of the most elegant settings for wine education in the valley. As Italian immigrants in the early 1920s, the Trinchero family landed in New York when they first arrived in America. It wasn’t until the 1940s that they made their way to Napa Valley to pursue the American dream. Mario and Mary Trinchero initially began making wine under the Sutter Home name, though they only sold their bottles directly from the winery and locally to friends. Even without major distribution, their wines were received well and gained recognition outside of California; visitors who enjoyed their wines spread the word throughout the United States and in 1968, their Reserve Zinfandel was given a positive write-up that increased the demand for their wines. In 1972, the first Sutter Home White Zinfandel was made. Mario, out of unwillingness to let anything go to waste, took the off juice from some of the Zinfandel grapes and bottled it as its own wine. Two years later, a batch of this White Zinfandel went wrong and fermentation stopped earlier than usual—leaving higher sugar levels in the resulting juice and therefore, resulting in sweeter wine. Thus, what we know today as Sutter Home White Zinfandel was born. Tourists who tasted this wine couldn’t get enough of it, so much so, 62

that when they went home they called up the winery to see how they could get their hands on more. Without distribution, this was not an easy task, but the demand for the wine was high. It wasn’t long after that Sutter Home began distributing their wines. Over the years, Trinchero family wine production has grown to include more than a dozen labels. One of their higher end labels is Trinchero Napa Valley—producing some of the most high-end bottlings of Napa Valley wine, made with fruit from several premier appellations. Wine tasting experiences at the etstae include opportunities for wine education and in the new hospitality center, longtime friend of the family and Certified Wine Specialist, Barry Weiss, has created the ultimate educational wine aroma course. What’s more, is that this course is a lot of fun. The hospitality center, in which the Mastering Wine Aroma course takes place, leaves guests in awe of the conceptual and artistic design. Many of the architectural and design pieces were crafted specifically for Trinchero Napa Valley—a wall of wooden hats pays homage to Mario, priceless artwork adorns the walls, ivory tusks grace the walkway entrance table, and historical family photos emanate the pride and gratitude that the family has for the valley. Mastering Wine Aromas is more of a game than it is a course. Friends and family can gather for an afternoon of wine tasting and education while Weiss waxes poetic about the aromatics and flavors of wine, in addition to hosting the wheel of fortune-style game. An artisanal, handcrafted wheel is home to dozens of tiny glass bottles that contain common wine aromas. After a discussion of how the olfactory senses work, the proper way to smell the aromatics of wine, as well as an in depth look at primary, secondary and tertiary aromas, the game begins. Guests are divided up into teams and take turns spinning the aroma wheel; the team whose turn it is gets to make the first guess, before passing the aroma to the opposite team for a chance to guess the answer—if the first team cannot guess correctly. The game continues on in this fashion, all the while sipping on some of Trinchero Napa Valley’s finest wines. Not only is Weiss an incredibly knowledgeable host, but he is also a dynamic, engaging and fun wine educator. His speaking style is both informative and friendly, making jokes along the way, but he is always sure to answer serious questions and provide educational responses so that guests can walk away from the experience having learned a great deal about wine. Trinchero Napa Valley’s Mastering Wine Aromas experience is by far one of the most exciting, fun and interactive ways to learn about wine in Napa Valley. Don’t Forget to Dine When You Wine: GOOSE & GANDER When visiting St. Helena, at some point, there will be a need to stop for food. In between wine tasting, winery experiences, winery tours, and wine education courses, you will need to satiate your appetite. There is no better way to do this than to visit one of St. Helena’s newest, premier dining destinations—Goose and Gander. Located just off Main Street, tucked away beneath beautiful trees in a quaint, historical, lodge-style home, Goose and Gander provides the perfect respite for a luxurious lunch or decadent dinner. Inside the restaurant, the beautiful space is full of wood, accented with colors of red, and emanates warmth that is all too inviting. Edison light bulbs provide soft lighting and when the weather is cold, an appealing fireplace glows in the corner. The kitchen window is expansive and open to the dining area, giving restaurant-goers an intimate look behind the scenes; this also creates an energetic buzz about the restaurant among the chatter of guests. The servers are friendly, attentive and quick on their feet—even during the busiest dining hours. Goose and Gander features a seasonal menu that is made with produce and meat sourced primarily from local farms. Their cocktail list doesn't feature your ordinary rum and coke offerings, but rather focuses on artfully crafted cocktails that include fresh herbs, fruit, spices and a variety of top shelf liquors. On top of their delightful cocktail concoctions, their wine bottle list is unbelievably impressive. With everything from half bottles of Billecart Salmon Brut Reserve NV to full bottles of 2005 Napa Valley Cabernet Sauvignon from 64

Opus One, their wine list has a bit of everything from producers both local and abroad. A hot item on the menu lately has been the Gorgonzola stuffed dates—served warm and recommended by the Michelin Guide. Providing just enough sweetness and pungency, this starter is the right way to begin a meal at Goose and Gander. These warm, stuffed dates are sprinkled with a bit of sea salt, which gives a good amount of contrast to the sweetness of the dates—a perfect combination of sweetness and savoriness. When crab is in season, the Dungeness crab specialty is a must-try. This beautifully plated dish is made with Vietnamese mint and a chili, lime glaze— making this preparation of crab incredibly tender and marinated. With a healthy portion of fresh ginger, delicately placed around the plate alongside chili flowers, there is an impactful amount of flavor that seeps into the crab and makes for an excellent dipping sauce. The crab is succulent and tender, and the flavors are fresh, lively, a bit spicy and overwhelmingly delicious. Another item on the menu that is sure to please is the free range quail, stuffed with chicken mousse, atop a bed of wild rice, quinoa, pumpkin seeds and golden raisins. The pumpkin seeds and wild rice add a layer of texture to this delightful dish—nicely juxtaposed against the tender and flavorful quail. The golden raisins also provide a nice contrast to the savory quality of the quail. On the inside, the quail is very succulent and the chicken mousse is packed with flavor; on the outside, the quail has been pan-fried to have a crispy coating, enhancing the overall complexity and texture of the dish. For dessert, the walnut bar served with a maple gaze, vanilla ice cream, caramel mousse and fresh pomegranate seeds, is decadently delicious; it is full of great baking spices and possesses both a soft and crunchy texture. Of course, the ice cream gives a temperature component by adding cold, freshness alongside the warmer caramel mousse and maple glaze. The mousse and glaze are sweeter than the walnut bar, which has a savory quality to it, and provides just the right amount of sugar against the rich walnuts. With just the right mix of locals and visitors, Goose and Gander is both comfortable and exciting. The friendly staff caters to each table individually and provides the appropriate amount of attention to feel pleased, but also leaves enough space for guests to enjoy an intimate experience. The seasonal, mostly local menu is exquisite, and alongside a cocktail and wine list that has something for everyone, Goose and Gander is certainly a premier dining destination in St. Helena. Wine Tasting & So Much More: CAIRDEAN ESTATE Although Cairdean Estate is relatively new to the St. Helena appellation, their innovative approach to creating a wine tasting destination that includes more than just wine, is already making a big splash among locals and those visiting the area. Currently, the estate features a luxuriously modern tasting room, a sensory wine tasting room, a cutting edge winemaking facility, picnic grounds, a deli named Butterscotts that is full of delicious goodies, and a gastropub-style restaurant—The Farmer and the Fox—that offers up everything from fancy cocktails to small delicious bites, and an excellent wine list for a fine dining experience that is sure to please. In the near future, Cairdean Estate will be opening the Redolent Mercantile—a shop that will feature a hand-selected array of luxury products—sure to be a destination that visitors will find attractive when looking for unique gift items for family and friends. With everything from wine to food and art to shopping, Cairdean Estate will soon be a leading destination for those looking to enjoy an authentic Napa Valley experience, without driving from location to location. Inside the tasting room, large windows draw on the outside beauty with views of endless valley floor vineyards; beautifully crafted wood tables, comfortable lounge chairs, and an elegant tasting bar all exude opulence—and rightly so, because the wines that Cairdean produces are equally as opulent. A delicately balanced 2011 Chardonnay, fermented in steel and new French oak, then barrel aged in 69% new French oak, has just the right amount of barrel influence and fruit on the palate. The body of this lovely Chardonnay is silky on entry with notes of caramel, green apple, pineapple and a touch of minerality on the finish. Equally as balanced is their 2011 Rosé—a blend of Cabernet Sauvignon, Merlot and Syrah. This wine is aged in a combination of steel and neutral oak with one new French oak barrel—for added complexity and spice; this unique combination creates a distinct and flavorful Rosé that is sure to gain a cult following when the hot summer weather returns. Juicy flavors of watermelon, strawberry, subtle lime blossom, and a touch of caramel all commingle beautifully on the palate. The tasting list represents a wide range of varietals and certainly sets them apart from other wineries in Napa Valley; their Cabernet Franc bottling gives wine tasters something unique to enjoy that is not produced as often as other Bordeaux varietals, such as the ever-popular Cabernet Sauvignon. The 2011 Cabernet Franc has an herbal nose with notes of black pepper and cigar box spice; on the palate, dark fruit flavors abound with notes of pencil lead and leather, lingering in the background. The body is full and voluptuous, the tannins are smooth, and there is a complexity to the flavors that shines amidst the gentle oak nuances. Another favorite is sure to be their 2011 Carneros Pinot Noir, made quite beautifully with raspberry and strawberry fruit on the nose, alongside earthier notes of wet forest and mushroom. On the palate, this Pinot Noir is dark and voluptuous, exhibiting a medium body and boasting notes of strawberry, orange zest, barrel spice and earth. Deep, rich and complex, this Pinot Noir is anything but shy. Inside The Farmer and The Fox, guests will be delighted to see the Scottish, gastropub-style atmosphere with comfortable, tufted leather booths, a glorious VERY NAPA VALLEY

bar filled with bitters, fresh herbs and spices, a classic Scottish plate wall, gentle lighting and handmade tables—not a single detail has been overlooked. The same can be said for the cuisine, which is both artfully prepared and plated. To start, the classic Scotch egg is a must-try—not only because it is absolutely delicious, but also because it is a Scottish staple that beautifully represents the restaurant’s entire theme. The flavor of this delicately prepared dish is stunning; a par-cooked, farm-fresh egg is wrapped in tasty sausage, and then coated in a deliciously crispy panko crust. Both decadent and delicate, the Scotch egg is the perfect start to any meal at The Farmer and The Fox. The game pie is another dish that wonderfully illustrates the strong passion for Scottish cuisine. Served beside a bed of pickled cabbage and carrot, the game pie is a hardy dish that is sure to hit the spot, especially after a full day of wine tasting. The flavors of the game pie are rich and indulgent, but balanced out nicely by the fresh, pickled cabbage and carrot. Furthermore, the crème fraîche provides a bit of tartness and acidity, which contrasts the earthiness of the dish. Overall, the game pie is a delightfully textured dish with a wide range of complementary and contrasting flavors— delicious at every bite. To finish off the meal, none other than the rabbit wellington should be enjoyed—especially if pairing with a hardy glass of Pinot Noir, such as Cairdean Estate’s 2011 Russian River Valley Pinot Noir. The rabbit is so incredibly tender and moist, and juxtaposed perfectly against the soft pâté and crispy, flaky pastry that surrounds it. The old school red wine sauce, 68

doused on top of the rabbit wellington provides just the right amount of savory flavor—complementing the inherently delicious taste of the rabbit. This dish is wonderfully prepared and a delight to enjoy, both from a texture and flavor standpoint. When tasted with the 2011 Russian River Valley Pinot Noir, absolute food and wine pairing perfection is achieved. Cairdean Estate is the kind of destination you can spend a couple of hours at or stay for the entire day. In fact, by the time they finish adding Redolent Mercantile, the art gallery, and the event space, it might even be the kind of destination you have to visit for an entire weekend. There is absolutely a wine for every palate in the tasting room, as well as a dish from the Butterscotts deli or The Farmer and The Fox that is sure to please even the pickiest of eaters. With beautiful picnic grounds and an outdoor lounge area, there are a plethora of outdoor spaces to enjoy while visiting the estate. Of course, for those looking to remain indoors, the wine tasting room and sensory tasting room provide two equally attractive options—studded with comfortable chairs, couches and even a fireplace. From a relaxing, casual afternoon to an elegant, decadent evening, Cairdean Estate can provide the right Napa Valley experience at any level of luxury that you are looking for. n

We recently sat down with him to tap into his wit and wisdom. VNV: Your knowledge of the wine business is legendary, but how is it possible that you know something as obscure as the most popular wine shop in Iowa City, Iowa? BC: At my age, I know a lot of trivial answers for trivial questions. It is John’s Grocery. Wally Plahutnik, an unforgettable wine buyer for them is why. This is a TV sitcom waiting to happen.

VNV: Some people might consider age three to be a bit young to start training a winemaker, but you’ve got your grandson, Calvin involved already. What advice are you imparting to him? And how much influence does he have over your winemaking decisions? BC: He provides the motivation. He is waiting in the wings, because someday this will all be his and I don’t want to leave him with a debt-ridden operation. If he will listen to me, I’ll tell him not to “over make” the wines…listen to the grapes and do what they say. Don’t manipulate them.

BILL CADMAN TULOCAY WINERY There aren’t many left of them. The originals. The men and women who had the guts, or maybe the lack of sanity, required to be a pioneer in the Napa Valley wine business during its infancy back in the 1970s. Bill Cadman is one of the last men standing. Bill is the kind of guy who “knows where the bodies are buried,” as he puts it. A consummate storyteller, the man thoroughly enjoys regaling his winery guests with humorous tales of the old days. Some of them might actually be true. But with Bill, you don’t question a story’s veracity, you just hang on for the ride, and it is guaranteed to be an entertaining one. He started his career working side-by-side with winemaking icons like Joe Heitz and Bob Mondavi. Having produced the first vintage of his own wine in 1975, he’s got four decades of expertise to call upon. Or at least forty years of accumulating bad jokes. 70

VNV: We noticed that you seem to constantly be accompanied by a rather loud and obnoxious little black dog. Does he influence your winemaking decisions as well? BC: No, Buddy is our advertising and marketing manager. He works for chicken gizzards. I always used to make fun of old men who cut up chicken gizzards for their tiny dogs. Now I’m there. VNV: If you were to describe your age within the following spectrum, which group would you be a part of…young and sexy, old but bold, or simply old as the hills. BC: Can I answer what I want my ideal age to be? I could fake sexy, but maybe not. Okay, then I’m older than the hills. VNV: The word “legend” is often thrown around when discussing winemakers in the Napa Valley. Who do you consider worthy of the title? BC: Hmm, I guess “legend” would suggest deceased but still significantly influential. So I would nominate both Robert Mondavi and Joe Heitz. Joe in particular was prescient. VNV: These days a home and winery such as yours would probably be referred to as “wine country rustic” in terms of design style. Would you agree with that description or would that be stretching it? BC: Definitely a stretch. Being kind, I would call it eclectic, maybe early caveman. Being honest, it is a bunch of mismatched buildings and materials thrown together. It was built by the first owner with leftovers from other projects. It has a genuine ’50s look and feel. Cobbled together might be accurate. VNV: Does anyone know that your daughter Brie is the brains behind this operation? Or should we keep that a secret? BC: Let’s keep that a secret as much as possible. She also has the looks, talent, sophistication and the charm. VNV: What one mistake did you make in your wine career? And conversely, what was the smartest thing you did in your wine career? BC: Just one? Well, of course, not buying vineyards when they were cheaper. The smartest decision? Not buying those damned vineyards!

this place back in 1972 was the best decision I ever made. VNV: How would you describe your winemaking style? BC: Non manipulative…I don’t want to have to add much of anything or take away much of anything, like alcohol. I’m an old timer so I believe in cool climate viticulture…lower brix, good PH levels. VNV: Who do you admire in the Napa Valley wine biz now? BC: That’s easy … Fernando Delgado. He has been working the Haynes vineyard in Coombsville for nearly forty years. He lives in the vineyard and really knows it. He practically names every vine. I really respect him. I’ve been buying his grapes for decades. VNV: The Napa Valley has been labeled as an “adult Disneyland” Is that disappointing? BC: Yes. Disneyland implies artificial and unreal. That’s not what the valley used to be and shouldn’t be. Nowadays some people who visit do so because it is a famous place, or even just to hobnob with the rich and famous, not because they have any real interest in wine. It would be sad if the day comes when wine isn’t the main reason people come here. They’ll come for rock concerts and because this is where Kim Kardashian hangs out. They come for the restaurants. Oh, wait. They’re now called eateries. VERY NAPA VALLEY

was one of the first winemakers to put a vineyard name on a bottle. Martha’s Vineyard as an example, and in some cases, numbered wine bottles. And you already know about Robert and his legacy.

VNV: What will the Napa Valley look like in fifty years? BC: Fifty years from now? I won’t know. I will be half a mile away at the other Tulocay (cemetery). You’ll have to ring the doorbell on my tombstone to ask me. VNV: When folks come to visit your home/winery, what’s the impression you want them to leave with? BC: Intimacy…if it’s raining they taste wine in my kitchen or at my dining room table. On a nice day they taste on my deck or in my front yard. And they experience all that with the owner/winemaker. It reflects a French word…“degage”…free of constraint, nonchalant. VNV: What is the next trend for Napa Valley wine? BC: “Natural” wine, but I’m not sure what it really means. It suggests not manipulated. And it plays to an audience that wants that or believes it wants that. VNV: By the way, how are you supposed to spell Tulocay and what does the name mean? And while we are talking about the name, why did you select that one for your winery? BC: It’s a native Indian word and I actually don’t know what it means. Since they didn’t write much, the spelling has many interpretations. A hundred years ago they used “u” in many cases for an “o”. I used the same spelling that the cemetery uses a half mile away from here… planning ahead I guess? 71

Napa Valley Night Life Where to Go and What To Do After a Fabulous Day of Wine Tasting When thinking of wine country, one often conjures up images of lazy days spent sipping wine and tasting cheese at one of the myriad of wineries that spot the valley. Perhaps a game of bocce or an early evening, slurping down espresso or tea with close friends, settles into the thoughtscape. Rarely do images of late nights and loud music come into the fold, but alas, those experiences are abound—even in seemingly sleepy Napa Valley. Yet, not all night-owls are the same: some prefer the quiet sophistication of craft cocktails in a jazzy backroom, while others may prefer a shot, a beer, loud music and booty shaking. Below, we have outlined various nightlife “profiles” in Napa Valley. From the late-night warrior to the backroom sophisticate, we have all of the bases covered.

The Late-Night Party “I try to push shots. I’m a bad influence,” says Rosa Murillo, a late-night cocktail waitress at Napkins in downtown Napa. On weekend nights, Napkins provides a fresh rotation of DJs and plenty of cocktails, or shots, if a certain waitress has anything to say about it. The party starts at 10 p.m. and goes all night, but don’t expect to waltz right through the door immediately. Co-owner, Ali Yildirim, says there is typically a line out front, and he enforces a strict dress code: No hats. No flip flops. No sports attire. Dress casual, but smart. If the line becomes too long, however, or if that ex you’ve been trying to avoid just so happens to be inside, there’s another option just around the corner. Eiko’s may be a quiet, upscale sushi restaurant during the day, but on Thursday and Friday nights, the joint explodes with the bumping sounds of local DJs and frenetic dancers on the lounge floor. While they have recently stopped having music on Saturday nights, word on the street is that Eiko’s has solidified itself as one of the “it” spots to start an early weekend. – BY STEVIE BRUNOLLI –

The “I Would Really Like To Impress My Date” Night We’ve all been there: you’ve met somebody new and are really into them, or you have a special guest to impress—perhaps the parents are visiting from their sleepy home in the midwest, and you really want to treat them to a classy and entertaining night. Enter the Rutherford Grill. Situated in northern Napa Valley in the small town of Rutherford, The Rutherford Grill offers up excellent California cuisine. Be sure to make reservations, however, especially if you are part of a larger party, because the place fills up fast. Added bonus: no corkage fee. After dinner, a drive into the city of Napa should lead you to Fagiani’s Bar at The Thomas restuarant. After being closed for 38 years, Fagiani’s reopened in 2012 under the supervision of the award-winning New York-based group, AvroKO Hospitality Group. The group, which already has one Michelin star under its belt, has partnered up with renowned drinksmith, Linden Pride, to create seasonally inspired cocktails, as well as fresh takes on more traditional offerings, such as their Sesame Sazerac and “Pom” Collins. The bar is open late daily, which makes it an especially enticing option for those weeknights when you’re itching to stay out of the house. For a more sonically stimulating evening, head to Uva Trattoria and Bar. Wednesday through Sunday, Uva offers live music that ranges anywhere from Jazz and Flamenco to R&B and Blues. The bar does close early—even on weekends, they stop serving at midnight. 74

While it is easy, when speaking of music in Napa Valley, to go immediately to The Uptown Theater or City Winery and pick up a list of their big-name upcoming acts, there is also an abundance of other live music venues, large and small, scattered across the valley. La Condesa, in St. Helena, for example, features up-andcoming acoustic acts, such as local favorites The No Buenos, on weekend nights, while previously mentioned Downtown Joe’s has afterhours live entertainment most nights and open mic on Tuesdays. Silo’s, a speakeasystyled music room tucked away in downtown Napa, offers up live music Wednesday through Saturday, where they serve local wines and craft brews from the Napa Smith Brewery. Adding to its underground mystique, bigname acts, including Grammy Award-winning musicians, have been known to pop into Silo’s for occasional sit-ins with the local players. After watching the professionals throw down, you may be interested in becoming part of the entertainment yourself—and perhaps, embarrassing yourself a little bit along the way. If so, Ana’s Cantina in St. Helena is a good place to round out the night. Every Thursday, this dive opens it doors to singers of all talent levels for a popular karaoke night that has many of the locals talking. Or singing.

The Craft Beer Outing

When it comes to craft cocktails, perhaps nobody serves them up with more aplomb than Mercantile Social, at the Andaz Hotel in Napa. With esoteric sounding ingredients, such as alipus san balthazar mezcal, and fun names, like the Drunken Staff Julep, Mercantile Social entices patrons into breaking free from the less exciting world of gin-and-tonics and vodka-sodas. Already tried all of Mercantile Social’s offerings and looking to try something new? Look no further than Goose & Gander in St. Helena. Resident barman, Scott Beattie, has culled inspiration from old stalwarts of the cocktail scene, such as the Manhattan and Pimm’s Cup, and added his own modern twists to create a menu of libations that, while reminiscent of a bygone era, are anything but boring.

Wine is great. Wine is deep and complex, and it has a tremendous international following. That’s all fine and good, and a big part of why anyone travels to wine country, but sometimes you just need a solid, cold beer. Downtown Joe’s, a brewpub in downtown Napa, fills that niche with 22 of their own craft creations offered up daily, ten at a time, on their tap list. After dinner and a brew or two at Downtown Joe’s, any beer aficionado will find himself quite comfortable at Billco’s Billiards and Darts. Boasting 60 microbrews and imports, in addition to ten pool tables and seven dart boards, Billco’s is a fine spot to stay lubricated throughout the night, while letting the money ride on the pool table during one of those particularly hot streaks. For beer lovers who like to plan ahead and, perhaps, prefer a more structured evening, The Pear offers monthly beer dinners which pair craft beer with artisanal foods as part of their Season of the “Pear”ings events.
