LOIC BRUNI Age: 13/5/1994 Sponsors: 100% eyewear, O’neal shoes. Home Town: Cagnes Sur Mer, France Years spent riding: Since I was 7 years old. I started with my dad, who was also an MTB and Enduro motorbike rider. Greatest Achievement: 2012 Junior World Champion. You had a great season last year becoming Junior World Champion, what are your goals for 2013? I don’t want to put too much pressure on myself but I want to consistently be in the top 15 Elite. I will also try to be back on the box during the season, on tracks like Hafjell maybe… How do you think you will handle the step up from Juniors? I used to train and race with my teammate Blenky. I also went to New Zealand during last winter where I began racing with Elite (I finished 3rd at NZ Champs). So I think I’m ready to step up now… Who do you admire in the Men’s category? Cedric Gracia, because he’s fast and absolutely crazy and Gwin, because he’s got such a professional approach. What is your favourite place in Morzine? Chez Roger! You want to know which track? It’s on the local’s trail that my friends shaped.

Greatest Achievements: 2 times World Champion and French Champion 2012. How does it feel to be on the Lapierre team for 2013? I know the mechanic and manager pretty well because we were in another team together years before. The atmosphere is just like a family, but they still give us feedback and push us with professional tips to improve our results. I was in New Zealand last winter with Sam (and Loic) so now communication is super smooth with our team Kiwi!

Have you approached this season any differently than usual? Yes, definitely. Firstly, I’ve changed the relationship that I have with my coach. I have also been working on my settings and given the feedback to my mechanic Jack. I have to keep that secret though because I think it will be part of my success in the coming season! What are your goals for the 2013 season? World Champion in South Africa and I also want to win the World Cup overall. You know the Portes du Soleil really well. Where is your favourite place to ride in the area? Les Gets is really fun to ride because there are a lot of tracks in the woods that only locals know… Chatel is steeper, but it’s also a good place to train during the season.

Greatest Achievements: Schladming World Cup winner, 3rd World Championship in 2011 and 3rd World Cup overall in 2009. What are your goals for the 2013 season? I definitely want to be back on podiums. I had some problems last season and I want to forget them. The pace of the Men’s field has exploded in the last couple of seasons. Have you changed your training to combat this? Yes, for sure. I changed my type of ride, I’m using clips this year instead of flat pedals. Everybody is working hard but then if you don’t C want to disappear, you have to work.

What’s your favourite track to ride in Morzine? I’ve spent a lot of time on theY Pleney track – it’s got some good shortcuts. It’s a great place to train because the lifts are goodCM and the tracks are fast but not too dangerous. The town also offers pretty great service andMY accommodation.

Blenky is amazing - he gave me the nickname Prawn! I love riding with him and my friend Loic Bruni. What races will you be doing in 2013? All the UCI World Cups, National Championships, both Crankworx and the Enduro World Series. Who do you admire the most on the World Cup circuit? My teammate’s Loic and Sam. I also like Minnaar…he’s a real pro and a respected rider. What are your goals for this coming season? Unfortunately, I crashed hard at Fort William in May so it will be a slow start and then I hope to pick it up and learn a lot on all the tracks. Thanks team!

This lovely combination is a simple twist on the long standing classic gin and tonic, giving it a nice summery manipulation. It's as easy to make as it is to drink. This summer we’ll be taking you into the great outdoors to find the best of foraged ingredients in the Portes du Soleil. Always be careful about where you go foraging as you may need the landowner’s permission…if unsure, you can find out more at the area’s Mairie. It will definitely be worth it when you’re busy creating homemade goodies from this yummy lot!

Lavender This beautifully fragrant herb can be found throughout mountainous regions and the good news is that wild-growing, high altitude plants are among the best. They are known to produce the finest and most expensive lavender oil, which means that not only can you find a great ingredient for free but it is actually among the best in the world! Search for lavender in exposed areas that get lots of sunshine as they can thrive in arid conditions. Lavender has become an increasingly popular ingredient and is so versatile in both savoury and sweet recipes. Lavender is quite a strong flavour and as such, the best results are often with recipes where the lavender is used to infuse rather than eaten straight as part of the meal! We particularly recommend using your freshly-foraged lavender to make a lavender fragranced aioli, marinades for your BBQ meat or whizz it up with strawberries, mineral water and white wine for a delicious summer drink!

Wild Garlic By June, this fragrant plant will be flowering with beautiful white blossoms making them easier to spot than earlier

in the season. Wild garlic likes to grow in moist ground under dappled shade and so, thrives in alpine regions with the healthy summer rainfall and vast wooded areas providing shade. Do be careful when foraging for wild garlic in June as the white flowers mean it can look very similar to the poisonous Lily of the Valley. To safeguard against making this mistake you can rub and crush some of the green leaves in your hands, if there is a strong smell of garlic then you have picked correctly. Don’t worry though, Lily of the Valley is only toxic when ingested so it’s perfectly safe to rub in your hands! Wild garlic is great for reducing cholesterol and high blood pressure so it’s got health bonuses as well as a bold flavour. You can use wild garlic in similar ways to chives as a herb but bear in mind it is much stronger so you don’t need very much to give your meals a garlicky undertone. We recommend making a wild garlic pesto – delicious!

Elderflower Elderflower is a wonderfully fragrant flower that has been popular for making cordial for years. When collecting elderflowers it is important to use only the white elderflowers on the plant to ensure the best quality yield. Tiny insects are experts at hiding inside elderflowers so be sure to check when you’re foraging and try to get rid of them before collecting. When you get your elderflowers home it is important to use them quickly so that they do not start to wilt and you get the freshest flavours. To make a batch of elderflower cordial, add two kilos of sugar to 1 litre of water


and heat until dissolved. Add as many elderflowers as possible to the mixture and press down with a wooden spoon, boil the mixture and then set aside covered with a tight lid. After a week, stir the mixture then strain through a cloth and pour in to a pre-cleaned glass bottle. Mix the syrup with fresh water and ice for a deliciously refreshing summer drink or mix with gin…depending on the day you’ve had!

Words by Phil Smith The Tour du Plateau de Loex (or Jacquicourt in local parlance) and Mont Chery Circuit are two of my favourite early season/cross country trail rides you can combine into one big route. You can do all of it in a day with a little bit of cross country fitness or choose one of the two loops as they both add up to a big day out especially if you are headed out from Morzine. Both are easy to follow via a “La Carte MTB Map” from the Tourist Information Office and are well signposted en route. These routes are a perfect introduction for those new to Alpine riding and are accessible and enjoyable for everyone from trail centre riders to those who prefer more natural terrain in national parks and the like. If you are starting off in Morzine, the easiest way to access Les Gets is via a 20 minute gradual pedal up the road. There is also a back/off road route up the Route de Liberte (marked on the map). Once in Les Gets you can take advantage of the lifts and use the Chavannes Express to gain some altitude and have a rest before the next pedalling section. The circuit is marked as a black run, not because it is technically very demanding as per the black downhill runs (although there are some “tasty” sections to watch out for) but because it is a longer cross country route. The majority of the route is of intermediate standard with some easy gravel roads (not when they go up but the ups are

short), more demanding four track with nice rocky outcrops, loose cobbles and the odd root to deal with and some really nice singletrack through the woods. It’s varied terrain - something for everyone. There are some stunning views of Mont Blanc to be had as you clear the first steep gravel four-track climb to Lairon above the Chavannes bowl. In fact there is a little disused Chalet square looking on to the big mountains, a great spot to sit and have a snack. The other thing to go and have a look at is the Chapel the circuit is named after – Chapelle de Jacquicourt, keep an eye out for the signs. You should be in Les Gets around lunch time assuming you set off first thing (from Morzine) – plenty of food options here! The afternoon loop is the Tour du Mont Chery. Technically it is a little easier than Jacquicourt and is also a shorter loop so it works well on its own for less fit riders or those short of time. From the top of the Mont Chery telecabine follow the route markers for the Tour du Mont Chery along a gently climbing four-wheel drive track. The climb is only followed by a really nice gradual descent to Mont Caly. The next section has a number of short steep climbs interspersed with very gradual climbs through woods on lovely singletrack. Then a final descent to Encrenaz where there is a water trough to cool down and a little café to grab a coffee and a snack should you need it.


The next section of trail to Les Placettes is known as the “Dangerous Trail” as that is how it’s signposted. It’s single track but suitable for inexperienced riders as long as you exercise caution on the short steep descent and ascents – it’s easy to walk the section if you don’t “fancy” it. The danger comes from exposure to your left but the trail is relatively wide (approx 2m) so it’s no tightrope walk. The rest of the trail is relatively sedate descending to Les Gets. If you have come from Morzine and need to get back, there are many choices available. Via the road is the quickest and downhill all the way. Return via the Route de Liberte and Les Nants which is a reverse of the way to Les Gets, a little off road and some back roads. Or take the Chavannes express and return through the off road and mostly downhill route via Grand Pre, Atray and finally Morzine. Atray is a great little mountain refuge to stop for a cider and crepe at the end of a truly great ride. This year marks the amazing 10th anniversary of the Pass’Portes du Soleil bike race and it just keeps getting better every year. The route takes riders around the best of the Portes du Soleil over the 28th, 29th and 30th June on an 80km circuit using 15 lifts. Chatel will host the MTB show this year so it’s easy to access whether you’re staying in Les Gets, Morzine or Avoriaz. Altogether, 6155 people will take part in the event across the Friday, Saturday and Sunday. The riders will travel through Avoriaz, Chatel, Les Gets, Morzine and Montriond in France and in Switzerland through Champery, Morgins, Torgon and Les Crosets all in one day! See you there!

Sharif Gergis, Head Chef at La Ferme du Lac Vert in Montriond shares a recipe this month. This summer he will be opening a pop up restaurant in this stunning Savoyard farmhouse renovated in 2010.

(Chicory, Lambs Lettuce, Watercress) 1 pinch Beetroot Sprouts 50g Brioche Croutons Beetroot:

Salad of Organic Beetroot and Saint More de Touraine Goats Cheese with Walnuts & Brioche

Warm Jelly

Sweet beetroot and tangy goats cheese are a perfect match. In this light summer salad they are combined in a range of textures and temperatures designed to accentuate their marriage.

Juice 3 of the large beetroots. Pass the juice through a muslin cloth. Measure out 425mls of beetroot juice and add the port, balsamic vinegar, lemon juice and sugar. Season to taste with salt. Combine well.

Ingredients (serves 4) 3/4 Large and 4 Baby Organic Beetroots 35mls Red Port 20mls Balsamic Vinegar 20mls Lemon Juice 100g Caster Sugar 3.5g Agar 350g Fleur de Sel 55g Egg White 300g St Maure De Touraine Goats Cheese 1 Leaf Gelatine 100ml Whole Milk 100g Panko Breadcrumbs 50g Fine Herbs (Chervil, Tarragon, Chives) 150g Mixed Salad Leaves

Reserve 200mls of this seasoned juice and place in a pan. Reduce to a syrup over a high heat and set aside. Add the agar to the remaining 300mls of the juice and bring to a boil for 5 mins whisking continuously. Pass through a fine sieve into a tray lined with cling film and place in the fridge for 20 mins or until set. Cut into squares and refrigerate until needed. Salt Baked Combine the fleur de sel and egg white in a bowl. Encrust the baby beetroots in a generous quantity of the salt mixture. Bake at 160 degrees for one hour. Allow to cool before removing the salt crust. Peel the skin from the beetroot using a small knife and cut into wedges.


Toss the wedges in the reserved beetroot syrup and seal in a vacuum bag using high settings. Place in the fridge for at least 3 hours and up to 24 hours to allow the syrup to be absorbed. Carpaccio Slice the remaining beetroot as thinly as possible using a mandolin. Cut small circles from each slice using a pastry cutter. You will need roughly 3 pieces per person. Store between oiled sheets of clingfilm and refrigerate until needed. Powder Dry the remaining slices and trimmings of beetroot in a dehydrator set to 65 degrees C for 1 hour. Lower the temperature to 45 degrees C and dehydrate for a further 24 hours. Blitz in a spice grinder with a pinch of fleur de sel.

Bon Bon Soften 100g of the goat’s cheese and roll into 4 balls. Blitz the Panco breadcrumbs with the fine herbs. Double pané and refrigerate until needed. To Serve: Reheat the salt baked beetroots in a water bath set to 60 degrees Celsius or warm gently in a pan. Arrange on the plate along with three pieces of the carpaccio. Season the carpaccio with a little fleur de sel. Place the beetroot jellies, brioche croutons and walnuts in an oven preheated to 180 degrees Celsius for 5 minutes. Deep fry the goats cheese bon bons until golden brown, season with salt and add one to each plate. Break the remaining goats cheese into uneven pieces and scatter around the plate along with the piped mousse. Add the warm jellies, brioche croutons and walnuts. Garnish with the beetroot sprouts, powder and syrup and the dressed and seasoned mixed leaves. Serve immediately. Sharif's pop up summer restaurant will consist of a regularly changing eight course tasting menu served to a maximum of 8 diners on Friday and Saturday nights and must be booked a minimum of 2 days in advance.
