Tucked away from the hustle and bustle of Itaewon’s main street, up the hill from Maloney’s sits Revolución. Dim lighting, pictures of various figures of Cuba’s revolution and polaroids cover the walls as music plays in the background. “Every food item is handmade,” says Peter Lucien, owner of Revolución. “Nothing comes from a factory at all.” Opening its doors in 2014, Revolución stands out from others with its keen knowledge of Caribbean history and direct influence of Caribbean culture. Lucien missed the Caribbean flavors after spending more than 10 years in South Korea and decided to open his own restaurant here in Itaewon. 이태원의 복잡한 메인 스트리트에서 벗어나 어둑한 조명, 쿠바혁명의 다양한 사진, 그리고 폴라로이드로 장식된 벽을 타고 음악이 흘러나오는 곳이 있다 여기 레볼루션의 오너인 피터루시안은 "모든 음식은 수제이며 어느 것도 공장에서 생산된 건 없습니다."라고 말한다. 2014년에 문을 연 레볼루션은 카리브의 문화와 역사에 영향을 받은 것이 눈에 들어온다. 루시안은 카리브해의 맛을 그리며 한국에서 10년 이상 한국 생활 후 이태원에 자신의 레스토랑을 열게 되었다.

Braai Republic has been serving up some of the best biltong, a type of dried and cured meat that originates in South Africa. Braai Republic prides itself on the fact that it uses no artificial preservatives to make its biltong and that it cures its beef at lower temperatures than other biltongs on the market as curing beef at higher temperatures break down nutrients. For those concerned that biltong may be unhealthy due to its salty nature, Braai Republic has come out with a newer, healthier version of biltong, which has a 60% reduced sodium content compared to the original.
