Challenges and Changes What a year! As Charlie Daniels said, “Ain’t it great to be alive and live in Tennessee”. ....and especially our slice of Middle Tennessee! Each of you has coped with Covid in different ways. You may have lost loved ones and friends to it’s horror. Please accept my condolence. Those of you with students in your family have and are concerned about the education challenges posed by closed schools and virtual classes. My oh my, the curriculum has changed so much, it is often impossible to help with homework. Not being able to go to the store, the theater, gym, or even get a hair cut, much less a color and highlights makes us feel imprisoned and doesn’t improve our waistline, self confidence or the exhilaration of escape. The most difficult is not being able to visit loved ones and friends. Facetime just doesn’t have the warmth of a hug. Now that we have so many of the negatives stated and hopefully stored in a part of the brain that opens only for needed action, reflection or release, let’s look at the positives. You have had more time to connect with those in your household. You’ve watched movies and special tv programs while munching popcorn. Sharing stories and eating s’mores around an outdoor fire brings laughter. Bringing out those long stored boxes of Monopoly, Clue and Operation has been nostalgic and fun. One of the very best activities are right her in our slice of Tennessee. The local parks have play equipment that releases energy and brings smiles to younger children. They offer beautiful hiking, bicycle and walking trails. Southern Middle Tennessee residents are so fortunate to have lakes, streams, forests, plains, mountains and valleys to explore. We have met the challenges of this past year and are confident great things are ahead. Southern Iced Tea! Cherry Limeade Sweet Tea
1 can (12 ounces) frozen lemonade concentrate, thawed Lemon slices, optional In a Dutch oven, bring water to a boil. Remove from the heat; add tea bags. Cover and steep for 5 minutes. Discard tea bags. Stir in sugar and lemonade concentrate. Cover and refrigerate until chilled. Serve over ice. If desired, garnish with lemon slices.

2 cups water 12 fresh mint leaves 4 individual green tea bags 1/3 cup sugar 2-1/2 cups diced honeydew melon 1-1/2 cups ice cubes Additional ice cubes In a large saucepan, bring water to a boil. Remove from the heat; add mint and tea bags. Cover and steep for 3-5 minutes. Discard mint and tea bags. Stir in the sugar.
In a blender, process honeydew until blended. Add 1-1/2 cups ice and tea; process until blended. Serve over additional ice.

In April, as winter comes to an end, it is time to get your car ready for spring driving and summer road trips! It is important to make sure your tires, brakes and windshield wipers are ready for the rain, and take care of any issues that may have occurred or been ignored during winter.
PUT ON THE BRAKES
Your car’s brake system is its most critical safety system and you should check it immediately if you suspect any problems. A properly operating brake system helps ensure safe vehicle control and operation under a wide variety of conditions. What does it do? When you push the brake pedal, the force generates hydraulic pressure in the master cylinder. This pressure flows through the hydraulic lines and hoses to the wheel cylinders and calipers, forcing the shoes against the drums (drum brakes) and the pads against the rotors (disc brakes). The resulting friction slows the vehicle and is relative to the amount of force applied at the brake pedal. Typical Wear and Tear Brakes are a normal wear item for any car and eventually they’re going to need replacement. Avoid letting your brakes get to the “metal-to-metal” point, which usually means expensive rotor or drum replacement. Factors that affect wear include driving habits and quality of brake pads and shoes. Symptoms: • Squeaking noise from under the hood during start-up or operation • Coolant leaks • Dashboard light will illuminate • A/C System may fail • Engine overheating • Smell of burnt rubber

Adult Day Care - finding the right one Adult Day Care Centers are designed to provide care and companionship for older adults who need assistance or supervision during the day. Programs offer relief to family members and caregivers, allowing them to go to work, handle personal business, or just relax while knowing their relative is well cared for and safe. The goals of the programs are to delay or prevent institutionalization by providing alternative care, to enhance self-esteem, and to encourage socialization. There are two types of adult day care: adult social day care and adult day health care. Adult social day care provides social activities, meals, recreation, and some health-related services. Adult day health care offers intensive health, therapeutic, and social services for individuals with serious medical conditions and those at risk of requiring nursing home care. Older adults generally participate on a scheduled basis. They may also help to arrange transportation to and from the center. FINDING A CENTER Not all states license and regulate adult day care centers. There may be a great deal of difference between individual centers; therefore, it is important to learn more about each center near you. If possible, visit the centers closest to you, and talk with the staff and other families that use the centers to determine whether the facilities meet your needs. You may also want to find out if your state has an adult day care association.

KNOW BEFORE YOU MOW - Tips For Lawn Mower Safety Don’t let sharp blades or flying debris dampen your summer with a trip to the emergency room. Follow these safety guidelines instead.
Read the manual. Yes, it’s not the most exciting read. Perhaps you don’t even know where it is. But with the internet, nearly every manual is just a few clicks away. Find the model number on your machine and search for the instructions online. Spend a few minutes reading the manual. Know how to use the machine safely. Prepare the space. Winter has a way of relocating large sticks, rocks, holiday decorations and other debris onto the lawn. Walk the lawn quickly before mowing to check for and remove anything that could be struck by the machine and thrown out, potentially injuring the operator or bystanders. Dress the part. Proper footwear, not bare feet or sandals, is the safest option to limit injury to your feet from thrown objects. Long pants are also recommended to protect your legs. Round out the ensemble with hearing protection for prolonged exposure to the loud engine noise and eye protection to help protect yourself in the event of flying debris. Beware of burns. Many people don’t realize how hot the engine and exhaust can become. Burns are possible if unprotected skin comes into contact with these surfaces for even a short time. Take care when adding fuel that there are no hot surfaces or other ignition sources such as cigarettes that could
ignite fuel or vapors. Keep people clear of running mowers. Not only can spectators be hit by flying debris ejected from a mower, but also, they can be struck by the machine itself. This is especially true for children. There are usually many blind spots while operating a mower. Keep children and others far away. Keep your fingers out of the machine. This seems like common sense, but nearly every lawn mower injury I have seen began with something like, “I thought I could just reach in there and carefully move that stick, clump of grass, etc., out of the way.” Just don’t do it. Shut the machine off before attempting to remove any debris. Even when stopped, use a stick or other tool to remove the obstruction. Beware of stored energy. Many motorized lawn and garden implements are capable of storing energy, like a coiled spring, in the drive mechanism. Take care that if a lawn mower or similar device suddenly jams and stalls, there may still be stored tension in the machine. Reaching in to remove the obstruction may cause the blades to move again suddenly. That can be enough to cause serious injuries to fingers or anything else that happens to be in the way.

Cool Cucumber Salad Pistachio Crusted Rack of Lamb
The pistachio and mustard crust gives this lamb dish an interesting flavor and texture. Sure, rack of lamb is a little pricey, but no more so than other special occasion meats like prime rib, beef tenderloin, or goose. And, because rack of lamb is sold completely trimmed, you’ll have virtually no waste.
2 racks of lamb, trimmed 1 teaspoon herbes de Provence salt and ground black pepper to taste 1 tablespoon vegetable oil 2/3 cup chopped pistachio nuts 2 tablespoons dry bread crumbs 1 tablespoon melted butter 1 teaspoon olive oil salt and ground black pepper to taste 3 tablespoons Dijon mustard Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil. Generously season each rack of lamb with herbes de Provence, salt, and black pepper. Heat oil in a large skillet over high heat. Place lamb in skillet and cook, browning on all sides, 6 to 8 minutes. Transfer lamb to a foil-lined baking sheet; set aside. Stir pistachios, bread crumbs, butter, olive oil, and a pinch of salt and black pepper in a bowl. Spread mustard on the fat-side of each rack of lamb. Pat pistachio mixture on top of mustard. Bake in the preheated oven until the crust is golden and lamb is pink in the center, 20 to 25 minutes. Transfer to a plate and let rest 10 minutes before slicing.
Offset the heat and spice of the lamb or ham with this creamy cucumber side. This dish gets better after sitting for a bit, so make this early Easter morning, and bring it to the table just before you pick up your forks.
2 large cucumbers, peeled and thinly sliced 1/2 (8 ounce) carton sour cream 1 green onion, chopped 2 tablespoons chopped fresh dill 1/2 teaspoon kosher salt 1//2 teaspoon cracked black pepper Place cucumbers into a salad bowl and combine with sour cream, green onion, dill, kosher salt, and pepper. Cover bowl with plastic wrap and refrigerate salad for 30 minutes before serving.
Lemon Pudding Cookies
This five-ingredient cookie recipe calls for two fantastic and surprising ingredients: buttermilk baking mix and instant lemon pudding mix. They provide the dry ingredients as well as the tangy flavor. Add a bit of royal icing or melted white candy coating on top. Sprinkles would be a fun addition for the Easter meal.
1 cup buttermilk baking mix 1 (3 ounce) package instant lemon pudding mix 1 egg 1/4 cup vegetable oil 1/3 cup granulated sugar for decoration Preheat oven to 350 degrees F (180 degrees C). Grease 2 large cookie sheets. Mix baking mix, pudding, egg and oil in a large bowl until dough forms. Roll dough into 1 inch balls. Place balls 2 inches apart on the cookie sheets. Dip flat-bottomed glass or cookie press into sugar. Press onto dough ball and flatten into 1/4 inch thick cookie. Bake until just golden brown on the edges, about 10 minutes. Transfer to racks and cool completely.
