arwin Santa Maria looks relaxed. He’s in midbuildout of his new Siesta

Key Latin-seafood restaurant, CeviChela Latin Street Food, and he just learned his grand opening is going to be pushed back a week.

The usual minor setbacks — nothing to worry about.

Right now, he’s sitting in a nearby coffee shop, waiting on a refrigerator delivery. Dressed in shorts and a T-shirt, he takes a sip of his iced tea and leans back in his chair, seemingly unfazed by the stress that comes with opening a new business.

Nearly a year ago, Santa Maria surprised Sarasota foodies, beer lovers — and his employees — with an announcement that appeared to come out of nowhere.

After building his Rosemary District restaurant, Darwin’s on 4th, into an award-winning hot spot for top-tier Peruvian cuisine and leading his Bradenton brewpub, Darwin Brewing Co. into the national spotlight, he announced he was closing the restaurant, effective immediately. A few months later, he tendered his resignation from the brewery.

The decision spurred widespread speculation and left a lot of people confused, Santa Maria being one of them.

He pulled back from the public spotlight, spending the next year traveling back and forth from Sarasota to Washington, D.C., and Miami, consulting on restaurants, spending time with family and traveling to his native Peru.

It was a chance to clear his mind and take a break from the stresses of fast-tracked success in a highpressure industry.

But more than anything, he says, it was an opportunity for reinvention.

Now Santa Maria, 40, is back in Sarasota, the place he considers home, and he’s ready to get back to doing what he loves most — creating innovative food and craft beer. But this time, he says, things are going to be different.

drive I had 15 years ago. But as an entrepreneur, I made a lot of mistakes. I’m a smarter businessman now; I know where my priorities lie. And I’m reinvigorated.”

A NEW APPROACH

Santa Maria’s plan was to stay in Washington, D.C., and continue his restaurant consulting. But eating Latin-American street food and stopping in holein-the-wall eateries along the way, he says he was inspired and rediscovered his true passion. It was time to return to Sarasota and start something new.

“You don’t realize you’re living in paradise until you leave,” he says. “My kids and my family love it here; I love it here. I wanted to come back, but open something smaller, where I can really focus on the concept.”

The idea began a few months ago, when he teamed up with Tom Harris, former head brewer at JDub’s Brewing Co., to host a series of pop-up food and craftbeer dinners across the state, called CeviChela Project. Now, the operation will have a brickand-mortar home at 5110 Ocean Blvd., formerly Señor Siesta.

His vision: A grab-and-go Latin street food eatery with a focus on his signature dish — ceviche — and on-the-island delivery. He’s partnered with Señor Siesta, as well as another local company to offer bike and scooter delivery to the beach, hotels — even homes.

The menu has expanded beyond Peruvian cuisine to include food from a variety of Central and South American countries — items like pupusas, baleadas, build-your-own tacos and ceviches and a rotating list of specialties. But the operation is a small

one, with 45 seats (Darwin’s on 4th had 300) inside and out, and five employees.

Santa Maria saw a lot of success with his previous ventures — and quickly. And success doesn’t come without pressure, especially in the restaurant industry.

“I’m really passionate about this business,” he says. “But passion can be dangerous. Everything grew so fast. So many people are depending on you. There’s a lot of pressure. My name was on the building, for God’s sake.

It became too much for me. My family comes first.”

Overall, he says he’s happy with the way things turned out. He’s learned to better manage stress, to take things a little slower and ease up on his perfectionism.

Island life looks good on Santa Maria. His three kids join him after work on the beach to watch the sun set. He feels at home.

But he’s still thinking big. If the CeviChela model is successful, he says he plans to expand it to locations around the state. He also has plans to work with Harris to open a new brewery. He’s given himself a year deadline.

“I’m still ambitious,” he says.

“But I’m building things one brick at a time. After everything, I learned that what I love is to put a smile on a customer’s face. If I’m not happy, I can’t do that.”

EXPRESSION Jozef Batko finds a sense of freedom in painting.

For Jozef Batko, there’s nothing more symbolic of freedom than self-expression — especially when it comes to art. And it’s for good reason. Growing up in Czechoslovakia, then under Communist rule, freedom of expression wasn’t a given.

“I remember being a child in art class,” he says. “I wanted to paint things I liked. I wanted to paint my friends — anything. They would tell me ‘No. You’re going to paint this.’ You weren’t allowed to paint anything outside the guidelines.”

By the time he was in his early teenage years, he says he couldn’t take it anymore. He began painting at home, on his own terms.

“Art should be something expressive,” he says. “It doesn’t make sense to create art any other way.”

He began painting landscapes and still lifes, imitating his favorite masters to develop his style. In 1998, his career as a major league soccer official brought him and his wife to the United States, where he continued to develop his style.

He says he began to experiment with abstract art in the pursuit of a better way to convey his emotions.

“I started experimenting with drip painting, and I really enjoyed it,” he says. “Sometimes, the only way I can get a feeling out is to put it on canvas. To me, a landscape will always be a landscape. But with abstract art, it’s more open to interpretation. It can take on different meanings depending on when you look at it and who’s looking at it.”

Stylistically, Batkos says his biggest influence is Jackson Pollock, and the comparison is evident. He doesn’t use a brush.

Batko says his mood while painting is always reflected in the final product.

When he’s in good spirits, he finds his paintings are typically smaller, with more white space.

On days when he has a lot on his mind, he tends to work big, creating more dense pieces. But it’s usually not until a few days later that the correlation becomes clear to him.

“I’ll look back at something and realize what was going on in my life at the time,” he says. “And it will make total sense, even if I didn’t realize it at the time.”

Above all though, he enjoys the process, and he cherishes the opportunity to create.

“Art is important to me,” he says. “The freedom to express yourself is one of the most important things in life. Art is freedom.”

Instead, he squeezes paint directly from the tube onto the canvas, controlling the flow with the amount of pressure he applies.

He varies between linework and bursts of mist, creating minimalistic works — mostly in black and white, but he says incorporating a touch of color is what brings the work together.

“I like the simplicity of it,” he says. “I start with a simple line, and I just let it progress on its own.

The clean lines feel very decisive to me, and the color adds depth.”

His work, which is on display at Chic Art & Accents, is as much about creation as it is about reflection. Batko says it’s impossible to keep his mindset out of his work, even if it’s subconscious.

Luera hits them with nonsense phrases starting with “Z.” “Zip! Zap! Zop!” The actors reply. They keep talking nonsense, but they give it spin, emotion, inflection. The nonsense words become a nonsense conversation.

After that, they start tossing around imaginary colored balls.

Physical play, not verbal play. And that’s just basically the warm-up.

Now the actors get serious. (Or not.) They leap into a round of improv tag. Two players relate to an agreed-upon imaginary object.

FST Improv ventures into the unknown in “Comedy Lottery.” The show asks audiences to pick the improv games at random, and the actors build the show around their choices.

see turns into something else you can’t see. A bag of imaginary dry cleaning in James’ hands turns into an imaginary baby. (“You’re holding it wrong!” says Ratner.)

The actors also change, and specific characters emerge: Alexander’s self-absorbed Valley girl, McKelley’s sitcom housewife, Luera’s hustler and Ratner’s earnest seeker.

Right now, Luera leads Ratner to an imaginary pool of something bad.

“Well, son. I want to leave you my legacy — the sewage treatment plant. Today, all this crap is yours. You’ve earned it, son.”

“Thanks, Dad.” Ratner looks like he’s going to cry. Perhaps the touching gesture, perhaps the imaginary smell.

More mutations and permutations ensue. The characters perform their own liposuction, herd cats and repair small appliances.

And finally …

Ratner and Luera reprise their father-son team.

“Well, Dad,” says Ratner. “You gave me this plant. Now I’m taking it to the next level. Ever see ‘Soylent Green’…? Well, you’re not only going to provide for the family. You’re going to feed the family. Step right this way …”

Luera sticks a toe into imaginary muck. Then steps in and starts sinking down.

“This actually feels worse than it looks,” he says.

The imaginary muck consumes him.

And that’s how you prepare for

improv.

“I compare the process to sports,” says Luera. “Basketball players practice layups, dribbling and jump shots in anticipation for the actual game. We practice improv techniques: dialog, creating characters, being in the moment and riffing off other actors, and so on. We don’t know the scenes we’re going to do. We know what the scenes are made of — all the bits and pieces that go into each scene. That’s what we rehearse.”

The five actors I see today are part of FST’s pool of improv talent. They won’t necessarily be the ones I see in an actual performance. And I’ll never see the same performance twice.

So how does the script-free

“Comedy Lottery” come together? Chance is the playwright, according to Leura — with a little help from the audience.

“We start with a bucket of 50 or so improv games,” he says. “We go out in the audience and pass the bucket. Twelve people pick 12 games at random, and that becomes the spine of our play.

About five minutes before curtain, we write out the order, then it’s show time.”

Hectic process. Aside from generating laughter, it teaches useful life skills.

“You learn to think fast and think on your feet,” Luera says.

“On the flip side, you don’t want to think too much. Improv teaches you to trust your gut and intuition; you learn to stop second-

guessing yourself. On the improv stage, there’s no time to analyze —you’ve got maybe half a second to act. Your heart and brain hand you an idea — and you trust it, you do it, you commit to it, and see it through to the end.”

Ah. Luera’s be-here-now philosophy strikes me as very similar to the martial arts concepts of mushin and zanshin. Being in the moment without preconceived ideas. Being ready for anything, but not anticipating. Aside from the fact you’re trying to make people laugh — not beat them up — there are many similarities.

Luera smiles at the comparison.

“Yeah,” he says. “We beat you up with laughter. You might bust a gut — but it’s a painless process.”

Leymis Bolaños Wilmott is standing in the back of the New College of Florida dance studio, watching the group of dancers that compose the core of Sarasota Contemporary Dance as they prepare for the closing performance of the company’s 10th season.

She watches intently, scribbling occasionally in her notebook, jotting down feedback. Her notes are mostly small things.

“Come in a little slower here.

Make sure you’re really looking back for this part. Turn your chair a little earlier.”

As director and founder of the contemporary dance company, she’s worked with the dancers long enough that she trusts them to nail the physical dance moves.

It’s the subtleties she’s focused on.

“There’s a constant conversation going on in these pieces,” she says. “And it’s the small things that really convey that. You have to be emotionally available as much as you are physically.”

It’s one of four works that will compose “Evolving/Revolving,” the final performance of the company’s 10th season, which will include re-stagings of past favorite works by former choreographers, including Gerri Houlihan’s “Every Little Movement,” “Run,” by Sarah Caldabaugh and Crystal Edwards and Rolando

Cabrera’s “Three Accents.”

The show’s title is especially fitting for the occasion. For Wilmott, it represents her dedication to continue growing the company — while maintaining a clear vision of its roots.

Revisiting past works affords the dancers, as well as the choreographers, the chance to see the dances in a new light. Performing them with new dancers, often years after they were first written and debuted, puts things in a different context, and it allows the works —and performers — to evolve. Mary Allison, who has been dancing with the company

for five years, says she’s still being challenged.

“This might be the hardest piece I’ve had to prepare for,” she says. “It’s so physically demanding.”

“That’s good,” says Wilmott, with a laugh.

“I want to keep pushing you. This show is very diverse and accessible to newcomers. I want this company to keep growing and be exciting for our community and our dancers.

We’re evolving and revolving.”

Just having visionary Nicholas Winding Refn (“Drive”) direct is reason enough to catch this horror/thriller. Youth becomes a priceless commodity when an aspiring, naive model is robbed of her “youth and vitality.” When the film screened at Cannes, audience members

Director Steven Spielberg goes big — as always — in this fantasy family film about a friendly giant who refuses to eat children. Mark Rylance portrays the vegetarian big guy who befriends a lonely orphan and in doing so, is isolated by his peers. But the bond forged between the unlikely pair proves to be the greatest gift of all. Leave it to Spielberg to appeal across the board.

Will Bourne find peace in discovering who he really is? Or will hidden truths in his past destroy him? Matt Damon and director-writer Paul Greengrass team up once again after nine years, and judging from the trailer, it’s all about the juice. The casting also looks explosive: Alicia Vikander, Tommy Lee Jones, Julia Stiles and Vincent Cassel, just for starters.

Directorial debut of James Schamus.

Two great actors play unlikable characters as they deal with grief and guilt. David Oyelowo stars as a husband who loses his wife in a car accident and agrees to accept his motherin-law’s (Dianne Wiest) invitation to visit her. Both had a strained relationship with the deceased. Neither can get past their own feelings. Rosie Perez gets charming as a nurse.

Written and directed by Maris Curran.

Woody Allen treads familiar waters in this nostalgic comedy set in 1930s Hollywood and the Bronx. Illusions are shattered on the road to success over the span of a year. Rumored to be one of Allen’s best assemblage of actors in recent years, including Blake Lively, Kristen Stewart and Jesse Eisenberg.

Tasty tidbit: Bruce Willis was fired by Allen for bad behavior and not remembering his lines.

Steve Carell replaced him.

The trailer looks like it might be impossible to do so. The tables are turned when three young criminals decide to break into the house of a wealthy blind man. But they’ve underestimated their victim.

Soon the line between victim and villain becomes extremely blurred. Director Fede Alvarez puts a fresh spin on a somewhat familiar concept. Stephen Lang plays the guy you don’t ever want to mess with.
