Hibachi is a distinctive style of Asian cooking that features fresh meat, seafood and vegetables grilled to perfection and paired with homemade sauces flavored with garlic, soy and other spices. Takuma Hibachi is the newest option in the Hillsboro area for authentic Asian cuisine and unique sushi rolls designed and handcrafted by the chef and owner.

When the Lin family immigrated to the United States from China in 2005, they were searching for the American dream, and opening a restaurant was the plan from the beginning. Jimmy brings almost 20 years of experience in the food industry, primarily as a sushi chef and kitchen manager. With their young daughter now in middle school, Jimmy and Eva knew it was finally the right time to bring their dream to fruition, and Takuma opened for business in January 2024.

Famous for smoky flavor profiles created with housemade marinades and the hibachi grill, this style of cooking takes time and practice to learn, and Jimmy has worked hard to perfect his craft. Customers can choose chicken, steak, scallops, salmon, shrimp or tofu marinated and expertly

Takuma also serves a fantastic selection of sushi rolls, including several classic options and a few original creations specially designed by Jimmy. The coveted Takuma Roll is made of spicy salmon, BBQ eel, crabmeat, avocado and cucumber, wrapped in soybean paper and topped with wasabi mayo and red caviar. Another popular option, the Hillsboro Roll, has salmon tempura, cream cheese, spicy tuna and avocado topped with three kinds of caviar and flavorful sauces.

Casual and family-friendly, Takuma welcomes guests of all ages, and the menu is designed to provide everyone with options. The fast-casual setup requires customers to order at the counter and then find a seat in the spacious dining room while waiting for their meal. The restaurant has a fun, modern vibe with floor-to-ceiling glass windows, a pretty pink flower wall, and the Takuma mascot seated near the front door, ready for photo opportunities.

Takuma quietly opened their doors without any grand ceremony, but those who’ve stumbled upon this gem have been delighted. They’ve had many return customers who love the concept and the food. The casual service model allows Takuma to spend less money on servers and more on fresh, high-quality fish that won’t break the bank for

Orders can be placed in the bakery, over the phone, or online, and delivery is available directly through the store and third-party delivery apps like Doordash and Ubereats. Both the Beaverton and Hillsboro locations offer extended hours for ultimate convenience, including Sunday hours from 10 a.m. to 3 p.m.

Carla and area manager Kayla Gremillion love being part of the local community. “Getting to know our customers and being part of their everyday celebrations is the best,” Kayla says. “It’s fun to hear the story of the
