It’s unnecessary to trek into the wilderness to harvest wild edibles—there are options right here in the city! Join Maria Wesserle of Four Season Foraging to explore the urban environment in search of seasonal wild foods. Students should be prepared to be outside, rain or shine, and walk up to 10–12 city blocks. Suitable for ages 18+, or 10–17 alongside a registered adult. $45 ($40 ASI member)
The Swedish Smörgåstårta with Kristi Bissell

Summery Tunnbröd Wraps with Kristi Bissell

Thin and soft Swedish tunnbröd (literally, thin bread) is often used for serving hot dogs in Sweden, but they are also a great base for summery wraps. Kristi will demonstrate making tunnbröd on the stovetop and discuss ways to adapt this simple flatbread recipe for the grill. Then, she’ll share a few fun ideas for wrapping up summer’s best produce, perfect for indoor or outdoor meals from July onwards. $25 ($20 ASI member)

Dive into some seasonal desserts featuring Scandinavia’s favorite flavors! This class will explore a handful of last-minute and make-ahead desserts perfect for summertime. From berries and cream, to candy and cardamom, Patrice will offer lots of ideas for delicious sweets to cap off a meal or star in a summer fika. How to throw a Kräftskiva with Patrice Johnson

Crayfish season in Sweden brings with it festive outdoor dinner parties, complete with singing, colorful decorations, and plenty of food and drink. In this evening class, Patrice will share her tips for preparing (and eating!) whole crayfish, along with a slate of traditional and modern accompaniments. Swedish Pancakes, Sweet and Savory with Kristi Bissell

Pancakes are one of Sweden’s most classic recipes— and not just for breakfast! In fact, many Swedes eat pannkakor for dessert or fika. In this demo, Kristi will run through a great basic pancake recipe and then share ideas for seasonal sweet and savory fillings. Finally, students will learn how to turn the pannkaka into a towering dessert, the pannkakstårta, or pancake cake. $25 ($20 ASI member)
