/ WELCOME! / Dopo l’entusiasmante debutto dello scorso anno, siamo lieti di dare ancora il benvenuto al Milan Coffee Festival. Milano, un nucleo culturale dinamico e vibrante in un Paese che sta abbracciando un nuovo approccio al caffè, ha un posto speciale nel nostro cuore. E’ la città alfa per l’arte, il design, l’architettura, la moda, il cibo (infatti qui nasce l’aperitivo) e, naturalmente, è un punto di riferimento per l’innovazione del tema caffè, che a volte può prendere spunto dalla tradizione dell’espresso italiano, altre volte no.

A proposito di questo ultimo “no”, nel resto del mondo e d’Europa negli ultimi anni c’è stata una rivoluzione del caffè, che come primo approccio ha fatto riferimento alla tradizione italiana - ma poi ha sconvolto ogni ideale andando oltre il comune espresso o cappuccino bevuto frettolosamente.

Il caffè è diventato un’arte raffinata da (de)gustare lentamente, una scienza con i suoi cultori, un ingrediente culinario altamente considerato ed ora apprezzato da una vasta e sempre crescente comunità di intenditori. Alcuni torrefattori meriterebbero senza dubbio una stella Michelin per la loro dedizione nei viaggi alla scoperta di nuovi luoghi di origine. Altrettanto vale per le caffetterie e i Baristi che le abitano.

E’ grazie al loro amore che la cultura del caffè si tramanda al consumatore finale. Il caffè unisce anche le comunità, trascendendo i confini geografici, la cultura, l’età, il genere e la demografia. E’ diventato uno stile di vita che riunisce individui creativi e affini, appassionati delle cose più belle della vita e per i quali il gusto è il Santo Graal.

Se da un lato l’Italia rimane legata alla tradizione, dall’altro un numero crescente di caffetterie e

una gara sulla tostatura molto originale arrivata fin qui per la prima volta.

Ci saranno artisti - baristi, come la Campionessa del Mondo Manuela Fensore, che daranno spettacolo sul palco della Latte Art Live. Altri mostreranno il loro stile inconfondibile al True Artisan Café, o andranno contro il tempo presso La Marzocco “Crush the Rush” – altro nuovo arrivo del 2019.

Quest’anno metteremo tutti questi protagonisti sotto i riflettori. Daremo ai micro-roasters, italiani e non, un’occasione internazionale su cui confrontarsi come il Roast Masters™,

attraverso una serie di Panel Discussion di The Lab, sponsorizzati da Lavazza.

Si parlerà di vari argomenti, come le difficoltà e i successi di chi apre una caffetteria specialty o cosa significa essere una donna del caffè.

Siamo anche entusiasti di lavorare ancora una volta con i nostri amici di Specialty PaL, che con orgoglio incarnano la passione italiana per il

caffè e, con lo stesso sentimento, hanno catturato dei momenti divenuti parte della serie fotografica People of Milan, che potrete vedere durante il festival.

/ WELCOME! / After its brilliant debut last year, we’re delighted to warmly welcome you to the return of The Milan Coffee Festival.

A dynamic and vibrant cultural hub in a country embracing an excitingly pivotal moment in its approach to coffee, Milan has a proud place in our family of festivals.

Milan has always been an alpha city; a beacon for art, design, architecture, fashion, food and, of course, it is the home of espresso culture, the first espresso bars and the infamous Aperitivo hour. But fast-forward to the 21st century and the face of coffee has changed worldwide. The rise of the coffee shop on the high street has triggered a coffee revolution outside Italy which has had a profound impact on some of the most forward-thinking capital cities on earth.

Italian coffee culture was interpreted worldwide and quickly became much more than cappuccinos for breakfast and espressos consumed hastily over the counter. Coffee has become a fine art, science with cult devotees; a highly regarded culinary ingredient that has been elevated and is now appreciated by a vast and ever-growing community of connoisseurs. Some coffee bars now would arguably deserve a Michelin Star for their dedication to sourcing the most incredible beans directly from origin, impeccable delivery of the coffee experience, in-depth knowledge of their baristas and design-forward approach.

Coffee also brings communities together, transcending geographic boundaries, culture, age, gender and demographics. Coffee has become a way of life that brings together like-minded, creative individuals who are passionate about the finer things in life and for whom taste is the holy grail.

As we witnessed last year at the festival’s launch, whilst Italy’s coffee culture still remains firmly embedded in tradition, there is a surge of specialty coffee bars and baristas, artisan roasters, professionals, educators and enthusiasts spearheading this New Wave coffee revolution. This year we’re

putting these people in the spotlight.

We’ll be giving rising roasters from Italy and beyond an international platform as we bring our new tournament Roast Masters™ to Milan for the first time. Expert baristas, such as world champion Manuela Fensore, will be giving us an exclusive glimpse into their worlds at the return of Latte Art Live, showcasing their signature styles at True Artisan Café, and going against the clock (and each other) at La Marzocco’s Crush the Rush – another new feature for MCF’19. We’ll be pulling into focus some of the wider questions facing the industry in a series of panels and discussions at The Lab, powered by Lavazza, examining topics such as the difficulties and successes of opening a new specialty café, or what it means to be a woman in coffee. We’re also excited to be working once more with our friends Specialty Pal, who proudly embody Italy’s passion for coffee; it’s this same zeal that is captured so beautifully in our People of Milan photo series, which you can see exhibited in full at the festival.

/ PEOPLE OF MILAN / Per celebrare il ritorno del Milan Coffee Festival abbiamo chiacchierato di caffè, design, tradizione e innovazione culturale con alcune delle persone più straordinarie ed eclettiche che abbiamo incontrato passeggiando per le vie di Milano.

L’intento era quello di confrontarsi con persone che vivono la città di Milano quotidianamente, per comprendere e andare a fondo nel concetto di unicità degli abitanti meneghini e della loro cultura poliedrica sul caffè.

Ciò che ne è uscito è stata una spiegazione dettagliata di alcuni momenti dedicati alla bevanda tanto amata e una serie di foto che evidenziano non solo i volti caratteristici dei protagonisti, i luoghi e l’energia della città, ma anche e soprattutto la convivenza di tradizione e innovazione, notoriamente italiana.

La nostra competizione di tostatura specialty arriva a Milano Our new specialty roasting competition arrives in Milan Dalla sua nascita all’Amsterdam Coffee Festival dello scorso marzo fino all’approdo a New York durante i primi giorni di ottobre, Il Roast Masters™sta diventando un importante evento internazionale molto acclamato. Come sempre, un gruppo selezionato di roasters si batterà per tre giorni interi, per mostrare le proprie competenze professionali sulla tostatura, sul blending e sul brewing a un panel esigente di giudici.

Avremo 15 torrefattori provenienti da ogni parte d’Italia, dal “tacco dello stivale” ovvero la Puglia, al versante settentrionale delle Alpi, e altri 7 roasters provenienti da varie parti d’Europa, tutti accomunati da una sola speranza: diventare il primo Roast Master d’Italia! Ad analizzare le varie discipline ci saranno dei giudici selezionati appositamente per l’edizione italiana: Anne Lunell (veterana del Roast Masters™), Barista e Campionessa di Brewers Cup della famosissima roastery svedese Koppi, sarà affiancata da Rubens Gardelli, Campione Mondiale di Roasting 2017 e titolare del conosciutissimo Gardelli Specialty Coffees; Chiara Bergonzi, celebre giudice internazionale, consulente e trainer Sca, nonché Campionessa Italiana di Latte Art arrivata seconda al mondiale del 2014 e attualmente anche acclamata roaster con il suo brand Lot Zero Specialty Coffee, e per finire Davide Roveto, fondatore di Caffè Cognetti - microtorrefazione di famiglia che ha aiutato a crescere ed evolversi

nello mondo dello specialty - giudice internazionale Barista Championship, trainer certificato SCA e consulente nella ristorazione, da poco fondatore de la Briocheria. Come MC dinamici e vivaci avremo Francesco Sanapo di Ditta Artigianale e Antonia Trucillo della Cesare Trucillo Spa.

From its inception at The Amsterdam Coffee Festival back in March 2019 to its North American launch at The New York Coffee Festival this October, Roast Masters™ is fast becoming a festival feature favourite and an acclaimed international title in itself.

As always, a carefully selected group of competitors will battle it out across three days as they hope to showcase world-class roasting, blending and brewing across three disciplines to a discerning panel of judges. We have 15 roasters representing a broad stretch of Italy, from the Apulian “Heel of the boot” to the northern reaches of the Alps, joined by 7 other renowned roasters from across Europe hoping to take the Roast Master title home.

Heading up our panel of judges is Roast Masters™ veteran Anne Lunell, Barista and Brewers Cup Champion from acclaimed Swedish roaster Koppi.

UNO SGUARDO ALLE DISCIPLINE DEL ROAST MASTERS / THE DISCIPLINES Singola Origine Tutti i roasters partecipanti hanno ricevuto 5kg di caffè verde da Falcon Coffees un mese prima della gara per provare a sviluppare il giusto profilo di tostatura. Il risultato di ciascun roaster sarà presentato al panel di giudici della gara e analizzato attraverso l' assaggio alla cieca. Il punteggio si baserà su: acidità, dolcezza, pulizia in tazza, bilanciamento e le impressioni totali che ne derivano.

Miscela Espresso Per la seconda disciplina, i roasters progetteranno una miscela a seconda delle loro preferenze destinata all'estrazione in espresso.

Ai roasters spetta la scelta delle origini.

Avranno 10 minuti per presentare sei caffè e spiegarne le note aromatiche: 2 espresso, 2 caffe con latte vaccino e due caffè con latte vegetale.

Pour Over Per il round finale, i roasters dovranno porsi una domanda: Quanto posso andare oltre le aspettative del caffè? I sei finalisti avranno 15 minuti di tempo per presentare il loro profilo unico per estrazione a filtro, usando metodi d’estrazione differenti dall’espresso e secondo una ricetta ben precisa e studiata. Creatività e innovazione saranno premiate.

Il punteggio si baserà sull’assaggio, metodologia, conoscenza e spettacolarità.

The Single Origin Each roaster received 5kg of single origin green coffee from Falcon Coffees a month before the festival, during which time they have developed a unique roasting profile.

They will present their results to the panel, who will blind-cup the coffee and score it based on acidity, sweetness, clean cup, balance, and overall impression.

The Espresso Blend For the second discipline, the roasters are invited to design and roast a unique espresso blend using a coffee of their choice. They will have 10 minutes to present 6 coffees: 2 espressos, 2 dairy coffees and 2 plantbased coffees and explain the taste profiles to the judges.

The Pour Over For the final round, roasters should consider the question, How far can you take coffee? Six finalists will have 15 minutes to present their unique filter roast, brewed using the pour over method and recipe of their choice. Points will be allocated for taste, methodology, knowledge and showmanship, and creativity and innovation are encouraged.

Dopo essere stato uno degli elementi più vivaci e dinamici del Festival dello scorso anno con il Brew Bar, BRITA ha deciso di tornare per dimostrare l’importanza dell’acqua nel preparare il caffè. Dato che l’acqua costituisce il 98% circa della tua tazza di caffè filtro, non sarà certo una sorpresa pensare che un caffè di un certo tipo richieda acqua di alta qualità. Quale modo migliore per dimostrarlo attraverso l’aiuto di esperti che abbineranno tre diversi tipi di acqua filtrata BRITA con il caffè utilizzando differenti metodi di estrazione tra cui Chemex, V60 e French Press. After quickly becoming one of last year’s buzziest festival features, BRITA is returning with its Brew Bar to demonstrate the importance of water when brewing coffee. Given that water makes up 98% of your cup of filter coffee, it’s hardly a surprise that superb tasting coffee demands equally highquality water. What better way to put this into practice than a host of experts pairing three different types of BRITA filtered water with coffee using an array of brewing methods, including the Chemex, V60, and French Press.

ISTRUZIONI ALL’USO

HOW TO BREW

Strumenti: Chemex da 6-8 tazze, filtro per Chemex, 40g di caffè (macinatura grossolana), 680g di acqua filtrata (91 – 94°C), macinino, bilancia, bacchetta, timer, kettle.

Tools: 6-8 cup Chemex, Chemex filter, 40g coffee (coarse grind), 680g filter water (91-94°C), a grinder, scales, stirrer, timer and a pouring kettle.

Cosa fare: aggiungi il filtro sulla parte alta e conica del Chemex, bagna con acqua calda e svuota il metodo d’estrazione.

Poggialo sulla bilancia, aggiungi il caffè appena macinato. Solo ora puoi tararla.

Avvia il timer e aggiungi abbastanza acqua giusto pe poter coprire il pannello di caffè (circa 50ml) e lascia creare “il bloom” per 30 secondi. Versare poi con cautela l’acqua rimanente con un movimento circolare, evitando il contatto diretto con il filtro. Dare al Chemex un leggero turbinio e lasciare gocciolare fino a quando il fondo di caffè sembra asciutto.

L’intero processo dovrebbe richiedere meno di 4 minuti.Se dura di più forse è perchè hai macinato più finemente del previsto. Versane il contenuto e goditelo.

Method: Add the filter to the Chemex neck, rinse with hot water and discard.

Place on scales, add the fresh coffee and tare. Start the timer, add just enough water to cover the coffee (approximately 50ml), and let it ‘bloom’ for 30 seconds.

Then carefully pour in the rest of the water in a circular motion, avoiding direct contact with the filter. Give the Chemex a gentle swirl and leave to drip until the coffee grounds look dry. The whole process should take less than 4 minutes – any longer and your grind may be too fine. Bin the filter, pour and enjoy.

Interesting fact: Chemex filter papers are significantly heavier than other pour-over filters, resulting in a richer brew.

Aneddoto da sapere: I filtri per il Chemex sono significativamente più pesanti di altri metodi pour-over a filtro, questo perchè il filtraggio è più sostanzioso.

Dopo aver attraversato diverse città d'oltreoceano, “Crush the Rush” by La Marzocco arriva per la prima volta in Italia per il Milan Coffee Festival e ci accompagnerà lungo tutta la sua durata!

Diversi team di baristi si sfideranno a suon di porta filtro, latte e caffè puntando sulla velocità, la comunicazione e la coordinazione dei movimenti messi a dura prova dal ritmo incessante della gara. Oltre ad essere divertente, la competition riflette molto bene le dinamiche di una caffetteria nei momenti di maggiore affluenza.

Ogni team è composto da tre partecipanti che hanno come obiettivo organizzare al meglio il workflow per riuscire nel minor tempo possibile a realizzare otto drink a base di caffè prima dei loro avversari. I concorrenti hanno un ruolo ben preciso: c'è chi si occupa degli shot (espresso), chi della lancia (per montare il latte e rifinire la bevanda) e infine chi deve correre per portare i drinks a destinazione.

La KB90 sarà la protagonista e l'aiuto indiscusso della gara, mentre i drink saranno valutati da una giuria d'eccezione che avrà il compito di approvare o no le bevande trasportate dal barista/runner di turno, catapultato tra la macchina e il banco della giuria. After taking several cities across the world by storm, "Crush the Rush" by La Marzocco arrives in Italy for the first time at The Milan Coffee Festival.

For all three days of the festival, teams of baristas will challenge each other to head-to-head competitions focusing on speed, communication and movement, put to the test by the incessant rhythm of the race. As well as being a lot of fun, each stage of the competition reflects the high-paced frenzy familiar to a real coffee shop environment, in turn opening up conversations of how to improve efficiency.

Each team is composed of three participants, who will generally take on the roles of shot puller, milk steamer, and runner, though flexibility is encouraged – and often demanded!

Each team will need to optimise their workflow in order to make eight coffee-based drinks before their opponents as quickly as possible.

The KB90 will be the protagonist and undisputed aide of the competition, while an exceptional panel of judges will evaluate the drinks transported by the barista/runner on duty, catapulting between the machine and jury as the clock ticks. And if the drink doesn’t impress the judges? The baristas will make it again until it’s perfect!

The eight best teams will make it to the final, but only one can take the victory.

As you can imagine, fun, improvisation and twists will accompany this wonderful new adventure from La Marzocco.

Vincere mi ha aperto molte porte, sia in Italia che all’estero ma questo lo devo a tutta la mia costanza e dedizione che fino ad oggi ho dedicato alla Latte Art.

Un esempio di coraggio, tenacia e forza d’animo sia per coloro che condividono lo stesso sogno sia per tutte le donne che non smettono di lottare per perseguire la loro realizzazione personale. Le abbiamo chiesto di svelarci alcuni dei suoi segreti per diventare una campionessa del mondo!

Che consiglio vuoi dare a tutti quei ragazzi che sono appassionati di Latte Art e che vorrebbero partecipare alle gare?

Mai mollare un sogno come raggiungere un palco molto ambito e mai mollare l’allenamento anche quando si è stanchi.

La costanza e la dedizione ci devono essere sempre, è lì che si vede quando si ha passione. Indubbiamente non bisogna essere eroi, bisogna un minimo sfiorare l’idea del sacrificio. Bisogna prepararsi alla perfezione per riuscire ad essere al cento per cento sicuri di se stessi in gara, soprattutto perché si sa... l’emozione gioca brutti scherzi!

Ciao Manuela! Che cosa rappresenta la Latte Art per te?

Indubbiamente rappresenta un po’ uno stile di vita differente. È una passione che mi ha aiutato a superare un periodo veramente difficile e nonostante tutto – perché penso ci siano problemi di alti e bassi per chiunque – continua ancora oggi ad aiutarmi. È una passione che credo difficilmente mollerò, per il semplice fatto che mi estranea da ciò che sono e dalle problematiche della vita.

E’cambiata la tua vita dopo che sei diventata la Campionessa del Mondo di Latte Art? Assolutamente sì. Mi ha stravolto totalmente la vita, nonostante sia anche mamma. Faccio fatica ad incastrare orario di lavoro con il tempo da dedicare a mio figlio, ma quando lui mi dice: “grazie

Che ne pensi della Latte Art in Italia?

La latte Art si sta espandendo, sta crescendo e questo è grazie a tutti i formatori che nel loro piccolo continuano a tramandare la loro passione. In Italia la Latte Art si è evoluta ed è arrivata ad un livello così alto che si fa fatica a capire o a prevedere chi sarà il prossimo campione Italiano.

Earlier this year, Milan local and friend of the festival Manuela Fensore travelled to Berlin for World Of Coffee and returned the 2019 World Latte Art Champion.

An example of courage, stubbornness and strength both for those who share her dream and for all women who do not stop fighting to pursue their personal fulfilment, we asked her for her secrets to becoming a champion.

Ciao Manuela! What does latte art represent for you?

It definitely represents a different kind of lifestyle. It’s a passion that has pulled me out of a really difficult period and despite everything – because I think everyone has ups and downs – it continues to help me today. It is a passion that I think I’m unlikely to give up, for the simple fact that it is an escape from the problems of life.

Has your life changed since you became the World Champion of Latte Art? Absolutely! It totally changed my life, even though I am also a mother. I find it hard to balance working time with the time I devote to my son, but when he tells me "thank you mum for working for me," or "you're the World Champion!", that makes up for everything. Winning has opened many doors for me, both in Italy and abroad, but I owe this to all my perseverance and dedication that I have given to latte art up to now.

What advice do you want to give to all those guys who are latte art enthusiasts and would like to participate in competitions?

Never give up the dream of reaching your most desired place and never give up on training, even when you are tired.

There must always be consistency and dedication; that’s where you see if you have passion! Of course, we mustn’t be heroes, but we must start to understand ​​ sacrifice. We must prepare ourselves to perfection to be sure of ourselves in the competition, because as we know, emotions always play tricks on you!

How is latte art changing in Italy?

Latte art is expanding, it is growing and this is thanks to all the trainers who in their small way continue to pass on their passion. In Italy, latte art has evolved and reached such a high level that it is hard to understand or predict who the next Italian champion can be.

Il suo viaggio verso la scoperta del mondo del caffè ha inizio qui in Italia, a Torino, attraverso un tirocinio di studio. Ispirato da Campioni Italiani e Internazionali visti attraverso uno schermo durante le riprese live delle gare, ha capito che sarebbe stato quello il suo futuro.

His journey into the world of coffee began here in Italy, in Turin whilst on an internship. Inspired by champion Italian baristas, the Netherlands native quickly realised this would be his path.

Merijn parteciperà alla seconda edizione della Latte Art Live dove la storia del famoso brand di prodotti vegetali Alpro sarà accompagnata e raccontata da workshop molto interessanti e interattivi. Ogni Barista sa che realizzare una Latte Art con prodotti a base vegetale può essere impegnativo ma solo perché ci sono dei piccoli step seguire.

1. Usa il prodotto giusto. Non tutte le bevande a base vegetale si abbinano bene al caffè e con la Latte Art. Per esempio Alpro ha una linea apposita chiamata “For Professionals”.

2. Fai passare vapore dalla lancia fino ad arrivare a 40°C gradi, poi immergila nel latte.

Merijn will be joining us again at the interactive Latte Art Live area, where the story of Alpro's plant-based beverages will be combined with fun and interactive workshops. Every barista knows that pouring with plant-based alternatives is an art in itself, so here he tells us his five top tips to pouring with Alpro.

1. Use the right product. Not all plantbased drinks combine well with coffee or latte art. For example, personally I use Alpro’s special line called “For Professionals”.

2. Pass steam from the wand to 40°C then immerse it.

3. Don't leave it in for too long if you're going to create elaborate latte art.

4. Never exceed 60/65°C for almond.

5. Experiment with the products. You can make Latte Art with all of them but they each require a different approach.

My favourites are oat and coconut. If I use soy I wait two minutes before starting to pour, whereas with almond I prefer to start as soon as I finish steaming.
