FROM THE EDITOR AS WE BRING YOU THIS LATEST ISSUE OF FLAVOR, the holidays are right around the corner. It’s a time of year where some of life’s best memories are made as we gather with family and friends sharing joy, love and gratefulness.

But sometimes the holidays don’t feel like they should, given the many demands of everyday life. In fact, the rushing around, decorating, cooking and visitors can often feel more like a burden than a blessing. It’s OK to feel that way, many people do. That’s why we’ve dedicated our cover story to coping with holiday stress and loneliness that can seem more intense this time of year.

JUGGLING THE FAMILY FINANCES can be a challenge for any household, but making money work in your favor can be especially daunting for single parents. Among the 73.7 million children in the U.S. who are younger than 18, around 23 percent live with a single mother, according to the U.S. Census Bureau’s report on America’s Families and Living Arrangements.

Living on a single income takes planning and discipline, but it is manageable. The first step to success is to create your own roadmap for saving, spending and the unexpected.

• Consider unexpected health care costs when determining how much to save.

• Direct deposit from paycheck to savings account is the best approach for being consistent.

SPENDING PLAN • Work diligently to pay off outstanding debt, such as credit cards or loans.

• Identify “wants” versus “needs.”

• Cut costs everywhere you can. Clip coupons, join rewards programs, buy generic brands, shop resale.

• Two-for-one or “kids eat free” nights can be found at several restaurants.

• Look for opportunities for free “stuff” or entertainment. There are numerous options for spending quality time together, without spending money.

• Talking to children openly about the spending plan will help them understand the family goals and create good habits of their own.

BUDGET • Create a realistic budget after determining how much money is coming in, and exactly where it goes.

• Earmark mandatory monthly expenses such as rent, utilities or childcare, but do not include luxuries such as gym memberships, cable TV, etc.

• Budget for a realistic savings plan.

• Budget for food last. Grocery store outings can often derail a spending plan.

• Automatic bill pay options can help keep the budget on track and avoid late fees.

• When income changes, so should the budget.

SAVINGS/ EMERGENCY FUND • Every family needs an emergency fund.

Regardless of how much can be saved on a monthly basis, the key is to save consistently and practice a hands-off approach, unless

RETIREMENT VS. EDUCATION • If forced to choose between retirement savings and money for college — choose retirement.

This is another area in which it’s critical to save early. Your earning potential will reach a limit at some point, so retirement savings need to be strong when it does.

• Your child’s college education can be financed through a grant, scholarship or loan.

LIFE INSURANCE/ESTATE PLAN • Single parents already have experienced the unexpected. It’s important to ensure your children will be provided for if something happens to you.

• Life insurance policies can provide for your children financially, pay off your mortgage or designate money for college.

Carefully research the options, but invest in this safety net.

• It’s also important to create a trust, or an estate plan, to legally designate how and when your assets will be distributed to your children, as well as who will act as their guardian.

Single parents face financial challenges that are unique to their situation, but there are a number of resources that are easily accessible. In addition to local banking professionals, online resources such as Mint. com and Level Money can help track income, spending and saving.

The National Association of Personal Financial Advisors and the National Foundation for Credit Counseling can assist with all aspects of financial planning and debt management.

Long-term planning, daily management, updating budgets and seeking guidance from financial experts are successful strategies that can pay off for single parents and reduce the stress of most money matters. n

RENTAL ASSISTANCE AVAILABLE FOR VERY LOW-INCOME SENIORS

ONE OF THE MOST FUNDAMENTAL needs of very low-income elderly nationwide is safe, decent, affordable housing with supportive services. Christopher Homes of Arkansas, a private nonprofit apartment entity, provides these services to the community.

Christopher Homes manages 588 apartments in 24 complexes in cities across Arkansas and strives to enhance the quality of life of each resident. The mission of Christopher Homes is to mobilize available public, private and human resources to provide basic necessities, including supportive services and

other enrichment activities for the well-being of residents.

The organization provides equal and fair treatment and use of building services and facilities without regard to race, color, religion, gender, disability, familial status (children under 18) and national origin (ethnicity or language).

Working through the U.S. Department of Housing and Urban Development, Christopher Homes offers subsidized (reduced) rents to very low-income elderly and disabled. Here are some of the most frequently

asked questions regarding the subsidy programs:

WHO IS ELIGIBLE FOR HUD 202 SUBSIDY PROGRAM? HUD features two rent subsidy programs that primarily target older, low–income individuals. They include Section 8 Project Rental Assistance Contract and Section 8/202 Supportive Housing for the Elderly.

Individuals must qualify for these programs.

In PRAC apartments, occupancy is open to very low-income households that include at least one person 62 years or older. The actual income thresholds vary by locale; see below on how to determine if your income qualifies.

For Section 8/202 apartments, occupancy is also open to mobility–impaired individuals age 18 and older who need an apartment with the features necessary to accommodate the mobility impairment as verified by a health provider.

HOW DO I KNOW IF I AM INCOME ELIGIBLE TO MOVE INTO SENIOR HOUSING WITH RENTAL ASSISTANCE? 1. Go to huduser.org/portal/datasets/ il.html#2017_query 2. Select the county and state where you would like to live.

3. Review the chart for your household count.

4. To be income eligible, your annual income must be 50 percent or less of the median income for your household size.

5. To qualify for an income waiver, your annual income must be 80 percent or less of the median income for your household size.

WILL HUD MAKE AN EXCEPTION FOR ME IF I DO NOT MEET THE GUIDELINES? Depending on the apartment complex, you may qualify to take part in the program even if you don’t meet the stated eligibility guidelines. These exceptions are called waivers and they fall into three categories: 1. Some properties have age waivers that allow people 55 years of age to participate

in the program instead of waiting until age 62.

2. Some properties have income waivers for persons with low income instead of very low income.

3. Some properties have both age and income waivers.

Christopher Homes currently has 10 properties that have both income and age waivers.

ARE THERE ANY OTHER ELIGIBILITY REQUIREMENTS? Under HUD guidelines, certain circumstances make a person ineligible for subsidized rent. These circumstances include: 1. A person who has been evicted from HUD housing in the last three years (except for special circumstances).

2. A person who uses illegal drugs or abuses alcohol.

3. A person who is classified as a sex offender.

In addition, apartment management companies are allowed to set their own eligibility guidelines based on landlord, credit and criminal background screening. However, it is illegal under federal law for apartment management to discriminate against a person based on race, religion, disability or other factors.

HOW MANY PERSONS ARE ALLOWED TO LIVE IN A HUD SUBSIDIZED 202 HOUSEHOLD? Occupancy standards are established by the housing provider, but the general rule is two persons per bedroom unless the apartment is too small for two, such as a studio apartment. Christopher Homes properties are ground–level garden terraces that include studios and one-bedroom apartments.

HOW IS MY RENT CALCULATED? A household will pay one of the following amounts, whichever is highest: 1. 30 percent of the family’s monthly adjusted income.

2. 10 percent of the family’s monthly income.

3. $25 minimum monthly rent.

WHAT ARE MY RIGHTS AS A RESIDENT OF A HUD-SUBSIDIZED 202 APARTMENT? A resident has rights involving their apartment, resident organizations and nondiscrimination. Specifically, these rights include: 1. The right to live in decent, safe and sanitary housing that is free from environmental hazards such as lead-based paint.

2. The right to have repairs performed in a timely manner upon request and to have a quality maintenance program run by management.

3. The right to be given reasonable notice, in writing, of any nonemergency inspection or other entry into your apartment.

AM I RESPONSIBLE FOR MAINTENANCE COSTS OF MY APARTMENT? Christopher Homes provides maintenance services for all units as a part of the services at no expense to the tenant.

WHAT IS A SERVICE COORDINATOR? Service Coordinators are an integral part of the services an apartment complex provides for its residents. Service Coordinators are responsible for assuring elderly residents, especially those who are frail or at risk, and non-elderly residents with disabilities are linked to the supportive services they need to continue living independently. Christopher Homes operates 19 properties that feature a Service Coordinator program.

ARE THERE AVAILABLE VACANCIES? Christopher Homes provides housing on a first–come first–served basis. Therefore, at any given time some apartment complexes have a waiting list while others have vacancies.

HOW TO MANAGE THE STRESS OF THE HOLIDAYS

THE HOLIDAYS CAN BE OVERWHELMING, what with advertisements for the latest toy, grocery stores tempting customers to buy the biggest turkey and the constant stream of “Santa Claus Is Coming to Town.” Stress and sadness can overshadow joy, particularly for families struggling financially, for caregivers and the isolated elderly. “[The holidays are] when relational failure and relational isolation tends to be at their peak,” said Ken Clark, founder and practice director of Chenal Family Therapy.

“The holidays are when people, above all else, notice or fear aloneness or their own failure in life, whether it’s ‘I don’t have anybody to sit around a Thanksgiving table with,’ or ‘Because I picked a bad spouse, I now, as a single parent, can’t afford gifts for my kids,’” There are several signs a person might

A licensed marriage and family therapist, Clark said counseling can be a big help and there are many free and low-cost options available.

Most Medicaid plans — which Chenal Family Therapy accepts — cover 100 percent of the costs of counseling and there are also lowcost plans through the Affordable Care Act. Clark said therapists often take evening and weekend appointments and some are licensed for telemedicine via a video feed, especially for patients in rural areas.

“The gas savings alone might be dinner for a couple of nights or pay for what you were going to get as a Christmas gift for somebody,” Therapy he said. “Telemedicine, which is covered by insurance, is a gift.”

Caregivers are particularly susceptible to mental health issues, be it professionals or someone caring for a loved one. Burnout around the holidays is common and can surface in a variety of ways, from physical illness to feelings of guilt.

Meredith Hale grew up in a lower-income household where her father, now almost 13 years sober, struggled with drug addiction.

be struggling beyond typical holiday blues, such as mood swings or irritability; physical symptoms like developing a twitch or increased blood pressure; or lack of sleep caused by heightened anxiety. Clark said overeating, increased smoking, drinking or “zoning out with Candy Crush more than usual,” are also signs of stress, as are negative reactions to others.

Social media is another trigger, as it can make children and adults more aware of the things they do not have compared to someone else.

to give their children more for the holidays,” said Hale, marketing and outreach manager for CareLink. “Adding in the stress of caregiving to situations like this can create anxiety and dangerous mistakes such as miscounting prescriptions for a loved one.”

CareLink specializes in care and resources for the elderly and families, reaching caregivers and their loved one to help ease the stress on both. Among the services the North Little Rock-based nonprofit provides is the In-Home Respite care program by which qualifying caregivers can receive reimbursement of up to $500 a year to bring in help so the primary caregiver can get a break.

Qualifying caregivers 18 or older providing caregiving to a family member full time or in addition to another job can receive $9.50 an hour through CareLink upon completing a week-long, 40-hour training course, which can help supplement the household income.

Not all families are able to provide direct caregiving due to distance and other factors, which makes elder isolation another difficult issue, often made worse in the holiday months.

HOLIDAY COPING STRATEGIES FOR CAREGIVERS

In Arkansas, 26 percent of seniors live alone and 18 percent face hunger.

Hale said for these families, CareLink offers some low-cost options to battle loneliness.

The organization has about 500 caregivers for which Medicaid pays for services. For those without Medicaid, but still considered low-income, CareLink’s Senior Companions program pairs volunteers who are seniors themselves with home­bound older people to provide assistance and socialization.

Additionally, through Meals on Wheels, CareLink prepares 900 meals a day while also providing human interaction that allows seniors to live at home. CareLink’s telephone reassurance program maintains a list of people to call each day to check on them.

Hale said the most important thing for people to remember about surviving the holidays is that they are not alone.

“It’s OK to talk about this. It’s OK to feel the way you do,” she said. “It’s OK to want to take a break because you’ve got your own mental health you have to focus on, you have your own life, your own families and desires, wants and needs. You need to be able to take

care of those and take care of yourself first to be able to take care of anyone else.

“Especially when it’s around the holidays and you’re so stressed out and so overwhelmed with everything else that’s going on, if you don’t talk to anyone, then you’re suffering alone.”

STRATEGIES FOR EASING HOLIDAY STRESS • Take two or three minutes to focus on breathing before getting out of bed and before going to bed. It’s super silly, but for all the other stuff we do, that’s ground zero. You’ve got to breathe.

• Establish boundaries with loved ones.

That does not mean confrontation, but knowing when to bow out and take a little space. It doesn’t cost you anything to walk the dog a little extra.

• Trade expensive gifts for something meaningful and experiential.

• Take a “gratitude inventory,” remembering the tiniest happy moments during the day, from a child’s smile to eating one’s favorite cheese dip.

• Lower your expectations. Instead of making a full turkey dinner, buy a precooked turkey or other meal. Prioritize housekeeping duties and keep decorating to a minimum, putting out only sentimental items.

• Time is the best gift. A relative who buys a caregiver movie tickets and offers to watch a loved one gives that caregiver a chance to get out of the house. Ask siblings or other family members to pitch in more and request out–of–town relatives to stay in a hotel.

• Audio books, which can be downloaded on a library card, or listening to music during caregiver chores can be an escape. While you’re taking care of your grandma, just close your eyes every once in a while and really listen to it.

• Start a new, inexpensive tradition with a loved one, such as watching a holiday movie or driving around looking at holiday lights.

• Find a friend who you can call and vent frustrations to each day or every other day.

HOW TO GET HELP FOR ALCOHOL OR DRUGS

ACCORDING TO THE Substance Abuse and Mental Health Services Administration, 164.8 million Americans, or 60.2 percent of the population, reported having used an addictive substance within the past 30 days.

As the 2019 Arkansas Epidemiological State Profile of Substance Use states, this takes the form of higher rate of tobacco usage in youth and adults, increased adult binge drinking, a higher rate of prescription drug misuse than the national average, and a higher-than-average rate of methamphetamine use.

Substance abuse can impact any family in any neighborhood anywhere in the country. It does not discriminate by race, age, gender or socioeconomic status. Drugs and alcohol are an equal-opportunity problem.

It is sometimes hard to tell when a loved one’s use of these substances crosses into addiction territory. The National Institutes of Health’s National Institute on Drug Abuse has created the following list of questions to determine if social drinking or drugs/medications are becoming a problem. Remember, “the person” listed in the questions that follow can mean yourself, too:

1. Does the person take a drug in larger amounts or for longer than intended?

2. Does the person want to cut down or stop using a drug or alcohol but can’t?

3. Does the person spend a lot of time getting, using or recovering from a drug or alcohol?

4. Does the person have cravings and urges to use a drug or alcohol?

5. Is the person unable to manage responsibilities at work, home or school because of drug use or drinking?

6. Does the person continue to use a drug or alcohol, even when it causes problems in relationships?

7. Does the person give up important social, recreational or work-related activities because of drug or alcohol use?

8. Does the person use drugs or alcohol again and again, even when it puts them in danger?

9. Does the person continue to use or drink, even while knowing that a physical or mental problem could have been caused or made worse by the drug or alcohol?

10. Does the person take more of the drug to get the wanted effect?

11. Has the person developed withdrawal symptoms, which can be relieved by taking more of the drug or drinking? (Some withdrawal symptoms can be obvious, but others can be more subtle, like irritability or nervousness.)

WHAT EVERY PARENT SHOULD KNOW ABOUT E-CIGARETTES

SINCE THE FIRST DAYS

of America through the early 21st century, the tobacco industry has dominated the national economy.

According to the Centers for Disease Control and Prevention, in 2005 exactly 20.9 percent of adults (18 or older) were classified as “current” cigarette smokers. But over the past decade, those numbers have fallen. As recent as 2017, only 14 percent of adults were classified as “current” cigarette smokers.

Now more than ever, medical professionals and the general public understand the effects of cigarette smoking on the body.

“Traditional cigarettes can have up to 100 agents which can cause cancer to lungs and other parts of the body,” said Dr. Appathurai Balamurugan, deputy chief medical officer with the Arkansas Department of Health. “Cigarette use overall accounts for about 33 percent of all cancers.”

A modern, more attractive alternative may soon replace cigarettes, however.

The technology goes by many names — vapes, vape pens, electronic cigarettes, but typically just e-cigarettes. All the names fit under the larger umbrella of electronic nicotine delivery systems.

Rather than smoking, the new practice of vaping involves inhaling aerosols that are created when an e-liquid is heated. The e-liquid contains nicotine, flavoring and usually other chemicals like formaldehyde.

Because this battery-powered device just arrived on the market within the past 10 years, little is known yet about its longterm effects.

At first, e-cigarettes were marketed as a harm-reduction product for adults who smoke. Recently, however, the target audience seems to be getting younger. “[Vaping] has been heavily marketed for teens and young adults,” said Balamurugan, a parent himself. According to him, most science shows that the human brain does not even complete development until age 25.

“In the last 10 years there’s [been] a lot of evidence that [e-cigarettes] are causing increased heart attack, stroke, increased asthma,” he said, “There have been lots of reports of seizures among children.”

E-cigarette flavors are often trendy: bubble gum, cotton candy, sour apple, creme. The cartridges that store the e-liquid are compact and handheld. One popular e-cigarette brand is JUUL, devices that are shaped like flash drives. Their appearance could easily lead curious teens and unsuspecting parents to assume they are harmless.

“Some of these e-cigarette cartridges can have as much nicotine as a pack of cigarettes,” Balamurugan said. He compared the decision to smoke or vape to choosing whether to jump from the 10th floor or the third floor of a building.

He recommends parents do two things: increase vigilance and talk to their children about the harmful effects of e-cigarettes so that they are more aware. Because the median age of cigarette use or experimentation is about 12 or 13, he said even fifth or sixth grade is not too early to start the conversation.

“The e-cigarettes may not have 100 carcinogens; they may have 20,” he said. “But they do have nicotine, which is the addictive substance.”

The legal age for purchasing these devices is 21, but children have found ways to get access to them. Balamurugan said he has heard of kids renting out the e-cigarettes, sometimes for $20 an hour.

LIMITING SCREEN TIME HOLDS HEALTH BENEFITS

THIS IS AN AGE OF SEEMINGLY endless technology. Children ask for — and often receive — smart phones and tablets before they’re in middle school, while interactive games like Fortnite capture kids’ attention and time. Given all of that, one might think there is a lot of data that helps parents understand what’s a healthy dose of time spent in front of screens. Unfortunately, that’s not the case.

The Nielsen research company reports adults in the United States spend about half their day interacting with media, and there’s plenty of research showing how that media affects grownups. But, while studies like one

by Penn State that tied adults’ social media use to increased depression and loneliness are relatively easy to find, research into how children are using and being affected by digital media is harder to pin down.

“There has been some research in young children regarding effects of screen time,” reported Dr. Priya Yadav with Central Arkansas Pediatrics. “More research is needed for infants and toddlers. We need more research on screening measures, prevention and intervention strategies.”

Yadav’s recommendations on screen time limits align with the American Academy of Pediatrics’ suggestion of avoiding digital media other than video chatting for children younger than 2 years.

“For preschool children ages 2-5, limit screen time to one hour,” Yadav recommended.

“For older children, the AAP offers a family media plan on their website, healthychildren. org. There are no specific recommendations for this age group.”

Even without definitive scientific findings, it's clear that moderation is required when it comes to screen time. Overuse of digital media can be detrimental to a child’s physical health as most digital media tends to keep kids indoors and sedentary. High levels of screen time have been shown to lead to high body mass index (BMI) later in childhood and can lead to other physical ailments such as obesity.

“Studies show that high screen time leads to increased tiredness,” Yadav explained. “Digital screen time reduces our blinking rate, which can cause eye strain. Intensive handheld device

users are at risk of muscular pain, but more research is needed for direct correlation with carpal tunnel and sprains.”

The link between mental health and technology is also a hot topic in the medical world, and Yadav confirmed that electronic devices can be addictive. High levels of screen time can also negatively impact academic

When it comes to toys for children, the American Academy of Pediatrics suggests going back to the basics, exchanging flashy new technology and screens for simpler toys that

and social outcomes and affect short-term memory skills as well as language development in young people.

There are other considerations to excessive digital media use. The longer your kids are surfing the web, the higher the risk that they’ll stumble onto inappropriate content. If they’re

match children’s developmental abilities and promote learning new skills. Opt for toys that encourage pretending, problem-solving, physical activity and social interaction whenever possible.

And when it comes to limiting screen time, don’t neglect your own screen habits.

If you’re excessively using electronic media while you interact with your children, it’s probably not encouraging better screen time habits in them. n

1-2 Cucharada de hierbas favoritas secas (1-2 Cucharillas fresco) como perejil, albahaca, orégano, cilantro etc.)

1. Cocinar los granos – La regla general 2 partes de agua y 1 parte de granos. Cocinar estos 2 juntos, reducir el fuego y dejarlo ahí hasta que no quede nada de agua. El tiempo varía entre la variedad de los granos, entre 15 y 60 minutos.

2. Escoja la variedad de vegetales que quiera. Cortar y picar en pequeños trozos y agregar los granos en un tazón mediano de ensalada y mezclar.

3. Preheat oven to 450° F. Place Dutch oven, with lid, in oven for 30 minutes.

4. Meanwhile, sprinkle flour on a clean, dry surface to prevent dough from sticking. Place dough on surface, fold over a couple of times and form into a ball. Place seam-side down and cover with plastic wrap while Dutch oven heats.

5. Carefully drop dough ball into heated Dutch oven, seam side up, and score the top with a knife, creating a “pound” sign.

6. Bake covered for 45 minutes. Remove lid and cook for an additional 5 minutes for top to brown. Cool bread for 40-60 minutes and serve.

A fast and foolproof way to make chicken dinner. The secret is to use a small bird. Remember that eating the chicken without the skin reduces the saturated fat by about half.

1 3-3½ lb whole chicken 4 tsp kosher salt 1 tsp black pepper

1 sprig rosemary, chopped (about 2 Tbsp) 2 Tbsp olive oil

1 large lemon, sliced into four pieces 10 whole garlic cloves, peeled (about one small head)

5. Roast for 30 minutes and check for doneness. Let rest for 20 more minutes while you cook accompanying vegetables such as potatoes, broccoli, carrots and onion.

1 pound salmon fillets, skin-on, cut into 4 portions ½ tsp freshly ground black pepper 2 Tbsp olive oil

PREPARATION 1. Place bulgur in a small bowl and add ¾ cup boiling water.

Cover with plastic wrap and set aside for 30 minutes. Fluff up with a fork after the water is completely absorbed.

2. In a large mixing bowl, combine the olive oil, lemon zest and juice, salt and black pepper. Stir in garlic, parsley, mint, onion and tomato. Add bulgur and mix well.

3. Season flesh side of salmon fillet with a sprinkle of pepper.

Heat olive oil in a large nonstick sauté pan over medium-high heat.

4. Add fillets flesh side down and sear for 4 minutes and then turn over and cook another 4 minutes until fish is barely translucent in the center. Serve over the top of the tabouli.

2. Return wok to the burner, bringing to medium-high heat, then add oil and let heat. Stir-fry onion and garlic for 2-3 minutes to wilt onions. Add shrimp, vegetables, oyster sauce and broth. Stir-fry another 3 minutes. Add rice and mix well.

3. Return eggs to the wok and season with green onions, white pepper and sesame oil. Serve with salsa.

1. In saucepan, bring chicken broth, water and soy sauce to a boil.

3. In a separate pot, bring 6 cups of water to a boil for rice noodles.

4. Break and stir in noodles. Remove from heat, cover and let stand 5 minutes. Drain and rinse under cold water to stop cooking.

5. Portion rice noodles and bean sprouts into deep rice bowls. Ladle broth into bowls and top with green onion, red chili flakes/paste, cilantro, basil and lime.

Sear one batch of meatballs at a time, on all sides, about 4 minutes total. Add oil as needed.

3. Line a baking sheet with parchment paper. Transfer cooked meatballs to the baking sheet and bake for 6 minutes, or until done.

4. Make the tzatziki sauce by combining all ingredients in a small bowl. Stir well.

5. Keep chilled until needed. Serve meatballs warm or at room temperature with tzatziki sauce.

Heat oil in an ovenproof skillet over medium-high heat. When hot, sear the pork until golden on both sides. Move pan to the oven and roast for 10 minutes or until pork is 150°F. Remove skillet from oven, tent with foil and let rest for 10 minutes.

Temperature will rise to 155°F. Wrap pork in foil to keep warm.

4. Heat same skillet over medium heat and add stock to deglaze the pan. Bring broth to a boil, add strawberry mixture, then reduce heat to low and warm strawberries through. Season with optional ¼ teaspoon salt and ¼ teaspoon pepper.

5. Cortar en rodajas el cerdo y colocarlo sobre la ensalada verde en un plato. Colocar la salsa y rociar albahaca por encima.

2. Prepare filling: Heat oil in large skillet over medium-high heat. Add garlic and mushrooms, and sauté for 2 minutes. Add remaining fresh vegetables, thyme and broth. Cook 8 minutes or until almost tender. Add turkey and frozen vegetables, stir to mix and bring back to low simmer.

3. In separate bowl, mix the milk with cornstarch until dissolved. Add to vegetable mixture, simmer until thickened. Season with salt and pepper.

4. Pour mixture into prepared casserole dish. Cover with single layer of phyllo dough, spray with pan spray and repeat with second sheet.

Fold excess dough over the top of the pie. Bake for 20-25 minutes until crust is golden brown. Let pie sit for 10 minutes before serving.

5. Custard is done when a knife inserted into the center comes out clean.

Remove ramekins from pan and let rest for 10 minutes before serving.

SICILIAN CAKE

Zest the lemon first, then cut it for juicing. Bring cold eggs to room temperature quickly by placing whole eggs in a bowl of warm water. Serve it with seasonal fruits or lemon curd.

INGREDIENTS 3 eggs at room temperature ¾ cup sugar 1⅔ cups whole milk 1 cup extra virgin olive oil

2 Tbsp lemon juice 2 tsp lemon zest 1½ cups flour, plus a little more for dusting the pan

½ cup cornmeal (coarse is better) ½ tsp each: baking powder and baking soda ¼ tsp salt

PREPARATION 1. Preheat the oven to 350°. Coat a 9-inch round cake pan with oil, then sprinkle flour over it, tapping the bottom and sides until covered.

2. In a bowl, whisk the eggs and sugar until blended well. Add milk, olive oil, lemon juice and zest. Stir well.

3. In a separate bowl, whisk together the rest of the ingredients. Add the liquid mixture to the dry ingredients, stirring until blended. Take care not to overmix; allow lumps.

4. Pour batter into the cake pan. Place in center rack of oven. Check after 40 minutes. Cake is done when a toothpick inserted into the middle comes back clean or with just a few crumbs. Remove from oven and let cool on a rack.

5. Run a knife around the perimeter and invert onto a serving plate.

Serve with fruit, lemon curd or eat it plain.

4. Remove from heat, stir in vanilla, and strain mixture into a large measuring cup. Pour into a glass jar and seal with lid. Refrigerate for at least an hour before serving.

LIVING FULLY WITH SICKLE CELL DISEASE

MILLIONS OF PEOPLE ACROSS the globe are affected by sickle cell disease, and nearly 100,000 of those people are right here in the United States. Sickle cell disease is a genetic disease that is present at birth and is inherited when a child receives two sickle cell genes, one from each parent.

Sickle cells, unlike healthy red blood cells, are not round, but are more C-shaped like the farm tool called a sickle. These cells become hard and sticky, making it harder for them to carry oxygen through small blood vessels. The sickle cells often get stuck and clog blood flow, causing pain and other serious problems such as infection, acute chest syndrome and stroke.

In addition, sickle cells die early, so there is a constant shortage of red blood cells.

of life, usually around 5 months of age. At this age, the baby or fetal hemoglobin is replaced by sickle hemoglobin and the cells begin to sickle.

Once this begins, symptoms such as swelling in the hands and feet, sudden pain, anemia, infection and more begin to occur.

Although sickle cell disease worsens over time, there are treatments available that can prevent complications and lengthen the lives of those who are afflicted. Not only that, staying as healthy as possible can help people with sickle cell disease enjoy full lives. This includes drinking plenty of water, eating a healthy diet and participating in physical activity. It’s important, however, to not overdo the physical activity and to rest when tired.

Additional ways to stay on top of your health when living with sickle cell disease include finding good medical care, getting regular checkups,

preventing infections (washing hands, getting vaccinated, etc.), looking for clinical studies to participate in and finding a good support group.

If you are a parent, guardian or family member of a young child living with sickle cell disease, it is extremely important for you to have a plan for how to get help immediately, at any hour, if there’s a problem. Be sure to find a place that will have access to your medical records or remember to bring a copy.

MILLONES DE PERSONAS EN EL mundo están afectadas por esta enfermedad, hay alrededor de 100,000 de personas aquí mismo en los USA. La enfermedad de célula falciforme es genérica y se presenta en el momento que nacemos. Es hereditario y está en las células de uno de los padres.

Enfermedad de célula falciforme, diferente a las células rojas, so son redondas son más en forma de una “C” Esta células se ponen duras por lo tanto es más difícil que se desarrollen.

Una vez este proceso comience, los síntomas como la hinchazón, dolor de cabeza, pies, anemia, infecciones y más ocurren.

Aunque esta enfermedad célula falciforme se empeora durante el tiempo, hay tratamientos disponibles para prevenir esta condición y vivir una vida casi normal para aquellos que están afectados. No solo eso, pero estar saludable en general ayuda aquellos con célula falciforme a gozar de una vida normal. Esto incluye beber suficiente agua, comer con una dieta saludable, y practicar actividad física. Es muy importante no hacer exageración de ejercicio. Hay otras formas de ayudar a una salud sana viviendo por célula falciforme, tal como tener una atención medica apropiada, visitas regulares al doctor y

prevenir infecciones (lavar las manos, ponerse las vacunas, etc.), buscar esas clínicas de estudio para participar en ellas; encontrando un grupo de soporte.

Si eres el padre, o responsable de este miembro de la familia, que vive con esta enfermedad, es importante que tenga un plan de cómo conseguir ayuda de inmediato a cualquier hora por cualquier problema. Asegúrese de encontrar el lugar que tendrá acceso a sus expedientes médicos y recuerde de tener sus propias copias.

AN IMPORTANT FIRST STEP

to getting the job you want is to create a good résumé, which is usually a one-page document that lists your skills, education and work experience. It doesn’t need to be fancy, but must be easy to read and understand. Lots of information on creating a résumé is available at the Arkansas Division of Workforce Services website, www.dws.arkansas.gov/job-seekers/ creating-a-resume.

If you'd like help in person, Our House, at 302 E. Roosevelt Road in Little Rock, is a great resource. The Arkansas Workforce Center and Goodwill Career Center can also provide help. Other resources are local libraries that have public computers and reference books, as well as career and adult education centers.

Most résumés list the last five years of employment. If you haven't been employed for a while, think about what you've been doing in that time. Rachael Borne, career center manager at Our House, says you might be surprised by what you discover.

"Maybe you've been taking care of a family member who's been ill,” she said. “List your job as home health aide or caretaker. Below that, explain the work you've been doing. It's a valuable skill."

You don’t need to list a street address on a résumé, which helps if you're in transitional housing, but make sure the details of your contact information are current and in good working order. Are your phone number and email address correct? Has your phone number changed recently? Is your voicemail message friendly and easy to understand? Does your email address sound professional?

Use action words throughout the résumé to describe your skills and job duties. For instance, if you won an award for your work, don’t just list the award and the date you got it. Instead, say something like, "I outperformed the goals my manager set for me and earned a companywide award." The words "outperformed" and "earned" are strong action words. Below that, explain what you did specifically.

Most importantly, pay attention to spelling and punctuation errors, which can jump off the page at a prospective employer. Always read your résumé out loud to check for errors, then have someone else check for misspellings.

Save a digital copy on your phone or a flash drive and print a few copies.

Tracy Foster, an employment coach with Our House, recommends setting up a separate email account for your job search and all correspondence you make with potential employers. Use your first and last name if possible, even if you have to add numbers at the end. Something like "AmyAndrews1234" works. Having a separate account helps you stay on top of emails from hiring managers and minimizes the chance they get lost among your other emails.

Employers will likely check your social media as a way to get to know what kind of person you are. If there is anything on your social media accounts that could embarrass you, delete those posts or change your settings to "private."

TIPS FOR THE JOB INTERVIEW Job interviews can be stressful, mainly because they’re not something we do every day. But with some practice and a game plan, you can turn an uncomfortable exercise into a showcase for your abilities and skills that can lead to gainful employment.

1. Practice with someone. Have them ask you about your experience, your skills and why you'd be good at the job. Practice in a mirror to observe your expressions.

Learn how to smile genuinely to give off a friendly and open attitude in an interview.

2. Do an online search of the company.

Write down a few interesting things you may be able to use in the interview. If you know someone who works there, contact them to see if they'll put in a good word for you.

3. Pick out your outfit, making sure it's not too flashy, that it fits well and is clean and in good shape. If you don't have something that works, places like Our House have professional-looking clothes for you to choose from, free of charge.

4. The night before, set your alarm and go to bed early.

5. Read something inspirational before you leave your home.

6. Take a copy of your résumé with you so that you can look at it when you're asked questions.

7. Arrive 15-20 minutes early, then silence your phone.

8. Always tell the truth. This applies to everything from whether you know how to type to wether you've ever been fired. Keep your answers short and as positive as possible.

9. Ask a question to show you're interested in the job. It can be as easy as asking what the interviewer likes about the company.

Send a thank-you email within 48 hours.

Check back in a week to see if they've made a decision. Even if you don't get the job, send a final thank-you email. There may be other jobs with the company they'll consider you for, and a short note helps you stand out. n

UN PRIMER E IMPORTANTE paso para alcanzar el trabajo que deseas es crear una hoja de vida o currículo, que usualmente es un documento de una página que enlista tus habilidades, experiencia laboral y educación. No necesita ser algo elegante, pero debe ser fácil de leer y comprender.
