Message from the Editor

Seasons One of the reasons we choose Southern Middle Tennessee as our home is the fact that we experience four seasons. Lately I have had the idea that life too has its seasons. In the spring of our life we are children filled with fun and wonder. We are free from grown up issues. Then we become young adults. We pursue more education that will lead us to a rewarding career. Or perhaps we train for a line of work that interests us and matches our skills. Skilled trades often offer as much or more income than college graduates. In the summer or our lives we find mates or choose the single life. Our children and the advancement of our careers make this a very active season. It is often difficult to find the right balance. We consentrate more on others and push personal needs to the back of the line. Yet we take pride in our ability to manage it all well. In the fall of our lives we may become empty nesters. We may pursue a totally different line of work. It is a time we examine our life choices and see if they still fit our present needs and goals. In the winter of our lives, We enjoy travel, take a cruise, visit places we always wanted to see in and out of the USA. We visit our children and friends. And oh the joy of our amazing grandchildren. It can be a difficult trying time if we lose our mate. In fact we lose friends and family members dear to us. Our health often falters and doctors appointments fill our calendar. My message to you is : All the seasons of life are precious. Seize the opportunity to enjoy each to its fullest! We don’t get a do over. When You Follow Your Dream, You Can Make the Dreams Of Others Come True It isn’t often you encounter the work you love when you are only 7 years old. That is what happened to Jamie Solomon. “We had some friends that had a detailing business and I started hanging out with them and was captivated by how I could help change the look of a vehicle.,”Jamie explained. As he grew older his dad offered him a “good” job at his tire and repair shop. All along he was doing detailing on Pictured Left to Right: Dakota Bolin, Jamie Solomon, Andrew Hill the side. One day his dad came to him and said, “Jamie, you head is just not in your work here, I am letting you go.” He told him to go try and see if he could make it in the detail business and if he could not and was ready to give his work at the tire and repair shop his all, he could come back. Jamie never looked back. Yes, it was often long hours and feast or famine work, but he loved every minute of it. To have a customer bring in a vehicle that needed cleaning inside and out and see the smile on his face when Jamie returned it satisfied the dreams of both. Lipstick, a grease spot, a magic marker.....there is no universal cleaner for all. Jamie explains it takes a different formula to remove each one. money? “ It gives me the right connections to be my best,” Jamie explained. Jamie is assisted by two part time pros, having 9 years of combined experience. So far it has worked out well as they have been available as needed. Work days can sometime stretch in to very long hours as Jamie recalls a rush job that took 36 hours straight. When asked about unusual jobs Jamie shared a big clean up when a Ford Explorer used to transport goats from South Pittsburg to Winchester was brought in when the owner no longer made that run. In another heart warming story one of his crew found a missing pink ice ring. “We offer fair pricing and excellence in every job,” Jamie declared. This writer witnessed a customer taking delivery of his truck. He was amazed! He walked all around, opened the door and with a big smile on his face said, “I have never seen it look this good even the day I took it from the dealer.” You could see Jamie glow with pride in making that customer’s dream come true. Jamie and his wife have two children, a girls 16 and a boy 14. Jamie is instilling in them that it takes hard work and dedication to achieve your dreams. ABSOLUTELY WONDERFUL!! COULD BE USED EITHER AS A DESSERT OR A SALAD. INGREDIENTS: 1 box orange Jell-O 1 box instant vanilla pudding 1 cup boiling water 1/2 cup cold water 1 Cool Whip 8 oz. 1 can mandarin oranges 14 oz. , drained 1 cup mini marshmallows INSTRUCTIONS: In a large bowl combine orange Jell-O and boiling water. Whisk until Jell-o is dissolved. Add cold water and allow to chill for 15 minutes in refrigerator. Slowly whisk in vanilla pudding mix until smooth and chill for another 15-20 minutes or until it becomes slightly thickened. Fold in Cool Whip, mandarin oranges and marshmallows

How to Choose a PHOTOGRAPHER

Beware the experienced photographer who’s been around for years, but still creates photos that make you think back to your parent’s wedding. It’s a shame seeing someone who has no inclination to learn new photography skills or techniques, to keep up to speed with the latest style of shooting or just getting creative. If you’re on a limited budget then sure, this will suffice, it’ll be better than no photographer at all, but you do get what you pay for.

or can I see that they’ve been positioned in a way that is pleasing to the eye? • Is there something I love about this photo that makes me smile? Does this photo make my heart skip a beat? Why? • Does the composition of the photo, the framing of the photo, tell me that this image was taken with care, attention and thoughtful input from the photographer? • Or did the photographer shoot from the hip, with the horizon all wonky (including the horizon tilting to one side – usually a bit odd), with little or no consideration regarding composition? • Is the photo trying to tell me something, and not just a snapshot taken by an amateur? • Does the portfolio of images show a consistent style and level of creativity? • Look at a wide range of photos, and compare and consider what went into creating each photo. You’ll know a great photo when you see it, and remember to follow your heart when you see a collection of images that you like.

A great photographer yearns to develop, to get better at their craft. Continual learning and seeking new ways to be creative is a way of life for the best photographers, even for those at the top of their game in the wedding photography industry. Sitting back and thinking you cannot improve is rarely in the mind of the very best photographers. Creativity is always in the eye of the beholder. It’s your call whether a photo is ‘good’ or ‘bad’. An informed decision would be something like: “It’s good because I can see the way the photographer got the bride to tilt her head, adding light into her eyes, her body has been arched slightly to create a sinuous and elegant pose. This has been combined with the shallow depth-of-field to make the background blur beautifully out of focus, actually making the bride stand out from the image, I’d say it’s a carefully composed, striking photo of a beautiful bride.” A few more questions when asking how to choose a photographer: • Does the photographer show artistic flair, over and above pure technical ability? • Is the person in the photo standing there without any input from the photographer, JULY - DECEMBER 2020 | Read FOCUS Online @ clickonfocusmt.weebly.com | 13


CHILI A Fall Favorite EDDIE’S AWARD WINNING CHILI

A fantastic award winning chili con carne, with beef, pork, three kinds of chilis, a perfect balance of spice and heat.

OPTIONAL GARNISHES: • 1 bunch green onions, thinly sliced or 1 red onion, finely chopped • Shredded cheddar or Monterey Jack • Sour cream

INGREDIENTS • 3 Anaheim chiles, roasted, peeled, chopped • 3 poblano chiles, roasted, peeled, chopped • 12 ounces of bacon, cut crosswise into 1/4-inch strips and sautéed until almost crisp. Reserve 3 tablespoons of bacon fat. • 3 tablespoons bacon fat (rendered from the bacon) • 2 tablespoons vegetable oil (canola, grape seed or your favorite) • 2 red bell peppers, seeds and ribs removed, diced • 2 jalapeño peppers, seeds and ribs removed, minced • 2 yellow onions, peeled and diced • 1 head garlic, peeled and minced (1012 garlic cloves, 6 tablespoons minced garlic) • 1 pound boneless beef chuck, trimmed of fat and gristle, cut into 1/2inch cubes • 2 pounds ground beef • 1 pound sweet Italian sausage, casings removed • 3 tablespoons chili powder (Try using 3 different chili powders for great depth of flavor – I use ancho, chipotle and Mexican) • 2 teaspoons cayenne pepper (Half this amount for less heat) • 2 teaspoons ground coriander • 2 teaspoons ground cumin • 2 teaspoons granulated garlic • 2 teaspoons granulated onion • 2 teaspoons hot paprika (not smoked) • 2 teaspoons kosher salt • 2 teaspoons freshly ground black pepper • 2 cups tomato sauce • 8 ounces tomato paste • 12 ounces of your favorite beer (I use an IPA because I like the hoppy flavor) • 1 cup chicken stock • 2 15-ounce cans kidney beans, with juice • 2 15-ounce cans pinto beans, with juice

INSTRUCTIONS Roast the Chilies: Preheat the oven to broil (500ºF) Set an oven rack at the top, directly under the broiler. Spread the chiles out on a low-sided oven tray and roast for 15-20 minutes, turning peppers with tongs every five minutes, until their skins are about 60-70% blackened on all sides. Put the hot peppers directly into a paper bag. Roll down the top of the bag so they’re tightly contained. Let them sit and steam for 15-20 minutes until the skins are loosened and easy to peel off. Peel off skins, remove seeds and membranes, and chop. Sauté Chilis and Aromatics: Add the bacon grease and oil to a large heavy pot or Dutch oven (6-quart), over mediumhigh heat. Add the chopped chiles, red bell peppers, jalapeño peppers and onions. Cook for 5 minutes or until the vegetables just start to become translucent. Add garlic and cook 1 minute longer. Transfer all the sautéed vegetables to a bowl and set aside. No need to wash the pot, you’ll use it to brown the meat. Brown the Meats: Add the cubed beef chuck to the pot and cook, stirring often, until lightly browned on all sides, about 4 minutes. Add the ground beef and sausage and cook for 7-10 minutes, stirring to break up the sausage and ground beef, until the meat is no longer pink. Return the cooked vegetables to the pot along with the reserved bacon. Add Spices: chili powders, cayenne, coriander, cumin, granulated garlic, granulated onion, paprika, salt and black pepper. Cook, stirring, for 1 minute, until fragrant. Add the Rest of the Ingredients: Add the tomato sauce and paste. Cook, stirring, for 2 minutes, to combine. Add beer, chicken stock, kidney beans with their liquid and pinto beans with their liquid. Bring to a boil, lower to a simmer, and cook for 2 hours, uncovered. To Serve: Ladle chili into bowls. Top with garnishes or put garnishes into small bowls for self serve.

Honey and Dry Sherry Try a tablespoon or two of honey in your chili for a natural sweetness. Cook with sherry to add a bit of sweetness to your chili as well as richness and depth of flavor. Cactus Leaves and Mexican Beer Add chopped cactus leaves to white chili for a delicate, slightly tart green bean flavor. Cactus leaves (nopales) are fleshy oval-shaped leaves found in the produce section of larger supermarkets. Stir in a little beer to add robust character and flavor to chili. Experiment with beers and find the one you like best. Cornmeal Mix in a few tablespoons of cornmeal to thicken chili and add a polenta touch. Carbonated Soda and Chocolate Pour in a bit of bubbly for a fun addition to chili and a clean crisp taste. Love chocolate? Add baking chocolate and cocoa to add a rich color and make chili flavors smoke. Lime Juice Go citrus and add a squeeze of lime juice for tang and a clean fresh taste. Sugar Sweet and heat – a tasty combo! Add a pinch of sugar to a pot of chili to balance flavors. Zucchini Sneak in chopped zucchini and shredded carrots for extra flavor, texture and bonus veggie nutrition.

Treatment varies depending on the type of drug and the characteristics of the patients. • Treatment needs to be readily available. Because drug-addicted individuals may be uncertain about entering treatment, taking advantage of available services the moment people are ready for treatment is critical. • Effective treatment attends to multiple needs of the individual, not just his or her drug abuse. To be effective, treatment must address the individual’s drug abuse and any associated medical, psychological, social, vocational, and legal problems. • Remaining in treatment for an adequate period of time is critical. The appropriate duration for an individual depends on the type and degree of the patient’s problems and needs. • Behavioral therapies—including individual, family, or group counseling—are the most commonly used forms of drug abuse treatment. • Medications are an important element of treatment for many patients, especially when combined with counseling and other behavioral therapies. • An individual’s treatment and services plan must be assessed continually and modified as necessary to ensure that it meets his or her changing needs. • Many drug-addicted individuals also have other mental disorders. Because drug abuse and addiction—both of which are mental disorders—often co-occur with other mental illnesses, patients presenting with

CHICKEN BLACK BEAN NACHOS 3 1/2 c. shredded rotisserie chicken 1 c. red enchilada sauce 1/2 small onion, chopped 1 c. fresh corn kernels (from 2 ears corn) 1(15-ounce) can black beans, rinsed 12 ounces pepper-Jack cheese (about 3 cups), divided Kosher salt and freshly ground black pepper 8 ounces tortilla chips Fresh cilantro and lime wedges, for serving Set up grill for indirect cooking and heat to medium. Toss together chicken, enchilada sauce, onion, corn, beans, and 8 ounces cheese in a bowl. Season with salt and pepper.

Tear six 12-inch squares of aluminum foil. Place one-sixth of chips, chicken mixture, and remaining cheese on one end of a piece of foil, leaving a 3-inch border. Fold foil over filling to create a packet and crimp edges to seal. Repeat with remaining foil, chips, chicken mixture, and cheese. Grill packets over indirect heat until cheese is melted and chicken is warmed through, 6 to 10 minutes. Transfer packets to plates and carefully open. Top with cilantro and serve with lime wedges alongside.
