Here is a recipe to whet your appetite and get your menu swimming to success.

Salmon Sriracha

PREP 30 MINS, COOK 15 MINS, SERVES 4

INGREDIENTS

• 1 Country Range Salmon Portions

• 50g Country Range Egg Noodles

• 1 tsp Country Range Cajun Spice

• 1 pinch Country Range Sesame Seeds

• 1 tbsp olive oil

• 1 tbsp sriracha sauce

• Stir fry vegetables - baby corn, mange tout, red pepper, sliced spring onions, tender stem bro ccoli

• 1 crushed clove garlic

• 10g grated ginger

• 1 tsp honey

• 1 tbsp soy sauce

• 1 lime, juiced

METHOD

1. Lightly oil the salmon portion and sprinkle with Cajun spice.

2. Preheat the oven to 200°C and roast the salmon for 8 minutes.

3. Cook the noodles in salted water and keep warm.

4. Stir fry the vegetables in olive oil with the ginger and garlic.

5. Add the noodles, honey, lime juice and soy sauce and continue to stir fry until the noodles are coated with the sauce.

6. Serve the salmon on top of the noodle mix and drizzle with sriracha sauce. Garnish with sesame seeds.

We are delighted to share with you our Cherry Raisin and Oat Cookie Recipe. With reduced sugar but a tastefull, delicious flavor and as well a fit for vegans it will be a favorite on your menu!

Ingredients

These biscuits were made by Jenny one of our costumers. She reduced the sugar from the original recipe and also used less cherries to reduce the sugar further.

* Bebo Cooking & Baking 9oz 250g

* Caster Sugar 2oz 50g

* Light brown sugar 2oz 50g

* Self-rising flour 5oz 150g

Method

* Porridge oats 8oz 225g

* Glace cherries 3oz 75g

* Raisins 3oz 75g

1. Pre- heat the oven to 170˚C, 350˚F, gas mark 4.

Kitchen tip

If you want to reduce the sugar further you could make them with just raisins and leave the cherries out altogether. This will make the sugar per biscuit 9.5g.

Allergen information

2. Cream together the Bebo Cooking & Baking and the sugars.

3. Mix in the flour and oats.

4. Fold in the cherries and the raisins.

5. Roughly shape into 16 balls, lightly flatten, and bake on a tray for 13-15 minutes or until golden but still soft in the middle.

6. Leave to cook on the baking tray before transferring to wire rack.
