Eat When in Stockholm, sample meatballs made of reindeer and moose. I had some during my first ever meal here, at a bar called Ardbeg Embassy in Gamla Stan (Old Town). You can also try the dish at Meatballs for the People, a trendy joint in Södermalm.

For dessert, head to Café Saturnus, which serves up the best and biggest kanelbullar (cinnamon roll) in the city.

See Situated in the middle of Stockholm, the island of Djurgården is home to fun attractions like Skansen (an open-air museum and zoo), ABBA: The Museum (which pays homage to the iconic Swedish pop band) and Gröna Lund (a popular amusement park).

Do Fika is ubiquitous in Sweden. Loosely translated as “coffee break”, it’s a tradition that sees locals enjoying a cup of coffee alongside a sweet treat like kanelbullar or kardemummabullar (cardamom roll). It also entails taking a break from work and socialising with friends and colleagues.

In terms of transportation, it’s quite easy to explore Stockholm’s main attractions by foot. There are also cycling paths throughout the city and bikes for rental during the summer.

place where we could be inspired daily by the beauty of our surroundings,” Clark reflects.

“We wanted to create a life where we could combine our skills and work together.” So Foxfire Mountain House was born.

Located in Mount Tremper, in the shadows of Slide Mountain, the tallest peak in the Catskills, Foxfire brings a bohemian flair to its four hectares, as opposed to Scribner’s smart design and the Foster properties’ edgy rusticity.

The couple spent two years renovating the hundred-year-old inn largely themselves, appointing the 11 guest rooms, three-bedroom cottage and all the common areas with worldly touches like Moroccan tiles and silk sari curtains from India, juxtaposing them with natural elements from the region – everything from butterfly collections to antlers and branches.

Clark, a former television producer, focuses on design and Trojian, a chef, runs the kitchen and just-opened outdoor fire pit, where the couple envision guests enjoying fare like oysters and spicy sausages, while hanging out and listening to music on the grounds.

In other parts of the Catskills, the focus on foraging and farm-to-table dining means that some places are restaurants first and inns second. Inez Valk, a former model, moved from Brooklyn to Bloomville in the western Catskills after being drawn to the community she saw and met there on frequent visits. “I wanted to be closer to the independent farms; foraging, preparing and eating fresh, whole foods and working with my hands,” she says. Six years ago, she and her then-husband went on to open Table on Ten, a 28-seat restaurant and threeroom inn in a refurbished house from the 1880s. Table on Ten became almost a prototype for the kind of business that is currently rolling in the area. “The area has changed since we opened,” she acknowledges. “There was almost

Kowtow Architecture is a major source of inspiration for clothing designer Gosia Piatek, and her Kowtow line of womenswear plays with structure, volume and dimension.

The Neighbourhood Studio When newly minted art school graduate Eloise Evans found a screen-printing space in a former pressed-tin factory, she decided to throw her doors open and create a community art studio.

Evans decorated it with knick-knacks and filled it with supplies: emulsions and inks, a

large print table, a wet room and a darkroom. The Neighbourhood Studio hosts beginners’ classes in screenprinting, as well as dyeing, calligraphy, woodblock-printing and other skills.

There’s a small shop, and the odd craft market takes place on weekends.

Finally, he took over a former bookstore on Ghuznee Street, removed the narrow row of shelves, installed a poured-concrete table and filled the space with some of New Zealand’s best examples of fine craftsmanship: Goldsworthy Studio furniture, Wayward St. bags and ceramics and jewellery by local artisans. 05 And yet for all that the area had to offer, he also noticed there weren’t any particularly stylish places to stay. “You could see the demand far exceeded what was offered,” says Chodock, who now splits his time between the city and Hunter, catering to a broad base of guests, from groups of friends to young families looking for a fun and relaxing getaway.

Sims Foster, who was born and raised in the Catskills and worked in hospitality out of Manhattan for 20 years, saw the same opportunity to connect with people who were curious to explore the area. Since 2014, he and his wife, Kirsten Harlow Foster, have opened not one, but four inns across the towns of Livingston Manor, North Branch and Callicoon in the southwestern pocket of the Catskills. “The visitors finding us, and the area, have a real sense of adventure,” he says. “We rarely get the pragmatic ‘I need a place to stay’ kind of guest. They want an experience.”

As such, each of their four properties leans into a different vibe to speak to different travellers. The four-year-old Arnold House attracts a younger, lively crowd with its pool table, jukebox and local bands playing in the barn on summer nights. Quiet and romantic, the North Branch Inn offers classic Americana, right down to the working two-lane bowling alley located in the open kitchen. Meanwhile, Nine River Road, which debuted in 2016, backs up to the Delaware River so kayaking, canoeing and simply watching the water is great for groups seeking fun and action. And at the polished new DeBruce, the focus is equally on the outdoors and an unforgettable culinary experience. It is located on 240 hectares with hiking trails, fly fishing and welcoming lounge chairs to sit in and read a book. You could stay and never leave the property, especially since days are capped off with a nine-course dinner created by executive chef Aksel Theilkuhl using ingredients primarily foraged on the grounds.

Clearly the resorts of today differ from those of yesteryear. Not only are they smaller and more intimate, but they channel the creativity of their owners and are in tune with visitors’ desire to escape to the country without leaving behind little luxuries.

When Eliza Clark and Tim Trojian started looking to move to the Catskills from Toronto, they had very specific requirements. “The main thing we wanted was a true connection to a

6,4 northeast region, in late 2016. When he and his previous partner took over the defunct space, they remodelled it with a modern mountain aesthetic that balances sophistication and rusticity.

Each of the 38 rooms features custom furniture and vintage rugs; some have potbelly stoves and sleeping lofts, and many have small decks where you can enjoy a seat in an Adirondack chair and take in the fresh air and view of Hunter Mountain, the most popular ski resort in the area, which lies just across the street.

Chodock himself, a management consultant and private equity investor before opening Scribner’s, was charmed by the Catskills when he first started exploring it. “What I love about the Catskills is that [they are] a year-round destination. There’s sunbathing in the summer, leaf peeping in the fall; it’s great to go skiing or snowshoeing in the winter and biking in the spring.”

It was something that proved more difficult than he expected. Zonfrillo says that though he loved Sydney, he noticed that Aboriginal culture and its culinary heritage didn’t seem to occupy the honoured place it deserved.

Many of the country’s top chefs told him that Aboriginal food traditions simply weren’t worth exploring, that there was no “cuisine” to discover. “So in 2001 I left the kitchen because I couldn’t cook what I thought I should be cooking here in Australia,” he says. That was the day Zonfrillo wandered around Sydney Harbour, winding through the cobbled lanes of The Rocks and discovering Jimmy down at Circular Quay. “I sat down with him and had a four-hour conversation that changed my life.”

Jimmy told beautiful tales of the innate connection Indigenous people have to the land. He explained that in old times, when the tea tree bloomed, communities would come together for a corroboree, a spiritual dance to celebrate the Dreamtime. “But they also organised the corroboree because of food,” says Zonfrillo. “They knew that the tea tree only blossomed when snapper were migrating up the coastline. The trees were sending a message that the snapper had arrived, so they held this big event to hunt the fish and have plenty of it to eat.”

Zonfrillo was floored. It was a connection to nature beyond anything he had heard about previously. He realised that people had misunderstood the complexity of what he saw to be the world’s oldest living cuisine.

t was a chance encounter almost 20 years ago with an Aboriginal busker named Jimmy, on the waterfront walkways of Sydney’s Circular Quay, that changed Jock Zonfrillo’s turbulent life forever.

The salty Scottish chef is now the driving force behind Adelaide’s Orana, one of Australia’s most progressive restaurants in the vanguard of places championing native Australian ingredients. Others include influential fine-dining establishments such as Attica in Melbourne, whose head chef Ben Shewry had an episode of Netflix’s Chef’s Table dedicated to him, and Peter Gilmore’s restaurants Quay and Bennelong in Sydney.

Back in the ’90s, Zonfrillo had been one of London’s bright young cooks, braising pig’s trotters inside the frenetic, three-Michelin-starred kitchen of the Restaurant Marco Pierre White. It was the dawn of the celebrity chef era and Zonfrillo’s boss was perhaps the very first one. Culinary luminaries such as Gordon Ramsay had trained under White, who had even been dubbed the godfather of this new “art on a plate” style of cooking.

European royals, Madonna and princes from the Middle East were just some of the regulars Zonfrillo cooked for.

White’s kitchens were notoriously high-pressure, but the chefs partied as hard as they worked. This was the hedonistic decade of Britpop, Ministry of Sound and Kate Moss, after all. Zonfrillo’s wild lifestyle, however, also included sleeping on the streets. But on the last day of 1999, he packed up and moved to the other side of the

Where is the pipeline built?

The new Murnane pipeline is needed to meet future water demand in the city area, which is expected to double by 2060.

When will it be completed?

About half of the 22-km pipeline will be laid underneath the Rail Corridor from Bukit Timah to Tanjong Pagar. After the pipeline has been laid, the surface of this stretch will be reinstated as a contiguous green space.

Commonwealth Ave to Jalan Kilang Barat Closed from Q2 2016 Reopen by Q4 2018

PUB and the respective government agencies have engaged various community members such as residents of nearby premises, rail corridor users and relevant interest groups at different stages of the project to ensure that this project, while ensuring water supply for the city area in the long term, will minimise any inconvenience to the community and cause minimal impact and disruption to the surrounding environment.
