Kim Guarascio...3 Tablespoon of butter, 3 tablespoon of flour, 1 can of chicken broth and Gravy Master. Place in a sauce pan and whisk and keep stirring. It will get thick, then and add chicken

broth and more as needed. Also add some turkey fat to it. You can make it once before thanksgiving or make it a day before.

Beth Kranitz-Henkel …I seriously just take an emersion blender to the veggies and drippings in the pan. It makes a yummy gravy without any added flour to thicken it up

Lauren Keller Mastrangelo …Use Wondra. You just sprinkle over drippings and broth till it’s as thick as you want. It’s not like cornstarch where you have to dilute it.

Terri Corso O'Shea … Save the water from the mashed potatoes, and any vegetables. Then slowly add it to the drippings from the turkey along with flour and a can of turkey or chicken broth. Whisk it in the pan the bird cooked in over the stove. Delicious. Patricia Boles Marinello Make gravy the day before with the neck giblets and livers. Boil with onion and celery. Strain and reduce add flour and sherry and turkey broth. It takes the stress out of whole meal. Turkey has too much oil to deal with the day off.

THANKSGIVING STROMBOLI Melanie Marcus Pagano, sharing my friend’s recipe…

Layer all your thanksgiving leftovers , use pizza dough from store pillsbury not too thick, spread on parchment paper on a baking sheet, take leftovers out and let sit at room temp for about 1/2 hr. start w turkey and layer down the middle , sweet potatoes, veggies, cranberries, stuffing, drizzle some gravy on dry ingredients down the center, last layer on top should be a dry leftover like stuffing. Add some mozzarella cheese and pull up both sides to overlap, bake at 350 degrees approx 20-25 minutes depending on color of dough, should be med brown. Take out let sit for approx 10 min then slice to desired thickness, enjoy!

TURKEY TETRAZZINI Susan Diamond...Simmer cut up turkey in some chicken stock-soup to soften. Sauté a chopped onion in oil. Add 2 teaspoons of flour to the oil and mix for 5 min. Add only the chick stock/soup not the turkey. Mix 5 min till thickened. Add salt pepper garlic powder onion powder to taste. Add the turkey, some largely chopped roasted peppers (jarred) and frozen peas. Mix easily so peas don’t mush. Serve over wide egg noodles.

SHEPARD’S PIE FROM TURKEY LEFTOVERS Beth Kranitz-Henkel Mix turkey, gravy,and veggies together, top with mashed potatoes, and dotted with some butter. Bake until its golden.
