A new mural popped up on the Sylvan/ Interstate-30 underpass. Ash Studios’ founder Fred Villanueva and artist JM Rizzi teamed up to create the mural called “Seasons & Rhythm/Estaciones y Ritmo.” Drivers can experience all four seasons in one car ride. “This dynamic urban beautification project has spoken to thousands of Dallasites by bringing art and color into a non-traditional space,” Villanueva says. This mural sparked Ash Studios to start a new project, Texas Mural, to seek new mural concepts rooted in cultural equity and community-building.

TRUCKS participating in a back-the-blue rally stopped at Friendship West Baptist Church, a Black-led congregation, on a Sunday afternoon recently. It did not go well. The Rev. Frederick D. Haynes III, senior pastor of Friendship West Baptist Church, went live on Facebook to say, “Blue lives matter, or whatever you’re talking about? Let me just say this right now: At this point, if you ain’t saying ‘Black Lives Matter,’ you might as well have a klan rally.” Organizers say they received permission to stop at Friendship West, however Haynes said he did not approve the stop. Haynes later added, “Now is the time to divest from policing systems and invest communities. You want your lives to matter, blue? Then that’s what you do. You invest in our community instead of trying to intimidate our community. ’Cause we ain’t the ones to be intimidated.”

CITY HALL

City Councilman Chad West, County Commissioner Elba Garcia and the Oak Cliff Chamber of Commerce made it safer to shop small in Oak Cliff, donating PPE to small businesses in July. They handed out masks, gloves and hand sanitizer and asked neighbors to use #WePPEinOC and #ShopLocal on social media to support the effort.

Bill Dougherty kept chickens in the yard of his Oak Lawn duplex after he first moved to Dallas in the early ’80s.

“People thought I was crazy then,” he says.

Now 69, he’s been keeping hens since he was 12. He parlayed that lifetime of expertise into Trinity Haymarket, which has become the go-to place to buy chickens in Dallas.

He and his husband, Fred Owen, who live in Elmwood, opened their urban farm store after Owen took early retirement in 2012.

“It was so difficult to find good, clean feed at the time,” Dougherty says.

Customers come to their store in a former Buster Brown shoe factory in the Design District from as far away as Waxahachie and East Texas because typical country feed stores don’t carry organic feed.

Dougherty and Owen started in an un-air conditioned second-floor space that’s shared with furniture and lighting businesses, where they still keep prefabricated chicken coops and sacks of feed, along with gardening and beekeeping supplies.

They also renovated the factory’s first-story former boiler room into a space that is more like a boutique that sells local honey, pickles, jams and cookies, along with gifts and copies of the current Farmer’s Almanac.

In one corner of the store is a pen with about a dozen 2-day old chicks under a heat lamp. They’re all spoken for.

Chicks are in high demand, Dougherty says.

Chickens are great for controlling bugs in your yard, and their poop can be used as fertilizer for organic gardens. Trinity Haymarket rests on the “three-legged stool” of chickens and organic feed, organic gardening and beekeeping. They offer classes on those three topics.

Here are Dougherty’s tips for first-timers interested in hen keeping.

Take one of his classes. They cost $10 and offer all of the basics. Find details at trinityhaymarket.com.

“Chickens are not widgets,” Dougherty says. “They’re living, sentient little beings.” Consider your laying hens [as] pets, and don’t be surprised when they show personality.”

Chickens can live up to 10 years, with about six of them being laying years, and they require a minimum of 15 minutes of work a day. If you leave town, you’ll need a chicken sitter, so make sure you know what you’re getting in to.

Buy all of your chickens at once. That ensures that they’ve all been immunized similarly, so you won’t introduce new pathogens. Also, it can be very difficult to introduce outside birds into an established flock.

Chicks are cute, and it’s fun to buy them for kids, but they require heating lamps until their feathers come in. A pullet, which is a 12-week old teenager, is less trouble. Pullets can pretty much take care of themselves in the coop.

It’s best to have a minimum of three chickens because they’re flock animals. One or two does not make a flock, and your hennies won’t be happy. Dougherty recommends four to six. That number will produce about two dozen eggs a week and cost about $40 a month in organic feed.

A QUIET PLACE TO STUDY

THE FIRST “BOARDING EXPERIENCE” for Dallas ISD students whose homes lack the stability needed to reach higher achievements is expected to open in Oak Cliff this fall.

At Last! is under construction at 405 E. Overton Road, near South Oak Cliff High School, but it’s not a school. It’s intended to be a home away from home where boarders live Monday-Friday. They can attend any school, but an enrollment lottery will give preference to students who live in the neighborhood surrounding the dormitories.

The first 16 students, who could move in as early as next year, will be elementary age, and they could stay with the program through middle school. The plan is to eventually build three houses sleeping 16 boarders each.

“We are not curricular. We don’t seek to replicate what teachers and principals do,” says Randy Bowman, a DISD graduate and businessman who is the CEO of At Last! “We are more replicating what parents do when they come home from work and give their kids a snack and ask them how their day went and what homework they have.”

HOW AT LAST! WORKS:

The 16 scholars-in-residence will live at the house from about 3 p.m. Sunday until they leave for school Friday morning. Each house will have a dining area and great room similar to that of a middleclass home, with family-style meals at a dinner table, quiet places to study and tutoring as needed. There will be four bedroom suites, each with a bathroom, that sleep four students. “Some kids don’t have the luxury of space, a quiet place to go and get your work done,” Bowman says. “It’s going to look like a well-resourced home where you can crawl onto a chair and do your work.” While kids are at school, their parents are invited to come and help tidy up the house and visit with the house parent. About 12 people are expected to be employed there during the first year.

ADULTS IN THE HOUSE:

The house parent will live in an apartment within the residence and will be a counselor who does everything that parents do in that 3-8 p.m. window. The house parent leads the “culture” of the house, setting a tone for relationships and behavior, Bowman says. “It’s an incredibly important hire for us,” he says. The house parent helps students de-stress from the day, makes sure they have their snacks and

takes them through a wellness assessment. They ask, “What do you need to get done?” and figure out how the evening should unfold to get everyone ready for the next day. After homework is done, students have free time when they can socialize or call their parents and then go to bed at about 9 p.m.

adding surveillance cameras in all areas that are appropriate. Adults will not be allowed to be alone with children where there could be opportunities for abuse, he says. The nonprofit will run deep background checks that are more invasive than what licensing requires. They will also hire an outside agency to review internal processes. “Ongoing external eyes [are] making sure we do everything we can to prevent that,” he says. “And we would have an absolute zero-tolerance attitude for anything questionable.

WHAT IT COSTS:

The nonprofit’s 2020 operating budget was about $425,000. Bowman expects the budget for the 2020-2021 school year, from August to July, to be about $890,000. After that, it could cost about $675,000 a year.

HOW IT’S FUNDED:

Bowman says the nonprofit plans to hire older adults who live in the neighborhood to arrive at 6 a.m. every morning to wake up the students and get them ready for the school day. “These would be fixed-income people who could work roughly 10 hours a week,” Bowman says. “We need you to wake these kids up in a way that leaves them feeling good about themselves and the day ahead. HOW THE FIRST HOUSE IS DIFFERENT:

The 5,700-square-foot building currently under construction will cost about $1.54 million and could be completed as early as mid-October. It will also house the nonprofit’s office and conference room, as well as a nurse’s office, an industrial laundry room and a kitchen that will provide meals for all three residences. The cost also includes an expensive driveway and fire lane that won’t have to be replicated for the other houses.

The Hoblitzelle Foundation was the nonprofit’s first major donor with $100,000. They also received $75,000 from the Hillcrest Foundation. The Bowman Family Trust has donated, as well as the Communities Foundation of Texas, the Village Giving Circle at the Dallas Women’s Foundation and the Simmons Sisters Fund. The Dallas City Council approved a $400,000 conditional reimbursement grant for the nonprofit, but Bowman says they haven’t received it yet. “We haven’t received a penny of public money at this point,” Bowman says. “Although we are grateful for the conditional grant.” Last year, the nonprofit organized a dominoes tournament at Red Bird Mall. The radio station KTCK got involved, and they raised $60,000. They’re planning to make it an annual event, with the next one planned for Labor Day weekend. Bowman thinks it has the potential to raise as much as $250,000.

WHY THIS LAND:

The 4-acre property is in ZIP code 75216, which contributes the highest number of people to the Texas prison system. The second-highest contributor is 75217, the Pleasant Grove ZIP where Bowman grew up. “We are trying to take this into the most challenged areas that we can,” he says. “We want to make sure that it’s a place that we can enhance the quality of life.” The Trust for Public Land is building a park on the site. “It was the perfect neighborhood to go in and do this because we can impact the quality of life in that neighborhood,” Bowman says.

COOKIES RULE AT THIS OAK CLIFF BAKERY

CLYDE GREENHOUSE moved to Dallas in the late ’90s for a job as a project manager at a corporate law firm.

Even though he started his cookie company 17 years ago, he held his corporate job, which involved extensive travel, until seven years ago.

One job was just not enough for Greenhouse.

To make new friends after arriving in Dallas, he worked as a night manager for Crate & Barrel at NorthPark. That’s where he learned about high-end cookware and began participating in cooking classes.

Even though he grew up in rural Louisiana, where the women in his family were great cooks and bakers, he wasn’t really allowed in their kitchens.

He and his partner, Michal Taylor, started Kessler Cookie Co. in 2003 to make corporate gifts, operating only around the holidays for the first several years. They called on friends and family to help them fill all of their orders. Greenhouse’s two sisters, who lived in Dallas, started bringing trays of cookies to parties and events.

Greenhouse and Taylor even enrolled in culinary school at El Centro college for two semesters of night school.

They didn’t rush it, purchasing the former cottage that is now their retail space on North Beckley in 2006. The business continued with corporate gifts, now operating year-round, and they picked up placements in coffee shops while building a retail base.

Now it’s the Kessler Baking Studio, which, in normal times, offered 30 cookie varieties a day. Now it has about 12. They also make several varieties of brownies and blondies, as well as cereal treats, short breads, bundt cakes and, on Sundays, cinnamon rolls. Their website starts taking cinnamon roll orders at 6 p.m. Saturday, and they typically sell out.

Customers come from the neighborhood, but Greenhouse says the bulk of his customer base comes form Duncanville, Desoto, Cedar Hill and Downtown Dallas.

Greenhouse says his favorite cookie is the Kessler-doodle, his take on a snickerdoodle, which has ginger and is heavy on the spices. That is among the top sellers, along with chocolate chip and oatmeal cranberry walnut.

The best thing about being the cookie man is the people. Sometimes it’s like being a non-alcoholic bartender, he says.

“It’s a mood changer,” he says. “People will walk in, and they’re happy, but they’ll tell you about the bad day they’re having.”

Keeping barn animals in the city

Dallas allows residents to keep chicken coops in their backyards as long as there’s no rooster. As many as five livestock animals, such as sheep and goats, are allowed as long as they don’t cause a nuisance. It’s even legal to raise and process birds for food, but only for personal consumption. Horses are regulated more strictly. At least 15,000 square feet of open grazing space is required for one horse. More than that requires half an acre per horse. Our city’s regulations on farm animals are lenient even compared to the suburbs. Here are a few of the Oak Cliffers who keep livestock at home.

BE THE LLAMA: LAWNMOWERS THAT CHILL

Sam White purchased his llamas from a high school senior who was selling them to pay for college.

Cookie and Mama Coco are former 4H show llamas that White acquired as a natural way of mowing. He bought a piece of land near the University of North Texas at Dallas as an investment about a year and a half ago. First, he bought sheep to clear the land.

“I started with five, and now I have nine,” he says. “There’s one ram.”

White is a real-estate investor who also owns a landscaping company. His interest in livestock as a land-clearing tool took him down a rabbit hole, where he landed on llamas.

Llamas have entered pop culture over the past few years because of their role in the video game Fortnite. In the real world, llamas are domesticated animals related to camels and hailing from the Andes of South America.

When it’s hot, they’re active in the mornings and evenings. Otherwise, “They’re like, ‘Where are we chillin’?’” White says.

Like other camelids, camels and alpacas, llamas “kush.” That is, lie with their legs underneath them.

“They can enter a meditative state and stay chillin’ for 12 hours,” he says.

Also like camels, it’s not easy to convince a llama to do something she doesn’t want to do. But they’re

curious and intuitive animals, White says.

“They have a certain emotional intelligence,” White says. “They can pick up on people’s energy right away.”

Neighbors can get a glimpse of White’s sheep and llamas when he occasionally keeps them at his short-term rental house near Tyler Station. He also keeps freerange chickens there.

The llamas are employees of Honey Bee Property and LeeRoy’s Lambscaping, but they’re also just pets.

Between buying the animals, paying for organic feed to supplement their diets and acquiring a former sheriff’s horse trailer on Craigslist to haul them around, a riding lawnmower would probably be cheaper, White says.

GOBBLE GOBBLE: AN URBAN FARM PROVIDES

Oak Cliff native Stephen Betzen and his wife, Rachel, have a guard llama.

“For the most part, I would say the llama just notices things,” he says. “I used to lose chickens to foxes sometimes, and since we’ve had a llama, we haven’t lost a chicken.”

The Betzens own an Oak Cliff business, Dallas Reading & Language Services, which offers speech therapy and reading tutoring. And they live in Kiest Acres subdivision, next door to Betzen’s mother. The two homes sit on a combined three acres.

Besides the llama, they have four goats, about a dozen turkeys and “a ton of chickens.”

These aren’t laying hens. The Betzens raise chickens and turkeys for meat. Not only that, but they slaughter, process and butcher the birds themselves.

“We were vegetarian for 17 years,” he says.

Now they only eat meat if they raise it or hunt it themselves.

“It makes me a little more grateful,” he says. “I have a lot of gratitude for what I have in my life. There’s a grounding quality to it.”

The whole thing started with an organic garden.

Because they have so much land, they needed goats to clear the privet. Then they wanted a better source of eggs, so they got chickens. Eventually, they started raising chickens for meat, and they got a turkey for Thanksgiving.

“It’s been a long journey,” Betzen says. “We got our first chickens in 2006, and we started processing the animals in 2014.”

Betzen is very familiar with Dallas city ordinances on animals, and he has dealt with code enforcement on a number of occasions, he says.

“I’ve been reported for a rooster three times, but I’ve never had a rooster,” he says. “People make the assumption.”

He says it’s important that their animals don’t cause a nuisance, and it’s a lot of work to keep it that way. The urban farmer cannot allow excrement to accumulate, for example.

The Betzens would like to add more animals to their stock.

“I’ve been looking for Muscovy ducks because they don’t quack,” Betzen says. “If you have two male turkeys, they will sit there and try to out-gobble each other. Some of our neighbors say they like the sound of it.”

BAA-A & BOUGIE: THE GOATS WITH THE MOST

Tara Stargrove’s parents had goats when she was growing up in Oregon. When she bought a house in Texas four years ago, she didn’t want to mow the lawn.

Now she and her 6-year-old son have four goats and a mini horse.

Stargrove is the manager of Tyler

Station, and she owns commercial property in Oak Cliff. She and her son live on a little more than half an acre in Duncanville, where a permit is required to keep livestock.

The goats know the sound of Stargrove’s car and come running when she arrives. She can also call to them,

“here goat-goat,” and they will come.

“They’re better than any dog,” she says. “They can talk and make weird noises. They’re very intelligent.”

For example, a squash plant volunteered in her yard this summer. While goats are known for eating anything, Stargrove says they know to

leave the squash plant and wait for the fruit.

Goats always want to be on the highest plane — king of the mountain — and Stargrove puts various items, such as picnic tables and wooden cable spools, in the backyard for them to climb and play with. Other than that, goats require some kind of shelter from the rain and supplemental feed.

Stargrove’s goats are such pets that they wear collars, and she and her son take them for walks in their neighborhood, where they are local celebrities.

“At least once a day, there are people coming to see the goats,” Stargrove says. “It’s become an attraction for the neighborhood.”

ONE OF THE CUTEST DUCKS on Instagram lives in Winnetka Heights Monday through Friday.

Gary the duck swims in the pool and chills with her “sister,” a poodle named Bernice.

Winnetka Heights residents Jamie and Larry Oliver bought a weekend house at Cedar Crest Lake last year, and they adopted Gary as a chick in April. They added a second one, Mayme, in June, but that bird died unexpectedly less than two months later.

HOW THEY WOUND UP WITH A DUCK:

One day we were driving around near our lake house, and my husband saw a sign that said, “Ducks for sale.” He said, “Let’s get one.” I said, “Absolutely not.” That was that until one weekend I was busy at work, so I stayed behind for the weekend.

He went to Tractor Supply because it was one of the only places open during quarantine, and they had ducklings. He posted on Instagram stories, tagged me and said he wanted one, partially kidding. A friend of a friend saw the post. She had recently bought Gary to add to her flock, but Gary was different. Presumed to be male at the time, she was the runt, and the other ducks picked on her. She didn’t seem to care for them and wanted to only be around the owner. But the owner had two giant dogs that wanted to eat Gary. So she contacted Larry and asked if he wanted to adopt her. Without asking me, he took Gary in. I learned about the new addition from an Instagram post of baby Gary riding on Larry’s shoulder in the truck. So he made it to where I couldn’t say no. We got Mayme from a breeder two hours from Dallas as a friend to Gary.

SWIM TIME:

We have a swimming pool here in Dallas that Gary hops in and out of all day long. She loves to sit on a float and

then swim a bit. If you are in the pool, she won’t leave your side. She swims right next to you. When she isn’t in the pool, she is sitting under the magnolias on the edge of the pool. Isn’t that the life? We travel back and forth with her from Dallas to the lake on weekends. She rides on the console between us. At the lake she has a kiddie pool that she demands be filled with fresh water every morning. Taking a dip is the first thing she does when she leaves her house in the morning. If it isn’t filled, we will hear about it.

HOW TO CARE FOR A DUCK:

Ducks, like any birds, are delicate creatures. They need the perfect food, extra care and lots of attention. The largest concern I have had is that they are a snack to so many other animals: cats, dogs, raccoons, hawks, owls. I worry a lot about something snatching her. So we built her house like Fort Knox. Nothing is getting in there. Ducks are a full-time commitment like any pet. They can get lonely and should only be kept in pairs. Unfortunately, Gary’s sister just passed away unexpectedly. With the joys of pets also comes heartache. We know that when we bring them into our lives, but the reward outweighs the pain.

MUST LOVE DUCKS:

Ducks are amazing pets. If raised from babies, they are as affectionate and loyal as dogs. They will follow you around like shadows. It’s the sweetest sound to hear their little feet slapping the ground behind you. They bring a smile to our faces every day and to so many of our friends as well. I would definitely recommend it.

DUCK LIFE:

They have so much personality. I never knew they could attach themselves to humans like they do. They really are like feathered dogs.

Changing the world starts with kindness

Ionce heard a story about a little boy and his grandfather. They were quite poor and isolated. As the grandfather aged, their cottage fell deeper and deeper into disrepair. The little house was shadowy and stale. But it was home.

One day, a stranger with a sweet smile approached the boy in the park and handed him a lily then walked away. Thinking little of it, he took the lily home to his grandfather. The grandfather put the flower in a mason jar by the window.

N ext to the clean jar, the window looked filthy. So the grandfather cleaned the window, which naturally invited more light into the room.

The fresh light exposed a dirty floor. The grandfather asked his grandson to sweep and mop. The sparkling window, natural light and clean floor made the mason jar appear cheap. So the grandfather took a vase from the cabinet and placed the lily back in the window.

Just one flower transformed their entire environment. The grandfather decided they needed more. He spaded dirt in the front yard and planted seeds. Soon flowers bloomed. Neighbors stopped to chat. Two became four and then eight and sixteen as an extended family grew alongside the flowers.

T he lily from the stranger had died long before. But the difference it made in two people’s lives never did.

It’s a lovely story, but is it true? Can one kind act reshape lives?

Not always. But yes, it’s true. It can.

When I left for college, my grandmother began sending me notes with a $1 bill enclosed. Not $5 or $10. Just $1. The money didn’t go far, but the love and encouragement lasted.

James, the brother of Jesus, said, “What good is it if someone claims to have faith but has no deeds? … Suppose a brother or a sister is without clothes and daily food. If one of you says to them, ‘Go in peace; keep warm and well fed,’ but does nothing about their physical needs,

what good is it? In the same way, faith by itself, if it is not accompanied by action, is dead.” (James 1:14-17)

Lots of people have strong beliefs and good intentions. Few act.

Many people are now asking, “What can I do to overcome racism, address my own prejudice, and help create a better future for others?”

Maybe it starts by seeing yourself as servant, not as someone who does occasional acts of service. The more you serve — family, neighbors, coworkers — across racial and ideological lines, the more opportunities you’ll have to do something that echoes through eternity. Even better, find someone different from you, then the two of you go serve someone else.
