The Art of Choux
For the very first time, the Art of Choux pastry will be revealed at Alain Ducasse at The Dorchester during a one-off masterclass on Monday 29th October. Executive Chef Jean-Philippe Blondet and Pastry Chef Thibault Hauchard will take guests through a never seen before step by step guide of mastering the Art of Choux pastry from savoury to sweet, to satisfy all tastes! Guided by the chefs’ expert hands, participants will discover three classic French pastries - the ‘gougères’, baked savoury cheese puffs; the ‘chouquettes’, delicate sweet choux sprinkled with coarse sugar; and a chocolate filled ‘choux au craquelin’, a sweet choux puff filled with chocolate cream and topped with a thin layer of crumble. Apple Day returns for its 10th year on 21st October at Borough Market. The day celebrates the 2,500 varieties of apples with a range of activities to suit all members of the family including; a tasting table of old, an Apple Doctor, a specially created story orchard and apple fans from the animal world – including pigs from Hackney City Farm. Although nearly two-thirds of the apple orchards across the country disappeared between the 1950s and the turn of the millennium, thanks to non-commercial growers, community orchards and farmers that have focused on protecting our heritage varieties, consumers can now sample a much broader range of apples. No apple celebration would be complete without food, and chef Kathy Slack will be cooking up a range of delicious apple and harvest themed dishes, whilst Borough Market’s traders will be offering apple focused goods including apple biscuits, apple cake and cider from the New Forest. There will also be a celebration of ancient seasonal customs with music, songs and performance by local historical theatre group the Lion’s Part. In keeping with its commitment to the local community, Borough Market will also be donating a proportion of the pitch fee for participating traders to trader nominated charity, Lucy Brown House, a sheltered accommodation centre for older people in Southwark, where residents have their own flats and share communal facilities. Borough Market’s neighbour, Southwark Cathedral will deliver a short act of harvest worship in the Market, accompanied by the Market’s choir. Money raised from donations during the worship will fund the Robes Project, a local charity which provides winter night shelters for the homeless of south London. Victoria Beckham has partnered with world renowned chocolatier Pierre Marcolini to design a limited-edition box of 16 chocolate hearts to celebrate the milestone 10th anniversary of her iconic fashion house. Meeting in Paris a city close to both of their hearts, the pair masterminded a chocolate box special enough to mark the occasion. The extraordinary know-how and contemporary approach of Pierre to create the best chocolates in the world, aligned with Victoria’s forward-thinking vision, made this the perfect collaboration. One of the few chocolatiers to oversee the entire production process through to the final assemble, Victoria was able to work closely with Pierre throughout the design process. Distinctive flavours include; Casse-Noisette - Hazelnut praline caramel with the Maison’s legendary Nutcracker spread, shot through with pieces of caramelised roasted Piedmont hazelnuts; Caramel Salted Butter - Delicate salted butter caramel, coated in white chocolate; and Rose-Passion - White chocolate ganache infused with rose and passion fruit, coated in white chocolate. Les Coeurs de Victoria Beckham will be available from Pierre Marcolini boutiques worldwide and coming to an exclusive pop-up in the Victoria Beckham Dover Street store from Thursday, 4th October with a further release in November.
