Yield 4 Ingredients 4 slices of bread 12 fine slices of smoked salmon 1 small spring onion (only the green section) 16 segments of orange & grapefruit Preparation Lay the salmon on top of the bread slices and proceed with the orange and grapefruit segments.

Finish off by dicing the spring onion’s green section and placing it on top.

Sprinkle with extra virgin olive oil and freshly-ground pepper.

Best served chilled.

Tip As an alternative, cottage cheese may be used as a base between the bread and the salmon.

Select ingredients that provide you with the sufficient protein. Upgrade your choices from greasy “fast food” to more nutritional solutions & opt for home-cooked meals, instead.

- Nutrition Bar Ingredients Tahini 450gr, Honey 200gr Chocolate Couverture Drops 200gr Blended mixed nuts 150gr (Aegina nuts, walnuts, hazelnuts) Corn flakes 150gr (or any other cereal of choice) Oatmeal 200gr Cranberries dried & diced 80gr Preparation Warm up the honey and mix all the ingredients in a bowl, adding the tahini last. Having prepared the mixture, spread it with a thickness of about 1cm over a non-grease sheet and place it in the fridge for approximately 30´ till it solidifies. When ready, either cut it up in bars, squares or knead it in small balls. The bars may be preserved in room temperature.

- Smoothie Ingredients 2 Carrots, 2 freshly squeezed oranges 1 Green apple, 2 small pieces of ginger Prepare & Serve Blend all ingredients together.

Perfect as an energy booster in the morning.

EXERCISE

Release the tension & redefine your balance when city life takes over again.

ΤHE OFFICE GENIE Lift the feet off the chair and cross them as youare seated (barefoot). Hold on to the arms of the chair and push yourself upwards as if you are levitating.

If the chair has no arms, simply grab the sides of the chair and push yourself upward.

Levitate for about 10-20'', rest and repeat about 2-3 times.

TWIST Sit on a revolving office chair, hold on to the desk with your thumb and fingers. Raise the ball of the feet from the ground and twist the chair (along with our core), right and left.

Your hands should remain steady in front. Perform this exercise for approximately 10-15", rest and repeat 3-4 times.
