I’m confident the young man does not engage in drug use. “He got run over by a car, Daddy!” By this time, tears are running down my face. I’m baffled and inclined to question her. “Are you sure he didn’t bounce up and avoid the following tackle?” I ask. I mean, how could a random car make a fatal tackle on Nick Pasquale? “This is a dream, right?” “He got run over by a car. Sunday Morning Sept. 9, 2013 5:00 a.m. It’s probably 5:10 a.m. by the time my eyesight actually comes into focus. This was not a long night, it was a long week, and it was all business— no play. I’m tired and unrested. I grab my ringing cell phone and the screen is lit up by one incessant caller, my daughter, Bree. Not good. This is bad news. I go from a grouchy morning mood to instant alert mode. This is not about a boyfriend. This is not a mother daughter GIG. This is serious, urgent. Otherwise my phone doesn’t read

My mind reels. You know how some guys you play against—guys you hate but like to compete against—you know how these individuals just bounce up, no matter how hard you hit them or literally smash them, they squirm for extra inches in a goal game of 100 yards? These individuals in whatever competition: football, basketball, rugby, men’s softball, hardball. They all bounce up no matter how you trip, hit or neck-tie them. Bounce right up like nothing happened. If he lost or gained a yard, you’d never know unless you listened to the announcer. These are usually the smaller guys who made up their mind a long while ago that size didn’t matter. My heart’s bigger than your stature, attitude. They balance their brain to perform, and in an almost-uncanny revelation, God’s blessing for them is the ability to bounce back. The bottom of their feet find forward traction, no matter how daunting the physical obstacle. These are the guys you dislike unless they’re on your team. They get hit, smashed up, yet spring into a fighting stance, like it never happened. In fact, they have convinced themselves it didn’t happen. Stop me? Never! Their attitude is that if it’s a goal game, they’ll score. And if it’s a game of speed, they’ll be quicker. If the sport requires a racquet, extension bat or golf club, they’ll perfect their muscle memory. If it’s a game of horse, they’ll come up with a shot no one else can make. If it’s a challenge of height, they’ll find a path. It’s a determined mind, a healthy and competitive attitude with a capital “A.” Nick was one of those guys. He would bounce, dodge, slide or slither past opponents, ram headlong into a pile of giants and squirt out the other side for the first down or a touchdown depending on field position. This, and his gregarious smile, is how I will always remember Nick. Not to mention his respectful politeness as a young gentleman, always addressing me as Mr. Wright. The night of September 7, 2013, was no different. I was on the sidelines for the Tritons football game at Thalassa Stadium, as I had been most Friday nights during fall season for the last 25 years (long before any of my

own children suited up). If the Tritons play at home, and I’m in town, I don’t miss it for anything. Nick and I hung out for a while that night, and I remember thinking about the fact I had essentially watched this kid grow up. I asked how he liked UCLA. “It’s great, Mr. Wright, awesome and I got to play in the game last week. Camp was tough, but I loved it and can’t wait to get back. We have a bye this week.” To this, I looked impressed. “I feel like I got a hall pass just going to hang out with my friends all weekend, because it’s back to business right after.” “I hear Tanner’s been kicking some ass out there,” he comments, referring to my sophomore son who Nick spent countless hours helping over the last couple years. He flashed that awesome smile and said, “See you next time, Mr. Wright.” Then he strutted off, a bounce in his step, to hang out with his bros and watch the rest of the game. I’d never see that smile live again. I wasn’t as close to Nick as some parents around the program, but my kids were extremely close to him. AJ Pasquale, Nick’s brother, was my son Colby’s roommate at Northern Arizona University. They played side by side in high school. My daughter Bree obviously loved him. And my younger son, Tanner lamented Nick as his “hero, mentor, teacher and off-season coach.” Nick helped shaped Tanner into a starting safety on varsity as a sophomore. Nick would call Tanner during breaks from UCLA and say, “Hey, let’s work on your footwork, run some patterns, talk ball.” He was more than an inspiration to Tanner; he was his second big brother. It will take Tanner a long time to deal with the tragedy of losing Nick. A funny story about Nick is the time when Colby recruited him to help move my office. I’m both a UCLA and USC fan, having been born in L.A. yet attending neither school. I handed Nick an Anthony Davis signed helmet and then a football autographed by the “Nortre Dame Killer,” and handed him four Heisman Running Backs (limited edition signed by Mike Garret, OJ Simpson, Marcus Allen and Charles White)—pretty rare piece because they will never sign again. Nick had just signed with UCLA. He gave me this funny look and said, “Mr. Wright, can we wait for Colby to get back from the truck? I’d hate to purposely drop these items.” Then he flashed that smile. I chuckled and immediately agreed. So now here I was, shaken awake at 5 in the morning to the horrific news that Nick was hit by a freakin’ car. No longer was I convinced it was a dream. I knew now it was in a full-blown nightmare. I learned the first car missed Nick. That’s when I knew I was wide awake. Goodbye, Nick Pasquale. Never known a child more loved in all my life.

Paul Tanaka joined the Los Angeles County Sheriff’s Department in 1982 and was appointed Undersheriff, the Department’s second ranking position in 2011. He retired after more than 30 years of distinguished service in the summer of 2013 and is currently a candidate for Sheriff of Los Angeles County.

In addition to his service with the LA County Sheriff, Paul is also Mayor of the City of Gardena. Having first been elected to the City Council in 1999, Paul was first elected Mayor in 2005 and reelected in 2009 and 2013. As Mayor, Paul came to understand the importance of hands-on management and understanding what is happening in individual communities and neighborhoods to create a brighter future for citizens with more opportunities for everyone. Paul’s fiscally conservative principles helped save the City of Gardena from bankruptcy by guiding a 5 million dollar deficit in the general fund to a 10 million dollar surplus in less than 15 years. The economic stability of the city led to an increase in business development and the lowest crime rates in the city’s

history. With additional resources, Gardena was able to expand public safety personnel, increase the number of officers and focus on making communities safe. Paul also holds an accounting degree from Loyola Marymount University, is a Certified Public Accountant in the State of California and has 20 years of experience working with a Gardena accounting firm. Throughout his campaign for Sheriff, Paul has received overwhelming support from statewide County Sheriffs, Los Angeles County Police Chiefs, and several local elected officials. Paul has also outraised every opponent in the race for Sheriff by an impressive 2 to 1 margin. If elected Sheriff, Paul will dedicate himself to public safety, leadership, and restoring public trust in the Los Angeles County Sheriff’s Department.

This camp investigates marine science, technology, and skills used by intrepid ocean scientists. Activities each day will focus on the living or nonliving components of the ocean and the equipment researchers need to study them. Campers will make underwater discoveries by building a Remotely Operated Vehicle (ROV) and then testing their skills piloting it in underwater, challenges from our new Maddie James Seaside Learning Center, performing a dissection, examining a sample of the sea floor, testing local water samples, and surveying the Dana Point Marine Protected Area. Marine Science Careers / Internship Academy AGES 14-17

This program introduces students to intertidal ecology, animal husbandry, laboratory investigations, and shipboard research in preparation for a marine science internship or career. Program highlights include a snorkeling field trip, an ROV workshop, a 4-hour research cruise aboard the R/V Sea Explorer, and various leadership/team building activities. Successful program graduates may apply to intern with one of our departments: animal husbandry, crew aboard the R/V Sea Explorer, or work/intern as a docent/researcher in the Marine Protected Area or our Native Plant Preserve. Each morning, your child will be met by Cola’s Surf Camp’s experienced instructors. Your child will receive instruction in ocean safety and surf etiquette. In addition, surf campers will learn about ocean science topics, such as waves and tides, marine biology, coastal ecology, and beach profiles.

Students meet on Monday mornings at 9 am. The day will begin with introductions to the staff and other students. Each participant will be able to check out a wetsuit to borrow for the week and will receive a complimentary rash-guard to keep. After introductions, students will be placed in small groups with friends and siblings, if they choose. But, not to worry; if solo, they will be quickly introduced to a whole new group of friends. Once in groups, participants will rotate through surf instruction, body-boarding, and beach/ocean activities. The week commences with a pizza party on Friday afternoon. Gymnastics is an amazing sport. It builds strength, flexibility and coordination. It lends to sportsmanship and confidence. Gymnastics is an Olympic favorite that inspires children across the world. Cal Elite has been a part of fostering that inspiration — ­ teaching gymnastics to young athletes in Orange County since 1993. But in recent years, Cal Elite has turned in an exciting new direction – directly away from the traditional competitive-based gymnastics program and toward the lights. In 2002 Cal Elite was rocking gymnastics. The gymnastics program had outgrown its facility and had just moved to a larger location in Rancho Santa Margarita. The new location included a cheer center, preschool gymnastics center, 5 dance studios, an indoor aquatic facility, in-ground trampolines and a large gymnastics center. Enrollment was at an all-time high. Its competitive team programs were producing state and national champions. Then, in 2004, Cal Elite announced a new plan. Following a sincere change of heart and serious research and development, Cal Elite restructured its traditional competitive-based training model and replaced it with a performance-based program. Its athletes would train to perform - not to compete. At the developmental levels, Cal Elite’s athletes train the same skills and progressions as competitive-based athletes, using the same equipment and apparatus. “We focus on technique, strength, flexibility and form,” says Jamie Ledford, Cal Elite’s Gymnastics Director. “We work the same skills as we always have – just with a different

“We just did not feel good about continuing to build our program around the 5% in the gym who were our competitive team gymnasts.” Ledford continues, “Gymnastics is the amazing sport it has always been, but the sport has to evolve. As high school programs have disappeared and college programs are dwindling, we are proud to be leading the change in gymnastics at the club level. The competitive model – the Olympic dream – is an amazing dream. Unfortunately, only 10 artistic gymnasts will represent the U.S. in Brazil in 2016. At Cal Elite, we are building a dream that serves all children, all gymnasts.”

Our program is based on a 10-15 year relationship with each child and safety and enjoyment play key roles in our training.” Students must achieve a solid base in fundamental gymnastics, before they can move on to Cal Elite’s performance- based training. A trapeze is essentially a bar – except it’s smaller than the uneven bar, it moves, and it is higher in the air. Robin Stevens was a world level competitive acrobatic gymnast with USA Gymnastics. After graduating from San Jose State, she became a professional trapeze and aerial arts athlete and coach. Stevens has been Cal Elite’s Aerial Arts Director since 2010. “An athlete must master traditional gymnastics bar skills on a stable bar before we begin training on the trapeze,” says Stevens. “It’s the same thing with beam. We teach traditional beam skills on a stationary 4 inch gymnastics beam before we move athletes to the narrower, flexible apparatus in our performance program. You need to be able to throw a back handspring on a 4 inch beam before you can start training for it on a 2 inch slackline.” Today, Cal Elite features amazing athletic performances featuring gymnastics, trapeze, silks, lyras, ropes, acrobatics and more. Cal Elite’s productions are fully choreographed athletic stage performances with lighting, costuming, make-up , back drops and music. Think Cirque de Soleil – for kids. What is most appealing is that Cal Elite’s program capitalizes on all the amazing, challenging, beautiful aspects of gymnastics and makes it available to all athletes. “We were highly successful back in our competitive days,” says partner Lynn Ledford, “business was good,” she adds.

And it appears that the rest of the gymnastics industry is paying attention. Over 200 gyms from across the nation have visited Cal Elite in the last 3 years to study its innovative performance curriculum. In recent years, the success of Cal Elite’s performance gymnastics program has caught the eye of USA Gymnastics. Ledford and her business partner, Georgette Cutler, have been called upon to write articles for the gymnastics industry and have been featured speakers at Regional and National USA Gymnastics events where they have taught other gym owners about Cal Elite’s performance-based gymnastics program. In December 2014, Cal Elite will be hosting an international training event focusing on its successful gymnastics business model with 300 delegates from across the U.S., Canada, England, Australia, Mexico, and Brazil participating. Cal Elite operates out of a large training facility in Rancho Santa Margarita. In addition to gymnastics, Cal Elite offers dance, cheer, preschool soccer, camps and parties and has an award-winning licensed preschool/kindergarten program. In 2007, Cal Elite built an athletic theater within the facility. The gym hosts 2 gym-wide productions each year featuring athletes and performers from 2 -18 years old. The shows highlight athletes at every stage of development and talent. There are roles for babies, tap dancers, aerial artists, gymnasts, toddlers, vocalists, hip hop dancers, ballerinas, acrobats and more. Each department also hosts its own smaller show twice a year. “Each skill that a Cal Elite athlete acquires is relevant. There is no rote repetition of skills day in and day out,” says Ledford. “Cal Elite’s performance-based programming is the most progressive training I have ever seen,” says Stevens. Ledford adds, “The athletes are motivated to master skills every day because they want those skills to show well in the production. We do not just practice trick after trick across the floor. Our skills are mastered, combined, sequenced and used in choreography – music is added – and there is interaction with the other athletes… it is a wholehearted learning effort. When we perform, the audience is filled with parents, families and members of the community. It is the most supportive and collaborative athletic environment I have ever seen. This is exactly what gymnastics should be.”


Cal Elite Aerial Arts/ Acrobatic Gymnastics

Acrobatic gymnastics combines the beauty of dance, the awe of acrobatics, and the power of gymnastics in one exciting sport! One of five gymnastics disciplines governed by USA Gymnastics, Acrobatic Gymnasts draws from the basic elements of gymnastics, namely choreography, agility, balance, strength and grace. Competitive Acrobatic Gymnasts perform in pairs, trios and fours. Fee: $78/4 weeks

Cal Elite offers classes for beginning through advanced students – with team programs featuring the most accomplished athletes. The preschool gymnastics program serves little ones 6 months – 6 years. BUILD YOUR DREAMS AND LET YOUR DREAMS BUILD YOU Irina has never heard from her again. Up to this day even her name remains unknown.

Irina Sharie, as only a few of her closest friends know, is actually the quintessential girl next door. Always au natural, lover of bare feet, pony tails and no make-up, she spends most of her time painting at her home-based studio in Newport Beach, briefly taking breaks to walk her beloved Weimaraner at the beach or riding the local bike trails.

Irina paid for her repaired shoes and left, not really taking any of this too seriously. However, two days later this lady showed up on Irina’s doorstep. “As I promised, I am here to help you,” she proclaimed stepping into Irina’s house. She did what she did, let us only say that her help was unexpected and overwhelmingly generous...

For most of her life Irina’s philosophy has been of a general spiritual energetic force of the universe, where kindness to all and love prevails. It is believed by many that personal growth and transformation typically comes through trials, tribulation, and painful experiences. Irina is no exception to this rule and has her own personal testimony to share with others.

Irina was taken aback by this complete stranger’s kindness towards her and asked, “Who are you?” The Lady’s response was, “I am a world traveler. I help abused and exploited children and women. The day we met you looked like the one who needed my help. When our paths crossed, I felt a strong pull to talk with you.” “But I am certainly not abused nor exploited,” Irina protested again and asked her, “why are you helping me? To this the lady’s answer was, “I live by one rule only: Give freely to receive freely and do not expect to get back from where you have given. The universe will find its way to thank you a thousand times more.” “Are these your values that let you help, so generously, numerous and complete strangers?” Irina asked in amusement. “Yes,” the lady simply replied, “I only wish more people knew about this Universal law”.

Two summers back, in 2011, Irina felt as if she was in a hopeless situation with no way out; stressed and not knowing where to turn; she was overwhelmed. One day, while driving through Corona Del Mar, Irina’s shoe strap broke. By some strange coincidence she noticed almost immediately Anthony’s Shoe Repair Shop, as if she was destined to stop there. Little did Irina know the course of events that was about to unfold. While waiting for her shoes to be repaired, she caught the attention of a much older lady in a wheelchair. There was nothing particularly unusual about this lady but her penetrating blue eyes, which seemed more youthful than her physical appearance, they seemed to mesmerize; also she wore a giant metal eagle adorning her neck. She looked at Irina and asked her ‘’Are you in trouble?” After Irina’s protest that she wasn’t, the lady still said, “Sure, you are! Sit down. Tell me more about yourself, what’s going on?” almost in a manner of command. After listening to Irina’s present situation, the lady told her that in two days’ time she would show up at Irina’s home and help her.

Some days passed by. Irina started to reflect on what had really happened and how this total stranger had come out of nowhere and helped her for no apparent reason. Inspired, she decided to visit her local church with the intentions of donating one of her best paintings. She met with her pastor, who asked her to bring her painting back the following week. “What did you call it?” he asked her. “The Dreamer, Walking With the Fish.”, the artist replied. “Let’s see if it speaks to me”, he said, “I’ll see you then.” The next Sunday Irina took back her favorite painting, only to find out that a substitute pastor was there. She left the painting in the trunk of her car and went inside, slightly disappointed that she now had to wait until yet another weekend... The substitute pastor introduced himself as Matthew Barnett and started to speak. He informed the congregation that today he was going to speak about The Dream Center and his beloved Dreamers - the abused and exploited children and women who were given shelter and time to rehabilitate at this Christian ministry in downtown Los Angeles. This immediately gave Irina goose bumps because she realized this pastor had just repeated almost word for word the same statement that she already heard from the lady she met at the shoe repair shop. Irina’s painting “The Dreamer,” is the one she planned to donate to her own pastor,

Although Irina had only briefly mentioned to her that she loved to paint and considered herself an artist, the woman was surprised as to how exceptional and different her art turned out to be. Irina asked, “Please, pick any - I am still speechless with your generosity!” The lady walked around and chose an unfinished landscape. When Irina protested that she needed more time to complete this particular piece and offered that she choose another finished painting, the lady said, “No thank you, this one is perfect! For me, it is just like my life, which is also unfinished.” In a few hours she left and

would find its way to The Dream Center... Coincidence? Perhaps... Although Irina has her own interpretation and if ever you get the opportunity to ask her, you will get more intimate details and her own points of view on this. Irina is extraordinarily open minded and open to loving hearts worldwide. She waited until the end of pastor Matthew Barnett’s speech and then asked him to come outside to talk with her, stating that by some strange coincidence she had a piece of art with her in the car to show him, that had the same name as the pastor’s ministry. Intrigued, he inviied Irina at her earliest convenience to visit The Dream Center. Some time prior to this event, while uploading several of her paintings into her car, she briefly chatted with a passer-by, yet another stranger, who stopped to take a look at all the colorful paintings. They briefly chatted, exchanged business cards, and then went their separate ways. This was Scott Abraham. Only a few days after Irina met with pastor Matthew Barnett to donate her painting, he emailed her, asking to see some of Irina’s paintings in anticipation of displaying them on the walls of his new beach house in Newport Beach. Now he is at the top of the list of clients who admire and support Irina’s artistic talents (including the descendants of President Roosevelt’s family and Mastro’s Ocean Club restaurant in Crystal Cove.) Looking back , this was yet another stranger, perfectly placed in time. Coincidence? Perhaps...

Bassett-Martin Tennis

At the Bassett-Martin Tennis Camp we have spent the past 42 years perfecting a program to teach young beginning players the game of tennis and helping top ranked junior players perfect their game. The program is run by UCLA Tennis Head Coach Billy Martin and Assistant Coach Grant Chen. On the court there is a maximum of a 1-5 counselor camper ratio. Every morning campers have the option of early morning tennis before breakfast. After breakfast we start with an all camp conditioning and stretching. This is followed by a wonderful stroke demonstration presented by Coach Martin, then the morning is dedicated to fundamental drills on stroke development. Each afternoon holds a competitive competition, consisting of singles and doubles tournaments, challenge matches, and team tennis. We believe that an equal balance between drilling fundamentals and competition provides the best approach for improvement. In the evening we offer and encourage the campers to take a half-hour private lesson at no additional cost. Making the Law Work for You “THE SECRET ABOUT TRADE SECRETS”

Not long ago operating a small business did not necessarily involve the use or accumulation of large amounts of “information”. Many businesses, both large and small, simply did not spend the time and money to maintain detailed records concerning its customers’ characteristics or even about how its own operations were run. Today computers and digital information storage are used in virtually every aspect of modern business activity. As a result, more and more information is being utilized and stored by even the smallest of business operations. It is also true that the commonest software programs used by nearly every business for email, contacts information, and book keeping, now accomplish complex information storage functions that would have required a full time clerical staff to manage not so very long ago. Because of this explosive growth of business data accumulation some business operators are surprised to learn that such information about their own business could qualify for protection as

a Trade Secret under California law. California Civil Code Section 3426.1 defines a trade secret as “…information, including a formula, pattern, compilation, program, device, method, technique, or process, that: 1. Derives independent economic value, actual or potential, from not being generally known to the public or to other persons who can obtain economic value from its disclosure or use and; 2. Is the subject of efforts that are reasonable under the circumstances to maintain its secrecy.” This means that if your business’ success involves and depends on maintaining and recovering computerized information, you may possess a Trade Secret that deserves protection. For example, information you have accumulated about a customer or client, and even information about your own employees, may well give you a considerable advantage in your business. If

this information is not generally known or available to others outside your business, that information could be a very valuable trade secret. Data “compilations” are among the most common types of trade secrets a company has, but may not be aware it has. If your business is involved in sales or customer service, it probably has a compiled information database that it uses on a daily basis to conduct company business. Typical examples of compilations include customer lists, pricing information, supplier information, business tactics and strategy, anticipated marketing programs, and accounting information such as payroll and financial statements. However, such compilations will only qualify for legal protection if your company takes reasonable steps to ensure the protection and secrecy of that information. Protecting Trade Secrets is often overlooked, particularly if one is not aware that Trade Secrets exist in the first place. The most common situations

when such legal protection becomes important are when an employee leaves the company and takes computer files with him, or when a competitor tries to lure away your company employees. If something similar happens to your business and you did not have a reasonable program in place to ensure that Trade Secret information was protected from inadvertent or intentional disclosure, it may be too late. So, you can see that your own Trade Secrets may be a “secret” treasure you are not even aware you have. It may also be that your business might regard certain information as being a trade secret, but it has not taken the requisite steps to preserve its protections. Apply these lessons, and you will be “making the law work for you.” Best wishes.

Equal Playing Time

We have a rotation system in place to provide equal playing time for your child. If you find your child is not getting equal playing time, we will be happy to contact your coaches. The spirit of the league is to ensure ALL kids have the opportunity to learn and play equally throughout the season and into the tournament.

No Blocking

Our league currently does not allow blocking. In addition to the fact the your child won¹t be on the ground as much, this rule allows everyone on offense to be eligible to receive the ball. Click here to check out the rules.

Positive Coaching

Our coaches and assistant coaches will be trained about the rules of the league. There is a rotation system in place for the games to ensure equal playing time. They are encouraged to spread the ball around to teach the fundamental skills of football to everyone meanwhile the experienced players have a chance to learn new positions.

Competitive with a Twist

The regular season consists of 6-7 games. These games are officiated and competitive, but hold no weight on the participation or seeding for the end of

season tournament. This encourages the coaches to spread the ball and ensure the kids learn and have fun and not focus purely on winning. This takes pressure off the Kids, Parents, Coaches and Referees.

Our Basic Sailing course consists of 21 hours of instruction designed for the student with limited or no experience in sailing and will qualify members for chartering. SC FEATURE BUSINESS OF THE YEAR

Ellie’s Table BAKERY & CAFE

In just five months since their Grand Opening, Ellie’s Table has grown to become synonymous with the North Beach, San Clemente community in which it is located. The café serves breakfast and lunch in addition to decadent desserts and exuberant Kean Coffee. Ellie’s Table is right on the beach and offers patrons a modern, but cozy ambiance, as well as a spacious patio for those sunny San Clemente days. But Ellie’s Table, which is most often frequented by locals, is inspired by the community-driven woman behind the name who began her career in cuisine more than 40 years ago. In 1961, Eleanor Mastroianni—or Ellie as she is affectionately called by those who know her—founded Jay’s Catering alongside her husband, Jay. Ellie never planned on being a caterer, though. She had had a successful career as a Registered Nurse up until that point, and her husband worked at a milk dairy depot in Westminster. Jay’s depot clientele continuously asked him about catering services, and Jay—who knew that Ellie was an exceptional cook after his mother taught her traditional, Italian Mastroianni family recipes—approached Eleanor about the idea. The couple decided that, with Jay’s business savvy and Ellie’s delicious cuisine, their catering company would be well-received. The fledgling business started out of the Mastroianni’s home kitchen. Jay closed the deals, and Eleanor made the food. As time went on, Jay’s took on more clients and expanded rapidly; although it always remained a family owned and operated business. In fact, in 1994, Jay and Ellie’s daughter, Linda, took charge of the company as CEO. Four decades since its founding, Jay’s Catering is considered to be one of the largest catering companies in North America. While Jay and Eleanor worked tirelessly over the years together to achieve Jay’s present-day success, it would not have been possible without Ellie’s cooking. Over the years, she has become known for her amazing Spaghetti and Meatballs, Lasagna, and Signature Carrot Cake. Ellie’s Table is a tribute to Eleanor’s beloved food—food that has been instrumental in creating a multi-million dollar catering empire. As such, our café is dedicated to

serving some of Ellie’s favorite cuisine and best known signature dishes. Classics like Ellie’s Potato Salad, Jay’s Famous Palm Sandwiches, and Ellie’s Cinnamon Rolls are now extending Eleanor’s delicious family recipes beyond the realm of catering. We also create elevated takes on Ellie’s traditional comfort food. Eleanor’s grandson, Uriel, is the café’s Chef de Cuisine. He cooks his grandmother’s recipes, and also incepts modern versions of Matroianni classics. Eleanor was also known for the tight-knit community that she fostered within Jay’s company ranks. Her namesake café is, therefore, designed to continue to foster relationships in the community. Christina Carbonara SERVING UP THE FAMILY LEGACY By Stephanie A. Klein

Christina Carbonara puts family first, and still manages to fit a lot more in. On a typical day, after getting her two boys, ages 7 and almost 12, off to school, she hits the office at Carbonara Trattoria Italiana, the popular restaurant her parents started in 1991, out of which she’s run Carbonara Catering for the past 14 years. For over a year now she’s also stepped up to run the restaurant alongside her mother, Mary. If this sounds like two full-time jobs, it is, but the Carbonara recipe consists of family, food, wine and a lot of hard work, so you could say it’s in her blood. Add to that the passion for serving the community and you get Carbonara’s recent appointment as President of the Downtown Business Association, making for what we’d call a very full--and fulfilling--plate. Carbonara has worked her whole life— before it was even legal—and food, family, and service have always been her main ingredients. One of two daughters to Tony and Mary Carbonara, immigrants from Italy and Ireland respectively, Christina had her first job working in her aunt and uncle’s business, another local San Clemente staple known for consistently great, authentic food. At Tina & Vince’s Italian Deli, 14-year old Christina learned how to make sandwiches, ring orders and count change. She also started to discover how exciting and validating restaurant work could be, getting to know people and their stories while caring for them in one of the most basic ways. At 16 she started working at California Pizza Kitchen as a hostess, then a server, then a trainer and eventually a manager. Her actual plan

was to become a nurse—a different type of service career—but while in school pursuing that path, CPK made her an offer she couldn’t refuse—or didn’t want to, anyway. “Get out of the industry. You’re crazy,” her father said, but it was no use. Whereas her sister became a teacher, favoring a structured life which a restaurant could never provide, Carbonara admits she “thrives on the insanity.” At CPK Carbonara started to mature and come into her own, and with that growth came the nagging question, “Why am I doing this for someone else when I could be doing this for family?” And so Carbonara came on board at the trattoria, starting as a server (no special treatment there!) and eventually taking over the catering side of the business, where she saw the huge potential to go from simple drop-off to full-service events. Under her management, the catering business started booming, now doing 30-40 full-service weddings per year with a full schedule of events throughout San Clemente and Dana Point. This shift for Carbonara as well as for the business demonstrates some of the important ways in which Carbonara is her father’s daughter, with a passion for growth and a hands-on approach. Luckily, she’s also good at delegating, something her father didn’t always know how to do. He had his hands in every aspect of the business—from greeter to bartender to chit-chatter, to doing the financials and all of the ordering. He loved the business and loved people and was deeply involved in the community, donating generously

to numerous local organizations such as Laura’s House, FAM (Family Assistance Ministries), and the San Clemente chapter of The Boys & Girls Club of America, to list just a few. He was instrumental in shaping the town’s development, serving for years as Vice President of the Downtown Business Association, which he also helped to start, and championing such causes as preserving the Casa Romantica as an historic landmark turned cultural center and prime event venue. “He was never afraid of growth and a little bit of change,” Carbonara says of her father. Like Tony, the Casa Romantica shares and celebrates San Clemente’s people, history and beauty, a legacy which Carbonara herself now champions with even greater passion and tenderness. Tony passed suddenly on January 24, 2013, shocking the community and leaving a huge hole and some very big shoes to fill. With great support from the staff, some of whom have been with them for over 20 years, and an enormous outpouring of love from the community, Carbonara and her mother have succeeded in keeping the doors open and the food and wine flowing. “That’s what Dad would have wanted,” Carbonara says. In addition to stepping up at the restaurant, Carbonara took over her father’s seat on the Board where she sat for a year before “somehow” becoming president. While politics are not her thing, people are. “I get to be both an ear and a voice for the community,” she says. Carbonara’s also excited to put her life’s worth of event-planning expertise to use coordinating innovative

ways to create draw for local businesses, and to make the new developments around town benefit the community at large. Without a doubt Carbonara wears her new responsibilities well, realizing every day how much she is her father’s daughter, with so many of the same qualities that made him great at what he did. But whereas Tony loved to be right out front with all the action, Carbonara resists the spotlight and especially having her picture taken. “Now I understand that it’s all part of it,” she says. “It’s all for the cause.” This community was her father’s passion, and continuing to publically serve and support it is another way to honor him. To that end, Carbonara is already deep in preparation for the 2nd Annual Tony Carbonara Gentleman’s Smoker (ladies welcome!) which is to take place in late June at the Casa Romantica. This fundraising event, begun by Tony in 2012, offers an invitation to enjoy premium cigars outside at the Casa, where smoking is generally not encouraged, while taking in its breathtaking views, great food, wine, entertainment and company. Carbonara will be there right alongside her mother, celebrating her father and honoring his legacy. She may even pose for a few pictures.
