On behalf of the Restaurant Association of Whistler, we would like to welcome you to our home. We use the term “home” because the character of Whistler’s restaurants has been built on the genuine hospitality you would receive in any one of our homes.

Within the pages of this book you will find a comprehensive guide to Whistler’s legendary hospitality and diverse dining establishments. This warmth of reception is expressed in our sincere desire to offer our guests – who often become our friends – a unique and quality dining experience. Whistler’s quaint traditions, passed down over the years, will charm you and bring you back for more.

Our year round resort offers countless adventures. Ski, ride, golf, hike, and shop to your heart’s content, pop into a cozy cafe or pub to refresh yourself, then end your day with a visit to the gym, spa, or art gallery. Don’t miss the vibrant après scene,

YOUR WHISTLER DINING ADVENTURE BEGINS

Whistler

Something happened in the early days of restaurants in Whistler—something about the mixing of haute cuisine and funky burgers, weekend warriors and local characters, red-checkered tablecloths and elegant wall sconces — that’s been distilled into the dining experience ever since.

If a restaurant is where you “restore” yourself, then Whistler’s first was Rainbow Lodge. Guests had home-cooked meals included; those without lunches on the 1950s “picnic trains” could buy sandwiches on arrival.

After that, it was L’Après, opened in 1966 by Leo and Soula Katsuris to feed the workers building the first gondolas. Breakfast was 85 cents, and you might have run into Prime Minister Trudeau and family skiing.

With the ’70s came the start of the flurry: Rudy’s Mountain Holm Steakhouse served the finest flaming steaks; the Christiana Inn packed mountain lunches; the Cheakamus Inn offered a touch of Europe. The Keg was the first purpose-built restaurant and, oh, if those beams could talk. It was a hotbed of good food and sometimes wildly good times before the building became municipal hall.

The ’80s set the stage for Whistler’s main village with Stoney’s, The Gourmet Bakery and the iconic araxi.

Hungry customers never looked back. Wherever you went, locals mingled with visitors in a dynamism fuelled by good food and good drink. That, happily, has been the passport to any great resort experience to this day.

A culinary cornerstone in the heart of Whistler Village, Araxi Restaurant + Oyster Bar has redefined elegant yet approachable dining and special events for over four decades. With elegant interior decor, The Cellar is capable of hosting up to 60 guests in reception format or up to 40 guests for a sit-down lunch or dinner. The luxurious room, which can be divided for more intimate events, has a show kitchen for interactive chef demonstrations and a state-of-the-art audio-visual system. Il Caminetto brings a fresh, contemporary style of dining to Whistler with its sleek Italian designed dining room and a reimagined modern menu. “From my time in Rome with the Canadian Embassy and my travels crisscrossing the country, I’ve been inspired to create a menu that captures the essence of family dinners around the table,” says Chef Walt. “We wanted to take that passionata and add our own interpretation by utilizing both Italian and local products to drive the menu direction behind Il Caminetto.”

Lorette Brasserie

EVOKING A DEEP SENSE OF NOSTALGIA

Lorette is named in honour of the Paré family’s matriarchs. Co-owners Jay Paré and his nephew James Paré are spearheading Lorette; Jay’s hospitality resume includes time as the general manager for Quattro and as a protege of renowned restauranteur Mario Enero, while James, after honing his skills at the Fairmont Chateau Whistler, went on to lead the kitchen at London’s iconic Savoy Hotel.

This latest venture is a true labor of love for both James & Jay Pare and will add a refined take on French cuisine that artfully blends Québécois traditions with the exceptional ingredients of the Pacific Northwest to Whistler.

The menu features dishes such as an Onion Tarte Tatin topped with foie gras torchon, Lobster Vol au Vent with sweetbreads and truffles, and Steak Frites with sauce au poivre that’ll surely have you saying “oui.”

Lorette Brasserie will also offer a wine list featuring Old and New World varieties from acclaimed vineyards in France alongside local B.C. wines. There was a smokehouse menu the night we visited; we tried the brisket and prime rib and both were outstanding. Our kids really enjoyed the mac n' cheese side dish and the biscuits. Breakfast was equally impressive, the breakfast bowls were delicious (huge, too!) and the kids really enjoyed picking out pastries from the coffee bar side of the restaurant. We highly recommend this spot for families with kids!"

The Tandoori Grill, one of Whistler’s premier restaurants, has selected dishes that are most sumptuous as they were inspired by Great Indian Emperors and prepared to perfection by chefs of bygone eras. They brought renaissance and enrichment to Indian culture which favoured the technique of cooking in a Tandoor clay oven. A replica is also displayed at our entrance.

From the Tandoor oven comes a parade of delicious creations, and the best way to sample these treats is to order a Mixed Grill, complete with chicken, fish, prawns, and Lamb Tikka. Naan (Tandoori bread) is baked vertically in the Tandoor. You will become a fan of stuffed naan such as Spinach Naan, stuffed with Indian cheese and spinach. The selection of heavenly spices which favours Indian cooking creates heavy hits of flavour at every turn. No wonder that ginger and turmeric, the special ingredients of Indian cooking, are known as a healing power. Spice levels 1 - 5 are the essence in Indian cooking. Every dish is prepared according to the chosen level to exactly meet the customer’s taste buds.

FAMILY STYLE JAPANESE CUISINE AT THE BASE OF BLACKCOMB

Whether it’s a cozy date night, family dinner with the kids, or a birthday party, Nagomi Sushi is the place to go. Located at the base of Blackcomb Mountain in the Le Chamois Hotel, Nagomi Sushi offers great views of Whistler and Blackcomb Mountains with their floor to ceiling windows, comfortable room and warm atmosphere.

Opened in December 2008, Nagomi Sushi is owned by two long term local Whistler residents, Hayahiko “Speedy” Takada and Shizuo Kashino. With a combined 30 years’ experience they bring new innovative recipes to Nagomi Sushi as well as all the “classic” Japanese dishes. The menu offers a wide range of options from salads and appetizers to noodle soup, tempura, fresh sashimi and sushi rolls using the highest quality rice in North America. For those who don’t eat sushi there are many beef, chicken and vegetarian options from the kitchen to choose from.

Reservations are recommended for both the sushi counter as well as for tables, with some restrictions to party size. We're open for dinner from 5pm daily and look forward to serving you.

Sushi Village, located in Whistler Village, is about as famous in some circles as the worldclass ski resort itself. Known for its casual yet vibrant atmosphere, terrific sushi, and legendary sake margaritas, Sushi Village is as much a social experience as it is a dining one.

In 1984, Mikito “Miki” Homma, and his two friends arrived in the now-famous ski resort when it was little more than a collection of chairlifts and a conceptual pedestrian village. Miki and his friends fell in love with the snow and character of the town and in 1985 opened Sushi Village, Whistler’s first Japanese restaurant and one of the original six restaurants in Whistler Village. After 34 years, visitors and locals alike repeatedly make the trip to what has become an icon of the Whistler social scene.

There is something for everyone at Sushi Village. The diverse menu offers a range of Japanese cuisine to please everyone’s tastes, including expertly creating sushi, crispy tempura, traditional hot grilled dishes and the finest quality sashimi all enjoyed with cold sake or Japanese beer.

The Restaurant Association of Whistler

On behalf of our members, allow us to introduce the Restaurant Association of Whistler. We are a registered nonprofit organization, steered by a volunteer Board of Directors, representing the food & beverage establishments of the resort.

Our association was created in 2008 by the desire to provide our guests with a world class dining experience.

We are proud of our achievements to date. Notably, we successfully addressed the unique concerns of our members by working closely with the Resort Municipality of Whistler, the Whistler Chamber of Commerce, Tourism Whistler and the BC Restaurant and Food Services Association. We also support two community initiatives. The first is the annual RAW Memorial Cup Charity Golf Tournament. The second is awarding two separate scholarship funds (the Joel Thibault Scholarship and the Werner Schonberger Scholarship) to Whistler secondary school graduates who have worked in the local industry and are passionate to pursue a career in restaurant hospitality and the culinary arts.

Each of our members is offered the opportunity to showcase their restaurant in our annual Restaurant Association of Whistler coffeetable book. Our book is an accurate portrayal of the restaurant offerings in Whistler. The quality of this publication reflects that of its members, who are dedicated to creating the best possible experience for their guests. Each member of the association contributes

to providing the highest quality food, wine and service. The combined efforts from our dedicated staff and sponsorship partners help us achieve our mutual goal of providing the ultimate guest experience.

The Restaurant Association of Whistler is proud to call The Fairmont Chateau Whistler Golf Club the home course for our annual Memorial Cup Charity Golf Tournament. Carved out of the slopes of the Coast Mountain range in British Columbia, this magnificent Robert Trent Jones, Jr. masterpiece will navigate you through stunning mountain vistas, granite rock faces, stands of ancient Douglas fir, waterfalls and wildlife, creating an unforgettable golf experience.

Our biggest fundraising effort occurs each summer in the form of the RAW Memorial Cup Charity Golf Tournament where we celebrate the passion for life exhibited by our lost, long time local hospitality heroes Joel Thibault, Pascal Tiphine, Cal Schacter, Mikita Homma, Jeff Morgan and others who have contributed greatly to the food and beverage industry throughout the years. Since our initial event we've raised over $400,000 allowing us the ability to give back to our community.
