Canadian business leaders prioritize sustainability: Deloitte report
The recently released “2024 CxO Sustainability Report: Signs of a shift in business climate action” from Deloitte shows that climate change remains a top issue for business leaders (CxOs) across the world, more important than political uncertainty, talent management, and changing regulatory environment. In Canada though, business leaders were more concerned about the economy, supply chain challenges, and competition for talent. Nevertheless, Canadian business leaders consider climate change a priority. In fact, the percentage of Canadian organizations that have increased their investments in sustainability has surged from 13 per cent in 2023 to 36 per cent in 2024, per the Deloitte report.
Now in its third year, the CxO Sustainability Report surveyed over 2,100 CxOs from 27 countries including 127 business executives in Canada. The survey found that business leaders are optimistic as well as concerned about climate change. In Canada, the survey found that CxOs are quite concerned about climate change, with 85 per cent ‘expressing worry all or most of the time,’ which is a significant rise from 59 per cent in 2023.
However, Canadian CxOs are optimistic about the world’s ability to avoid the worst impacts of climate change—92 per cent of them are ‘somewhat or extremely optimistic,’ up from 74 per cent in 2023.
Similarly, 92 per cent of the Canadian respondents believe global economic growth can be achieved while meeting climate change goals, compared to 81 per cent in the previous year.
A majority of the surveyed global leaders (85 per cent) have also increased investments in sustainability in the past year—up from 75 per cent in 2023.
Core strategy
According to the report, CxOs anticipate climate change will impact their companies’ strategies and operations over the next three years, with 70 per cent expecting a ‘high or very high impact,’ up from 61 per cent last year. Nearly half (45 per cent) said they are transforming their business model so that climate change and sustainability is central to the organization’s strategy. The report found that Canadian executives are increasingly aware of climate change’s impact on business strategies and operations, with 78 per cent expecting a ‘high or very high extent of impact’ over the next three years, which is slightly higher than the global average of 70 per cent. Canadian companies are concerned about increased insurance costs or lack of insurance availability; the cost of climate change mitigation, scarcity and cost of resources; and backlash against climate action or ESG initiatives.
The Deloitte survey also found that companies are realizing the benefit of a low-emissions economy. More than 90
Nithya Caleb
per cent of the surveyed respondents believe their company can grow while reducing greenhouse gas emissions. The survey found sustainability considerations were embedded in 39 per cent of the surveyed Canadian organizations, which is higher than the global average of 35 per cent. Most of these changes were due to significant pressure from various stakeholders like board members, civil society, and government regulators. However, Canadian companies are facing various obstacles in their sustainability efforts, such as lack of sustainable solutions or insufficient supply of more sustainable inputs; the lack of a dedicated executive who is responsible for leading the company’s sustainability efforts; and the lack of demand for sustainable goods and services.
Despite the obstacles, Canadian organizations believe in investing in sustainability because of the benefits, such as increased employee morale and well-being. Canadian organizations expect long-term organizational resilience (42 per cent) and revenue from new business ventures (41 per cent) to be among the top benefits of sustainability initiatives in the next five years.

Health Canada bans use of brominated vegetable oil as food additive
As proposed in May 2024, Health Canada removes brominated vegetable oil (BVO) from the List of Permitted Food Additives with Other Accepted Uses. This follows a safety assessment. Although the assessment did not identify an immediate health concern, it didn’t support the continued use of BVO as a food additive. At that time, BVO was permitted for use as a density adjusting agent at a maximum level of 15 ppm in beverages containing citrus or spruce oils. The removal came into force August 30, 2024. Health Canada is providing a one-year transition period, ending August 30, 2025, for companies to reformulate and relabel impacted products. Until then all requirements related to the current permitted use of BVO as a food additive will apply.

ICreating a thriving food safety culture
Dr. Amy Proulx
n the summer, I had the opportunity to work with the Safe Food for Growth (SAFEGRO) program in Vietnam. This Global Affairs Canada-funded project aims to improve Vietnamese’s access to safe food products. Food inspectors attended an advanced workshop on food safety skills and HACCP program design and evaluation. At the program, participants often spoke of hearing about ‘food safety culture’ but weren’t sure what it meant and how to turn it into action.
Culture doesn’t happen magically, and it doesn’t come from repeating a buzzword. It takes deliberate steps to create and maintain.
Most HACCP-based food safety management codes require leadership commitment statements. This is a letter or document from business owners that states the company is committed to fulfilling food safety management requirements. Does company leadership create clear policies and procedures? Does the leadership provide financial resources, allocate time for food safety in production, and ensure employees are empowered to demonstrate their own food safety skills. I’ve also seen managements taking that commitment seriously and making it visible to everyone visiting the facility through a poster near the entrance. In one facility, all employees reviewed and signed the poster too, thereby demonstrating their commitment. This way, there’s a clear and unified purpose for everyone.
Additionally, a food safety culture requires training and employee engagement. Companies must ensure there is relevant training for each employee group, at the right skill
level, and targeted to the job they need to accomplish. Setting clear lines of accountability helps. It is essential employees know who is responsible to fix specific problems, as they arise.
Share the message
Communication about food safety is also critical. This means all employees get the
is required, does leadership focus on blaming people instead of fixing the problem with immediate corrective steps and long-term preventive action? Often in our reactionary way, we point fingers at each other rather than addressing the root causes of the problem.
When people work with fear and shame, they are more likely to hide a problem, and this can be catastrophic to food safety. If people can raise an issue and have a positive and proactive response from management, it gives employees the confidence to solve problems and reduce risk. Celebrating the people who identify and solve problems at all levels of the organization helps build confidence across the whole company.
Food safety culture is an active process, and by taking one step at a time, it can go from being a buzzword to an important part of organizational success.
messages, not just select managers. This may require creative tactics. The message must resonate with employees. Consider: Is it in the right language? Is the message simple and easy to apply, or is it technical and complicated and prone to be forgotten?
Helping employees understand where hazards come from, and applying a risk reduction approach is a key message. Most food manufacturing employees do not have a technical microbiology or food engineering background, so keeping messaging simple and focused on identification and elimination of hazards is the most effective strategy.
Some of the most lucrative aspects of food safety culture focus on how leadership responds to workplace behaviours and fosters positive continuous improvement. When corrective action
When starting something new in an organization, there are often people who doubt, and resist change. There may also be advocates or champions for the change mindset. Whenever there is a change, it is important to implement it in gradual steps, as most organizations will have a range of mindsets.
One of my favourite toolkits for performing a review of food safety culture comes from Dr. Lone Jespersen. Her organization, Cultivate, has templates and models that can be used by companies to reflect on the food safety culture within their organization. The Cultivate Maturity Model (visit https://www. cultivatefoodsafety.com/our-models) is one of my favourite free tools. Owners can use this Cultivate tool, identify one of the elements in the model, and work to progress the value towards an increased food safety culture.
Food safety culture is an active process, and by taking one step at a time, it can go from being a buzzword to an important part of organizational success.

When we look back to when the Canadian Food Inspection Agency (CFIA) opened its doors for the first time in April 1997, it is interesting to reflect on the types of challenges that faced both the industry and the regulators, and how these issues have evolved. A major food safety issue at the time stemmed from the introduction of what came to be known as genetically modified organisms (GMOs).
Foods derived from GMOs, where the organism has had one or more of its heritable traits intentionally manipulated through scientific means, including genetic engineering and gene editing, were coined with the catchy portmanteau ‘Frankenfoods’ by activist groups—a term that was later adopted by mainstream media. The introduction of these genetically modified foods was undoubtedly met with uncertainty from consumers, industry, and regulators, with questions about the potential risks they might pose. Despite protests from some groups, regulators and scientific organizations continued to assess (and confirm) the safety of genetically modified foods, recognizing the potential for GMOs to address growing concerns about food instability, pesticide use, and inadequate nutrition.
GMOs were introduced to the Canadian marketplace in the mid 1990’s and quickly became ubiquitous with the preponderance of soy, corn, and canola ingredients in our food. With the increased presence of genetically modified foods in grocery stores, governments around the world began introducing regulatory measures surrounding the use, importation and labelling of these foods.
Whatever happened to Frankenfoods?
Ronald L Doering and Lauren Richardson
The approach varied across jurisdictions, with the Canadian government opting to introduce a voluntary labelling standard for foods that are and are not products of genetic engineering in 2004, in addition to novel food approval requirements.
Canadian standards
Notably, the Canadian voluntary labelling standard adopted the terminology ‘genetic engineering’ and not ‘genetic modification,’ as the latter was determined to be too broad and capture too many foods. Genetically engineered (GE) foods are derived from or contain genetic material that has been changed in a way that does not occur naturally. The goal of the voluntary labelling standard was to help consumers make informed food choices in distinguishing between foods that are and are not a product of
genetic engineering, while maintaining the position that Health Canada found GMOs and GE foods to be safe and nutritious.
With Health Canada consistently deeming GE foods safe and nutritious on one side, and the consumer apprehension of these foods as well as the desire to make informed food purchases on the other side, the path forward for the industry was conflicting. What, at first, appeared to be a well-defined concern over food safety became a much more complex issue, with many instances where the regulator and consumers were on opposite sides. Despite regulatory changes, there was significant consumer confusion and misunderstanding about GE foods. Today, GE foods continue to not be subject to mandatory labelling in Canada—they are simply labelled in the same way as any other food. Health Canada recently introduced a new, voluntary transparency initiative for gene-edited plants developed for food use. The goal of this initiative aligns with the voluntary labelling standard: to provide Canadians with information on gene-edited plant products that may be used as food in the Canadian market, and to help enhance public trust in GE foods and the regulatory system surrounding their use. However, it remains to be seen if this will clear up consumer confusion, or if this has only created further problems for industries and farmers down the road, when dealing with transparency in the marketplace.
Ronald L Doering, LLB, LLD, is a counsel at Gowling WLG and former president of the Canadian Food Inspection Agency. Lauren Richardson, LLB, is an associate with Gowling WLG.
Consumer trust is crucial, especially when it comes to supplying Canadians with food. As consumers increasingly seek transparency, leaders in the foodservice sector are striving to meet this demand. One way consumers are seeking assurance is through certifications, which confirm that certain standards have been met along the journey their food takes from farm to table.
With the average Canadian consuming 255 eggs annually, the Egg Quality Assurance™ (EQA®) certification mark is the symbol Canadians can trust. It shows them that their eggs are local, high-quality and produced according to strict national standards by Canadian farmers. The EQA® certification mark resonates with consumers’
preferences, empowering them to make more informed choices.
The EQA® program certifies eggs that meet strict food safety and animal care standards, and provides a reliable certification mark that consumers can trust. The EQA® certification mark—which can be found on egg cartons, restaurant menus and advertising materials— celebrates the fresh, local and high-quality nature of Canadian eggs.
National Standards in Food Safety
A key component of the EQA® program is the Start Clean-Stay Clean® program, which focuses on preventing, reducing and eliminating food safety hazards at the farm. Canadian egg farmers follow this detailed program with established guidelines for regular cleaning and disinfection, proper handling of eggs, and robust biosecurity measures.
This approach ensures that eggs from regulated Canadian farms are produced according to rigorous standards.
National Standards in Animal Care
The Animal Care Program, another key component of the EQA® program, ensures that the health and welfare of hens is a top priority. The program was developed in collaboration with farmers, animal welfare groups, scientists, veterinarians, retailers, government and industry representatives.
The Animal Care Program outlines 100+ requirements that Canadian egg farmers must take on their farms to ensure that hens have a comfortable environment, a well-balanced and nutritious diet, fresh water, and clean surroundings.
Trust the EQA® Certification Mark
For Canadians, the EQA® certification mark is more than a symbol—it’s a beacon of trust. Especially for the 9 out of 10 Canadians who feel that a quality symbol on Canadian egg cartons would reassure them that the eggs meet national standards.1
For key industry leaders, displaying the EQA® certification mark on cartons, products and menus means showing consumers that they can trust every Canadian egg.

Health and sustainability as change factors in the meat and poultry processing sector
— BY MARK JUHASZ —
Today, how we source our proteins, whether as individuals or families, is no easy question. Protein provides the energy needed for our daily lives. It is tied closely to traditions, satiety and culinary satisfaction, hence individual and collective decision-making around protein choices carry a lot of weight. Further, livestock production (meat and poultry included) is estimated to account for between 11 and 20 per cent of greenhouse gas emissions.1 From a cost perspective, according to Statistics Canada, grocery prices have largely decelerated from a high of 11.4 per cent in January 2023 to a low of 1.4 per cent in April 2024 but reaccelerated again in June 2024 to 2.1 per cent. All to say that amidst food inflation, persistent consumer concerns for health, and growing public desire for greater sustainability, protein choices remain an important source of market analysis.
For meat and poultry processors, governments continue to introduce policies and regulations that impact production and supply chains, whether led by EU-mandate examples or from international climate-related agreements. These have implications on business practices in Canada, not only for raising livestock and poultry, but also for processing meats for consumer markets. For example, Denmark is set to become the first country to introduce a carbon tax on livestock emissions by 2030. The tax is tabled for approval by the Danish parliament and may serve as a signal to the Canadian meat and poultry industry on potential production implications. More broadly in the EU, the Nature Restoration Law aims to help restore ecosystems, biodiversity and support natural pollination of crops. The law will also impact the use of land by beef, pork and poultry farmers.
By contrast, the plant-based food sector, which is often marketed as a health and sustainability alternative to the meat and poultry industry, has largely grown over the past decade with a broad range of product offerings including plant-based meats. However, the sector has seen, over the past two years, a decline in retail dollar and unit sales in North America, per data tracked by the Good Food Institute. Increases in the cost of plant-based meat alternatives, along with supply chain complications and

not meeting consumer aspirations for taste, texture, health and price, have caused the downturn. According to the Good Food Institute’s 2023 State of the Industry Report – Plant-based: Meat, seafood, eggs and dairy repeat purchases of plant-based meats are generally at about 62 per cent.
Amidst all the recent complications and complexities in consumer protein choices, large, corporate meat companies such as Tyson, JBS, Cargill, Smithfield, Hormel Foods, and Maple Leaf Foods have invested in, acquired, partnered with, or undertaken R&D and manufacturing of plant-based foods as well. Despite this diversification of protein production sources and consumer choice complexity, global meat consumption is projected to continue rising until mid-century. However, from a macro-economic perspective, in 2023, beef sales slowed down in Canada. According to Statistics Canada, in January 2024, there were just over 11 million cattle and calves on farms, down 2 per cent from the previous year, and the lowest number since 1989. The reasoning is complex and varied, but drought conditions, tight feed supplies, along with good prices have sent cattle herds to market rather than retaining them on farm, which is translating to higher prices for meat overall in 2024. Pork plants across Canada have also closed, especially in eastern Canada, such as Olymel’s processing plants in Vallee-Jonction, Sainte-Hyacinthe, and Princeville, all in Quebec, in 2023. Poultry remains the leading meat choice for Canadians, and poultry processors are dealing with large stocks of frozen inventory. In North America too, poultry remains the most consumed type of meat, at 46 per cent, followed by beef at 30 per cent and pork at 24 per cent.2
Companies are acutely aware of the fine balance that conventional meat products need to provide in terms of pricing, value, convenience, tradition, nutrition and sustainability. Therefore, we are seeing leaner cuts, organic options, antibiotic- and hormone-free products, prepared
servings, whether flavoured or marinated, and ready-to-heat items in the marketplace.
Canada’s Maple Leaf Foods operates Greenfield Natural Meat that sells antibiotic-free options. Across North America, brands are introducing healthier offerings. At the regional level, meat processors are sourcing, when able, grass-fed, free-range, organic options that emphasize ecological benefits. A 2021 McKinsey survey found that U.S. consumers are willing to pay 51 per cent more over regular cost for cage-free eggs, 149 per cent more for organic eggs, 226 per cent more for grass-fed whole cuts of beef, and 311 per cent more for grass-fed ground beef. Alberta’s Gemstone and Rangeland Bison are setting new innovation standards with grass-finished, pastured beef and bison products, and marketing across western Canada. YU Ranch in southwestern Ontario follows similar quality standards, processing and distributing beef products to buyers across Ontario.
Canadian meat processors need to be aware of the complexities in consumer choice, as the lesson in recent history taught us, when Canadian restaurant chain, Earl’s, which initially planned to source ‘animal welfare standard’ beef products from abroad, reverted to domestic sourcing after consumer backlash.
Companies are responding to consumer demand for healthy options with leaner cuts, organic options, and antibioticand hormone-free products.
The meat and poultry processing sector in Canada has needed to stay alert to the times, responsive to growing pressures from meat alternatives, to provide products that are health-focused, and with demonstratable sustainability credentials. Value chain partnerships with beef, pork and poultry farmers is proving beneficial to processors. New tools of applied AI allow for better herd health management and industry associations, such as the Canadian Roundtable for Sustainable Beef and the North American Meat Institute, are stepping up their food, worker, sustainability, and carbon footprint protocols. Processors that can find a fine balance between value for price, convenient formats, healthy options, sustainability features, and staying aware of regulatory developments will be able to remain relevant moving forward.

Challenges and opportunities with free trade agreements
Canada exports over a third (34 per cent) of its food and beverage production, with 90 per cent of these exports going to countries in our top three free trade agreement (FTA) markets. The Canada-United States-Mexico Agreement (CUSMA) dominates with 82 per cent of our exports, followed by the Comprehensive and Progressive Trans-Pacific Partnership (CPTPP) at 6 per cent and the Canada-Europe Trade Agreement (CETA) at 2 per cent. Excitement is building around the Canada-ASEAN FTA. Trade ministers are aiming to conclude negotiations by 2025.
Three of Canada’s 10 food and beverage sectors make up over half (54 per cent) of our exports: grain and oilseed milling (25 per cent), meat and poultry manufacturing (20 per cent), and seafood (8 per cent).
The Canada-ASEAN FTA includes four of the CPTPP countries (Malaysia, Vietnam, Singapore, and Brunei) as well as Cambodia, Myanmar, Indonesia, Philippines, and Thailand. The latter three countries have a combined population of almost half a billion people.
Canada is currently in bilateral trade talks with many countries, including India, which overtook China in population last year. Although negotiations have stalled, India remains a huge market for Canadian pulses, especially lentils. Export Develop-
ment Canada (EDC) noted in its Global Economic Outlook in July that India and Indonesia will outpace China in annual real GDP growth rates this year through 2027.
Mixed results
Farm Credit Canada (FCC) published a paper in May on the impact of CUSMA, CETA, and CPTPP FTAs on the export performance of Canada’s cereal and oilseed sectors. The study compared exports before and after the agreements came into force. CUSMA’s impact was muted as it was like the NAFTA agreement it replaced. CETA
gave Canada an advantage over other cereals and oilseed exporters, with exports rising to a decade high of nearly 7 million metric tonnes in 2020 but subsequently declined “…as that kind of growth was difficult to sustain,” wrote FCC economics editor Martha Roberts. The CPTPP agreement gave an additional boost to Canada’s exports during COVID, but demand faltered when Japan cut back, and Australia gained market share due to its proximity to Japan.
While the specifics of each FTA vary, they generally provide for the reduction of trade barriers and the creation of a more

predictable and transparent trading and investment environment.
Canada is the only G7 economy with comprehensive free trade access to the entire G7 and European Union. Canada’s 15 FTAs cover 61 per cent of the world’s GDP and open markets to 1.5 billion consumers worldwide. All of them were only put in place in the last 25 years.
EDC said, “When it comes to free trade agreements, reduced duties are definitely a key benefit, but gaining preferential access to markets around the world is a major win.”
The dispute resolution procedures agreed to in FTAs are important. Dean Dias, CEO of Cereals Canada, said, “Disputes will arise even within FTAs and dispute resolution is very important for addressing these issues.”
Canada referred the U.S. Country of Origin Labelling (COOL) requirement for beef and pork in 2009 to the World Trade Organization (WTO) and had the requirement reversed.
Prince Owusu, a senior economist with EDC, said in July, dispute resolution is a key component of FTAs and noted that the U.S. resurrection of COOL this spring

Canada Pork Council chair Rene Roy said the policy, to take effect in January 2026, will “only increase costs for producers, processors and, ultimately, consumers.”
Indo-Pacific Trade
Grain, oilseed, seafood, and meat processors welcomed the opening of the Indo-Pacific Agriculture and Agri-Food Office (IPAAO) in Manila, Philippines, in February. The office will enable the development of relationships between Canada’s agriculture and agri-food companies with current FTA partners and prospective partners in the region including ASEAN.
Pulse Canada president Greg Cherewyk noted in February the value of good relationships even in the absence of FTAs while attending the Global Pulse Confederation’s

annual meeting in New Delhi, India. He noted that from 2000 to 2020, over 50 per cent of all pulse imports into India came from Canada.
During that same period, India was Canada’s largest market for pulses. But trade was disrupted in 2017 and 2018 when India started imposing tariffs and quantitative restrictions on Canadian pulses, making five rate adjustments in six months. The issues were subsequently resolved.
Cherewyk credited a “longstanding relationship” with our Indian counterparts for being better able to understand their motivations and anticipate change.
He added, “We’re seeing tariffs locked in for a year, which is a new and welcome signal towards stability. Currently we’re seeing a zero-tariff year on lentils, which will be extended to March 2025…”
Promising markets
Vietnam stands out as a promising market for Canadian meat and seafood exporters. Export Development Canada noted in June in its Sectors in Focus newsletter that Vietnam’s seafood imports grew by 12.3 per cent from 2018 to 2022, reaching US$2.5 billion.
Meat imports increased by 30.3 per cent in the same period, totaling US$1.5 billion in 2022. Average import tariffs on animal and fish products in Vietnam were 14.2 per cent and 15.1 per cent, respectively, but under CPTPP, Canada will have duty free access for 94 per cent of its agricultural exports—including seafood and meat.
India, Thailand, Philippines, and Indonesia are also of particular interest due to rising incomes, large populations, and preferences for Canadian products.
Canada is the only G7 country with free trade access to the entire G7 and European Union.

Humanoid robots, a potential solution to Canada’s workforce crisis
Artificial intelligence-driven robots could help address productivity and labour issues in F&B
— BY OJASVINI PARASHAR —
Canada is experiencing unprecedented demographic shifts and economic pressures that are reshaping its manufacturing sector. The federal government’s plan to reduce temporary foreign workers, combined with Canada’s record-low fertility rate (1.33 children per woman) and persistent labour shortages, underscores the urgent need for innovation in the food and beverage processing sector.
Canada’s population reached a historic high of 40.77 million in 2023, driven largely by temporary immigration. Despite this growth, the manufacturing sector, including food and beverage processing companies, face severe labour shortages. According to a study by Food Processing Skills Canada (FPSC), the Canadian food and beverage manufacturing industry will need at least 142,000 new people between 2023 and 2030. Further, Food and Beverage Canada found that manufacturers are typically understaffed by 25 per cent. With more than 8,200 processors in Canada, FPSC estimates that losses from job vacancies could total up to $9.3 million in net revenue per day or $3.4 billion per year. This is not a sustainable situation for the processing industry. Companies must find new ways to improve productivity on plant floors as traditional automation technologies have proven inadequate and businesses struggle to find workers for mundane and dangerous tasks.
Ben Reed, CMO at Sanctuary AI, which is on a mission to create general-purpose robots with human-like intelligence, highlighted the limitations of current technologies.
“All of the present automation in manufacturing, called special purpose, is designed for one or a couple of specific things. The challenge in F&B manufacturing is that there are still things that require people to create the final product, and such roles can’t be automated with traditional special-purpose automation technologies,” he explained.
Humanoid robots
This is where humanoid robots, powered by artificial intelligence (AI) control systems, can play a disruptive role.
“The approach should be to create a general-purpose robot that can do lots of different things because that’s what people essentially are in the labour force,” Reed said.
Sanctuary AI believes two key things—dexterous human-like hands and an AI control system needed to drive the robot— enable this possibility. Dexterous human-like hands are important because “98.8 per cent of all work requires dexterous manipulation.” A general-purpose robot, such as Sanctuary AI’s Phoenix, can adapt to various tasks (e.g. bottling soda one day and wrapping a food product the next) due to its ‘human-like adaptability’. Carbon, Sanctuary AI’s artificial intelligence-enabled control system allows Phoenix to learn and understand the different tasks it’s required to perform.
Sanctuary AI has launched various iterations of its Phoenix robot, but none are ready to be deployed in a factory setting. In 2023, it ran a week-long pilot test at a Mark’s retail store in Langley, B.C. Phoenix 7.0 was asked to perform
Sanctuary AI’s general-purpose Phoenix robot is designed to work like humans and handle multiple tasks.
110 retail-related tasks, such as picking and packing merchandise, cleaning, tagging, labelling, and folding. Sanctuary is using the lessons learned during the pilot test to develop Phoenix 8.0.
Switzerland-based Mimic has developed an AI-driven collaborative robotic hand. It raised US$2.5 million in a pre-seed funding round earlier this year. According to Mimic, the hand is designed to handle environments and tools made for humans and has been engineered to handle tough work conditions as well as fragile objects. It is also not ready for commercial deployment.
Stephan-Daniel Gravert, co-founder of Mimic, said, “Most use cases are stationary and do not require a full humanoid robot with legs. That’s why we focus on data collection and hardware ingenuity on a universal robotic hand that is compatible with off-the-shelf industrial robotic arms for positioning.”
Market potential
According to the Goldman Sachs report, Humanoid robot: The AI accelerant, which was released in February 2024, the global market for humanoid robots could reach US$38 billion by 2035 due to rapid development. Models can now train
themselves instead of requiring human engineers to code everything. This has sped up robotic development, allowing these devices to do more tasks and adapt to new situations more quickly, said the report.
Further, the hardware components required to make the robots, such as high-precision gears and actuators, cost less now, per the report. According to the Goldman Sachs report, the manufacturing cost of humanoid robots has declined from an estimated US$50,000 (lower-end models) and US$250,000 (high-end versions) per unit last year to US$30,000 and US$150,000 now.
The report’s authors optimistically estimate the shipment of over 250,000 humanoid robots to factories across the world in 2030.
However, the report is cautious about general-purpose robots. While, in theory, employing general-purpose robots can address a nearly infinite range of realworld problems, they’re not widely used because of the limited availability of training data for robots. Another challenge is to acquire enough hardware components to mass produce humanoid robots.
As highlighted in the Goldman Sachs report, “some components need high-precision grinding machines that are limited in number, which makes it difficult to ramp up production. Costs for some components are still high because of limited industrial capacity or long manufacturing cycle times.”
Additionally, the report highlighted “bottlenecks in the development of AI and software for robot manipulation (such as grasping objects)
Mimic’s AI-driven robotic hand has been engineered to handle tough work conditions as well as fragile objects.
and interaction (taking voice commands from a person without training).”
Possible solution
Nevertheless, the Goldman Sachs report envisions that general-purpose humanoid robots will become the next ‘must-have’ device in manufacturing facilities, if innovation continues to unfold rapidly and the demand for these solutions rises. Automotive parts company Magna has invested in Sanctuary AI. According to a partnership agreement between the two companies, Magna will financially support Sanctuary AI’s development of general-purpose AI robots for deployment in Magna’s manufacturing plants. Sanctuary will have access to Magna’s product portfolio, engineering, and manufacturing capabilities to assess and improve the cost of manufacturing its robots as well as make it scalable.
“Robots like Phoenix are designed to be able to function in an environment where a person would typically function” said Reed. “They have two arms, two hands, 10 fingers, a head, and they’re similar in size, height, shape, etc., to a person.”
This human-like form factor is supposed to facilitate easier integration with existing systems. As Reed pointed out, “The great thing about a general-purpose technology is that it isn’t going to just be the large companies that are going to be able to leverage this technology. The system that we’ve produced is intended to be general purpose, enabling a much smaller company to be able to have this technology depending on what they’re doing.”
All of the present automation in manufacturing is designed for one or a couple of specific things. The challenge is that there are still things that require people to create the final product, and such roles can’t be automated with traditional tech.
– Ben Reed
Safety
As with any emerging technology, the adoption of humanoid robots in manufacturing brings up concerns about safety and regulation. However, the proponents and developers are confident of integrating all required safety standards into the design of humanoids.
Reed explained that this technology can address areas of operations that traditional automation has not been able to help with, thereby ‘closing that gap’.
As mentioned earlier, Mimic robots are designed to fit into existing workflows. Co-founder Stefan Weirich said, “Conventional automation leaves a huge gap of tedious, low-to-medium volume manual labour tasks that often fall under the table because they are too complex or not economical to automate ... Taking AI-driven robotic manipulation to the next level, we can now address these challenges.” In an era of declining birth rates and labour issues, robotics is emerging as a potential workforce solution.

OMEGA-3 substitutes to fish oil
The global fish oil supply is a hot topic as the worldwide demand for omega-3 nutrition grows. Omega-3 polyunsaturated fatty acids (PUFAs), eicosapentaenoic acid (EPA), and docosahexaenoic acid (DHA) are sourced mainly from wild caught fatty fish, which for several reasons is not sustainable in the long term. EPA and DHA promote optimal development, support physiological function and healthy aging in humans as well as are beneficial to companion animals. Due to the vulnerabilities of the wild caught fatty fish sector, it’s necessary to have sustainable and scalable alternatives for omega-3 EPA and DHA. These include land and marine plants like canola, ahiflower, microalgae and zooplankton that are viable, consistent sources of EPA and DHA omega-3s.
Several challenges affect the wild caught fatty fish sector’s ability to meet the growing demand for omega-3 EPA and DHA.
These include reliable supply, the marine ecosystem and climate change.
Dr. June Yao, global regulatory lead, Nuseed Nutritional, explains, “Wild caught fish are a well-known source of long-chain omega-3 fatty acids, especially DHA and EPA, which are essential nutrients for human and animal health. The world’s oceans cannot supply enough to meet the growing demand for omega-3 nutrition. The UN Food and Agricultural Organization indicates that over 60 per cent of wild fish stocks are fished to capacity. Seasonal challenges add to supply volatility. New sustainable omega-3 oil sources are needed for continuity of supply and to prevent a 1 million t supply gap by 2030.”
Greg Cumberford, vice president, science and regulatory, Natures Crops International, adds, “Of the approximate 1.25 million t of fish oil produced globally in 2022, approximately half came from whole wild-caught or farmed fish. Out of this, global omega-3 EPA/DHA oil
production in 2022 was approximately 160,000 t, mostly from fish oil, of which around 105,000 t went to human and pet supplements. The world’s available supply of wild-caught fatty fish (anchovies, sardines, herring, menhaden) to meet global omega-3 recommended intakes cannot keep pace with demand. This is before factoring in rapidly rising global aquaculture demand to feed farm fish.”
Peter Howard, vice president, project development and director, Algae Labs, Pond Technologies, describes, “Anchoveta (Engraulis ringens) are a small, schooling fish species found primarily off the coasts of Peru and Chile, one of the most productive marine ecosystems in the world. Despite their abundance, anchoveta are vulnerable to climate change impacts including temperature sensitivity and vulnerability to oceanographic changes. Climate change is expected to increase this vulnerability in the future, as alterations in their habitat, food availability, and ecosys-

tem interactions make them particularly susceptible to these effects. This highlights the importance of alternative sources of omega-3 fatty acids.”
Snorre Angell, CEO, Zooca, says, “Global fish stocks face numerous challenges and vulnerabilities, including overfishing, bycatch, habitat degradation, pollution, climate change and disease. While not all of these factors are within our control, some are. Overfishing threatens ocean ecosystems and the billions of people worldwide who rely on seafood as a key source of omega-3 fatty acids and protein. It’s essential to have sustainable alternatives.”
Sustainable, scalable alternatives
Sustainable and scalable omega-3 EPA and DHA alternatives to wild caught fatty fish need to be available to guarantee a solid global supply moving forward. In addition to the alternatives on their own, there is an opportunity to blend them with fish oil, as another stream, to ensure consistent quality and predictable availability at a reasonable price.
Yao says, “Nuseed Omega-3 Canola is the world’s first crop capable of making long-chain omega-3 DHA and EPA, along with increased ALA [alpha-linolenic acid]. We replicated the enzymatic pathway microalgae take to produce long-chain fatty acids to transform the omega-3 profile of canola oil. It’s a sophisticated feat of biotechnology that has the potential to double the world’s supply of DHA on less than 5 per cent of current canola production land. Every hectare of Nuseed Omega-3 Canola can produce as much DHA as 10,000 kg of wild caught fish. Aquaterra Advanced Omega-3 oil, also derived from Nuseed Omega-3 Canola, is developed as a strategic nutrient in aquafeeds. Aquaterra is improving the health and quality of Canadian farmed salmon. Nutriterra is approved for use in human food in Canada, with new consumer products in active development.”
Cumberford says, “Made exclusively in Canada, ahiflower oil comes from the seeds of U.K.-grown Buglossoides arvensis. This certified non-GM omega-3 rich crop is grown following regenerative farming practices. No glyphosate is applied. No solvents are used in ahiflower oil refining; only light physical refining/filtration. The crop is highly scalable, producing as much omega-3 oil per acre as from 500,000 anchovies in a short eight-month cropping cycle. It can be grown at large scale in cooler temperate climates in both the Northern and Southern hemispheres. Ahiflower production helps the omega-3 industry restore balance and meet rising consumer expectations that achieving personal wellness goals should not come at the expense of planetary wellness.”
Angell says, “The Zooca Calanus oil offers a scalable solution to provide both omega-3 fats for humans and protein for animal feed. The zooplankton Calanus finmarchicus is one of the world’s largest renewable marine resources, reproducing an impressive 290 million t each year in the Norwegian Sea. That’s more than the total fishery biomass weight (214 million t) of all farmed and harvested fish annually worldwide. Of the annual 290 million t of Calanus finmarchicus reproduction, only 0.0005 per cent is caught and harvested in northern Norway. All harvesting operations are conducted with complete transparency and in an environmentally
friendly manner. Zooca is committed to minimizing bycatch through self-developed, patented technology and strict regulations from the authorities.”
Grant Smith, president and CEO, Pond Technologies, says, “Microalgae have emerged as a promising omega-3 alternative source, offering a sustainable solution to the challenges associated with traditional fish-based sources. Pond’s microalgae cultivation can be conducted in controlled environments on land. As a primary producer in aquatic ecosystems, microalgae are naturally rich in omega-3 fatty acids such as EPA and DHA. Canadian companies like Pond Technologies are at the forefront of harnessing the potential of microalgae to provide EPA and DHA worldwide.”

Elevating brands with simple designs
food packaging
Food packaging conveys a message from the food manufacturer to customers. Packaging design, company logos, and colours are all part of the visuals helping elevate a brand. That, however, is only part of the story.
“Before you even start, you need to think about your strategy, not just packaging and design. We work with the four truths—what is your category, who is your customer, what is happening in the culture, and what is your product about,” says Elyse Boulet, CEO and managing partner at award-winning agency Pigeon. Started in 1971, Pigeon, which has offices in Toronto, Montreal, and Mexico City, has helped build over 1000 brands.
“Designing a package can easily take more than a year,” says Boulet.
She gives food manufacturers this advice.
“Never look at packaging design against a white paper. It needs to be viewed both online and in-store to see not only how it will really look, but how it looks next to the competition,” she explains. “This will depend on where your product will be displayed. If you have a frozen dessert, you need to see how the packaging will look behind glass.”
The moment of truth comes when shoppers reach the grocery aisle.
“Any designer can create something beautiful, but the key is to create something beautiful that sells products,” she says.
Simplicity wins
Pigeon works on the premise of findability,

stopability, shopability, and usability. The product must be findable among masses, with easy brand recognition. It must stop shoppers and grab their attention. Shopability is all about storytelling. It helps consumers understand the product, the offer, and benefits. The useability of the food product must be clear and housed in a highly functional package.
Recently, Pigeon worked with rice company Dainty.
“In a category where giants are expanding their offerings and private brands are becoming more popular, the Dainty brand had lost its momentum. With obsolete packaging and inactive communication for several years, the brand equity had become
very low. With a generous product line and know-how passed down from generation to generation, the brand was in dire need of revitalization in every way,” says Boulet.
The packaging was taken from a flat pillow style, common among rice manufacturers, to stand-up packaging in a vivid teal colour. Dainty’s premium tier rice has black packaging, while the organic is green. A new, large, curvy white font identifies the brand name. Dainty’s brand icon in regal gold sits above, with the date 1882, the year the company was founded.

A CLASSIC French croissant has 55 layers, including 27 layers of butter. What’s a vegan to do when craving this flaky baked good?
Ingredient technologies are available to assist with leavening and aeration. And now with new Butter Buds Non-Dairy 32X®, butter flavor is possible, too.
“This is an exciting flavor sensation that makes it possible for manufacturers to create satisfying and craveable non-dairy foods, without the risk of exposure to dairy allergens,” said Michael Ivey, National Sales Director, Butter Buds Inc. “It is also water soluble, so it’s very easy to integrate into existing formulations. Now manufacturers can keep the satisfying mouthfeel, creamy texture and buttery flavor that consumers want, and make a vegan claim.”
Butter Buds Non-Dairy 32X incorporates sunflower oil in combination with other natural flavors to mimic the characteristics found in dairy fat to deliver medium-strong salted butter middle notes with buttery and savory base notes, for maximum flavor impact. Having Butter Buds’ hardworking ingredient solutions in the matrix can often help formulators lower usage rates of other more costly ingredients to help to control costs. Butter Buds NonDairy 32X is also shelf stable to minimize food storage refrigeration concerns and logistics costs, and is easy-to-use in manufacturing for a wide range of applications.

As for some general trends in food packaging, Boulet says, “Simplification. Packaging needs to be simple to understand. You only have three seconds to capture the customer’s attention. Bigger brand marks are integrated into the packaging to be instantly recognizable. Also, you can’t say everything on the brand packaging. That is why QR codes are so popular for looking up additional product information and recipes.”
Bold and bright
“Colour has always been a big part of how we position the Big Mountain brand,” says Jasmine Byrne, COO of Big Mountain Foods in Vancouver. The company pioneered the first-ever soy-free tofu made with fava beans. Packaging colours for various products include sunflower yellow, deep purple, lime green, and hot pink.
“We are innovating the space with the food of the future, and we aren’t afraid of showing this off,” says Byrne. “Our bold and
bright colours align with our vision—we’re bold and unafraid. We stand out on shelves and are creating foods that should stand out as key players in the growing shift towards real food made with real ingredients.”
As Big Mountain Foods evolved its marketing strategies, new packaging was needed.
“Today, people want to see what they’re going to eat. Consumers are being drawn towards food brands they can trust,” says Nicole Duff, creative co-ordinator. “This is why we integrated windows into our new soy-free tofu packaging.”
Adjustments had to be made to the packaging design to accommodate the window.
“This presented a challenge, as we wanted to make sure this box was cohesive as a part of the Big Mountain family, fitting our text, logo, and other elements while accommodating this new window,” says Duff. “Our strategy was, and always has been, to put our bold imagery, colour palette, and recognizable design first—and build other elements around it in a supporting manner.”
Then Duff adds, “For this line, we chose to integrate visuals that tell the story of our fava beans since we are so proud of the whole
journey. This begins with fava beans that are grown on a women-owned, Canadian, and regenerative farm to our soy-free tofu, and then to the life after production where we upcycle tofu byproducts and underweight tofu to ensure nothing is ever wasted.”
Duff offers packaging advice to other food manufacturers.
“Understand packaging regulations in the countries you are distributing to. Packaging regulations can vary by country and type of product, so it is important to ensure you understand what rules must be followed before getting too far into any design.”
Then Duff adds, “Sustainability and environmental consciousness are in. We are seeing a shift to more sustainable materials and a reduction in unnecessary packaging. This can mean getting creative with packaging and being more conscious of the materials used to make products functional and attractive on shelf.”
Food packaging helps to elevate a brand and build a loyal customer base. Developing packaging takes time and requires well thought-out strategies. Seeing more of your products ringing through the cash register is worth the time and effort.
Pigeon helped redesign rice brand Dainty’s packaging. The rice is now packaged in stand-up pouches in vivid colours and has a window to show the product inside.
Big Mountain Foods is known for using bold and bright colours like hot pink in its packaging.
Integrating sustainability into business operations
The food production industry is an essential sector in our country and the largest manufacturing employer in Canada.1 A study by Poore and Nemecek states that 26 per cent of all global greenhouse gas (GHG) emissions can be attributed to food production.2 Although significant portions of these GHG emissions fall under upstream categories for food processors such as crop production or land use, 18 per cent (or nearly 5 per cent of total global GHG emissions) are associated with direct food production such as packaging (5 per cent) and food processing activities (4 per cent).
To integrate sustainability into food production systems and quantify if improvements are being made, we must be able to account for and measure changes.
A framework for emissions
Most agencies use Scope 1, 2, and 3 to categorize and measure GHGs generated by an organization.3 This framework helps organizations to consider the sources and their impact on the entire supply chain.
Scope 1 GHGs are directly generated by the organization. An example could be emissions associated with fuel combustion from an onsite generator, boiler or furnace. Emissions associated with company vehi-
cles are also included in Scope 1. This category is relatively easy to quantify and using online calculators’ conversion to equivalent GHG quantities is achievable.
Scope 2 emissions are indirect GHG emissions specific to purchased energy sources such as electricity, heating and cooling for the organization’s facilities. This category has some nuance to consider and data to support may be available from utility companies or online calculators.
Scope 3 emissions are not directly controlled by the organization but indirectly can be influenced by decisions made by the organization. Such emissions include everything not covered by Scope 1 and 2 and include upstream (e.g. raw material processing) and downstream such as end of life-cycle waste. This category is typically the largest source of GHG emissions (estimates at over 90 per cent4) and more challenging to identify and quantify. In this category,
Challenges and solutions for measuring GHG emissions across the supply chain — BY NICOLE DETLOR—
changes to packaging or reduction of food waste are potential areas of action for an organization. Food waste is a significant category of Scope 3 GHG emissions because it contributes in two ways, first in their production and second as waste breaking down in landfills. Employee commutes are also a factor in Scope 3 emissions, companies can consider policies that encourage working from home, carpooling, transit, etc.
For up and downstream emissions consideration for resource circularity is a useful framework for GHG reduction. This principle considers materials as resources in a circular system rather than linear where raw materials ultimately are disposed of in a landfill or another waste stream.
Resources are not considered as finite and their disposition after use is part of the consideration at acquisition. Reuse, remanufacturing, recycling, composting and other strategies can be utilized. Within this process of thinking, circularity is focused on achieving the highest value of the material possible. The outcome is the elimination of waste by ensuring that materials are utilized as fully as possible. For example, for raw materials shipped in bags, consider bulk shipping, if possible, to eliminate packaging waste. If this is not possible, the materials used in the packaging could first be considered for reuse rather than, or before, recycling. This process allows for the material to achieve a higher value of circularity. A source of information on circularity is the Ellen MacArthur Foundation.5
Quantifying emissions
Once sources of GHG have been identified, understanding the quantity of GHG associated with the activities are important. Some activities produce a larger quantity of GHG than others and understanding where a meaningful impact can take place is challenging. Organizations can focus their resources and time on making changes that will have a meaningful impact. In Scopes 1 and 2 this is slightly easier to achieve using online reputable calculators and usage data. Scope 3 emissions are more challenging to
quantify, as our team experienced during our Living Lab project. Our focus was to quantify the Scope 3 GHGs associated with the menu at our student-run Bloom restaurant on campus. Since Winter 2023 we have been providing this information on the restaurant menu. Finding the data for this proved to be a significant challenge. Although many peer-reviewed papers have been published on this topic for individual resources, finding a source of regional, tabulated data for each of the 50+ ingredients used at the restaurant was a challenge. In the end, a source of global average data was found in a peer-reviewed journal and the lack of regional data was taken as a future growth opportunity. Software tools for this purpose do exist, but costs can be extremely prohibitive, thereby reducing accessibility to medium and smaller-sized organizations.
Many other sustainability initiatives can be considered by organizations including water conservation, attracting pollinators with onsite landscaping choices and reducing energy consumption through the design of walk-in refrigerators and freezers. For example, is it possible for changes to be made to quality control sampling to reduce food loss or waste? In the case of destructive testing, is it possible to redistribute the product so it does not become part of a waste stream? Human resources can impact
employee GHG emissions by offering commuting options.
Each department has an opportunity to impact the environmental sustainability of production. Although the production and maintenance teams may be the obvious focus of these efforts, quality systems teams, product development, human resources, procurement and scheduling all have an impact. Much like food safety is the responsibility of everyone in a production facility, so are sustainable practices.

BAutomation in food and beverage manufacturing
Alex Barlow
y now, most food industry professionals should be aware of the benefits automation can offer any food operation. From robotic systems and cobots to computer vision technology and ERP software, adding some level of automated programing to your company will make an impact. Automating processes can boost productivity, enhance quality assurance and safety, cut costs, add greater efficiency and sustainability to supply chain management, and improve overall competitiveness.
Yet, the food and beverage industry has historically lagged behind other industries when it comes to automating processes. That may be changing, according to Aptean’s Food and Beverage 2024 Trends and Outlook for North America report, which reveals that 90 per cent of North American food and beverage companies are in the process of digital transformation, although only one in five has finished their digitization projects. The survey also shows that “automation is critical for tackling growth barriers,” and that “food processors, manufacturers and distributors using technology to automate tasks and processes experienced 1.3 per cent higher revenue growth in the most recent full trading year than companies relying on manual operations.”
Canadian food and beverage manufacturers have two advantages when it comes to adding automation to their operations. There is now substantial government funding available for technology upgrades, digitization projects, and foodtech innovation. At the same time, there are an increasing
number of Canadian foodtech companies offering automation solutions to common operational challenges.
Labour saving
Finding, training, and retaining skilled workers continues to be a challenge for many food and beverage manufacturers, and robotics is evolving to offer more nuanced solutions. For example, Artus Lite from Alberta-based Sarcomere Dynamics is a compact, high-dexterity robotic hand designed to automate dangerous, dirty, or complex industrial tasks. While the unit currently replicates human functionality, the company plans to create a ‘near-human robotic hand’ with similar degrees of freedom and strength as a human hand and is less bulky and expensive than conventional robotic technology by the end of the year.
Skygauge Robotics, a startup based in Hamilton, creates sophisticated drone technology for a variety of industries. In the food industry, the technology can be used for ultrasonic inspection of storage tanks and piping, eliminating the need for time-consuming and potentially dangerous manual inspections. The company is now developing a drone with 360-degree inspection capabilities, based on feedback from food industry customers.
Quality assured
Automated technology can help ensure product consistency, quality and safety, while freeing up skilled workers to perform less repetitive tasks. Apex Motion Control in Surrey, B.C., produces robotic and cobot systems that automate repetitive processes in food production lines such as filling, cutting,

decorating, packaging, and palletizing. It also offers units with 3D machine vision for complete product inspections. RivièreVerte, N.B.-based Lizotte Machine Vision designs and builds custom automated quality control, food sorting, and grading equipment featuring integrated machine vision. Apart from detecting foreign material in products, the technology automates more complex functions such as detecting internal defects and weight discrepancies.
Data solutions
According to Aptean, “41 per cent of companies surveyed plan to invest in business intelligence tools over the next 12 months.” Those tools include cloud-based digital systems designed to generate and analyze data that can then be used to optimize production efficiency and performance, while cutting costs from operations and the supply chain. The survey revealed that “these industry-focused technologies delivered
In the case of some solutions, such as ERP software, this difference was as much as 32 per cent.” Richmond, B.C.-based Icicle Technologies offers an end-to-end ERP system designed for the needs of the food industry. The system includes measures for ensuring regulatory and third-party compliance, improving profitability, adding traceability, and streamlining production across multiple facilities.
Automation and digitization have the potential to significantly change how the food industry does business, and Canadian foodtech companies continue to be at the forefront of this transformation. Food processors no longer need to go to international markets to source technology solutions, as we have great partners here at home.
Alex Barlow is vice president, programs, for the Canadian Food Innovation Network (CFIN), which funds foodtech projects, stimulates collaboration, and fosters a growing community of F&B professionals.

FHow to tackle the big challenges
Birgit Blain
ood businesses are plagued with challenges daily. The big ones often revolve around sales. It’s natural for food brands to throw marketing funds at the situation. But, without understanding the root cause, they risk flushing money and resources down the drain.
To illustrate the point; a brand owner contacted me to develop a marketing campaign, remarking, ‘sales are down. We need to do more marketing.’ In their mind, the problem was identified, and the solution was clear. But I wasn’t convinced it was the best bang for their buck.
A cursory check revealed that the problem was in fact misidentified. Firstly, products were not in full distribution, which is one of many probable causes for poor sales. Secondly, the broker was not engaged, didn’t support the brand and had decided to drop the line. If the brand owner had gone ahead with their plan to launch a marketing campaign, it would have delivered zero sales lift and zero ROI. Additionally, brand loyalists and prospective customers looking for the product, which was nowhere to be found, would have been disappointed. Clearly, it was necessary to dig deeper to uncover the root cause on the path to developing an effective solution. Following a methodical, three-step process makes it easier to investigate the nature of the problem.
1. Define the problem
Identifying the problem correctly is key. It is seldom as straight forward as it seems and requires an objective viewpoint. Consult with all areas of the business—finance, sales, marketing,
operations, QA, procurement, etc.— as each silo has a unique perspective and may see the problem differently. Engaging external partners— distributors, brokers, customers, and even consumers—can yield unexpected results, turning the viewpoint on its head. An unbiased third party is an asset to challenge your thinking.
To probe the issue, use the ‘five Ws’ (who, what, when, where and why), how, and how many.
Look at what is being measured and review the results against targets. If information is lacking, additional metrics may be required. A SWOT analysis, which examines internal and external factors impacting a business, can also help identify problem areas.
2. Analyze the problem
To further understand the root of the problem, apply the 7 Ps of marketing: product, place, price, promotion, people, process, and physical evidence.
Product
Is there an issue with the product (e.g. quality, flavour profile, sensory experience, obsolete fad, ingredients, attributes, benefits, or packaging)? Does it satisfy an unmet need?
Place
Is the product sold through relevant channels where the target customer shops? Is product visibility obscured, highlighting planogram or merchandising issues?
Price
The pricing strategy, with its many layers, may be flawed. Examine COGS
and item profitability, as well as distributor and retailer margins. Ensure the retail price is aligned with the value proposition and what the target customer is willing to pay.
Promotion
Marketing and advertising may be misdirected or insufficient to raise awareness and motivate purchase.
People
Does the company have a positive culture? Do team members, including external partners, possess the required skills and commitment?
Process
This includes internal processes in all areas of the business. Also explore potential issues with external processes at distributors and retailers. For example, a data integrity issue in the customer’s order system can result in missed orders and out-of-stocks.
Physical evidence
Is there solid proof of the quality of the experience that is offered, such as certifications and endorsements from credible sources?
3. Identify root cause
The final step is narrowing down the findings to validate the root cause(s). Problems and root causes are typically multi-faceted. Often a broken or nonexistent process is at the heart of it. The ‘5 whys’ methodology, developed by Toyota’s founder in the 1930’s, is another tool to delve into the inner workings of processes, revealing the root cause of issues. With the problem correctly defined, and the root cause(s) understood, it’s time to set objectives and brainstorm solutions.
Birgit Blain’s packaged foods experience includes 17 years with Loblaw Brands and President’s Choice.
HOW TO USE THIS GUIDE
• The Food in Canada Buyers’ Guide is based on an alphabetical/numerical system. Our guide contains seven sections. Please consult the contents page for the section you’re looking for (e.g. spices). Look up the item you need alphabetically and a company list will appear underneath the item. If there are multiple choices, such as our (whole wheat, rice or gluten free, etc.) a numerical rating will advise on which choices each supplier carries. Look up the suppliers’ contact information in the alphabetical listing beginning on page 78.
