LA MONTANERATHE

La Montanera is the final stage in the breeding of Iberian pigs in which they feed purely on acorns and grass in an open space.

This environment, known as Dehesa, is characterised by its wide spaces and well-kept environment, and is rich with cork oaks and holm oaks that provide the main food for the pigs

During 3 months of guaranteed freedom, the animal gains approximately 45 kg and obtains a weight between 110 and 115 kg.

This stage plays a crucial role in defining the meat’s flavour and texture, as it directly influences its key qualities like taste, colour, and the exceptional quality of the fat that Iberian pork is renowned for.

MONTANERATHE IBERIAN STANDARD

The Iberian Standard regulates and determines the denomination and diet of Iberian pork hams, shoulders and loins. This regulation certifies to consumers that the product has followed a meticulous analysis and study of the entire process of raising the pig.

On the flanges and labels of Iberian products we find all this following information:

Pigs fed on farms by feed and cereals.

Pigs fed with acorns during La Montanera, but they aren’t pure breed.

Pigs fed with feed in an open space.

Purebred pigs fed with acorns during la Montanera.

Our team selects each piece and carves it into perfect slices arranged in a circle.

You just have to open and serve to enjoy a freshly cut by hand plate of ham anywhere. Plates hand carved by our MASTER CARVERS.
