WORLD OF GIN Foreword

Gin, flavored, distilled, colorless to pale yellow liquor made from purified spirits usually obtained from a grain mash and having the juniper berry as its principal flavoring ingredient.

The name of the beverage comes from the French name for the juniper berry, genièvre, altered by the Dutch to genever and shortened by the English to gin.

Gin likely traces its origins to liquors produced back in the Middle Ages, with references to a spirit flavored with “genever” referenced in a 13th Century Flemish manuscript.

By the 1600s, the Dutch were producing gin in earnest, with hundreds of distilleries in the city of Amsterdam alone.

The reason many bartenders and master distillers love gin is its versatility as a spirit, and the reason for that is that it doesn’t have a singular flavor ; every single brand and edition has a completely different taste profile.

However, beyond that, there are hundreds of different botanicals that can be combined in different ways to produce a completely unique flavor for each gin.

FLIGHT GUIDELINES

GIN FLIGHT GUIDELINES. The world of gin has amazingly become vast and complex.

To help you navigate our marvelous gin collection we have split the gins into the following categories:

LONDON DRY London Dry Gin doesn’t necessarily have to originate in England, but it is where the style originated. Juniper is typically the most immediately detectable botanical component of a London Dry Gin, with citrus, angelica root, and coriander rounding out the back end. Most London Dry Gin producers bottle their gin at a high proof, making the spirit very versatile for both shaken and stirred cocktails.

Modern | 03

MODERN New expressions of gin are appearing all over the globe seemingly every day, from Spain to Japan, Brazil to the United States.

Freed from the traditional botanical trappings of the London Dry style, many contemporary gin producers craft their spirits as direct reflections of their geography, incorporating local roots and botanicals.

To explore how best to use more niche gins, try using them in a Martini first, then move on to more complex cocktails like a Negroni.

OVERPROOF AND NAVY STRENGTH Gin has a rich history within the British Royal Navy, for centuries it was issued to all ships sailing the high seas.

Traditionally, to prove its strength and quality, it had to be able to wet and ignite gun powder. Over time it was deduced that the lowest proof for this experiment to succeed was 114 proof, or 57% abv (alcohol by volume).

This higher proof makes the gin and the botanicals shine.

Overproof And Navy Strength | 04

BARREL-RESTED The classic gins do not require any period of ageing. But in recent years we have seen gins appear that are made in the traditional way; however, they differentiate themselves on one important aspect. The gins have been refined with a brief ageing period in barrels, similar to the tequila reposado.

The goal of the ageing is to develop new aromatic nuances. The result is an aged gin. They are not intended to be mixed and should ideally be enjoyed on their own. Once upon a time, all gins would have been stored and transported in a barrel!

OLD TOM One of the characteristics of this classic style of gin is that distillers make it the old-fashioned way, an older style of gin that has a rich, malty mouth feel and a distinct citrusy sweetness.

They sweeten the gin and there are more vegetal notes in the flavoring. Old Tom Gin gets its name from the pubs that sold gin illegally during the time of its ban in London. The name harks back to the signs of the Old Tom cat which used to hang outside these pubs.

06 | Old Tom

SLOE GIN The base of a Sloe gin is an Old Tom gin or a classic gin. The distiller then sweetens and flavours the liqour with sloes through maceration. Sloe gin originated in Britain and Sloe gin refers to the use of the sloe fruits. These slightly acidic and bitter fruits are what give the characteristic flavour to the gin.

After the maceration, the sloes are removed, and the drink is filtered and then bottled. The alcohol content will be around 25-30%.

06 | Sloe Gin

GENEVER This is a Dutch gin which is made from alcohol distilled from cereals and flavoured with juniper. The distillation process to make genever does not seek to produce a neutral liquor as is done with gin. On the contrary, the process tries to maintain part of the flavour of the cereals, just as it is done when making whisky.

There are several families of genevers (Jonge (young), Oude (old) and genevers with fruits).

SEVEN WONDER BOTANICAL OF GIN

JUNIPER is to gin what hops are to IPAs: It’s not gin without it.

The word gin is derived from juniper, whether the French genièvre or the Dutch jenever. Juniper is grown around the world and has dozens of different varieties. In ancient times, juniper was used as a spice and for medicinal purposes. Taste-wise, it’s dominantly pine-flavored and is responsible for the Christmas tree notes most commonly associated with gin.

CORIANDER is the dried seed of the cilantro plant and originally hails from southern Europe, north Africa, and southwest Asia.

It has a complex taste that’s a little spicy and citrusy, and nutty when crushed. It’s an easy complement to the flavors of juniper.

ANGELICA The third most used botanical. Usually the root.

Musky, woody and more earthy than the other spices in the ‘holy trinity’. Known as a fixative spice to help the others shine.

NUTMEG A staple on spice shelves and native to South East Asia. Another warming, spiced botanical that gives gins some extra length on the palate. Used widely in cooking, cosmetics and gin.

10 | Angelica, Nutmeg

ORRIS ROOT comes from the iris flower and looks similar to ginger. It has a floral and sweet aroma that’s common in perfume as well as gin. It also adds an earthy and woody flavor.

LEMON Lemon is used throughout the culinary world to brighten food and drink. Gin cocktails often have a lemon twist as well, accentuating the citrus flavors. In gin, lemon notes come across primarily as zesty and sweet lemon peel.

Orris Root, Lemon | 11

CASSIA BARK The cassia tree is a relative of cinnamon and is originally from southern China. The bark is harvested and dried and strongly resembles the spicy hot bite of cinnamon and cinnamon-flavored products. Cassia is, however, just a little sweeter than cinnamon with a licorice-like flavor. It has a delightful pungency that adds warmth and depth to a gin.
