Cold Brew Infusion Overview Technical Information - Infusion = 10-100% of fruit infused in water - Cold Brew Infusion: fruits are placed in cold water. Over time and without any thermal stress they release their aromatic properties by transferring them to the water which becomes an infusion.

Defoliation and cutting

Calculation and preparation

We remove leaves and external parts from fresh fruits.

Then we weigh and cut them in half.

We prepare different infusions at fruit/water ratio from 10% to 100%.

Sampling

Filtration

Fruits and herbs are infused at different temperatures.

We select infusion samples every two hours to check main chemical and organoleptic properties.

After filtering the fruits, we obtained a clear infusion.

6 Pasteurization and packaging The infusion is pasteurized and filled in aseptic packs.
