At this annual “buyers” fair the dealers are brought together to show the very best available in their specialties, and are passionate and knowledgeable about our heritage. A large proportion of them have shown with The Harrogate Art & Antique Fair many times building up friendships with their clients over the years. The thread of heritage, investment and sustainability has always run through this event as items for sale of this stature are hard to source, a fact appreciated by the collectors, interior designers and connoisseurs who come from far and wide to visit and buy at the Fair.

A Chef’s Life...

Andrew Pern The start of September marks the start of the partridge season and here’s a recipe, which should prove very useful for any household with a ‘gun’ (or a friend who shoots!) It has all the colours of autumn and he flavour combinations are delicious too.

Game on!

Rievaulx Red-legged Partridge with a ‘Beetroot Fondant’, Cumbria Speck, Buttered Brussel Sprouts and Walnuts Serves four Ingredients 4 partridges 4 bayleaves 100g Cumbria Speck, sliced A little rapeseed oil for frying 500ml game stock 1 tbsp redcurrant jelly Seasoning 12 sage leaves, deep-fried For the Beetroot Fondant: 2 medium beetroots, uncooked 100g butter 400ml game stock For the sprouts: 12 sprouts 16 half walnuts, shelled Seasoning Method Preheat the oven to 200°C/ Gas Mark 6.

Season the partridges and place a bayleaf onto each breast with a thin slice of Cumbria Speck over the top of it. Seal the partridge in a little oil in a hot pan, then roast in the oven for approximately 12 minutes. When ready, remove from the oven and allow to rest.

For the beetroot fondant, peel the raw beetroot and cut into 4cm thick discs. Cover the base of a pan with butter and press the beetroot slices down into it. Cover the slices with hot game stock and place in the oven for 15 to 20 minutes, until tender.

Bring water to the boil in a suitable pan, add a pinch of salt, then blanch the sprouts for 2 to 3 minutes, until tender. Drain and return to the pan, add the walnuts and toss together with a little seasoning.

Take the partridge, removing the Speck and place under the grill until crisp. Remove the partridge legs, then the breast from the carcase. Add the game stock and redcurrant jelly to the roasting tray, reduce down to a syrupy consistency. Check seasoning and keep warm.

To serve, first place the beetroot in the centre of the plate, with the partridge legs ‘leaning’ at the front, and the crown at the back. Alternate 3 sprouts and 4 walnuts at the side of the plate with deep-fried sage leaves on top of the sprouts. Place the crisped Speck over the top and pour over the juices. Serve immediately.

•••• Pet Health A Vet’s Life A vet’s life is very varied and one of the things that most vets enjoy about their job is the wide range of species, breeds and characters that come through the consulting room door. No day at Edgemoor Vets is like the last one!

In this month’s article we thought you might like to hear about one or two of the cases that came to see us recently. (The names of these patients has been changed to maintain their anonymity!)

Oliver was a young bouncy Labrador with the naughty habit of being a bit of a stone chewer.

His owner brought him to see the vet because he was not his usual lively self. He was off his food (which was unheard of), he had been sick a few times and the owner said he seemed unable to get comfortable at home. This started to ring alarm bells with the vet; these symptoms made us very suspicious that a stone may have got stuck in part of Oliver’s guts and was making him very poorly. An x-ray was needed to confirm this suspicion and there on the x-ray we could clearly see something was obstructing his small intestine.

The next step was to remove the ‘foreign body’ as we call it. Under general anaesthetic the vet opened Oliver’s abdomen, made a small cut in his intestine and removed, as was suspected, a large stone. All stitched back together Oliver woke up from his anaesthetic and was clearly more comfortable. A few hours later he was up on his feet, wolfing down some recovery diet.

He went home later that day and ten days later returned for his stitches out where the owner reported he was 100% back to normal. He left the consulting room happy and hopefully the experience had put him off stone chewing, but somehow we doubted it!

Tinker was an inquisitive little kitten who had just started to explore the outside world, she had free rein in her owner’s garden but was desperate to explore further. Unfortunately, this involved squeezing under the garden fence and rubbing along a newly painted shed! Poor Tinker came to see us covered in paint. Cats really dislike being dirty and clean

themselves using their amazing abrasive tongues. We were worried little Tinker was going to swallow some of the paint as she was licking herself. Luckily the owner had brought her straight down to the surgery, so it was bath time for Tinker! After a bubbly bath, with a special shampoo to remove the paint, Tinker was able to go home and recover from her wash and blow dry!

It's not just cats and dogs that we see here at Edgemoor; rabbits, guinea pigs, hamsters and other small furries are regular visitors. We also do quite a lot of work with The Wildlife Haven Charity based in Thirsk so we have had baby foxes separated from their mother, deer that have had their legs caught in barbed wire fences and many birds that need a bit of help to get back into the wild.

We all really enjoy the variety of animals that we see here at Edgemoor and we will never stop being amazed by the antics that some animals get up to! But although interesting ailments give us vets stories to tell we are equally keen to help you keep your pets (whatever they may be) healthy and out of trouble. •••Wine of the Month••• MILÚ D.O. RIBERA DE DUERO, SPAIN Milú seeks to bring back the tastes of past years in a fresh and frisky sip of wine.

A cracking wine for everyday and for everyone...

Producer Profile: Ribera del Duero is an area known for big reputations, big wines, and big oak influence… so we were pleased to come across winemaker Germán Blanco, a young winemaker who is championing a fresher style of Tempranillo. He calls his project a 'Micro-winery’ and it is a true family business, based around the village of La Aguilera in the Burgos province of North East Spain. He works with very old vineyards, many of which are planted at over 900 metres above sea level. German makes his elegant, fruit-forward wines using foottreading, wild yeast fermentation and minimal handling. All his wines share a delicious rusticity, purity of fruit, and incredible freshness.

Vineyard: Grapes are sourced from the vineyards near the village of La Aguilera.

Vines average 55 years of age and are planted on mainly clay and limestone soils with a planting density of 2,500 vines/ha. Altitude ranges from 870 to 908 metres above sea level. The vineyards are organic and biodynamic wine practises are adhered to.

Winemaking: The grapes are hand harvested with strict site selection, completely destemmed and fermented in 90% stainless steel and 10% open top oak barriques with minimal racking and punching down. Wine ages for a further 6 months in 400 and 500-litre old French and American oak barriques before being bottled unfined, unfiltered, and with minimal additions of sulphur.

Tasting Notes: Fresh and juicy, this roble-style wine seeks to evoke a sense of old Ribera del Duero. Aromas of ripe dark fruits, black cardamom, liquorice and peppery spices. Bright and pure, with great acidity and supple tannins.
