making delicious cakes for friends and family. Their desserts were so delectable and in such high demand, however, that it soon became evident they were onto something unique. There was a shortage, they discovered, of delicious cakes that were readily available, where ingredients were never compromised.

Treat To Eat And A Treat To Keep! That’s how Carla Mayes, owner of Nothing Bundt Cakes in Tanasbourne, so aptly describes her business. If you haven’t had a chance to visit her store yet, do yourself a favor and get there soon. I promise this is going to be your new favorite dessert place! Not only do they serve a plethora of different cake flavors and sizes, but they also have a fairly extensive collection of gift items and party supplies, which truly makes this a one-stop shopping mecca for all things party related.

There’s quite a story behind this amazing business and their unbelievable cakes. In 1997 two women, Dena Tripp and Debbie Shwetz, came together over their mutual love of baking and started 6 • FOREST GROVE COMMUNITY ADVANTAGE MAGAZINE

Their product proved to be irresistible and now, 23 years later, they have over 300 store locations across the country!

The great thing about Nothing Bundt Cakes, though, is that it doesn’t feel like a chain.

Stepping into the store, you’d swear it was a simple mom and pop type of place (albeit one with the highest of standards and the most impeccable of tastes). The atmosphere is clean but cozy, colorful but elegant, and welcoming but professional.

And the cakes! So many options, and each one is to die for. You get to choose from ten different delicious Bundt flavors, including their rotating seasonal Featured Flavors, like Blueberry Bliss for summertime, and Pumpkin Spice in the fall. All of their cakes are

made with the finest ingredients, like real butter and eggs, and crowned with their signature cream cheese frosting. None of the artificial stuff here! Having sampled many of their flavors, I can honestly attest that each one is simply amazing.

Good news, too, for those with certain dietary restrictions like Celiac - they always carry one flavor that’s gluten free. It also happens to be so fantastic and moist that you’d never know it wasn’t one of their standard recipes.

Additionally, all cakes can be ordered with extra frosting or no frosting, so there are also options for customers who are lactose-intolerant.

Depending on your occasion, they have all kinds of different sizes and designs to choose from. You can go big with their 10” cake (which can also be tiered for extra grandiosity) or small with their individual Bundtinis (the size of a small cupcake) and anything in between. They can customize and personalize for any occasion; birthdays, showers, weddings, graduations - they do them all. There are more than sixty unique designs themed around holidays and celebrations throughout the year, so the sky’s the limit!

Carla would like all of their patrons to rest assured that she and her staff are taking every precaution to ensure the safety of their customers. A RITE OF PASSAGE FOR OREGONIANS Enchanted Forest

T

o anyone who grew up in Oregon, or even anyone who has driven the I-5 corridor through Turner (south of Salem), you will be familiar with the fantastic little gem of a roadside attraction known as the Enchanted Forest. Many readers looking at this story will be swept away by warm feelings of nostalgia. It seems that virtually everyone who spent time in Oregon as a child has made at least one visit to this magical place. When the topic comes up among friends of a certain age, stares begin to wander, countenances begin to soften; eyes moisten. It’s a different response than you get when you mention big money efforts like Disneyland, or Magic Mountain. It’s not as wide-eyed or excited as that perhaps, but I’d argue, it’s deeper. It’s more profound because the Enchanted Forest takes us through a portal to a better time; a simpler time; a more innocent time. It’s a treasure to so many of us, and it’s one we need to protect.

It all began in the mid 60’s. Roger Tofte had retired from the Navy after the Korean War and was working for the Oregon State Highway Department as a draftsman and artist. He’d always had a very artistic creative side but hadn’t had much opportunity to put it to use. When he took his family on a long road trip, he realized that many other states had attractions, various examples of glorious Americana, but there was very little in Oregon. He saw a vision, and without hesitation, got to work on it. The original section of the park, the Storybook Trail, was that vision and it was his alone. He drew up the plans and did almost all of the work himself. He had some help from friends and family, of course, but the vast majority of it was just Roger out there digging holes with shovels.

Owner Roger Tofte He initially thought it might take about 2 years to complete. It took 7! But he persevered and on Sunday, Aug. 8th, 1971, they opened. It was an instant success! That first weekend, they had 75 people. The following weekend, after they had an article in the Statesman Journal, over 1000 people showed up! Roger continued to work full-time for another year until he was sure he could support his family, then he devoted himself to the park 100% and never looked back.

I had the pleasure of speaking with Susan Vasley, one of Roger’s daughters (and one of the current co-managers of the park), and I was incredibly moved by her story; by the whole family’s story. Since it opened, this park has been their life. They grew up here. It was dad’s vision; it was his dream, but the entire family was involved in it. There are family businesses...and then there is the Enchanted Forest!

It was the 70’s and of course, there were no child labor laws. Nobody even thought about that kind of stuff back then. If you were capable, you helped out. It was as simple as that. And they did; all of them, and they loved it! Susan, who was 14 at the time, worked the entrance building. Her sister Mary (who is the second current co-manager), worked the food stand and was only 9 years old. Their brother, Ken, kept all the trash picked up and the trails cleaned. He was aged 12. And

their littlest sister, Lori, who wiped tables in the food area was at the ripe old age of 4! Mavis, their mother worked behind the scenes. She had a mind for business which allowed Roger to focus on the creative. It was the perfect balance.

And so things went.

In the following years, Roger consistently built onto the park.

The Tofteville western park was constructed in year 2 with the Haunted House coming shortly after. The Comedy Theatre followed next and then the famed Ice Mountain Bobsled roller coaster (the first ride to require some professional outside help) made its debut.

Then came the Old Europe Village with it’s Jolly Roger Water-Light Show, the Big Timber Log Ride (the 2nd big ride), and most recently, the hugely popular Challenge of Mondor ride!

This past year has been difficult for all of us. For the Enchanted Forest, it has been devastating. Prior to COVID, they were in great shape, but they have a lot of annual fixed costs which they need to pay whether they are open or not (insurance, ride maintenance, employee payroll, etc.). They were able to open last season but only at a fraction of their full capacity. At the end of last season, the reality of their situation was that they needed $500,000 just to open back up this year. A GoFundMe was set up and the community came to the rescue, raising almost the entire amount needed. The Tofte family is so grateful to everyone who came out in support and they were able to plan to reopen this year with your help.

It seems that virtually everyone who spent time in Oregon as a child has made at least one visit to this magical place.

Interspersed throughout, they’ve added several other smaller rides, and expanded on some of the existing themed areas. All the while, Roger and the entire family have worked side by side to make his dreams— dreams which were now shared by his children and by children all over the state and beyond—a reality. Even as the rides

Susan and Mary have the same balanced relationship that Roger and Mavis did back in the early days. Susan is the creative force (she actually writes and directs all of their plays, composes and records all of the music played throughout the park and performs in the house band!) while Mary takes care of all of the business.

Tragically, then the ice storm hit in February and caused mass destruction across the property.

Hundreds of trees came down, damaging multiple exhibits and rides and a huge chunk of that money they had received from your generous donations, had to be redirected towards the clean-up rather than the day-to-day costs of keeping them open. Susan is optimistic and hopeful they can make up some ground this year, but the fact is, the park is dangerously close to having to close their doors, possibly for good.

The Enchanted Forest is a special place, folks. There is literally nothing else quite like it. It is the realization of one man’s dream and his family’s love and continued support.

Generations of kids have walked its magical paths and been “enchanted” by its fairytalecome-to-life exhibits and rides. This August is their 50th Anniversary. We need them for 50 more! Visit the park this summer.

Grilled Huli Huli Chicken Thighs

June means that perfect grilling weather has finally arrived, so bust out that bag of charcoal or make sure the propane tank is filled - it’s time to turn up the heat with this tangy Hawaiian grilled chicken recipe! It’s so easy and delicious, you may find yourself making it again and again this summer.

INGREDIENTS

1 cup packed brown sugar 3/4 cup ketchup 3/4 cup reduced-sodium soy sauce 1/3 cup sherry or chicken broth 2-1/2 teaspoons minced fresh ginger root 1-1/2 teaspoons minced garlic 24 boneless skinless chicken thighs (about 6 pounds) DIRECTIONS

1. In a small bowl, mix the first 6 ingredients.

Reserve 1-1/3 cups for basting; cover and refrigerate.

2. Divide remaining marinade between 2 large shallow dishes. Add 12 chicken thighs to each; turn to coat. Refrigerate, covered, for 8 hours or overnight.

3. Drain chicken, discarding marinade.

4. Grill chicken, covered, on an oiled rack over medium heat for 6-8 minutes on each side or until a thermometer reads 170°; baste occasionally with reserved marinade during the last 5 minutes. *recipe reprinted from tasteofhome.com

The group has been rocking and rolling in the Pacific Northwest since the late 70s, but they travel all over performing nationwide, from coast to coast. Jerry Hoffman, one of the 3 original founding members still in the group, is one of the friendliest guys you could ever meet. M

anager Andrew Harrison has been at Bites Restaurant going on 5 years now. He started just 8 months after they opened when the previous manager, an old friend of his, asked him to come over.

Andrew had already been at a popular local pub for a couple of years and thoroughly enjoyed the work, but because of seasonal cutbacks, wasn’t getting as many hours as he would’ve liked. When his friend asked him to come over to Bites, it was initially just to supplement his hours.

He now considers the menu at Bites to be the best he’s ever served! One would expect that becoming a new manager means making some changes, even minor ones, but when Andrew took over, he had to admit that things were nearly perfect as they were, and he couldn’t justify changing something he couldn’t improve upon. Don’t fix what’s not broken, after all!

He started at the bottom, learning the ropes both at the pub, and at Bites, and that’s how he has gained so much experience over the past 7 years. He’s literally done every job on both sides of the counter from dishwashing, to serving, to cooking, to management, and he’s enjoyed every step of the way. His friend trained him and worked with him at Bites for a year or so, then moved on, and Andrew has been managing the restaurant ever since. He feels like he’s truly found a home there.

The initial concept was to serve dishes inspired by a fusion of Asian and American cuisine. Browsing through their menu, you’ll notice that concept hasn’t changed much over the years. It’s still mostly intact, but due to COVID regulations, some modifications have been made in the past year. In order to survive, like so many other places, they’ve been forced to adapt. Also like many others, those changes have proven to be quite beneficial, and will most likely remain in place after the pandemic has released its tenacious grip on our lives.

Besides the fact that he was already in the industry and wanted to pursue his career further, it was the menu and the quality of the dishes at Bites that sealed the deal for Andrew. When his friend first invited him to join the team there, he was skeptical and unsure what to expect, but it far exceeded his expectations.

Namely, Bites has added what Andrew referred to as “ghost kitchens” or “virtual kitchens.” These are typically professional food preparation and cooking facilities set up for delivery-only meals. In the case of Bites, they have opened 2 ghost kitchens - take-out/delivery-only entities

residing within Bites Restaurant. The way Andrew describes it, they took the same ingredients they were already using for Bites dishes, combined and focused them in slightly different ways, and in the process established 2 new brands: Burger N Buns, and Boku Bowl! Both of these new ventures operate on the premises in “ghost kitchen” capacity.

The main menu here however, is for Bites Restaurant itself, and what an incredible menu it is, listing more than 90 items to choose from! Nearly every dish has some sort of twist that fuses Asian cuisine with other styles, such as Korean BBQ Chicken Tacos (soft tacos with grilled chicken breast, lettuce, green onion, sesame seeds, and Korean BBQ

Sauce), Korean Chicken Salad (avocado, carrots, crunchy chow mein noodles, kale mix, and gochujang dressing), Alfredo Sen Yai (artichoke, rice noodles, and alfredo sauce), and even Tom Yum Minestrone (black beans, celery, onion, garlic, mushroom, tomato, cilantro, rice, and parmesan cheese); the list goes on!

Unique and delicious flavors combined in unexpected, yet synergistic ways. It’s unlike anything you’ve ever tried, and

you’re sure to enjoy every bite!

Favorites include the All American Burger (you can’t argue with the classics when they are simply done right!), Tempura Avocado (fresh avocado dipped in tempura and lightly fried, drizzled with aioli), Classic Gyoza (pan fried gyoza with gyoza sauce), Mozzarella Egg Rolls (served with their special thai marinara dipping sauce), and Boneless Wings (served with their own Korean BBQ dipping sauce).

You also can’t go wrong with tantalizing choices like Garlic Parmesan Green Beans battered in tempura; Dynamite Nachos made with corn chips, tempura shrimp, pico de gallo, guacamole, cheese and aioli; or their amazing Parmesan Beer Fries.

ason Thompson started his work for Budget Blinds of McMinnville in 2009, installing high quality window coverings for clients throughout Yamhill County and the surrounding areas. In 2013, he bought the store and now runs it with a highly experienced and dedicated crew of five.

More than a decade after getting into the window covering business, he still loves seeing new products come down the line and sharing them with his clients.
