At Forty North, Gregg harvests three different kinds of oysters: Sugar Shack, Rose Cove and Swan Point. Of the three, Sugar Shacks are the best sellers of the bunch. Hand selected at two and a half inches, these cocktail oysters start salty and finish sweet a surprising flavor profile for a bay-raised critter. In his efforts to rebuild the Jersey oyster industry and the bay’s ecosystem, Gregg also hopes to build a legacy for his family and set an example for future farmers. “I hope the farm flourishes and is a viable career option for my two-year-old son once he’s ready.
