The article on pages 36-37 about Coach Rosie was inspiring. Being a teacher, it is a great feeling to see that there are still other teachers out there who have this much compassion for their students! he Fourth of July is one of my favorite holidays, because it is spent with family and friends celebrating the birthday of America! My husband, Brent, is typically grilling on this day, as are most Americans, so I wanted to find out what grilling tips some of my favorite restaurants in Memorial have. Boy, did they share some really great tips and recipes!

“O

ne of my favorite Fourth of July memories happened around 1972. My Aunt Frances and Uncle Charlie Corona had a bay home in Seabrook, Texas, and they always hosted the whole family every year. It was a big family, which includes the Mandola and Ciro Lampasas families!

“Well, my dad and I were leaving his grocery store in his 1969 El Camino – we called it a ‘car-truck’ – with his old barrel pit loaded in the bed. About the time we were around Ellington Field on the Gulf Freeway, that barrel pit escaped the bed of the El Camino and started rolling down the freeway! You would think that my dad would have just kept driving, but he loved that old pit, so he pulled over and rescued it. If it were me falling out of the bed of the truck, he would have left me, but not the pit! To get to the point, my dad is the best at grilling chicken, and on that Fourth of July, my family had the best chicken cooked by Dad on his old barrel pit. Mr. C’s Smokey Barbecue Sauce Juice of 1 Lemon 2 Tsp Flour 1 Tsp Red Pepper 1 Tsp Black Pepper

2 Tsp Prepared Mustard Clove of Garlic ½ Tsp Sugar ½ Tsp Salt

Put the ingredients into measuring cup, then fill to 1 cup line with vinegar. Blend well. Melt 2 sticks of oleo in saucepan, add mixture and cook until thickened – about 3 minutes.

This sauce may be used on roasts, steaks, chicken, frankfurters, hamburgers, pork chops and spare ribs.

Cooking Suggestion for Chicken: About 8 hours before cooking time, sprinkle cleaned and split chicken with salt. Place in refrigerator until ready to cook. Brush with Mr. C’s sauce on both sides and place on grill. Brush with sauce and turn about every 15 minutes.

Vallone’s Perfect Tasty Hamburger Ground Chuck Wagyu, Optional Salt and Pepper Finely Chopped Garlic Freshly Grated Parmigiano-Reggiano, Optional Use good ground chuck with a lean-to-fat ratio of 80/20. To make it really great, use Wagyu or a mix of Wagyu and ground chuck, but use the 80/20 ratio whether 100 percent Wagyu, chuck or blend.

Season the meat with salt and pepper to taste and add a level teaspoon of finely chopped garlic per 8 ounce hamburger patty. Mix well and shape the patties.

If you want to be daring, fold in a level tablespoon of freshly grated Parmigiano-Reggiano.

Let meat sit raw for 30 minutes before searing or grilling.

y favorite Fourth of July memories include going out in the early evening to the lake shore of Lake Erie Ohio where I lived, sitting in the sand watching fireworks with a picnic. Once the fireworks festival ended, we would go back to our lake house to enjoy an outdoor campfire and music and cook Amishbaked individual pies over the campfire. My mother, grandparents, cousins, siblings, aunts and uncles would join us for the day.”

grew up in the Memorial area, just around the corner from Vallone’s seafood and steak house and Americana restaurant, where I am partner and general manager.

My memories of the Fourth of July take me back to the Lake of the Ozarks, where my family had a lake house for many years.

“I have such great memories of it, because it was a big holiday for my family, especially because my grandfather is a World War II veteran, and my parents impressed upon me the meaning of the holiday. It was always an important family gathering for us, when we would take time out to celebrate our country and its history.

“Our Fourth of July celebration was centered around fireworks – a wonderful American tradition that I still love and enjoy today. And of course, home-style cooking and great food were already part of my world as a kid at the lake with family. We grilled steaks and burgers before we took the boat out on the lake.

“It’s one of the things I love about the menu at Vallone’s. Our menu and its celebration of American cuisine take me back to those summers of family and friends and classic AmeriScott Sulma cana cooking.”

Ryan’s Grilled Potatoes Place in mixing bowl: 4 Baker Potatoes, Sliced into ¼ Inch Slices 1 Yellow Onion, Sliced into ¼ Inch Slices Add to mixing bowl: 1 Tbsp Ground Fresh Black Pepper ½ Tsp Garlic Powder 2 Tbsp Salt ¼ Tsp Celery Seed, ½ Tsp Cayenne Pepper Optional Mix all ingredients together to evenly coat potatoes. Add olive oil to moderately coat the potatoes and onions.

Lay two sheets of foil on counter about 2 feet long and overlapping by 5 inches on the long side of the foil. Place potato and onions onto middle of foil and spread to about a 1 inch thick square evenly.

Take the outsides of the foil around edges and fold to cover top of potato and onion mix; form a sealed grille packet.

Grille potatoes and onion packet on each side for 15 to 20 minutes on medium heat. Serve with a barbecue or grilled meal.

“A

native Houstonian, I serve as executive chef of Cordúa Restaurants. Our family loves the Fourth of July! We moved to Memorial from Meyerland when I was 12. I couldn’t believe when we got there that I was still in Houston. It seemed like the wilderness compared to the Brays Bayou area I David Cordúa knew. I couldn’t wait to start exploring.

“Some of my favorite summer memories are of hiking Hunters Creek. We played some epic hide and seek down there. The best though was food was always waiting inside, especially late at night into our teens. I think it was a trick to make sure we made curfew and brought friends to our house. The staple on the stove top was gallo pinto, Nicaraguan red beans and rice. But Dad’s had a luxurious twist with bits of pulled churrasco steak.

“One distinction and grilling tip with the way we do our Churrasco steak is cooking the steak three-fourths on one side only before flipping. We also rotate the steak 360 degrees around on the presentation side, so that you get a beautiful, even roasted color instead of the flavorless hash mark grill lines you see on certain steakhouse commercials.

Here is our chimichurri recipe and butchering procedure.”

The Churrasco 2 Bunches Curly Parsley 6 Tbsp Garlic 4 Cups Extra-Virgin Olive Oil 1 Cup White Wine Vinegar 2 Tbsp Kosher Salt 1 Tbsp Black Pepper 1 Tsp Dried Oregano 1 (2 pound) Center-Cut Beef Tenderloin Salt and Pepper to Taste For Chimichurri: Finely mince garlic and parsley. Combine vinegar, salt, pepper and oregano in a large bowl and whisk to dissolve salt. Add minced parsley and garlic and slowly whisk in olive oil. Allow to sit 2 hours before using.

Note: This recipe makes more chimichurri than needed for this churrasco, but nobody ever complains about having leftover chimichurri.

For Churrasco: Trim any visible fat and gristle from the beef tenderloin. On a cutting board, cut the tenderloin crossways into two 16 ounce halves. Set each pointing out, and using a sharp knife, cut downward about ¼ inch from the left side until you reach about the same distance from the bottom.

Keeping the knife straight up and down, saw gently back and forth while pushing the beef to the right and creating a fairly uniform ¼ inch thick rectangle. Cut the rectangle in half to produce two approximately equal squares. Repeat with the other half of the tenderloin.

Season with salt and pepper. Generously brush with chimichurri. Grill over a very hot fire to desired degree of doneness.

Compassion International Exhibit Comes to Memorial Drive Presbyterian Church Have you ever wondered what it would be like to live in extreme poverty?

Have you ever had the chance to visit a small, rural village in a developing country? Although some members of the Memorial community have the opportunity to serve on global mission trips and work for charitable organizations, many have limited exposure and experience with what poverty is really like.

Compassion International is a nonprofit organization that seeks to help Americans understand the problems of international poverty through the Compassion Experience. The exhibit structure consists of two 53 foot long, double-expandable trailers, joined to allow people to walk through three unique stories of children who have moved from hardship to hope. Each story is a 20 minute simulated tour through the “home� and daily life of a child, with audio accompaniment to make the sights and sounds of a developing world community come alive. At the end of each journey, guests enter a World Impact Room, where they can view photos and information about children of all ages who are waiting for sponsors.

The Compassion Experience will come to Memorial Drive Presbyterian Church July 13th through 19th. It is open to the public beginning at 1 pm, and there is no cost to visit the exhibit. If interested, visitors will have the opportunity to sponsor a child.

Cat-titude I

observed my 16 year-old cat, Tammy Whynot, as she played with her tail the other day and was amazed at how much effort she spent trying to catch it with her mouth.

She enjoyed playing that tail-in-mouth game more than all of the expensive toys I have bought her through the years. She has never caught that tail and never will, but she still plays the game! Felines are like living works of art, and following them around is like watching an art show. Cats have what is known as “cat-titude.”

My Tammy is a curious, quirky kitty and queen of my urban household jungle. I am entertained, astounded, moved and sometimes puzzled by what she does. One of her favorite activities is hiding in a small paper bag or under a pile of paper, because it is a new toy and something she can use for hunting practice. The bag is crisp and fresh, and the crinkle of the paper adds the perfect sound effect. Cats love to hide behind or inside of bags, move them across the floor and then pounce on the imaginary critter when the time is right.

Kitties rub against everything in sight.

When they rub against the chair, the side of the bed, or the leg of a table, they are saying, “This is mine a heck of a lot more than it is yours, and don’t you forget it!” When Tammy rubs against me, The fiesty and fun George Strait Eyes. she is telling me that she considers me her property. I am the warmest piece of furniture she knows. Now that is cat-titude.

Humans are such lovable companions for felines. Since there are no other cats in the house, Tammy thinks I am one big cat. It is the nature of cats to sleep draped across each other, so it seems fair she should lay on my head, stomach or legs when she is ready to feel comfy.

Tammy has recently started nipping at my hand when I pet her. Since she is older, she doesn’t need constant caressing, and that is her way of telling me to back off a bit. Cats know exactly how much stroking they want and how often.

One of our activities is playing baseball. I am the pitcher throwing paper balls, and she is the batter. When she was younger, she was batting 500. I was ready to sign her up for the Astros. She could hit homeruns as well as Craig Biggio.

However, at the age of 16, she is semi-retired. Her eyesight is getting poor, and she strikes out often.

Lately, Tammy has been covering up her food with invisible dirt. Is it not fresh enough, or is she bored and needs more excitement at meal time? Maybe she is saving it for later. Cats are picky about their meals, so it is probably all the above. It is fun to watch this weird cat-titude as Tammy covers up her stash.

I grew up with zillions of cats on our farm, but they all stayed in the barn. No pets were ever allowed in our house, so I never was able to get close to them to see the fun things they did.

Once I was on my own, I started rescuing felines, and they stayed in my house. I have rescued and kept three cats. Each has had its own wonderful cat-titude.

Conway Twitty Kitty was a loving cat, and everything he did was graceful and beautiful. George Strait Eyes was feisty and fun, and his antics were always a joy to watch. Tammy Whynot is a loner. She loves me and that’s it.

I am her world, and no one else exists.

Why do cats get The lovable Conway Twitty Kitty. stuck in trees? Why do they bring us their latest catch? Why do they sleep all day?

Why do cats refuse to cooperate? It is because they can. They have cat-titude!

I see all of these adorable, handmade Disney-themed outfits that kids are wearing. Is this really necessary?

The cute handmade clothes are not necessary. That being said, I am one of the moms who does this. I do not buy costumes at the park, but I like for my girls to stand out. Either I make some clothes or purchase them. Etsy is a great resource for Disney-themed outfits.

What is one of your most special Disney World memories?

One of my most magical experiences while at Disney World was when Minnie Mouse held my daughter Scout’s hand and gave her a tour of her home.

I think it was because she had on a Minnie outfit, giant bows and red and white polka dot shoes. Toontown is no longer in Fantasyland, which makes this moment even more special.

What are some fun ideas for our family that not everyone else does?

I have been to Disney World and Disneyland 17 times. One of my favorite things to do is to decorate the place we are staying. Most of the time, we stay in our RV at The Fort Wilderness Lodge. We decorate our RV and the whole campsite. We always enjoy riding around and looking at all of the decorations that people put up.

We have been to Disney World before, and my daughter wanted to buy a toy at every attraction and store.

Can you help me limit this?

A

I tell my girls that they may buy one toy and one shirt while at Disney World.

The only rule is that they cannot buy anything until the very last day. This way, they get to really look at all of the merchandise every day and make the right choice. Our very last stop at the end of every Disney vacation is to The Main Street Confectionery shop. The girls look forward to this the whole trip.

Tip: We always get a hand-blown Mickey ornament for each child and one for my tree. The Ye Olde Christmas Shoppe at Liberty Square will personalize them for you and ship it to your hotel room. I love these, because when my girls get married, they will have an ornament with their name and date of their trip on it.

Minutes W

hat if you were told each day you would only receive 19 minutes of quality time with your child? In those 19 minutes, you still need to raise a happy, healthy and good person.

Your first reaction would probably be horror. How on earth could anyone raise a child with less than 20 minutes per day? Is it even possible to be a parent in less time than an episode of Dora the Explorer?

A study by the Office for National Statistics revealed that the average full-time, working parent only spends 19 minutes of quality, one-on-one time with their child each day. While my own initial reaction was horror, when I really stopped to think about it, I realized that there is a big difference between being in the same room with my children and spending quality time with them.

As working parents, we are faced with two main questions. First, what can we do to increase the time we dedicate to parenting our kids? Second, what can we do to maximize the effectiveness of the short time we can create?

I’ve started by making a new rule in my house, which is that for at least half an hour a day I play with and talk to my kids without a phone, computer

or television in the same room. I unplug.

It sounds simple enough, but I realized with a sizable amount of shame that I spent more time checking emails each day than I did purposely parenting my kids. In reality, the emails can wait, and despite what our social norms have taught us, if I don’t respond to someone’s text for half an hour, they will actually survive and not spontaneously combust. For that single half-hour, my kids become my only focus. I don’t try to multi-task, bring them on errands or worry about work or my next deadline.

It is not easy, but I still try every day and am getting better.

Most kids’ television shows last about 23 minutes once commercials are factored in. But, within those 23 minutes, the shows are not only able to engage, entertain and speak to kids on their level, but they usually have a lesson they try to teach. It might be the importance of sharing or including those who are normally outsiders. Perhaps it is forgiving those who hurt us or apologizing for our

own mistakes. But somehow, magically, Dora is able to throw glowing acorns into the magic stump, cross the golden bridge, play the rainbow flute and stop Swiper from swiping all within 23 minutes, while still getting across a message about friendship. Touché Dora.

So yesterday, I brought my son to the park for half an hour. I didn’t check any emails. We threw some pebbles into the lake, and we used that time to talk about why we don’t throw trash there instead.

We crossed a wooden bridge, since the only golden bridge I know of is in San Francisco. Then, we played some pretty sweet air flutes. And while we didn’t meet any masked foxes, we spent 30 minutes bonding and learning, without having to fast forward through a single commercial.

I bet my son won’t remember what happened on an episode of Dora a few years from now, but maybe he will remember our day at the park when we threw pebbles, crossed a bridge and played our air flutes.

Making Memories With Your Child This Summer Starts With Effective Communication

In addition to being crowned Miss Houston 2015, Favor has earned the titles Miss Bay Area 2011, Miss Austin 2012, 2nd Runner-Up Miss Texas Teen USA® 2006, Texas State University’s Dean’s List and Homecoming Queen.

Women Driving Business Returns to Its Roots for 11th Year After a momentous decade of recognizing area businesswomen, the Houston West Chamber of Commerce has reached its 11th year of the Women Driving Business (WDB) three-part series, presented by Women’s Memorial Hermann Memorial City. It is important to limit radiation exposure for everyone. However, while all types of radiation carry risks, low levels of exposure are safe. What many may not realize is that we are all exposed to radiation on a daily basis by simply walking around. The amount of radiation exposure a child receives from diagnostic tests, including CT scans or X-rays, is relatively small. However, you should speak to your pediatric radiologist about potential alternative diagnostic tests that would provide the necessary information.

If your doctor refers your child to Texas Children’s Hospital West Campus for a CT scan, rest assured that your child will receive a very low amount of radiation, because our studies are tailored for children. We have analyzed radiation dosages performed on our own patients versus CT studies performed on children at adult facilities. On average, our radiation doses for individual CT studies are 40 percent lower.

It’s important to have your child’s imaging performed at a childfriendly facility. While many clinics and hospitals offer diagnostic radiology, many are not set up for children. Having your child’s testing done at a pediatric facility is vital, as it ensures the machines and levels of radiation that are administered are appropriate to the size of your child. Also, having your child’s testing conducted at a pediatric facility with highly trained experts, like at Texas Children’s Hospital West Campus, ensures that your child’s tests are done accurately the first time, and the results are interpreted by expert pediatric radiologists. This will minimize the need for repeat testing and more radiation exposure.

Prepare 13-by-9-inch baking pan with vegetable spray.

In very large saucepan, melt butter over medium high heat until it smells nutty and browns slightly. Reduce heat to medium low; stir in regular marshmallows, warm cinnamon graham and creamy vanilla custard flavors and salt. Cook, stirring constantly, until melted and smooth.

Remove from heat; stir in cereal, 3 cups mini marshmallows and 3/4 cup light cocoa candy. Press into prepared pan. Sprinkle with remaining mini marshmallows and press lightly to adhere.

In small microwave-safe bowl, microwave remaining 1/2 cup candy on 50 percent power in 30-second intervals, stirring between each, until candy is almost melted. Stir thoroughly until smooth and drizzle over treats.

Let cool completely.

Creamy Coconut Cookie Flag

Give the day a flag-waving finish with red, white and blue royal iced cookies that hold up to the heat using the Color RightTM Performance Color System. The tropical taste combination of toasted coconut and creamy vanilla is just right for summer.

Yield: About 3 dozen 3-inch cookies Cookies 1 cup (2 sticks) unsalted butter, softened 1 1/2 cups granulated sugar 1 egg 1/4 teaspoon Toasted Coconut Treatology Flavor Concentrate 8 drops Creamy Vanilla Custard Treatology Flavor Concentrate 3 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon salt

Icing 3/4 cup + 3 teaspoons water 12 cups (about 3 pounds) confectioner’s sugar, sifted 6 tablespoons Color Flow Mix Color Right Performance Color System Icing Colors Red (formula 32): 1 1/2 cups icing + 62 R + 8 O Deep Blue (formula 647): 1/2 cup icing + 27 B +5P+6R White: Reserve 2 cups icing

Note: Make and decorate cookies 1 day in advance to allow for drying time.

Heat oven to 350OF. In large bowl, beat butter and sugar with electric mixer until light and fluffy.

Beat in egg and flavors. Mix flour, baking powder and salt; add to butter mixture 1 cup at a time, mixing after each addition.

Do not chill dough. Divide dough into 2 balls.

On floured surface with rolling pin, roll each ball into a circle approximately 12 inches in diameter by 1/8 inch thick. Cut cookies with star nesting metal cookie cutter. Dip cutter in flour before each use.

Bake cookies on ungreased cookie sheet 8-11 minutes or until cookies are lightly browned.

Prepare Color Flow icing. Tint icing following color formulas above. Use tip 3, a parchment bag and full-strength icing to outline cookies: 32 in red, 21 in white and 16 in blue. Let cookies dry 1-2 hours.

Thin 1 cup red, 1/4 cup blue and 1 cup white icing. Use thinned icing and disposable decorating bag to fill in cookies. Fill in 8 of blue outlined cookies with white icing and remaining cookies with matching outline color. Let dry 8-12 hours.

To serve, arrange cookies on tray in stars and stripes design.

A LITTLE PIECE OF HISTORY

N

ineteenth century Texas was a place of immigration. The largest European group to come was German, and one place they came from was the German city of Kassel, which was the 16th century capital of the province Hesse. Although home to a princely residence for centuries, by the 1830s and 1840s, the region was still primarily antiquated farm country known for its striking poverty. Influenced by revolutionary developments in France and driven by a desire for democratic institutions, the region and the country as a whole were in political turmoil at the beginning of the 19th century.

Perhaps owing to the land’s poor condition, many Germans left the area for Texas. One immigrant from Kassel who settled in Frelsburg, Texas was Johann Jordan Weigel. Reflecting the agrarian roots of his ancestors, Weigel was a farmer. In 1850, Weigel lived in Colorado County with his wife, Marga-

Unlike the majority of Germans to settle in Texas, evidence suggests the Weigel’s were Catholic. The Frelsburg community boasted a Catholic church by 1847. The priests of Frelsburg ministered to surrounding German communities of Catholic faith, including a growing community called Mentz.

These Frelsburg priests traveled by horseback through the woods to baptize, marry and bury the pioneers when necessary.

Mentz eventually grew enough to justify a church of its own. The settlers chose names for their villages and churches after familiar names from their home country. Mentz was named for Mainz, Germany, and its church was named St. Roch after a chapel in Bingen, Germany. It was at the St. Roch’s cemetery that Johann Weigel was buried in 1886.

During Weigel’s life, Frelsburg’s population grew to around 300. There were five cotton gins, four gristmills, three churches and a sawmill. In 1857, Colorado County had a newspaper, The Colorado Citizen. In 1860, the paper listed one advertisement for a furniture maker offering “Bureaus, Wardrobes, Bed-steads and all manner of Woodwares.” Despite the prosperity of the area, it remained difficult and costly to import sophisticated goods such as furniture. The furniture maker’s ad explained, “With the north restriction of goods shipped to the south, it now made sense to open a woodware shop.”

Perhaps arriving at a similar conclusion, Weigel built a wardrobe himself in 1859. He may have built his family’s furnishings all along, but there is no evidence that he made things for market. Weigel may have simply been motivated by necessity, as 19th century homes were not built with today’s amenities, including closets. Or, Weigel may have wanted to provide an

elegant heirloom for his family. The Weigel family cared for the wardrobe for 140 years. When the wardrobe was sold in 2000, the family was still living in Frelsburg.

The Weigel Wardrobe is part of The Heritage Society Texas Furniture Collection. The majority of pieces in this collection were made by German immigrants. According to Lonn Taylor and David Warren in their book Texas Furniture, The Cabinetmakers and Their Work, 1840-1880, “Superior craftsmanship and an awareness of the Biedermeier style distinguishes the furniture made by Texas German cabinetmakers from that made by their southern Anglo-American counterparts.” Regarding the Weigel Wardrobe, Taylor and Warren wrote, “Diminutive proportions and verticality distinguish this attractive example.”

A RUNAWAY SUCCESS The Running for the Arts 5K race benefits the Spring Branch Independent School District’s Arts Partners Program and SBISD Health Fitness Program. As neighborhood sponsor for 23 years, we’ve hosted the 5K race at Memorial City Mall and supported it with funding, staffing, security and scores of volunteers. And it’s continued to grow. This year was the most successful ever, with over 2,500 participants and nearly 5,000 attendees generating almost $60,000.
