Paysan Breton L’Original Brie hails from Brittany, France. Though made by one of the larger Brie producers in France, this Brie goes back to its traditional roots. This is a lactic, as opposed to a stabilized Brie. It also uses traditional rennet and a slower coagulation. This all amounts to a cheese that ripens beautifully and develops a full, mushroomy flavor. We may never be able to find AOC Brie in Australia but, with age, this one comes pretty close. Rouzaire Brillat Savarin is made from whole cows milk with added crème fraîche. When young the texture is dense, and the flavour has a mild crème fraîche tang. As it matures, the rind blooms and becomes spicy. The paste is rich, and buttery.

Brie de Nangis hails from Brie, just southwest of Paris, France, and is one of the milder, more buttery Bries. It almost disappeared from production but has seen a revival over the past few decades. Brie de Nangis is creamy and smooth and has a slightly chalky center that becomes runny with age. This cheese also pairs well with a Sauvignon Blanc and bigger reds such as Merlot.

Named after 18th-century French food writer Brillat Savarin, this indulgent cheese boasts a minimum of 75% butterfat and a thin, edible white rind. Perfectly paired with Champagne or Prosecco.
This cheese is produced by a small dairy in the region of Champagne. For its manufacture the milk is enriched with crème fraîche and each cheese is individually handmade in specially developed oval forms. The cheeses mature for 14 days. A nice, white mould develops on the rind.

The true exception is that unlike most triple cream cheeses, you’ll immediately notice that Brillat Savarin Frais doesn’t have that characteristic chalky white bloomy rind; it’s purposely left out to impede aging on the cheese. As the longest aged Beemster cheese, there are normally tyrosine crystals in the cheese itself that result in “crunchies” that consumers often look for.
