ACETAIA BALSAMICO TRADITIZIONALE MODENA and REGGIO EMILIA, DOP
Crafted in Reggio Emilia and neighboring Modena, balsamic vinegar has been a regional treasure for nearly a thousand years. Tradizionale is made only with cooked grape must from local varietals. It is fermented and then aged for no less than 12 years in casks of oak, cherry, mulberry, chestnut, and juniper using the solera method. The result is a nuanced, viscous elixir with a harmonious balance of sweet and sour.
Two consortiums, one from Modena and one from Reggio Emilia, taste and determine which products will be labeled as Aceto Tradizionale Balsamico DOP within their territorial limits.
It can be made only with cooked grape must (mosto cotto), from local grape varietals: Lambrusco, Ancellotta, Trebbiano, Sauvignon, Berzemino, Sgavetta and Occhi di Gatta. The must contains grape juice, skins, seeds and stems.

OVERVIEW:
• Cavalli Aceto Balsamico Tradizionale is produced by the Giovanni Cavalli, son of Ferdinando Cavalli, the legendary founder of the Reggio Emilia Consortium.



• The Cavalli name and reputation assures the highest quality.
• The 12 and 25 year age designations are minimum age requirements and do not reflect the true age of many of Cavalli’s Tradizionali which can be up to 300 years old.
A BRIEF HISTORY:
Ferdinando “Nando” Cavalli, the celebrated founder of his own Lambrusco and sparkling wine company, in the mid-twentieth century, decided to open the small family vinegar factory in 1920 to satisfy the number of friends and the best customers of his winery with a very welcome gift of vinegar. With a passionate drive Ferdinando scoured the countryside to collect as many precious barrels. Some of these barrels were filled with vinegar over five generations old.
Silver Seal 12 Years
Silver Seal has a strong, sweet fragrance with thick, rich acidity and an intense bouquet. Each 100ml bottle of Silver Seal Balsamic Vinegar is numbered and boxed with an informative booklet containing the company’s history and recipes.
Flavor Profile: Plummy sweetness, cordovan color, and delicate balance render this balsamic the leader in its category.

An extraordinarily complex and rich balsamic with harmonious fragrances. Each 100ml bottle of Gold Seal Balsamic Vinegar is numbered and comes boxed with an informative booklet containing the company’s history and recipes.
Flavor Profile: It is more sweet than sour. It is dense, suave, and persistent.
