R

ichard McLane, Bisca’s founder and Design Director, is a time served blacksmith from a local farming family.

Whilst at school, for someone with an aversion to exams, the subjects of Art and Design had the added bonus of being done by continual assessment. Two years spent at York College studying design led to Northumbria University from where he graduated with a first class honors degree in Design, before setting up Bisca in 1994.

During his time at University Richard experimented with combining elements of steel, glass and timber into his designs, although tutors preferred students to specialize in a single medium. It’s this expertise that transforms a staircase or balustrade into an architectural masterpiece and has put Bisca at the forefront of staircase design and manufacture.

Richard says “both my parents were, and are creative, championing innovations in agriculture and bringing progressive Danish technology to a North Yorkshire farm. I learned to weld at the age of 10, and helped to build go karts, grain silos, stock pens, farm buildings and tree houses. In addition to this my father has an interest in aviation and my introduction to fine engineering was gained through watching him building gliders and auto-gyro’s.””

Like many students of design, Richard’s first foray into business was with a successful range of elegant handcrafted furniture and homewares, commissioned by clients such as Theatre Royal and Chez Max. The original portfolio included tables, chairs, bathroom and garden accessories, mirrors and lights. The name BISCA is actually derived from the materials Richard used in his early career Brass, Iron, Steel, Copper & Aluminum.

A chance encounter whilst exhibiting Bisca furniture at 100% Design Exhibition in London, catapulted Richard into the staircase business.

Local Life •••• Impressed by his creativity and the quality of the products on display, a property developer asked Richard if he could design him a staircase for his own home. Having absolutely no experience with staircases, Richard’s answer, of course, was yes!

Further staircase commissions for the Developers property portfolio followed. Two years later and Bisca not only had a nice collection of unique staircase designs, but were getting enquiries from other people who had heard about, or seen, their staircases and appreciated the bespoke nature and flawless finish.

Today, Richard’s ethos of quality, craftsmanship, timeless design and fastidious attention to detail is reflected in a thriving business. Last year saw Bisca working in Dubai, Russia, Saudi, Sweden, Jersey, Isle of Man, Isle of Anglesey and Bahamas. With enquiries up an astonishing 95% since the dark days of the recession, the future looks promising. Having outgrown the existing premises on Sawmill Lane, Richard is working with local architects, Bramhall Blenkharn, on an extension to the Bisca workshop to provide desperately needed space for the new projects and a growing team.

Richard says “I am lucky to work with a fantastic, hard-working and creative group of people who will attempt, and carry off, projects that other companies baulk at. Two recent examples were bronze panels for a building in Russia, and a wheelchair escape ramp for a special needs school; both clients admitted that having explored every possibility before contacting Bisca, no other company was even willing to consider the project - that’s not bad going for a small manufacturing company in the heart of North Yorkshire”

This is a great visual starter with the bright white squid tossed through a robust salad of flat parsley, shallot rings and diced, crispy black pudding ʻcroutonsʼ and wisps of fluorescent yellow English Mustard cream ʻpaintedʼ around to complete the picture.

Happy Cooking…

Pan-roast North Sea Squid with Flat Parsley Salad, Grilled Black Pudding and English Mustard Velouté (Serves Four) Ingredients 2 baby squid, approx 400g each 100g black pudding, cut into 1cm dice 50g flat leaf parsley 10g of thinly sliced shallot rings A little mixed herb salad mixed with 5ml of house vinaigrette and a dessertspoon of diced (1cm) bread croutons ½ lemon A little olive oil for frying or grilling

Next grill the black pudding on an oiled tray for 3 to 4 minutes until cooked and crispy.

Dress the parsley salad with vinaigrette. Mix in the sliced shallots, herb salad and croutons.

Place two small piles of Salad onto each of the gently warmed plates (use long, rectangular plates, if possible).

Place the Velouté onto a slightly higher heat and add the chopped parsley.

Carefully put the squid into a hot, oiled pan.

Season and sauté for 1 to 2 minutes.

To plate, arrange the squid with the hot, diced, black pudding onto the salad and lightly spoon around the mustard Velouté. Garnish with garden herbs and a squeeze of lemon over each salad. Serve immediately.

For the Velouté 175ml glass of white wine 50ml fish stock 100ml of cream 1tbsp English mustard 1tbsp chopped flat leaf parsley Method: Firstly clean and prepare the squid. Clean out the tube or body sac. Remove the quill and also the ink sac, depending on the age/size of the baby squid. Cut the tentacles from the body and divide in half, keeping them all intact for presentation. Slice the body or tube into rings, wash thoroughly and keep refrigerated.

To make the Velouté, reduce all the ingredients for the sauce to coating consistency (by approximately two thirds), when at this point, set aside and keep warm.

FUNGURUME BISCUITS Supplied by Christine at Ingleby Manor This recipe was given to me by a friend who had spent several years in the Bush in Africa where she had to make the most of store-cupboard ingredients.

Make them small and dainty for coffee time, or larger for taking on picnics, horse-trials etc.

INGREDIENTS:

METHOD:

1 lb butter (must be butter) ¾ lb caster sugar 1 large tin condensed milk 1.5 lb self-raising flour Pinch of salt

Flavourings, e.g.

Coconut, currants, mixed spice, glace cherries, roasted nuts, chocolate chips, whatever you fancy, in whatever combination.

Oven at 300 deg.

Cream the butter and sugar.

Stir in condensed milk, fold in flour and salt.

Add flavourings.

Make into small, marble-sized balls.

Space well on baking trays, flatten with a fork.

Bake 10-15 minutes till lightly brown. Do not overcook.

Will keep very well in air-tight containers.

Pet Health The Big Tick Project Here at Edgemoor Vets, we are taking part in the ‘Big Tick Project,’ which you may have seen or heard being advertised in the national media, supported by naturalist Chris Packham.

Scientists at the University of Bristol are investigating the diseases, in particular Lyme disease, carried and transmitted by ticks across the UK. This is of interest not only to us as vets but also to those in the medical profession as we are at risk of infection too.

The aims of the research are to learn how many ticks are out there and where the hotspots are. It is also hoped that scientists will be able to use the data they collect in combination with pre-existing maps and models to try and predict what is going to happen in the future. This will help us, as vets, to provide the best tick prevention and treatment.

It is known that ticks are becoming more widespread and increasing in numbers across the UK. They are also feeding for more months of the year from spring to autumn, partly because we have had wetter summers and warmer winters.

With this increase in numbers there is a worry that we will see more infections that have been transmitted by ticks in animals and in humans. Hopefully this project will shed some light on the current situation and give us an idea of what to expect in years to come.

Lyme disease is just one potential disease that can be contracted through a tick biting and feeding. There was a 3-fold increase in human cases between 2001 and 2011. The disease is treatable if caught early enough – but reaching a diagnosis is the tricky part and long term complications can occur.

There is a large range of different products for preventing and killing ticks on the veterinary market now and it can be confusing to know which one is best for your pet.

There are spot-on formulations for cats and dogs, and we now also have a new tablet for dogs that gives 3 months of continuous protection against fleas and ticks. Please give us a ring and make an appointment to check what you can be doing to keep your dogs and cats as safe as possible. Please remember that if you are going abroad and taking your pets with you under the Pet Travel Scheme, although it is not compulsory to treat your dog for ticks before re-entering the UK we advise that it is best for your dog to be protected against ticks while you are away.

It is also in the interest of keeping the UK free of different species of tick and tick-transmitted diseases to have your pet up to date with treatment when travelling.

In order to carry out the research, Bristol University need us to send ticks collected from dogs to them to perform testing. This is where you come in! We will be checking as many dogs as possible (sorry to all you cat owners out there, but cats are not invited to be part of the research!) over the next few months and may have a short questionnaire to fill in with you. If you can spare us a few extra minutes of your time to complete this that would be very much appreciated.

•••Wine of the Month••• Tyrells “Lost Block“ Heathcote Shiraz 2012 A little about the Tyrell family English immigrant Edward Tyrrell established Tyrrell's Wines in 1858 in the lee of the Hunter Valley's Brokenback Range, New South Wales. This land has become recognised as home to some of the Hunter Valley regions finest vineyards, and the basis for development of one of Australia’s most successful privately owned wine companies.

Today, Tyrrell's premium vineyards extend from their legendary home in the Hunter Valley to other distinguished grape growing regions of Australia including McLaren Vale in South Australia and Heathcote in Victoria. The fourth and fifth generation of this family are still very much at the heart of the vineyards.

Lost Block range The Lost Block range was named following the 1993 vintage when it was mistakenly allowed to ripen for a longer period than usual. Head winemaker Bruce Tyrell states ”You could say we literally lost the block!” Over the years, a number of wines have joined the Lost Block label, all deliberately crafted in the same soft and approachable style that has made Lost Block Shiraz such a success.

Lost Block Shiraz is sourced from the premium Victorian grape growing region of Heathcote. The fruit is harvested in the cool of the night and then transported to the Hunter Valley for fermentation.

Tasting Note On the nose this wine shows fragrant perfume of dark fruits, cocoa, white pepper, violets and a hint of French oak. On the palate this elegant wine shows balance, depth and precision, with the dominant characters of rich Shiraz plum, cinnamon and chocolate being ever prominent.

This wine is very well balanced with super soft silky tannins. It is fruit-laden, fresh, vibrant and easy to drink - a must try for fans of Aussie Shiraz!!!
