Clink! Happy New Year to all our bakery industry readers, a crew I predict is blissfully bushed from the holiday madness. A year behind, a year ahead. The news cycle sure closed with a bang as Loblaws/George Weston admitted to participating in a long running bread price fixing scheme in December. Class action lawsuits are underway, as are investigations into other grocery and industrial bakery companies. Weston wasn’t the only industrial bakery under fire last year. Fiera Foods found its way into the pages of a Toronto Star investigation after a temporary employee died in its plant, and then again after becoming embroiled in an expansion issue over city permits.
For a public already growing distrustful of big business, these news stories confirm fears. As we all know, broken trust can be about as easy to put back together as dandelion tufts scattered in the wind. There are numerous trends that apply to bakers for 2018, as there is never a shortage of divining lists, but the biggest one for the industry to take stock of is transparency. Transparency means a lot of things: labelling, corporate practices, ingredient sourcing…but what it really is coming down to at this point is zero omissions. Not telling can be tantamount to lying. This sentiment is a core driver of commercial open kitchens.
What a tricky relationship it has become; the bakery and its clients. Trust is a funny thing, for asking someone to be completely transparent and accountable outwardly in their every move may inherently presume they are potentially untrustworthy and should constantly show their hand. It is as if food companies are being treated as unfaithful lovers, ones who must put their full communications and agenda on display if they are to be trusted again.
Why food companies are caught in such a tempestuous relationship with their public? People want to trust food, and they did more so than they do now. People rely on food for nourishment and pleasure; it is one of the great mind-body connections.

Yet humanity also places a tremendous value on money. There doesn’t seem to be the same movement to demand to know the inner workings of credit card risk management in a bank, or whether you might be getting ripped off. People kind of presume the bank might be fleecing them off in some fashion by complaining about monthly fees, or high interest rates or other bank powers that feel hostage like. Who hasn’t gone to an ATM from a bank other than your own and winced at the fees, cursing them like thieves. Insurance companies companies are no different. They provide good services, but there is much recognized ill at ease over whether they are “good guys”.
No one is demanding these industries out themselves and their practices like there are food. Scandals involving food seem a tremendous betrayal to its customers. People accept the narcissistic practices of the banks and insurance companies that we are all depend on, but less so when that self-interest involves their food. If there is a soul, food touches it in a way money cannot and cuts straight to the heart. Perhaps mothers and fathers feed their children and those children grow up and look to the parents of food business as surrogates to nourish them akin. Or perhaps that is far-fetched, I leave that determination with you. It is truly a great responsibility to be in the food business, and now one in which understanding what transparency means to your customers will play a major role in shaping the future’s leading bakeries. / BJ

Europain 2018 will feature three sections – manufacturing, selling and managing –in a strategy designed to help attendees identify the latest services, products and equipment with an eye toward the future.
How do you manage a business, improve organization and treat your customers? In an industry experiencing deep transformations, it is essential to make the right choices and find the best solutions, Europain organizers said in a news release. The trade and educational show, set for Feb. 3-6 at the Paris-Nord Villepinte exhibition centre in Paris, France, will bring together major players concerned with the management of businesses in the bakery and pastry industry.
The show’s organizers shared details of the three main show areas.
Today, when entering the shop customers want to find more than a simple baguette or cake. They want to sit down and enjoy a pleasant moment, find hot beverages, delicacy snacks to take away or savoury products at meal times.
One of today’s challenges is to keep up with the needs of customers. For professionals in the baking industry, creating a coffee corner or a workspace and optimizing design and layout are some of the ways to help boost sales.
The exhibitors attending Europain 2018 will present cafeteria products, ingredients and finished products for bakery catering, as well as small equipment, appliances and services to help bakers transform their shops into versatile places where customers can eat and socialize.

IREKS event shares history, trends, products
IREKS North America recently hosted its official opening with an appreciation of the company’s history, a look at baking industry trends and products, and a gala evening dinner.
Das Event, which was held at the Pearson Convention Centre in Brampton, Ont., on Oct. 27, featured two segments: a seminar and company introduction and an evening gala dinner with entertainment, IREKS said in a news release.

Alan Dumonceaux, chair of the baking program at Northern Alberta Institute of Technology (NAIT), and Marcus Mariathas, senior director of product development for ACE Bakery in Toronto, were selected to compete for the coveted World Master Baker titles in the categories of Gourmet Baking and Nutritional Bread respectively. The prestigious competition, which takes place Feb. 3-6, is by invitation only. Both have competed in the Coupe du Monde de la Boulangerie previously as part of Team Canada
Dumonceaux and Mariathas learned of their selection to compete among the best in the world in April 2017, giving them just under 10 months to prepare. With Dumonceaux competing in the Gourmet Baking category and Mariathas chosen for the Nutritional Bread category, the two have been busy developing recipes, practicing and putting the finishing touches on their plans of attack. Each must create various products according to strict rules in their respective categories.
}“They always have breads and pastries from around the world,” says Dumonceaux. “A few of them I’d never even heard of, so you have to watch videos, look for formulas and then start practicing. The ultimate thing is you have to put your own spin on them. You want to see how you can make it better and faster.”

Practice time leading up to competition ranges from 500 to 1,000 hours when all is said and done. Every ingredient, every ounce and every second must be accounted for. Recipe books containing final formulations and nutritional facts had to be sent to the Bakery Masters by Jan. 12, preventing any last minute changes.

With five judges watching their every move during the competition, Dumonceaux and Mariathas must be professional and calm, even as the clock ticks down. They will each have two hours the day before competition to prepare their ingredients. On competition day, they will have eight hours to mix, bake and garnish their various products. Every minute over the allowed time limit costs the competitors vital points. Brian Sisson, vice-president of operations for ACE Bakery, says each move must be calculated in the eight-hour affair.
“When you’re mixing the doughs and letting them proof, your timing has to be exact. We want it to be relaxed when he [Mariathas] is in front of the judges. We don’t want him sweating at the brow or
Mariathas says the process of preparation over the last year has all been leading up to the main event. His first step was to plan his strategy. Then he moved on to recipe development, followed by full run tests of each product, and finally, solidifying exact timings for each item.
“The key is to have all of them done in the late hours of the competition. You need to make sure you allocate specific times for each product. I have to do about eight varieties of dough, so each dough needs enough timespan allocated for mixing, proofing, baking and garnishing to impress the judges,” says Mariathas.
The experience that both Dumonceaux and Mariathas have garnered from past international competitions will be invaluable in Paris.
“I learned you have to be precise and clean with what you do,” Mariathas says. “It has to be creative enough, but at the
same time you don’t want to be clumsy. You have to know the steps and you have to have the timing right. They give big points for taste, so even if a product looks a little bit off, if the taste is awesome that brings a lot.”
Dumonceaux has learned that you can never be too organized and you cannot practice enough.
“It’s just like the famous old saying ‘the devil is in the details.’ The fine details and the repetition of practice is what’s going to make you more successful.”
For both bakers, the “product of your country” will be perhaps the most crucial component in each of their respective categories. It’s the competitors’ chance to really showcase their creativity and talent.
“The biggest mark for the product of your country is on creativity and innovation,” says Dumonceaux. “You can’t make something that people are already doing. You have to try and innovate and make something new. These are the hardest products to come up with.”
Dumonceaux has been bouncing ideas off of his coach Clayton Folkers, a fellow
instructor at NAIT, as he brings the recipe of his country to life. Likewise, Mariathas says his coach, Sisson, has been invaluable throughout the process.
“He’s the reason that I’m in this competition. He got me into this and got me where I am right now. We have a good team here at ACE, so we’re very fortunate. We have a great team of developers, some of our sales force are chefs, and we bounce ideas off of all of them. It’s a great foundation for these types of things.”
Sisson says getting the news that Mariathas would represent Canada at the Bakery Masters in Paris was a stand-out moment for him.
“We’re extremely proud. I mean, there’s no other words to describe it. Having someone like Marcus who stays very true to the roots of artisan baking, his passion for this side of the industry is incredible. If I said he worked 70 hours a week, I’m probably shy by 10 or 12. It’s all about bringing young people into the industry.”
Mariathas and Sisson travelled to Edmonton in December to practice
alongside Dumonceaux. Although the two will compete in different categories, the support and advice they give one another is vital in the lead-up to the main event. As the first Canadian bakers to ever embark on this journey, they are feeling the pressure.
“It’s ever present on your mind and quite wearing on you physically and emotionally,” explains Dumonceaux. “Unless you’ve done it, people don’t understand the toll it takes on you. The last thing you want to do is not represent your country well, so there’s a lot of pressure to perform.”
Mariathas agrees. “We’re going to share some synergies, practice in the same location, and travel together. Even though we’re competing independently, we’ll be the Canadian contingent together.”

Milan, Italy, a city that brims with history and bustles with industry, provided the perfect setting for HostMilano, an equipment, coffee and food exhibition that showcased traditional baking and pastry artistry alongside technological innovation.
Held in October, the show was touted as a one-stop shop for food-service buyers. A tour de force of organization, the show welcomed 2,000 companies from 52 countries, and 187,602 visitors, of which about 40 per cent hailed from 177 countries outside of Italy. More than a dozen halls dedicated to pastry, gelato, bread, pizza, pasta, coffee, tea, vending and tableware provided inspiration and ideas businesses can use to save time, money and labour, and help them stand out from the crowd.
I was there on a recon mission of sorts to see what the show had to offer the baking industry and perhaps suss out future trends. I began by strolling two halls dedicated to pastry and gelato halls in search of new products, trends and inspiration. Thinking to take in the big picture, I was instead immediately drawn in to the Silikomart booth, whose silicone moulds caught the eye of baker Katherine Howe, of Ipswich, England, who was on the hunt for holiday ideas. Row upon row of silicone moulds designed for both hot and cold applications were on offer in pleasing designs. Among the company’s newest designs is Water Drop, a 1200-millilitre mould that simulates the ripple effect of a drop into water. It was used by Team Belgium when it competed in last year’s Coupe du Monde de la Pâtisserie. Another mould in the new collection is the Tourbillon, which produces a grooved, turntable-like design perfect for the top of round cakes.
}Bocusini’s new 3D food-printing system, the Pro 3.0, was at work creating these lovely, consistent moulded chocolates. The machine works with fondant, marzipan, pasta, sausage and many other malleable formulations.
We all have common issues in our $3.5 billion industry, and this unique diversification is what makes our organization interesting and dynamic.
Canadians know pizza and ice cream go together; clearly Italians believe it too. Gelato is a force to be reckoned with in Italy, and at least a dozen exhibitors had mixes available for sampling in colourful, crowd-drawing cases that prove we do indeed “eat with our eyes.”
Among these were Rubicone, whose Spiral Ice blue gelato, naturally flavoured with spirulina extract, a type of microalgae, prompted lineups at the tasting counter; and Cuor di Gelato, whose powdered gelato bases in natural, traditional and vegetable fibre are
designed for quick preparation. PreGel, highlighted its Halloween and other themed gelato formulations and shared details of its customizable “New Cookie Idea” mix for a cookie-textured tart that can hold fillings of various textures. Bakers can create their own fillings or choose from a dozen crust, filling and decoration combinations. One example from the company’s recipe book is Frollis Gluten Free flavoured with chocolate pannacrema, featuring Otto Caramel Biscotto Arabeschi filling and Chocolate Vellutina decoration.

Students from the International Federation of Pastry, Gelato and Chocolate demonstrated airbrushing and other decorating techniques during the competitions. This playful bee was the result of one well-attended demo.
vertical countertop batch freezer was touted as a starting point for operators looking to produce quality gelato, ice cream and slush in small quantities and with relatively low up-front investment. Using a ready-made mix, it produces about five kilograms, or three to four batches, per hour. Compact and visually appealing, it was designed with restaurants, pastry and coffee shops in mind, Frigomart representatives shared.
Six halls were dedicated to bread, pizza and pasta and the equipment that serves those industries. On display were several high-tech ovens designed to make shift changes smoother by giving staff various baking programs to activate. Unox’s BakerLux and BakerTop models were examples of this strong trend. Their innovative features include metal alloy plates that help the ovens retain the moisture needed in so many pastry applications.
Alto-Shaam had on display its CT PROformance 7-20 Combitherm oven suited to high-production kitchens. Users can place it on a stand or stack two together to save space. The company, headquartered in Menomonee Falls, Wis., has a Canadian division.
In another display of food as theatre, Belshaw Adamatic’s Donut Robot tempted floorwalkers with the scent of fresh doughnuts that came straight out of the fryer and into their waiting hands. The automatic fryer makes yeast-raised cake doughnuts touted as having better quality than standard frying because they absorb less oil. The machine comes in three different sizes and makes up to 110 dozen donuts per hour. The fryers deposit, fry, turn and dispense cake doughnuts or mini doughnuts automatically, and may be operated by staff after minimal training.
On a smaller scale, Electrolux Professional’s SpeeDelight demonstrations got plenty of attention. The new high-speed grill has been winning awards, including the Plus X, which rewards innovation and accessibility. It is designed with handy features to deliver a variety of grab-and-go dishes three times

faster than traditional sandwich presses. Thinking of expanding your bakery to a café? The company played up not only the countertop machine’s speed – it prepares pizzas, wraps, pasta, pastries, vegetables in under a minute – but also its versatility for serving customers at all times of the day. Its contact plates use infrared and microwave technology to cook food in a way that keeps it crisp, while the upper plate is designed to settle on food with just the right amount of pressure and open automatically when ready. The smart machine has a USB port and Wi-Fi capability to allow operators to track, store, upgrade and share cooking menus.
Although ovens and kitchen equipment dominated the show, I found a few ingredient gems, including ItalMill’s innovative flours. The company, based in
the nearby town of Cologne, was showcasing its sourdough and Riso Venere (Black Venus) flour through delicious roman pizza crust sliced horizontally to create a crisp mortadella sandwich. The company, which started out in the pastry sector, now serves bakeries and pizzerias as well. Its natural sourdough flour is higher in lactobacilli and thus sweeter, said company representative Sabrina Bellini. The Black Venus flour, which is rich in antioxidants, minerals and fibre, solves the problem of lengthy fermentation time, she said. Roman pizza dough, I was told, typically takes four days to ferment as it is made up of 80 per cent water. That fermentation time is reduced to 24 hours when using ItalMill’s formulation.
Storage and delivery can be pain points for smaller bakeries and the show featured some interesting options to solve
At the Zanolli booth, pastry chef Silvia Federica Boldetti deftly demonstrated how to make delightful, coffee-cappuccino mini cakes with ganache and crunchy crumble. Boldetti, who was crowned Pastry Queen at the SIGEP trade show in Rimini, Italy, in 2016, filled colourful parchment moulds with about 50 grams each of cake dough. Over top of each mini cake, she spread a crumble consisting of butter, flour, sugar and almond powder. The Italian pastry chef described the mixture as “more crunchy than a biscuit.” She said it’s important to use a type of oven with “bubbles” on the floor – a raised
floor – to avoid burning the bottom of the tray by allowing air to circulate under it. Bake 370 F for about 10 minutes, then do a test touch to see if the dough is ready or not, she advised. Finally, decorate with coffee ganache and more crumble “to complete the flavour of coffee and cappuccino.” Tip from a pro: don’t over-whisk the butter or you will get too much air in it. “It grows, grows, grows: then collapses,” Boldetti said. She recommended using a flat beater attachment such as Zanolli’s “Spatola” rather than a wire whisk attachment you would normally use for cream.
these issues. The folks from Cambro, a California-based company, were there with some cool wheeled storage options for restaurants that are especially suited to caterers. The newest cabinet on display was the Cam GoBox, which holds several polypropylene bins of hot or cold food safely for many hours and is unaffected by oil, grease and most chemicals.
CaterTeam Food Service Equipment had its CookTek food storage bags on display. The insulated, washable nylon bags – collapsible boxes – contain a lightweight thermal disc. When the bag containing the disc is placed on an induction charger base, it automatically heats up. The three-part system bags, disc and charger is designed to keep food hot for 30 minutes.
At such a forward-looking event, I fully expected to see 3D printers and I was not disappointed. The Bocusini Pro 3.0 was at work creating lovely and precise moulded chocolates. The printing system consists of a printer and 25 by 15 centimetre work surface, software and, if desired, food formulations specially designed to work with the Bocusini.
The machine helps you create personalized food – pasta, sausage, chocolate, fondant and almost anything else you can think of – to set your business apart from the competition. In addition to cranking out 3D objects, the system allows you to incorporate text messages, logos, handwriting and plate tattoos into your creations. A side note: almost as interesting as the demonstrations were the creations found in the company booklet: tiny pasta lobsters, fondant sports cars, delicate mazes made of goat cheese and a curly mashed-potato octopus.
Complementing all this innovation on the show floor were the World Trophy of Pastry, Ice Cream and Chocolate competition; cake designer world championships; and sugarcraft demonstrations in the well-trod pastry hall.
All this laser-focused creativity and competition buzz made for a stimulating last day at the show, which ended on a high note as Italy claimed victory over China, Japan and 18 other teams from around the world amid boisterous chants of “It-al-ya!” / BJ

Vegan baking is on the rise. If you are on the hunt for a yummy vegan cupcake recipe to offer your customers, try this sweet potato recipe from Kelly Childs and Erinn Weatherbie of Kelly’s Bake Shoppe in Burlington, Ont.
2 cups gluten-free all-purpose flour
1 ½ cups Sucanat
1 tsp baking powder
1 tsp baking soda
1 tsp ginger
1 tsp cinnamon
½ tsp sea salt
¼ tsp nutmeg
½ cup coconut oil, melted
1 cup sweet potato puree
2 tbsp ground flax meal with 6 tbsp water – set aside
1 tsp pure vanilla extract
2 cups vanilla buttercream
vanilla vegan marshmallows (optional)
METHOD
1. Preheat the oven to 350 F (177 C). Line a 12-cup cupcake pan with paper liners.
2. In a small bowl, combine the ground flax meal with 6 tablespoons of water and set aside to thicken.
3. In a large bowl, whisk together the flour, Sucanat, baking powder, baking soda, ginger, cinnamon, sea salt, and nutmeg.
4. In a large bowl, combine the flax meal mixture with the sweet potato, coconut oil and vanilla and mix well. Add to the dry ingredients mixture and combine with an electric hand mixer on medium speed until smooth.
5. Divide the batter among the cupcake liners, filling them almost to the top. Bake for 22 to 25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
6. Let cupcakes cool completely on a wire rack before frosting with vanilla butter cream and topping with marshmallows.
INGREDIENTS
1 cup vegan shortening (Earth Balance brand) room temperature
¼ cup vegan butter, softened
4 ½ cups powdered sugar, sifted
2 tbsp pure vanilla extract
2 tbsp almond or rice milk (optional)
METHOD
1. In a large bowl, using an electric hand mixer, or in a stand mixer fitted with the paddle attachment, blend the palm shortening with the vegan butter for about 5 minutes, or until smooth and fluffy.
2. Slowly add the powdered sugar, 1/2 cup at a time, and continue to blend until the sugar has been completely incorporated. Add the vanilla and beat well.
3. If the frosting is too stiff, add the almond milk, 1 teaspoon at a time, until the buttercream is the desired consistency. If you add too much milk and the buttercream is too soft, sprinkle in another tablespoon of powdered sugar. / BJ

As you often hear, employee satisfaction results in better guest satisfaction, which in turn will boost your bottom line.

The first step before the hiring process begins is to clearly define what you need for each job description, and to identify the skills needed for each position. Make sure that your job descriptions really fit the requirements of the position and be as specific as possible. Write down all of your ‘wants’ and ‘needs’ on paper first, and then rank your main core characteristics from most important to least important. You need to include a list of all the qualities your potential employees should possess.
When you are ready to search for your new employee, it’s time to put a job posting together. Make sure you describe each position very carefully. Potential applicants should know what to expect from the get-go, thereby eliminating the time and effort spent interviewing unqualified applicants. Your concise and detailed ad should describe your company brand and culture, as well as your bakery’s concept, style of service, and hours of operation. Define what type of bakery operation you run. The second part of the seminar was an introduction to Dreidoppel, an IREKS sister company based in Germany, which presented its line of flavouring pastes through samples to all attendees. The line is now also available through IREKS North America.
During a cocktail reception the company presented Aroma & Taste, a line of bakery malts and sourdoughs. A three-course dinner followed a cocktail reception.

A study led by University of Toronto nutritional scientists is calling on the Canadian government to outlaw junk food marketing to children, impose stricter limits on unhealthy nutrients added to foods and impose a “sugary drink tax.”

Professor Mary L’Abbé, chair of the Department of Nutritional Sciences and Banting postdoctoral fellow Lana Vanderlee made the recommendations in a newly released report, called the Food-EPI Study, funded by the Canadian Institutes of Health Research. In it, they examined Canada’s progress on obesity-curbing measures compared with other countries.
They found that Canada performed well on some important measures, such as political leadership to support healthy eating, and transparency in developing
food policies (which if secretive can lead to undue influence by the food industry), the university said in a news release.
Despite the good news, there were notable disparities between provinces, with Quebec having the most progressive food policies, including a restriction of junk-food marketing to children, and some other provinces failing to do as much to protect residents. Even the foods and drinks that can be sold in schools varied across provinces and territories. Overall, Ontario fared roughly in the middle of the pack.
Health Canada has recently announced new policies to address areas where it trails its peers, the release said. However, there are a number of areas where there are almost no policies or programs at any level of government.
“Even if we’re meeting Most Unexceptional practices in some areas, we shouldn’t get complacent,” Vanderlee said in the release. “Canada doesn’t have taxes on unhealthy foods, such as sugary drinks, even though the evidence from other countries suggests these work. If we don’t move on this front, we’re going to fall behind.”
Mexico, which has some of the world’s highest child obesity rates, is seeing success with a soda tax, and other countries are following suit, she said. The United Kingdom is on the verge of implementing such a tax, and South Africa just announced one.
“Most of the evidence indicates that sugary drinks are among the biggest contributors to sugar consumption and play an important role in weight gain,” Vanderlee said. “You don’t get as full when you’re drinking your calories and it’s easy to consume a lot of sugar in a short time.”
The federal government also currently imposes no restrictions on marketing junk food to children, L’Abbe said, although they have announced impending regulations as part of the Healthy Eating Strategy.
Asking for voluntary industry co-operation to make foods healthier, with less sodium, hasn’t worked well in the past for all foods, L’Abbé said. The Canadian government hasn’t made any voluntary or mandatory restrictions on the amount of sugar or saturated fat in foods either, nor have officials set any targets for levels in
restaurant foods.
“The evidence is mounting that these kinds of government interventions work,” Vanderlee said. She recommended
Canada develop a comprehensive and coordinated strategy to combat obesity and diet-related diseases like diabetes, heart disease and cancer.

Standards Authority of India (FSSAI), where the company is headquartered, has revised its standards to allow for reuse of vegetable oil in frying and cooking applications until the oil reaches a maximum total polar compound (TPC) limit of 25 per cent. Thus, any edible oil used for frying application that crosses this maximum limit of TPC will be considered unsafe, Arjuna said. In addition to helping manufacturers meet the new standard, the company’s formulation is designed to help manufacturers use oil for frying a greater quantity of product by slowing down the oxidative degradation due to reuse, thus keeping the oil safe. www.arjunanatural.com
Redpath Sugar has released a cookbook with more than 200 recipes meant to showcase and celebrate Canada’s culinary traditions.

New Canadian labelling laws that affect the way sugar is measured may change the way customers and manufacturers view the bakery shelf. But, what is sugar? Where do consumers’ perceptions go wrong? And why is this ingredient so prized in baked goods and also so indispensable?
In December 2016, Health Canada came out with new labelling guidelines for packaged foods. Companies have five years to comply. Perusing grocery store shelves now shows that the process has already started.
On packaged goods, the original Nutrition Facts Table represented serving sizes in metric weight, while showing the weight of sugar in each serving. The new Nutrition Facts Table shows the serving sizes in familiar household measurements, such as cups and tablespoons, as well as the metric weight. It also replaces the weight of sugar per serving and instead shows the percentage value of sugar per serving based on the recommended daily amount. But, what is this amount and how has it been determined?
“It’s 100 grams a day,” say Dr. Alfred Aziz, chief for the bureau of nutritional sciences for Health Canada in Ottawa.
“This is a daily level of intake from a healthy diet eating foods like fruits, vegetables and dairy as recommended by the Canada’s Food Guide.”

“All green plants, such as fruits and vegetables, produce sugar through photosynthesis, a natural process that turns sunlight into energy, “ says Chiara DiAngelo, manager of nutrition communications and a registered dietitian, who works for the Canadian Sugar Institute in Toronto. “The granulated sugar in your sugar bowl is the same sucrose found naturally in sugar cane, sugar beets, apples, carrots, and other fruits and vegetables. Sugar is obtained from sugar cane and sugar beets for commercial use due to their high
sucrose content.”
To further understand the amount of added sugar in packaged foods, descriptive text will appear at the bottom of the label. “There is a foot note with the amount on added sugar — five per cent is a little and 15 per cent or more is a lot,” says Aziz. He says this will help consumers to quickly decide what to purchase.
Added sugars can include white sugar, beet sugar, raw sugar, brown sugar, agave syrup, honey, maple syrup, barley malt extract, fancy molasses, fructose,
glucose, glucose-fructose, high fructose corn syrup, maltose, sucrose dextrose, and fruit juice concentrate to replace sugars in food.
“All ingredients that are sugar will be grouped together in brackets after the words sugar to show the consumers how much of the food ingredients contain sugar,” says Aziz. “The hope is for improved information. We are clearly saying to limit sugar.”
So, which form of sugar is the healthiest? Abby Langer, a Torontobased registered dietitian has spent almost twenty years debunking food theories. She cautions not to believe everything you read. “No sweetener is dramatically healthier than another. Just because it is marketed to be more

natural or organic doesn’t make it better for you,” she states. “Sugar is sugar.”
DiAngelo adds: “Whether it comes from fruit, vegetables, honey, maple syrup, or table sugar, each gram of sucrose is broken down and used in the same way, as a source of energy for the body.”
Sugar is a one hundred per cent naturally occurring compound. Why and how is it processed?
“Granulated sugar from sugar cane or sugar beet is naturally white. No bleaching agent is added at any time during the purification process. Instead, the process of refining removes impurities so that sugar consumed in Canada meets government health and safety regulations of purity of at least 99.8 per cent pure sucrose,” says DiAngelo.
Sugar cane is harvested at plantations in tropical regions such as Brazil, Cuba, India, Mexico, and Pakistan and in the U.S. states of Florida, Louisiana, Hawaii and Texas. It is transported to sugar mills, where the process of purification begins. Sugar cane stocks are crushed to extract the juice. It is clarified, concentrated and crystallized. Molasses is also produced during this stage. The final result of processing is golden raw sugar. This is inedible sugar that should not be confused with the kind sold in supermarkets.
From this point the golden raw sugar is shipped to the sugar refinery in Canada to remove leftover molasses, and concentrated by boiling and filtering to remove further impurities. Crystals are formed. Then it spun, washed, sifted, dried and packaged.
Sugar beets have a growing season of about five months. Each beet weighs approximately 900 grams. The majority of Canadian grown sugar beets come from Alberta, but they are also grown in Ukraine, Russia, Germany, France and parts of the U.S. including California, Colorado, Michigan, Oregon, and Washington.
Once beets reach maturity they are shipped to a sugar beet factory. There, the vegetables are cut into slices and soaked to release the natural sugars.

The water is clarified, filtered and evaporated to produce syrup. The syrup is boiled, spun and washed. Once in its crystal form, it is dried, sifted and packaged.
Incredibly, though grown in diverse climates, sugar from both sugar cane and sugar beets tastes identical. Granulated sugar is the most common type of sugar available. It can be coarse, medium, fine, extra fine, ultra fine and superfine. Icing sugar is powdered granulated sugar, also known as
confectioners’ sugar. It contains three per cent cornstarch to help it avoid lumping.
Brown sugar is formed by crystallizing the golden liquid form or by mixing molasses with pure white crystals. The amount of molasses determines the properties. Liquid sugar and invert sugar are primarily used in manufacturing.
In baked goods, sugar is valued for much more than just its sweet taste. There are many reasons why sugar is essential in baking. For cakes and
cookies that use the creaming method, sugar becomes trapped in the fat, creating pockets of air for leavening agents to expand within.
Sugar becomes a foaming agent when mixed with eggs. Think Genoise and sponge type cakes that have approximately three times the amount of eggs than butter cakes. To maintain a moist crumb, sponge, chiffon and angel food cakes require more sugar. Cakes such as a Genoise require simple syrup after baking.
Once in the oven, sugar fights with flour in a battle to absorb the water, thereby delaying the cake set time, allowing the cake to expend to perfection.
In the initial bread baking process, sugar mixed with yeast and water helps to quickly accelerate the forming of carbon dioxide, which appears in the form of bubbles. Once the flour is added and mixed, sugar absorbs the water keeping the product moist. Sugar helps to weaken the gluten structure while making it more elastic and enabling the structure to expand, thereby trapping in the carbon dioxide. Essentially, it helps generate the leavening process.
During baking, sugar begins to caramelize forming the crust colour so desired in all baked goods and provides the keeping qualities that extends shelf life. Sugar also provides the beautiful garnishes, from flavourful icings to intricate sugar work.
“High intensity sweeteners can be used to replace sugar’s sweetness, however other functions such as providing bulk, colour, texture and preservation are typically achieved through the addition of gums, thickeners, starches, or additives. Because of this, there may not be a reduction in carbohydrate content or calories in the reformulated product,” says DiAngelo.
Perhaps new labelling on packaged goods will help consumers better understand what comprises sugar. Diet conscious consumer may choose to save their calories for the special treat they crave. One thing is for certain, the bakery section will always have a welcome home in any grocery store. / BJ

Millennials have much different expectations than their boomer predecessors when it comes to their first days on the job.
When baby boomers took their first “real” jobs upon entering the workforce, their demands and expectations were ridiculously low by today’s standards. On their first day on the job they got an employee handbook that they took home and scanned while eating dinner or watching TV. Company training, if there was any, was minimal.
For the most part, they accepted the idea that it was normal to feel ignorant and unskilled in the first weeks or months on a new job. They expected to “learn the ropes” by making mistakes. When it came to promotions, most boomers were equally willing to proceed by trial and error. Nobody told them, “Here is just what you need to do to get ahead in our company . . . here is the next position we’ll be considering you for.” One day in the hazy future, they hoped that their bosses would call them in and say, “We just gave you a promotion . . . you may leave early and take the family to dinner to celebrate.”
}Today, most millennial workers would object strenuously to the same kind of conditions that baby boomers (and members of the generation that preceded them) thought were normal.
Was there feedback? Of course, there was. There were quarterly, semiannual, or yearly job reviews that usually followed the script, “Here’s what you’ve been doing wrong, here’s where you need to improve—so do it, session over.”
In short, many baby boomers were happy to toil away in black boxes, learning jobs and building careers in a loose way that would seem absurd to the members of today’s younger millennial workforce.
Boy, have things changed. Today, most millennial workers would object strenuously to the same kind of conditions that baby boomers (and members of the generation that preceded them) thought were normal. If today’s millennials start new jobs and discover conditions like those in a new workplace, they are going to start looking for new jobs in a matter of hours.
Ample research documents that millennial attitudes are different. One major study from Gallup, “How Millennials Want to Work and Live,” reports these findings:
• 60 per cent of millennials say that the opportunity to learn and grow on the job is extremely important. In
their jobs for at least the next year. That might sound like a big percentage, but 60 per cent of members of all other groups plan to stay in place for at least a year. Baby boomers and others are planning on sticking around, while millennials are weighing their options.
Findings like those – and you can easily find more – document that millennials are more likely to be engaged and to stay on their jobs if they have opportunities to plan their career paths and learn.
Here are the trends:
• Millennials like to feel capable and confident in their jobs. Millennials do not like to feel like rookies. Many think of themselves as leaders – or as leaders who are waiting to be discovered. They want to look good, and thrive on being able to
confidently contribute from the first day they arrive on the job. The right kind of training – both for new and current millennial employees –makes that happen.
• Millennials are usually skilled students. They like to apply the learning skills they built while they were in school. To them, learning feels as natural as eating three meals a day. As the Gallup study found, they are eager to learn. In contrast, getting baby boomers to believe in training can be a harder sell. They tend to view training as a burden, something they have to endure. Millennials say, “Wow, when can I start?”

set up mentoring, not reporting, relationships between them and their managers. Explain how often check-ins and job reviews with their managers will happen, and what they will cover. And schedule frequent check-in rather than “on the calendar” pro-forma reviews that both managers and the people they manage find boring, or worse.
A sense of belonging on an energized and innovative team. This is a bit of a contradiction, but at the same time millennials think of themselves as individualist entrepreneurs, they also expect to be part of an interesting team. Letting millennials get to know their teammates during training, and fostering a sense of team/group identity, can help convince them that they have joined the right organization. A well-defined career path is key. Consider creating a personalized career development plan for all new employees (the exception being seasonal or other short-term workers who will probably not remain with your company for long). Another idea? Enroll new employees in management training programs from their first days on the job. In retail, for example, you can enroll them in training that will enable them to manage their own stores in two years, or after another stated period. Millennials like to know their next steps as they build their careers, and training is a fine place to explain them.
Yes, training is important to millennials. They are the most energized, skilled and capable generation ever to enter the workforce. Train them well and they will become your organization’s brightest future. / BJ

In preparing for this article, Johanne Trudeau, RD and Director Food & Nutrition Policy at Baking Association of Canada reviewed the regulatory environment for the past few years and consulted a number of articles that have been published in the past year, some popular press and official reports from the Government. As we transition from last year to this year, it is relevant to see which food and health trend could impact bakers and which one will draw consumers.
However, when it comes to trends, we should take them with “a grain of salt” and not more. Sodium is a nutrient of public health concern and Prime Minister Trudeau is mandating tougher regulations to reduce salt in processed foods.1 Past sodium reduction initiatives from the government have led companies to reduce the salt content in packaged goods. “I can tell you at a very high level that most of the categories
did not meet the targets that were set,” said Health Canada’s chief of nutrition regulations and standards Alfred Aziz in an interview.2
In the coming year, Health Canada plans to draft policies that would set targets for sodium reduction in the restaurant industry and encourage industry to lower sodium in packaged goods. We can expect a trifecta of sodium news in 2018: sodium reduction regulations, options for sodium replacement ingredients and sodium declaration specifically in the front of packages.
The good carbs bad carbs movement started slowly before 2015 and will continue to grow in 2018.3,4 Consumers are looking for better carbs and fewer bad carbs. The trend fueled by media and online promotes that carbs are associated with weight gain and blood sugar response.
Diabetes Canada is taking advantage of
this trend by introducing in 2018 a new GI symbol that manufacturers can print on the front of their package and that will give consumers what they want: foods that are source of energy, protein and fibre and foods that have less sugar, fat and salt, nutrients that have been associated with weight issues, poor digestive health and type 2 diabetes.
Diabetes Canada’s program is inspired by the Australian Glycemic Foundation program, the only independent worldwide GI certification program designed to help consumers to quickly and reliably make healthy food choices.

The Glycemic Index (GI) is a scale that ranks carbohydrate-rich foods by how much they raise blood glucose (sugar) levels compared to a standard food. The standard food is glucose or white bread. Because a lot of starchy foods have a high Glycemic Index (GI), Diabetes Canada published this chart to help consumers choose medium and low GI foods more often.6
So what can bakers do to take advantage of the good carbs trend? Promote whole grain bread, breads made with plant protein such as beans, chickpeas, lentils and breads made with vegetables.

trends as demonstrated earlier. Consumers have turned their attention to sugar7 and cutting back on sugar is one of those connected trends. Sugar, also a carb but a “bad carb”, has been in the focus of Prime Minister Trudeau who is expecting “improved food labels to give more information on added sugars.8” This direction has been translated in the new labelling regulations with the grouping of sugar in the ingredient list – which need to be implemented by December 2021 and the upcoming proposed front of package (FOP) regulations. The proposed FOP regulation will impose a “warning label” on foods with 15 g of total sugar and more per serving and reference amount, telling consumers this food is unhealthy and should be avoided because it is high in sugar. Some lobby groups have also suggested a sugary drink excise tax across Canada and a proposed restricting access to sugary drinks in hospitals, schools, medical facilities and other settings. Using plain packaging that doesn’t appeal to children and restrict marketing of unhealthy foods, including those high in sugar to children have also been proposed to Canadians last year. It looks like

2018 will be bitter sweet for consumers with a sweet tooth.
The revision of Canada’s Food Guide is a fundamental component of the Healthy Eating Strategy and is undertaken with great seriousness because it is used to define what healthy eating means as well as underpinning policies and programs where Canadians live, work and play. The new Canada’s Food Guide and nutrition guidelines will be released in stages by the end of 2018. Last summer the Department released its “guiding principles” – a mission statement that outlines the priorities:
• The first guiding principle lists foods that Canadians should regularly eat: vegetables, fruit, whole grains, and protein-rich food – especially plant-based sources of protein.
• The second principle focuses on what not to eat, “processed or prepared foods” and foods that are high in saturated fat, sugar and sodium.
• The third principle is all about how to eat. It looks at overall food skills and

knowledge, and encourages people to cook their own meals, and to eat together with family and friends whenever possible.
The evidence supporting the first guiding principle are rooted in the strong convincing evidence that diets higher in vegetables, fruits9, whole grains, legumes, nuts and fish and lower in red and processed meats, refined grains and sugar-sweetened foods and beverages have been shown to reduce the risk of cardiovascular disease, including risk factors such as high blood pressure and elevated blood lipids.10 The evidences supporting these dietary patterns are supported by the association between increased intakes according to the Dietary Approaches to Stop Hypertension (DASH) pattern and decreased blood pressure or LDL cholesterol11 as well as the association between increased intakes according to Mediterranean-style, Portfolio or DASH patterns and decreased LDL cholesterol or cardiovascular disease risk12
Not a coincidence that DASH and Mediterranean diets have been ranked as the best diets for 201813. With help from a panel of diet and nutrition experts, U.S.
News evaluated 40 of the most popular diets. For the eighth year in a row, DASH ranked as the best overall diet. But for the first time ever the Mediterranean diet has tied it for first place.
While we should consume trends with moderation, below is a section of a list of food trends prepared by Bonnie Stern14, a food personality, food columnist at the National Post, and writer of numerous cookbook. This should bring good news to bakers:

“What We Heard” report on Restricting Marketing of Unhealthy Food and Beverages to Children in Canada
Health Canada held an online consultation from June 10th, 2017 to August 14th, 2017 regarding its proposed Restricting Marketing of Unhealthy Food and Beverages to Children in Canada initiative. The 1,146 contributors were asked to respond to the following key elements of the proposed approach including; Defining “Unhealthy Food and Beverages”; Determining “ChildDirected” Advertising; Identification of Marketing Techniques and Communication Channels to be included or exempt from restrictions
Due to space consideration the following are excerpts of the final reports Executive Summary where a majority opinion was reported. Overall, the proposed approach and supporting evidence for restricting marketing of unhealthy food and beverages to children were well received. Many contributors understood and appreciated why the Government
was proposing to implement this initiative and felt that it was a positive step towards improving the diets of Canadian children. Most expressed agreement regarding the impact of marketing on children and a desire to lessen their exposure to advertisements of unhealthy products.
Most contributors agreed with the focus of the restrictions on nutrients of concern (i.e., sodium (salt), sugars, and saturated fats).
Most contributors agreed with the stricter threshold for nutrients of concern proposed in Option 1 (+5% of the Daily Value [DV] of sugar, fat or sodium)
The proposed restriction to the marketing of non-sugar sweeteners to children was very positively received, overall. Most agreed with the proposal, especially when it came to artificial sweeteners like aspartame and sucralose.
The proposed definitions of ‘Child-Directed’ for TV and internet advertising were appealing to many contributors as a simple and fair approach.

Many contributors suggested that definitions for marketing techniques and communication channels included within the restrictions should be flexible enough to allow for the shifting marketing environment and emerging innovations in techniques and digital channels.
Some suggestions for additions to the identified list of marketing techniques and communication channels included vending machines, fundraisers, in-store flyers or displays and transportation advertisements. Online surveys and advergames were also of concern to many contributors, reinforcing the importance of having a broad definition of digital marketing techniques.
Sponsorship of sports, charity events, and school activities were mentioned as potential areas for exemption given the benefits they provide to children and the positive impacts they can have, especially for families with limited financial resources. The Quebec model, where limited elements of sponsorship are allowed but more visible elements - such as the use of a logo or mascot - are restricted, was often cited as a preferred approach to addressing sponsorship. Fundraising involving unhealthy food was also identified by some as a potential exemption to the marketing restrictions.
Most, particularly health professionals, felt strongly that no exemptions should be made to best protect our children and to prevent industry from finding loopholes to circumvent the restrictions.

The small indulgences trend is still going strong. Consumers are not ready to give up dessert, but they want to maintain a healthy dietary pattern.
Over the past few years, we have seen that even with consumers making betterfor-you food and beverage choices, they are not ready to give up on dessert. Individual, minis, thins and clusters continue to be offered from artisan bake shops and large commercial companies for people to enjoy the indulgence while still maintaining a healthy dietary pattern.

Nicholson says: “We pride ourselves on creating unique savoury pies. Currently there are over 20 savoury pie flavours including vegetarian and vegan options. Our most popular are the buffalo chicken, holiday turkey pie and Jamaican meat pie. The savoury pies sell for $6 each or four for $22.”
Rosenberg explains: “These confections are playful, decadent and made for grown-ups with all the fond tastes of yesteryear. We are always trying and experimenting with different flavours and options including truffles that fit into our current production and equipment. Often, we’re adding more choices that appeal to our customers plus we co-brand and create ‘little pieces of satisfaction’ for private labels.”

Six years ago entrepreneur and home baker Tara Nicholson was on maternity leave and baking pies often. Her family said they were definitely good enough to sell! Nicholson, co-founder of Itty Bitty Pie Company in St. Catharines, Ont., explains her approach. “At that time, cupcake shops were becoming all the rage, so I thought why not bake miniature pies? And that’s what I did with the help of my mother Pam Nicholson, who is my business partner. We started off with a stand at the St. Catharines farmers market three times a week. In 2012, we decided to buy a food truck to sell the pies at markets and events such as weddings. Then in December 2015 we opened the retail shop.”

They ran out of paper plates, so they served the pie in the drinking cups. It went over really well because it was easier to eat with less mess! Nicholson, referred to as the “pie creator” expands: “Pie-in-a cup is our homemade pie topped with vanilla ice cream and homemade salted caramel sauce. Customers love it, especially during peach pie season. We sell it for $6. Eating miniature food is definitely a trend that’s not going anywhere. People like having the option to mix and match so everyone gets a flavour they enjoy!”
