LETTER Editor’s
ABSOLUTELY’S August issue highlights
Back in the dark days of Covid – the very first lockdown was announced on my birthday, which was fun – I decided to take a personal training course. It wasn't anything major as I was in full-time employment, so was done more out of interest than with any career change aspirations. What I discovered is how remarkable the human body is.
You always hear about how making a small change to your lifestyle can reap the benefits, and it's so true. So much goes into making us work on a daily basis, and just the odd slip here or there can have a lasting impact. I haven't become one of those who refuses a bag of crisps, I am just more aware that one cheat day should be it. I wasn't always one to add more veg to my meals, but I do now as I know what kind of impact it will have. Sleep, too, is paramount and something I try to stick to a rigid routine around.

The result is I feel probably fitter than ever – and I spent 20 years playing football at a pretty decent standard. All of this adds up to why I love it when our health and fitness special comes around as I am genuinely interested in what experts in different fields have to say. Reading our piece on Pilates has convinced me to give it a go, and it's great Hertfordshire has so much to offer when it comes to R&R. So,

Hitchin’s Kerry Ellis tells Absolutely what it means to be taking her own show back on tour, visiting some of the UK’s most intimate theatres
By MARK KEBBLE
“It's magical to have that connection to people”
My Mum has seen Les Misérables what, to me, is a record breaking 13 times. Not always in the West End, but her favourite times have been at the London theatre hotspot, and Kerry Ellis happened to be starring in one of those – and this is a situation the Hitchin local is becoming very familiar with. “Various people might have seen me over the years and they have their connection with me, ‘oh I met you, you were my first Elphaba’, ‘I saw you in New York’, ‘I met my husband at this show’… That’s magical to get that connection to people and knowing that I played a small part in their life. It is emotional, and it is nostalgic, and it feels to me a moment to take stock of all the things I have done, and be proud and be grateful for all those moments.”
It is these very moments that have inspired Kerry to take to the road once again with her own solo show looking back at her career – and what a career. The Queen of the West End has starred in everything from My Fair Lady to We Will Rock You, from the aforementioned Les Misérables to Wicked, in both the West End and on Broadway, she has starred in musical theatre’s biggest roles, making shows her own and earning her numerous awards. Her list of credits is remarkable and also include Oliver!, Cats, Miss Saigon, Chess, The War Of The Worlds and Anything Goes, among many others. She has recorded four studio albums, and toured the world both as a solo artist and with her good friend Sir Brian May. And now the star who grew up admiring musical theatre icons Liza Minnelli and Barbra Streisand is looking back on her illustrious career. Singing songs from the biggest musicals and telling stories about how she came to play roles, this is a unique opportunity to see and hear the West End’s biggest hits in a very intimate setting on a tour of the UK.
“It is always quite flattering that there is demand out there to tour again”
For eagle-eyed Absolutely readers, you will remember we actually interviewed Kerry when she first took the show on tour last year, so it must be pretty special to know there is that demand to do so once again. “It’s always quite flattering that there is demand out there,” Kerry says, talking to me in a rare quiet moment at home in Hitchin. “It was a big tour we did last year, we did 40 dates, and I have obviously done tours before but not that many in one run. Then to have this demand and excitement to go out again and play more venues, people want to come back and it’s really nice to hear that.
“We are doing a bit more this time, 50 dates, which is a little bit overwhelming,” she laughs. “But we are going to some amazing places, Milton Keynes is close to me and I am playing The Stables again. We had such a nice time last year. I loved the element of going out and performing in people’s hometowns and being in their home theatres that they know and care and love. When you do big shows you literally fly in, do the show, then fly out again. But when you actually get to spend time in these theatres, you get to meet people, you get to talk to people, you can go out and get to know the local town, and it was really nice to make those local connections. People really care about their local theatre.”
The spaces, too, just make sense for such a show that Kerry is taking around the UK. “I have obviously performed in
lots of di erent spaces, small, big, arenas, to really intimate spaces. They vary so much and I couldn’t believe how many little gems that I found across the country, some amazing hidden theatres that nobody really knows about apart from local people. My show is quite intimate: it’s myself, my musical director, I have a screen so I can play clips, I talk to people, I sing, we talk about my book, it’s quite intimate and interactive which you can only really do in these smaller environments.”
When starting out, did Kerry have an idea of the theatrical direction she would go down? “I don’t think I ever had a plan. I definitely had ambitions and dreams, and things I wanted to do, but I didn’t quite know how I would get there,” she says. “Somebody asked me if I knew I wanted to be in theatre, and theatre was a route I could see was achievable to get into the industry. I think it seemed a natural pathway to go. I went to drama school, then I started auditioning for West End shows, so it felt like a way in. Other things have come from that, my books, music, concerts, podcasts, radio. It has all been a by-product of my training and theatre.”
Kerry is also best placed to reflect on how the theatre industry has changed, too. “It has changed dramatically, which is a good thing – it should change. Theatre can be extremely bold and it can tell stories that we maybe can’t tell in real life, bring up topics that are perhaps uncomfortable to talk
about. We are definitely not doing the same shows now compared to when I started 30 years ago. We didn’t have social media when I started, and that’s a big influence in our world, which is good and bad, but generally I think it is a positive thing, you can connect with people. I definitely reach more people worldwide than I ever could before. I still think it’s quite a good place for people to experiment. It’s competitive and tough, but it is also a very friendly environment for people to be able to be who they want to be.”
The tour will take Kerry up to the Christmas period, when, she says, things don’t slow down. “Christmas is crazy with lots of big concerts, which is nice after going from an intimate tour to then being with big orchestras. I have got some new music coming next year, too.” It seems pretty apparent that Kerry could easily do another retrospective in 20 years. “I ask myself, would I stop doing this if I didn’t need to? I don’t think I would. I love it.”
Kerry Ellis, Queen of the West End, runs from 17th September-23rd November.

HITCHIN LAVENDER
Nestled in the heart of Hertfordshire, just 35 miles north of London, Hitchin is a charming and historic market town that o ers an enriching blend of past and present. Its roots reach back to the 7th century, once home to the Hicce tribe, and it flourished as a Royal Manor recorded in the Domesday Book. Over the centuries, Hitchin became known for its wool trade and later for its prolific lavender fields, which still bloom vibrantly each summer. The town centre, filled with medieval timberframed buildings and cobbled alleys, radiates a sense of timeless character that makes a visit to Hitchin truly special.
A walk through the town is like stepping back in time. The magnificent St Mary’s Church, the largest parish church in Hertfordshire, stands proudly beside the River Hiz and represents centuries of architectural evolution
from its Saxon foundations to its 15thcentury tower. Nearby, the Corn Exchange, built in 1853, adds a neoclassical flair to the Market Place, while Hitchin Priory, originally a Carmelite monastery founded in 1317, now serves as a picturesque venue for events. Families and visitors with a curiosity for local history can also explore the British Schools Museum, which houses the only remaining complete Lancasterian schoolroom in the world and o ers an engaging insight into 19th-century education.
WHERE TO GO
There’s plenty to do in Hitchin for families and visitors of all ages. One of the town’s most famous attractions is Hitchin Lavender. In peak season, particularly July and August, over 30 acres of purple bloom across the rolling hills just outside town. Visitors can pick their own lavender, explore sunflower trails, or relax with a cream tea at the on-site café. The vibrant colours and floral
FABIO'S GELATO
fragrance provide an almost Mediterranean atmosphere in the English countryside. Back in town, families can cool o at Hitchin’s Art Deco Lido, a heated outdoor pool perfect for sunny summer days. Hitchin is full of green spaces and child-friendly destinations. Butts Close, once used for medieval archery practice, is now a spacious park ideal for picnics, games, and community events. The River Hiz provides a tranquil walking route along the Hicca Way, leading through the town and out into the nearby countryside. For younger children, indoor fun can be found at Space to Play, while outdoor adventures await at Bancroft Splash Park and Ransom’s Recreation Ground, where play areas, skate parks, and even zip wires create endless opportunities for entertainment.
WHERE TO EAT & DRINK
Food lovers will find Hitchin’s culinary scene surprisingly diverse and high in quality. For casual, family-friendly dining, Craft & Cleaver serves up authentic Americanstyle barbecue in a vibrant atmosphere, while The Cricketers pub, located in the heart of town, is a long-time favourite for its welcoming vibe and hearty fare. For a lighter touch, Fabio’s Gelato is an essential stop, o ering artisan ice cream and indulgent desserts that keep locals coming back. Chocolate lovers won’t want to miss the Chocolatier’s Café.
Those seeking more refined dining options can book a table at Hermitage Rd., a stylish restaurant set within a former ballroom, where seasonal menus, oysters, and cocktails make it a perfect venue for a special meal. International flavours are well represented in Hitchin too, with the highly rated Kazoku o ering fresh Japanese cuisine, and Los Reyes presenting delicious Spanish tapas in a cosy setting. Traditional pubs remain a staple of the town, and The Rusty Gun is particularly notable for its countryside charm and dedication to using local produce.
ARTS & CULTURE
Hitchin has a thriving entertainment scene. The Queen Mother Theatre is home to several active performance groups, including the Bancroft Players and the Big Spirit Youth Theatre, staging everything from Shakespeare to original dramas. The North Hertfordshire Museum, located conveniently near the town centre, o ers a compelling look into the region’s archaeology and social history and often features interactive exhibits for children. August promises to be a vibrant time to visit. Though the main Hitchin Festival typically runs from late June through the end of July, early August often sees lingering events, such as community concerts, local art exhibitions, and the quirky annual Duck Race along the River Hiz. The lavender fields will still be in bloom, o ering visitors a chance to enjoy their beauty before the harvest. Guided tours, both historical and horticultural, are likely to continue during this period, with evening walks through the lavender proving especially popular. The lido will be in full swing, too.
The town’s weekly markets, held in the historic Market Place, have been trading for over 900 years. Visitors in August can enjoy a mix of fresh produce, antiques, handmade crafts, and delicious street food. A monthly farmers’ and craft market adds even more variety, highlighting the best of local artisan talent. Shoppers looking for something unique can browse the boutiques of Sun Street and Bucklersbury, where independent retailers sell everything from vintage clothing and jewellery to fine wines and artworks. With its combination of deep historical roots, cultural vibrancy, natural beauty, and warm community spirit, Hitchin makes for a perfect summer getaway. In August, the lavender fields are at their peak, the lido is open, and the town buzzes with local events. Whether you’re meandering through medieval streets, watching a theatre performance, picking flowers in a sea of purple, or enjoying a long lunch, Hitchin o ers something for everyone. It’s a town that invites you not just to visit, but to stay awhile and savour its many treasures.

The new vintage of Gusbourne’s Chardonnay Guinevere has landed and it’s pure class. Flinty and gently oaked, with notes of hazelnut, lemon and white peach, it’s precise, layered, and e ortlessly elegant. Aged on lees for added complexity, this is Gusbourne’s most awarded wine, and it’s not hard to taste why. gusbourne.com

Ambriel’s Wendling Blanc de Blancs 2018 has been worth waiting for
Sip Smart
Wickhams is fast becoming the go-to for curated, characterful wines - from English classics to unexpected gems from around the globe. Their online shop is packed with handpicked bottles that overdeliver on flavour and charm. With their national delivery and expert picks, you are now just one click away from being the friend who always brings the good bottle. wickhamwine.co.uk
Ambriel’s latest release has been quietly biding its time - five and a half years on the lees, to be exact. Made from 100% estate-grown Chardonnay, the Wendling Blanc de Blancs 2018 is a finely tuned sparkler with elderflower on the nose, lemon sherbet through the middle, and a soft, honeyed finish. Elegant, expressive, and worth the wait. It’s named after the delicate bubble that wends its way to the top, and - charmingly - after co-founder Wendy Outhwaite’s playful nickname. Behind the bottle is Ambriel, a labour of love by Wendy and Charles Outhwaite, who traded high-powered careers for West Sussex’s greensand slopes. Their vineyard, planted in 2008, thrives in a "goldilocks climate"warm enough to ripen grapes, but cool enough to preserve razor-sharp acidity, perfect for sparkling wine. Every step, from hand-harvesting to blending, is done with obsessive attention to detail (palate, not wallet, as they say), and wines aren’t released until they’ve aged into their full potential. The result are bottles like the Wendling - a shimmering testament to English fizz!

Pilates is a system of exercises centered around the fundamental principles of control, centre, concentration, coordination, precision, flow and breath, all working together in harmony – and it can truly transform how you look and feel.
IMPROVED CORE STRENGTH AND STABILITY
Pilates is known for its emphasis on core strength – the core is the centre of the body from which all movement stems, it consists of the muscles that make up your trunk. When strengthened, the core
helps support and stabilize the body. Pilates targets the deep core muscles –abdominals, hips, lower back and pelvis resulting in a stronger and more stable centre referred to as your “powerhouse”. The focus of Pilates is controlled, precise movements performed slowly and deliberately. Many Pilates movements involve holding positions or moving in ways that challenge core endurance and postural control. Pilates exercises also target the deeper abdominal muscles and the pelvic floor to both contract and release. These muscles work like a brace to lift and support the organs, and protect and stabilize the back – and regular participants report improvement in back pain.

“Pilates creates a sense of alignment”
INCREASED FLEXIBILITY
Pilates includes a lot of eccentric movements (where muscles lengthen while under tension), which are particularly e ective at increasing flexibility and strength simultaneously. At the same time Pilates emphasizes deep, mindful breathing, which helps relax the nervous system and allows muscles to let go of tightness, making it easier to stretch further. By strengthening weaker muscles and stretching tighter ones, Pilates promotes muscular balance, reducing sti ness and allowing for a greater range of movement. Not only does Pilates support flexibility of the outer limbs, the spine will be moved through five shapes – flexion, extension, lateral flexion and rotation. A famous quote from Joseph Pilates is “you are only as young as your spine is flexible”.
IMPROVED POSTURE
Pilates improves posture through a combination of core strengthening, body awareness, and alignment-focused movement. By strengthening the deep abdominal muscles, back and pelvic floor we are strengthening the muscles that support the spine and pelvis. A strong core acts like a natural brace, keeping your torso upright and aligned without excess strain. Pilates can address postural imbalances by stretching tight muscles (for example, hip flexors, chest) and strengthening weak ones (for example, glutes, upper back), helping to bring the body into balance – creating better muscular symmetry and reducing compensation patterns
like slouching. Regular Pilates can also greatly improve body awareness teaching you to consciously control your body’s position and helping you to recognise poor posture throughout the day,
GREATER MIND-BODY CONNECTION
Pilates is widely recognized for enhancing the mind-body connection – the conscious awareness and control of movement, posture, and breath. By creating space for focused attention and control, Pilates emphasises these elements in every movement; you are not just moving – you are thinking about how you move.
You’re trained to actively recruit specific muscles, especially the deep core, rather than moving on autopilot. Breath is a principle in Pilates and the cornerstone of creating a deep mind-body connection by enhancing oxygen flow and energy, keeping your present within your body, reducing stress and promoting activation of the parasympathetic nervous system. With controlled and deliberate movement,
coordinated breath and the use of verbal and tactile cues, Pilates creates a sense of alignment from head to toe – the more you practice the more refined your internal “body map” becomes. By integrating the whole body from the inside out, you will train your body to move e ciently with your mind fully involved. If you’re looking to build a stronger mind-body connection, Pilates is especially beneficial because it blends mental discipline, physical control, and breathwork into a single, focused practice.
CAN ENHANCE SPORT PERFORMANCE
Whether you’re a professional athlete or not, Pilates can elevate your sport and hobby activities. Recent studies published in the Journal of Exercise Rehabilitation record that Pilates may help improve speed, power, and range of motion, increase muscle mass and improve core and trunk strength.

HEAT
Too hot to sleep? One expert from Hertford o ers up her top tips to ensure quality shut eye
BY JULIE GOODWIN
Sleeplessness has become one of society’s biggest problems. At any given time, up to 40% of adults and 50% of children in the UK are struggling with their sleep, a problem which is often made worse during the summer months when the warmer weather can make it harder to sleep. The ideal temperature for a bedroom is between 16 and 18°C. When your body is cool and rested, it triggers the production of melatonin, the sleeppromoting hormone. During the evening, your body temperature naturally drops, and as morning approaches it rises again, getting ready for the day. This is all part of the shutdown and repair process. If you are waking up in a bog of sweat then your bedroom may be too hot or you need to ditch that high TOG duvet.
Cool yourself down before going to bed with a lukewarm shower or bath. Resist the temptation to have an ice-cold shower as your body will just increase its core temperature to counter the e ect of the cold water. An ice cold shower will also wake you up. Dim the lights and keep those curtains closed. If you keep your blinds or curtains closed during the day, the temperature in your bedroom will drop. Minimise the number of lightbulbs you have on as they can generate a surprising amount of heat. Choose natural fibres to sleep in and sheets over duvets to help increase airflow and circulation. And don’t lose the pjs –sleeping without any clothes on could make you even hotter. Pyjamas help to absorb sweat, allowing moisture to evaporate between your body and the bed sheets. Again choose loose fitting natural fibres over synthetic ones. Light cotton or silk pyjamas are best, as the fibres will draw moisture and heat away from your body. Keep your feet cool. Feet regulate body temperature. Even if you just poke your tootsies out from under the covers, by keeping your feet cool, you can help to keep the rest of your body cool. Bed socks are a definite no-no. Try not to eat too late and make your last meal of the day as light and as cold as possible. Your body uses less energy, and therefore generates less heat, to digest salads and fish.
Stay well hydrated throughout the day and into the evening, but resist the night-time tipple. Your liver creates heat in the process of detoxifying alcohol. Plus bear in mind that alcohol is actually a stimulant. Try a refreshing infusion made with cooling herbs instead.
Sleep in the coolest room. Heat rises, so if you have the option to sleep in a lower-altitude room in your house, do so, you’ll probably be cooler. If not, you could consider moving your mattress to the floor or even sleeping in a hammock.
Kick out your partner! Not the friendliest of suggestions, granted, but we humans generate a huge amount of heat, and more bodies in bed means more heat. Avoid sharing a bed on really warm nights if you can, and don’t share your sleeping quarters with any of your furry friends.
For some natural support to help you sleep better at any time of the year try A.Vogel’s Dormeasan Sleep. With fresh Valerian and Hops it can help you get to sleep and also stay in the deeper stages of sleep for longer. Take 30 drops in a little water half an hour before bedtime.
For a water-free solution that can be taken even in the middle of the night, there’s Sleep Well Dissolvable Granules, with extracts of Lettuce, Lemon Balm, Magnesium and L-Tryptophan. These plant-based ingredients work to promote a calm, restful sleep, are non-addictive and fast-acting, and won’t leave you feeling groggy in the morning.
‘Hamster-wheel’ mind that won’t switch o ? Passiflora Complex (drops, tablets or spray) taken during the day can help to calm mental overactivity and ease anxiety, which in turn helps promote a more restful night’s sleep. It can also be used alongside herbal sleep remedies if needed. Finally, fall in love with lavender. Lavender is a naturally cooling and sleep-supportive herb. Try spraying your pillow and bedding with lavender before bedtime, or dabbing a little lavender on your wrists, temples or neck.

Honey Halloumi and Crispy Chickpea Salad
Serves 4 1 hour
Rachel Rees says: “Preparation is key for busy clients looking to eat well whilst remaining energised throughout the day. I love this recipe because it's packed with blood sugar-balancing nutrients, and it can be eaten hot or cold.”
INGREDIENTS
• 1 vegetable stock cube
• 125ml boiling water
• 100g dry wholemeal couscous
• 1 tbsp honey
• 1 tbsp sriracha
• 1 tsp balsamic vinegar
• 200g halloumi, sliced
• 1 large cauliflower, chopped into small florets
• 1 x 400g tin chickpeas, drained and rinsed
• 1 tbsp paprika, sweet or smoked
• 1 tbsp harissa
• 1 tbsp olive oil
• 1 red onion, chopped
• Handful of rocket and/or spinach
METHOD
1 Preheat the oven to 200°C/180°C fan/gas mark 6.
2 Add a stock cube to 125ml of boiling water in a bowl and stir. Add the couscous and cover. Set aside.
3 In a bowl, mix the honey, sriracha and balsamic vinegar. Add the sliced halloumi and mix well, ensuring the halloumi is well coated with the mixture. Set aside whilst preparing the remaining ingredients.
4 Put the cauliflower and chickpeas into a roasting tin. Add the paprika, harissa and olive oil and mix until evenly coated. Spread evenly onto the tray and roast for 30-45 minutes, checking them regularly as oven temperatures can vary. Turn halfway through cooking. Add the red onion to the roasting tin for the last 20 minutes.
5 Once the vegetables are almost ready, pan fry the marinated halloumi on a medium-high heat for a couple of minutes on each side, until golden, or air fry for 5 minutes at 160°C on each side.
6 Once everything is prepared, toss the couscous and then spoon onto a serving dish. Add the roasted cauliflower, chickpeas, red onion and rocket, and lay the halloumi on top. Crumble over the feta and then drizzle some honey, sriracha and balsamic over the dish.
Mediterranean Rice an Lentil Bowl
Serves 4-6
55 mins
Belén Vázquez says: “This dish is great for those who tend to skip lunch during workdays due to time constraints. It can be made in large quantities and kept in the fridge for a few days. It is particularly rich in plant fibre, folate, B6 and antioxidants.”
INGREDIENTS
• 200g butternut squash, cut into cubes
• 200g cauliflower, broken into small florets
• 2 tbsp olive oil
• 1 tbsp cumin seeds
• 2 tsp turmeric
• Salt and pepper, to taste
• 100g brazil nuts
• 200g brown rice
• 1 garlic clove, crushed
• 100g green lentils, dried
• 1 large red onion, chopped
• 200g pomegranate seeds
• Handful of fresh dill, chopped
• 200g feta, crumbled
For the salad dressing
• Juice of 1 large orange
• 2 tbsp pomegranate molasses
• 3 tbsp date paste or 2 tsp honey, syrup or date molasses
• Salt, to taste
METHOD
1 Heat the oven to 200°C/180°C fan/ gas mark 6 and line a baking tray with baking parchment.
2 Place the butternut squash and cauliflower on the baking tray and drizzle with the olive oil. Scatter on the cumin seeds, dust with turmeric, and season generously with salt and pepper. Use your hands to ensure that every piece is coated. Roast for 30-35 minutes until both cauliflower and butternut squash are tender. After 20 minutes, add the brazil nuts to roast with them. After the full 3035 minutes, remove from the oven and leave to cool down.
3 Once the vegetables are in the oven, brown the dry rice in a saucepan on the hob with the garlic in a little olive oil for 5 minutes. Cover with water, add salt, and leave to simmer. Then, in a separate pan with a lid, cover the lentils with water and bring to the boil. Leave both the rice and lentils to cook for 20-30 minutes until tender. When done, give them a quick rinse under cold water to bring them to room temperature and stop them from further cooking. This will allow them to stay tender but firm.
4 In a large bowl, toss the cooked rice and lentils; roasted cauliflower, butternut squash and brazil nuts; red onion, pomegranate and dill.
5 Combine the dressing ingredients in a bowl then pour over the tossed ingredients and mix well. Serve with the feta crumbled over the top.
“This recipe ticks all the health and wellbeing boxes”
Patrick's LowCarb Kedgere
Serves 4 25-40 mins
Patrick Holford says: “This recipe ticks all the boxes: high in omega-3 and vitamin B12, great for the brain; low GL [glycaemic load] so great for weight control; high in folate and other B vitamins so supports methylation, along with B12 in the mackerel; and high in antioxidants and polyphenols from the spices, black pepper, and veg.”
INGREDIENTS
• 60g wholegrain bulgur wheat, quinoa or brown rice – makes 180g cooked
• 2 eggs
• 2 tbsp mild or medium olive oil (not extra virgin), virgin rapeseed oil or coconut oil
• 1 garlic clove, crushed
• 1 large or 2 small onions, finely chopped
• 1⁄2-1 tsp ground smoked paprika or cayenne
• 1⁄2-1 tsp ground cumin
• 1⁄2-1 tsp ground turmeric
• 2 smoked mackerel fillets (approx. 275g)
• 100g frozen petit pois
• 200g tenderstem broccoli, cut in half
• 1 tbsp tahini
• Black pepper, to taste
• 4 tbsp flat leaf parsley, finely chopped
METHOD
1 Measure out three times as much water as bulgur, quinoa or brown basmati rice in a pan and bring it to the boil. Add the bulgur, quinoa or rice and simmer on a low heat for 8 minutes (bulgur), 13 minutes (quinoa)
or 35 minutes (brown rice), then drain any surplus water, if needed.
2 Meanwhile, hard boil the eggs in a pan of boiling water for 6 minutes then cool rapidly under the tap for a minute. Set aside to fully cool before peeling and slicing into quarters.
3 Heat the olive oil in a large saucepan and sweat the garlic and onion for a minute or so before adding the spices. Let them gently cook for a further few minutes, taking care not to let them burn, until the onions are soft and fragrant.
4 Break the smoked mackerel into small pieces and add to the saucepan, stirring them in.
5 Meanwhile, add the petit pois to boiling water and wait until the water is boiling again, then add the broccoli pieces. Once the peas float to the top, remove from the heat, drain, then add to the onion and mackerel.
6 Stir in the cooked grains until evenly coated and then add the hardboiled eggs.
7 Stir in the tahini to make it creamy and season with plenty of pepper. You won’t need any salt thanks to the salty smoked fish and the strength of the spices. Garnish with the parsley.
Recipes taken from The Colourful Kitchen Collection: a compilation of recipes for health and wellbeing from graduates of the Institute for Optimum Nutrition (ION). I am here for the afternoon, and first up is my Intraceutical Oxygen Facial, which is a high-tech treatment designed for significant results. Using pressurised oxygen and low-weight hyaluronic acid, the treatment presses serums deep into the skin, promising to instantly plump fine lines and boosts elasticity. It’s a peculiar sensation accompanied by an unusual whirring noise (though not uncomfortable) and I emerge actually glowing. Then it’s upstairs for a lymphatic drainage treatment, which I imagined to be a massage. Instead, I am zipped into an inflating plastic suit from the chest down, and left to lie in peace for some time while the suit vibrates enthusiastically. This encourages the natural drainage of lymph, reducing swelling and improving circulation. It’s not unpleasant and afterwards I feel lighter and somehow taller. From there I spend a relaxing hour dawdling in the sauna, steam room and salt cave, where inhaling Himalayan salt is an aid to respiration and relaxation. DYNAMIC MOVES
After navigating IVF, pregnancy, and postpartum recovery in my thirties, I hit my forties determined to take back control of my fitness. So when I had the chance to try a FOLD Reformer bed at home, I jumped at the opportunity – and enlisted expert trainer Aimee Long to help elevate my workouts.
Aimee has trained celebrities and royalty, but her approach is refreshingly down-to-earth. She mixes Pilates, barre, strength
training, and HIIT to create workouts that challenge without breaking you. As a fellow busy mum, she also understands the need for e cient sessions – which was perfect for my schedule. We trained virtually twice a week for a month using the FOLD bed, hand weights, and Pilates accessories. Each session was a full-body burn. Aimee pushed me with combinations of dynamic Reformer moves – tricep dips, inner thigh pulses, roundthe-worlds – and floor-based cardio and strength work that had me breathless and sore
in the best way. She adjusted the plan as we went, helping me target ankle stability and core strength, while focusing on form over intensity. What stood out most was Aimee’s personalised, holistic approach. Rather than focusing on weight loss, she encouraged me to reframe my goals: to build strength, improve mobility, and challenge my body with purpose. At 42, I can honestly say I feel stronger and more connected to my body than ever before.

Why your smile is your superpower
Abeautiful smile can work wonders. At Watford Smiles, they specialise in smile makeovers that don’t just transform your teeth – they transform your confidence, your self-esteem, and your outlook on life.
Whether you’re straightening with Invisalign, refining with composite bonding, or enhancing your smile with porcelain veneers, every treatment is tailored to your unique features, goals, and lifestyle.
INVISALIGN – DISCREET TEETH STRAIGHTENING
Invisalign is a modern, virtually invisible way to straighten your teeth using a series of custom-made clear aligners. These aligners gradually shift your teeth into the desired position without the need for metal brackets or wires. Each set is worn for one week and replaced with the next in the series. Invisalign
Eleni’s smile transformation with Invisalign and edge bonding (left)
shows how powerful your smile can be
is comfortable, removable, and easy to clean, allowing you to eat and brush as normal. It can correct crowding, spacing, bite issues, and more with predictable, computer-planned results.
At Watford Smiles, their digital iTero scanner and Smile Architect technology allows them to simulate your new smile before treatment even begins. Whether you’re a teen or adult, Invisalign o ers a flexible and aesthetic solution to achieving your dream smile – comfortably and confidently. Many patients complete their transformation in as little as 6-12 months.
COMPOSITE BONDING – INSTANT SMILE ENHANCEMENTS
Composite bonding is a minimally invasive cosmetic dental treatment that improves the shape, colour, and overall appearance of your teeth. Using a toothcoloured resin material, Watford Smiles artistically sculpt and bond onto the teeth to repair chips, close gaps, reshape edges, or mask discolouration – often in a single appointment. Unlike veneers or crowns, bonding involves little to no tooth removal, making it a great option for those wanting fast, natural-looking results without permanent alteration.
At Watford Smiles, they use high-quality composite materials layered and polished for a lifelike finish that blends seamlessly with your existing teeth. It’s ideal for those looking for a more symmetrical or brighter smile with immediate results. While composite bonding is not as longlasting as porcelain options, with the right care, it can remain beautiful and functional for many years. It’s a ordable, versatile, and a powerful way to refresh your smile with minimal commitment.
PORCELAIN VENEERS – HOLLYWOOD SMILE MAKEOVER
Porcelain veneers are ultra-thin, custom-made ceramic shells that are bonded to the front surfaces of your teeth to dramatically enhance
their appearance. They can be used to transform discoloured, chipped, misaligned, or unevenly shaped teeth into a flawless, balanced smile. Crafted from high-grade ceramics, veneers mimic the light-reflecting properties of natural enamel, giving an incredibly lifelike and luminous finish.
At Watford Smiles, they carefully plan your smile design using digital previews and work with top-tier labs to ensure precision and artistry. The process typically involves minimal enamel preparation and is completed over 2-3 visits. Veneers are stainresistant and durable, lasting 10-15 years or more with proper care. Whether you’re after a subtle refinement or a full “Hollywood” smile makeover, porcelain veneers o er a long-lasting, high-end solution tailored just for you. This treatment is ideal for patients seeking perfection in both function and beauty.

Studio Sixty7 is an international design atelier founded by designers Jose Rivero and Lee McNichol, who are based in Hertfordshire. Studio Sixty7 has emerged as a transformative force in the realms of the private and hospitality domain.
Their design philosophy transcends the conventional, o ering a sophisticated interpretation of spatial living that distinctly separates them from the crowd. With an unwavering commitment to catering to the unique desires of their clientele, Studio Sixty7 delivers bespoke environments where form, function, and aesthetic are pivotal.
With over two decades of collective experience, Jose and Lee have already solidified their reputation among the world’s premier design firms. Now, they are poised to leave an indelible mark on the industry. From the completion of a luxurious 5-star boutique hotel on Sri Lanka’s golden coast to the creation of five exclusive resorts in the Maldives set to debut in 2025, Studio Sixty7’s portfolio is a testament to their dedication to crafting sustainable, conscious designs that resonate with opulence and integrity.
Studio Sixty7 is not just about creating spaces; it’s about curating experiences. Their approach harmonises the rich cultural heritage of traditional design with the sleek trends of modern aesthetics. The result is an exquisite balance of form, texture, and function, producing interiors that are as liveable as they are breathtaking.
A case in point is their own residence in Hertfordshire, The Chapel (pictured here), which the duo invited Absolutely to for a look around, giving us the perfect chance to find out more about their unique design business.
Q When did you first discuss the idea of launching a design studio together?
JOSE: We worked together for many years at our previous design company, delivering multiple projects across the UK and abroad. There was always a great synergy and mutual understanding
between us, and we started to feel that maybe we could do this for ourselves.
LEE: We think it helps that we instinctively know what the other is thinking – it makes the whole process more seamless, both for us and for our clients
Q At that point, what was your experience in the industry?
LEE: Between us, we had over 20 years of experience. We managed our previous studio’s most successful and awardwinning projects – from cruise liners and luxury resorts to superyachts and some incredibly influential private residences.
Q Do you both have certain skills that complement each other?
JOSE: We’re lucky that we balance each other really well – what one might not know, the other usually does (thankfully!). Most importantly, we’re both driven and genuinely love the design world and the clients we work with.
Q When did you launch Studio Sixty7 and what was your first project?
JOSE: We launched at the end of 2023,
which was such an exciting moment for us. Our first project was a boutique hotel in Sri Lanka – a real pinch-me moment. Doing what we love and getting to travel was the dream. That client has since become a great supporter, and we have many more resorts launching with them this year and beyond.
Q From day one, what were you determined to o er?
LEE: A personal touch. We want to be present and really listen to our clients. We’re both people-people and really value that connection – whether it’s a private residence or a luxury resort, we treat every client with the same level of respect. At the end of the day, they’re trusting us with something very personal.
Q Which projects have you undertaken that really showcase what you can achieve?
LEE: The hotels we’ve completed in Sri Lanka and the Maldives really showcase what we can deliver. Managing such large commercial projects, ensuring everything works both operationally and aesthetically,
LEE MCNICHOL AND JOSE RIVERO
shows how we approach the design as a whole. Private residences also push us in a di erent way; the added pressure of creating someone’s home means you want every detail to be perfect.
Q Can you give us an idea of how the design process comes together?
JOSE: It’s a very natural process for us. We start with initial meetings to understand what the client wants to achieve. Then, back at the studio, we begin pulling together imagery and ideas, often inspired by travel, fashion, or art. We present our initial concepts and spatial layouts, and once approved, move on to more detailed elements: elevations, FF&E specifications, finish schedules, sanitaryware, and so on. We coordinate closely with contractors to make sure everyone is aligned. Finally, our favourite part – installation – where we see the vision we’ve dreamt up come to life.
Q Let’s talk about The Chapel. When did you first come across it?
LEE: Our estate agent actually told us about The Chapel before it came to market. We’ve always loved homes with character and a story, so it felt like the perfect fit. Being close to London, but in
a more countryside setting gives us the best of both worlds. Plus, the community here is amazing – we’re in the biggest WhatsApp group we’ve ever known!
Q Did you see a lot of potential design-wise?
LEE: Jose was the visionary on this one. He really saw the potential in blending traditional and modern elements through the furniture and artwork. The high ceilings, timber beams, and stained-glass windows are incredible – we never tire of looking at them. It’s a space that allows for real peace and quiet, which we both value.
Q What was the biggest challenge?
JOSE: Getting the sofa through the door! The team at Restoration Hardware were amazing, and we’re still not quite sure how we managed it – but we did!
Q Can you give us an overview of what you changed?
JOSE: It was mainly cosmetic rather than structural. The building already had so much to o er, so it was more about enhancing that rather than distracting from it. Everything we introduced was chosen to complement the existing architecture.
Q How would you describe its look now and do you have a favourite element of the residence?
JOSE: It’s very much our own spin on chapel living. Our favourite element has to be the scale of the open-plan living space with the mezzanine. We love sitting at the top, gazing out over the room and into the countryside beyond.
Q What comes next for Studio Sixty7?
LEE: We’re incredibly grateful for the projects we have on. We’re currently shooting one in the Maldives, which we’re so excited to share. We also have another resort launching there later this year, plus an amazing villa in Mauritius and a period home in North London, which will be completed soon. Looking ahead, our focus is to keep evolving and enjoying what we do. We’re really excited about the future of Studio Sixty7.

The rise of social media and fitness influencers has made weight training more accessible and appealing to young teenagers today. As a result, many children as young as 13 and 14 years have adopted strength training routines as part of their daily or weekly lifestyles, whether training at home, at a local health club or in the school gym. Although a healthy approach to weight training has numerous physical and psychological benefits, parents might worry about their young teens engaging in weight lifting due to concerns around peer pressure, physical safety and proper technique. They may also fear that improper use of weights could lead to injuries, such as strains or sprains, especially if teenagers attempt to lift too much weight without adequate supervision or guidance.
A guide to safe weight training for young teens
By JULES FORSYTH
Likewise, there are valid concerns about the potential for promoting an unhealthy body image or developing an excessive focus on aesthetics from a young age, which can be damaging from a mental health perspective. Parents might also worry that weight training could interfere with other important activities, such as academic studies or social activities. The worry for many is that teenagers might push themselves too hard in pursuit of strength or physical appearance, rather than focusing on overall health and wellness. This is why it is important that children have balance and understand how to weight train safely, with a healthy mindset.
IS WEIGHT TRAINING SAFE FOR YOUNG TEENS?
This is one of the most popular questions parents ask, and the answer is yes. Research consistently shows that strength training is not only safe for teenagers but also highly beneficial, as long as it is done using the correct techniques and with an appropriate load and progression. Probably the most common myth regarding lifting weights as a young teenager is the concern that it may stunt growth. However, studies show that lifting weights can improve bone density, support healthy growth, increase strength, muscle mass, coordination and reduce the risk of injury in sports.
So, for anyone interested in introducing their child to weight training, there are a few steps you can take to start them o on the right track. Begin by picking the low hanging fruit – if your teen is new to training, body weight exercises can provide plenty of stimulus for the above-mentioned benefits. Useful exercises include push ups, pull ups, rear foot elevated split squats, inverted rows and pistol squats, to name a few. When it comes to technique, ensure your teen has nailed down the technique and that they display enough competency to begin loading it. It is also important to emphasise progressive overload – the concept of making the exercise harder, through volume rather than weight. For example, increasing the number of reps and/or sets weekly will challenge the movement. Additionally, you can play with the tempo – how quickly the rep is completed, to increase muscle tension without needing to increase the weight.
“WE SHOULD BEWARE OF THE DANGERS THAT SOCIAL MEDIA CAN IMPOSE ON THIS KIND OF EXERCISE”
From a frequency perspective, two full body sessions per week, separated by 48 hours, is more than adequate at this age. With this approach the muscles can be trained twice a week allowing for optimal muscle growth and recovery. Nutrition is also an important aspect of weight training, but the association of needing to take protein powders seems to be synonymous with lifting weights – a useful tip would be to save your money. Within the first couple of years of lifting, novice lifters will undergo a phase termed ‘newbie gains’ where the body will grow and adapt to any stimulus imposed on it, resulting in quick and easy progress. This means that a well-balanced, healthy diet will provide more than enough protein.
BEWARE THE DANGERS OF UNREALISTIC STANDARDS
As mentioned previously, approaching weight training with a healthy body and mind is crucial. Young people should beware of the dangers that social media can impose on this kind of exercise. Unrealistic standards set by the digital world is becoming a widespread problem for teenagers, many of whom are attempting to copy workouts carried out by grown men. Having watched a ten second video snippet
of a professional athlete or well-trained individual on a social media platform, children and teenagers will often believe they must complete those same exercises and routines to become like them. What they have not seen are the years of athletic development preceding the clip, and the style of training they will have undertaken while they were a young teenager.
In summary, it is worth reiterating that strength training is safe for teens as long as it is part of a well-structured programme that focuses on technique and gradual progression. As greater awareness of fitness and health grows, many young individuals will recognise that done right, weight training not only enhances strength and muscular development but also improves athletic performance, aids in injury prevention, and boosts metabolism. Aside from the physical benefits, engaging in weight training can also foster a real sense of accomplishment and self-esteem, contributing positively to mental wellness and body image during the younger teenage years.

A partnership between Haberdashers’ Elstree Schools and London Academy leads to dramatic gains
Haberdashers’ Elstree Schools (Habs) has been working with London Academy, in Edgware, to help improve its Year 6 pupil attendance and attainment through a carousel of focused partnership sessions in swimming, sports and outdoor education.
As one of its five local partner schools, Habs has been delivering the sessions weekly to Year 6 pupils at London Academy, 50% of whom are eligible for free school meals. The sessions, which aim to support and enhance curriculum learning, are run by a Habs teacher, in partnership with London Academy sta , with activities supported by 16 trained sixth form students from Habs.
As part of the initiative, London Academy pupils have to achieve a ‘golden ticket’ in order to qualify for the sessions. This means they need to have had 100% attendance the previous week, have completed their homework and have no negative behaviour points.
Joshua Plotkin, Director of Partnerships at Haberdashers’ Elstree Schools, says: “It is clear to everyone involved how much the students and sta from both schools have enjoyed the sessions, learnt new skills, and built tremendous relationships.
But we now also have striking statistical evidence for the impact they have had.” London Academy has studied its pupil attendance on a Thursday, comparing its Year 6 data both pre- and postrunning the sessions, and also comparing attendance for Year 6 versus other year groups. This revealed that London Academy’s partnership work with Habs has raised the average school attendance – not just attendance at partnership sessions, but at school overall by 9.2%. For disadvantaged pupils this figure has risen to 10.1%, which is equivalent to an extra full day of school every two weeks.
“Raising attendance is one of the key challenges for maintained schools,” adds Joshua. “We are delighted to be making such a di erence for the children of London Academy. We now have evidence that a regular programme of partnerships work is a force for school improvement and a powerful tool for tackling this challenge head on.”
Manija Ahmadi, Year 6 teacher at London Academy, says: “This reward initiative encourages students to become better learners and promotes positive behaviour. The excitement of participating in these activities motivates children to come to school each day, fostering engagement and a sense of community.”

Hertfordshire ZOO
A new book has been released that celebrates the iconic location’s founder
Hertfordshire Zoo recently celebrated the launch of Nothing’s Impossible:
The Peter Sampson Story, a powerful new biography honouring its founder, Peter Sampson, and marking the 25th anniversary of The Big Cat Sanctuary in Kent.
The book was o cially unveiled on 1st June during a special celebration hosted at The Big Cat Sanctuary, which was also founded by Peter in 2000 following the rescue of a tiger cub named Rocky. Over 160 guests attended the event, reflecting on the Sanctuary’s evolution from a private rescue project into one of the UK’s leading centres for wild cat welfare and conservation.
Written by Tim Ewbank, the biography speaks of Peter’s extraordinary journey from speedway rider to pioneering conservationist, capturing the passion, perseverance and vision that led to the founding of both Hertfordshire Zoo and The Big Cat Sanctuary. His enduring motto, “Keep happy, keep smiling”, continues to inspire sta , volunteers and visitors alike across both organisations.
Peter says: “I never dreamed that one rescue would lead to all of this. I’m so proud of what’s been achieved – not just at the Sanctuary, but also here at Hertfordshire Zoo, and grateful to everyone who’s helped along the way.”
Cam Whitnall, wildlife expert, conservationist and managing director of The Big Cat Sanctuary – and Peter’s grandson – adds: “This celebration is about looking back and looking forward. We’re shaping a 20-year vision that builds on everything my grandad started, with world-class rescue, conservation, and education at its core.”
Already in 2025, the Sanctuary opened the Lion Rescue Centre to house five lions rescued by Cam and his team from conflict in Ukraine, rescued and rehomed 28 exotic cats, and welcomed a new snow leopard cub as part of its endangered species breeding programme.
Hertfordshire Zoo continues to honour Peter’s lifelong dedication to animal welfare through its conservation programmes, immersive experiences, and educational outreach. Today, Hertfordshire Zoo is a beloved attraction in the heart of the county. The zoo is home to a variety of fascinating creatures, including big cats, primates, reptiles, and birds. With its commitment to conservation and education, it provides a fun and educational experience.
