Faith, Friends And Safety Nets

if just escaping a near miss accident.

I loved watching these two little friends take on the ocean. They waited for and flung themselves into only the largest waves with wild squeals of glee and laughter, again and again and again. It wouldn’t have been the same if they hadn’t had each other to revel in this shared experience the ocean had to offer.

When I painted this watercolor, I chose to leave out the man in the ocean that was in my reference photo.

I saw him as a distracting element, even though he was the father of one of these little girls. He was strategically positioned as their safety net just in case the undertow became a little too 14

strong or the water a little too deep.

I’ve since wondered if leaving him out was a mistake.

Weak chuckles would follow and weaker attempts of, “Oh, that’s good to know,” as they wandered away in search of more calming paintings of children building sand castles far from the ocean’s edge.

I’ve had ocean wary mothers with high lifeguarding instincts audibly gasp and clutch their hearts when looking at this painting, which I light-heartedly titled, “Surf ’s Up.” These mothers only saw peril and danger, not fun and adventure and did not think the title amusing.

Not the biggest risk taker in the world, I still cherish how those two little girls took on the ocean. I like to imagine them grown-up and taking on life in the same way, with lots of friends, fun and gusto.

I would quickly show them the reference photo and say, “But one of their fathers was out there in the deep in case anything happened.” They would let out the breath they had been holding as

Flax Seed Whole Wheat Muffins 1 1/2 cups Oat Bran 1 cup whole wheat flour 1 cup ground flax seed 1/2 cup wheat germ 1/2 cup cracked wheat 1/2 t. salt 1 T. baking powder 1 t. baking soda

1 cup brown sugar ( I use the Splenda) 1 T. cinnamon or pumpkin pie spice 1 cup buttermilk 1/4 cup canola oil ( I use olive) 1 1/2 cups unsweetened applesauce 2 eggs 1 1/2 cups dried fruit (I use cranberries or mixed berries, it calls for raisins)

Preheat oven to 375°F. Spray muffin tins with Pam or other spray. In a large bowl, combine all dry ingredients, and stir together. Combine all wet ingredients in a separate bowl and stir with wire wisk.

Spoon into muffin tin---3/4 full.

Bake about 15 minutes, or until the center springs back when touched.

Cool in pan about 3 minutes, then remove muffins and place on wire rack to cool completely.

“I am not without hope that through your efforts and example, we shall yet see it a country abounding in wine and oil. North Carolina has the merit of taking the lead in the former culture, of giving the first specimen of an exquisite wine, produced in quantity...Her Scuppernon [sic] wine, made on the south side of the Sound would be distinguished on the best tables of Europe for its fine aroma and crystalline transparence.” This is a quote from a letter written in 1816 by Thomas Jefferson to the vintner Colonel G. Hutchins Burton of Halifax. Who am I to disagree with the first American wine connoisseur, the writer of the Declaration of independence and the 3rd President of the United States?

The Scuppernong grape is one of several varieties belonging to the biological family of Muscadine grapes.

While 99% of the wine grapes are called by the name vinifera, which means of European origin, the Muscadine grape is American.

Examples of the Vinifera wines are the Chardonnay, Merlot and Syrah. The Muscadines are mostly found in the southern states but one of my sources said some of these vines are planted in the Ukraine, which keeps this topic relevant to world happenings.

Many explorers who came to our eastern shores found the Muscadine grape flourishing along the coast. The

famous 400-year-old Mother Vine located on the Outer Banks is of the Muscadine family. Historically Muscadine grapes made North Carolina the leading wine-producing state shortly after the Civil War with the wines popular throughout the country.

North Carolina’s first famous wine producer, Paul Garrett, made wine from the Muscadine grape and named the wine after the first born on this continent of European descent, Virginia Dare. Of course, our significant wine industry was ended in 1919 with the passage of the 18th Amendment, creating 13 years of alcohol prohibition.

Today the largest producer of Muscadine wine is the Duplin Wine Cellars of Rose Hill, (NC). In the Yadkin Valley American Viticultural Area we have a winery called Garden Gate Vineyards that has been producing Muscadine wines since 2004. Bob and Sonya Whitaker of Mocksville started producing wine for their own consumption and for their close friends. So when Bob retired from a local electric company he turned his hobby into this small wine-producing business. They determined it didn’t take millions of dollars to open a winery and chose to do all of the work themselves.

As Bob says, “We decided to focus on the Muscadine family of grapes because we are lazy. These grape vines need little care once planted. Being native to our area they don’t need a lot of spraying or looking after.” Bob tends to the wines and Sonya works in the tasting room. In addition to the Muscadine wines, they also produce various fruit wines.

Because they do all of the work themselves, they have been able to show a profit from their efforts since the beginning.

While many of the wine consumers look at the Muscadine as a second-class grape, it is well known the rootstock of these vines have a major impact on all wines produced around the world. In the 1860s a root louse called phylloxera, which is native to America, found its way to Europe and destroyed most of the European vineyards. This louse thrives when it can have a diet of Vinifera vine roots so this pest very quickly spread through France and then all of the other countries. The only thing that saved the European wine culture: the root louse does not enjoy eating the root of the Native America Muscadine vines. Virtually all grape vines around the world are grafted to the rootstock of Muscadine vines. Thus our native vine is the savior of worldwide wines.

So the next time someone tells you these grapes aren’t very good, remind them that Thomas Jefferson liked them and they saved wine production around the world. Further, many Southerners enjoy their slightly sweet style of flavors and unique aromas.

Try some. If you are not careful, you just might like these wines.

Who says white wines have to be paired with only food that is also light?

Sometimes what a savory dish needs isn’t more of the same, but something different to complement it. There’s no real rule saying you can’t try whatever you like when it comes to cooking. Back a few years ago I used a couple of surprising ingredients to make a sweet potato soup. Tomatoes and white wine were the items I chose, and while both added subtle flavors, the soup is very much different without them.

The same goes for a dip recipe using loads of fresh dill. The white wine does something to the dill that allows it to mellow and blend very nicely with the other ingredients to provide a flavor in the dip even folks who don’t like dill have told me they enjoy. After testing this dip recipe I decided I would use wine and fresh herbs more to create simple yet elegant ways to dress up meat and fish. Just a few tablespoons of wine over chopped herbs, allowed to sit and meld together for a bit—just fantastic!

Shadow Springs Vineyard in Hamptonville produces very nice white wines that accompany food very well. The wine I used in both of these recipes was their Seyval Blanc which the vineyard describes as having been “lightly sweetened by its own unfermented grape juice.” I think that sweetness works well alongside the slightly salty nature of both soups and dips.

I think if you try the wines of Shadow Springs you will find refreshment and complexity that are easy on the palate and the folks are so friendly, you’ll probably find yourself driving out to Hamptonville not only to get more wine but to sit back and relax a while with friends. If you do drive out there, don’t miss Shiloh General Store which is only a few minutes away.

Fingerling Potatoes with Dill Sauce For the sauce: 1/2 t fresh lemon zest 1/2 T fresh dill finely chopped 1/8 t dry yellow mustard 1/2 t onion salt 1 c sour cream 1 c mayonnaise ¼ c wine (Seyval Blanc from Shadow Springs) Mix all ingredients and refrigerate for at least 1 hour.

For the potatoes: 2 pts fingerling potatoes 3 T olive oil Salt and pepper to taste Preheat oven to 500°F; place a baking sheet inside to heat.

Add potatoes to a medium bowl. Drizzle with olive oil; season with salt and pepper. Remove sheet pan from oven; lightly coat with olive oil; pour potatoes onto pan. A Texas friend of mine gave me the Chop Suey Cake recipe while we both worked at Westinghouse. I use this recipe for any occasion and always make it for our church cemetery trust fund benefit in August. It goes over real big and is so good and easy to make," says Carol Shackelford of Dobson.

I can vouch for it being scrumptious with a wonderfully moist texture and a super sweet frosting. When Carol's brother from Clemmons found out she had made her cake for a photograph in Yadkin Valley Living to go with her Yadkin Valley Best Cooks recipe, he told her to save some, he was on his way!

Chop Suey Cake 2 c cake flour 2 c granulated sugar 2 eggs 1-20 oz can crushed pineapple (undrained) 2 t baking soda 1/2 t salt 1 c chopped nuts Mix all ingredients together well.

Spray a 9x13-inch dish. Bake at 350°F for 35 to 40 minutes.

Frost the cake while hot with: 1-8 oz pkg cream cheese 1 stick margarine 2 c powdered sugar 1 t vanilla 2 T milk

The Mason Jar Grill Did you know that freshly peeled homemade potato fries have an aroma and taste different from frozen fries, and do you know about Moonshine Burgers? Well, the Dining Divas experienced this and more at the Mason Jar Grill near Wilkesboro.

We were sightseeing around Kerr Scott Lake and Highway 268, a beautiful scenic drive up toward Whippoorwill Village. Lunch time came and we pulled into the Mason Jar Grill.

The wooden clapboard structure and long porch was inviting.

Soon as we walked in the friendly staff gave us a welcome and ushered us to a table near the big windows. I like being able to see outside. The room was country rustic and the line up of canning jars around the room colorful.

We were among families with young children, senior couples, groups of friends. The official scent of the Mason Jar must be the fresh hand cut fries.

That drew me back to a time many

years ago when my mother cooked freshly peeled potatoes for Friday night supper. It was a good smell.

Our drinks came to us in pint size mason jars no less. Somebody there knows southern ice tea –ah, just right.

Menu items presented a dilemma.

Eeny, meeny, miny moe. I thought I had settled on southern fried chicken, greens and cornbread until my eyes fell on the Burger menu. The choice was made. I was going for the Moonshine Burger. With a name like that I had find out what that's all about. Never have I enjoyed a bigger or more tasty burger.

Piled high with homemade chili and slaw, cheese and onions. It was gooood!

The fries, well, I could have pigged out on them. They are made to order, mouth watering. That menu choice was a winner!

Diva number two ordered pork chops, sweet potato casserole and mac and cheese which was a thumbs up! Our third Diva picked the Mason burger.

The group of ladies that comprise The Dining Divas has been meeting monthly to eat and share fellowship for years. Most of the gals have food related careers but what they all have in common is the pure joy of each others company and experiencing new dishes from all the varieties of Yadkin Valley restaurants.

The Dining Divas keep a running list of places they want to try and then they anonymously rate the food, service, and atmosphere of the eatery.

We were getting full but what southern girls can pass up made-in-thekitchen Banana Pudding? Delish! They wouldn't tell us the recipe. Said the same thing about the Sweet Potato Casserole. I stole a bite of the sweet potatoes from Diva number two. I thought I made good a good casserole.

This could rival mine. That's serious.

Mason Jar Grill is locally owned and operated. The menu choices range from homestyle Sunday cooking to fresh salads, and smaller portions for children. There is nothing skimpy about the serving sizes and the service is excellent.

Next time we're up this way I might just have to stop in and feast on the Hot Diggity Dog, or Bootleg Wings.

We'll dine on the patio under the umbrella and may have a sip of Carolina Brew from Mason Jar Grill.

Tomatoes

Tomatoes love NC! It’s a running argument the best way to eat a tomato is between two slices of bread, slathered with mayo, salt, pepper with the medium sized tom at only 22 calories. Lara has some recipes for this good for your eyes food that when cooked, the sauce is also one of the best sources of lycopene. Her recipes add some intense flavor, color and texture to meal planning. Give them a try in this abundant season of the fabulous tomato.

Grilled Tomato Pasta 2to 3 plum tomatoes, sliced thin 4 T olive oil 1 T parsley, minced

¾ T pepper ¾ T salt 1 lb pasta of choice

Mix the tomatoes, 2 T olive oil, parsley, salt and pepper in a mixing bowl.

Heat grill or grilling pan to medium heat. Place the tomatoes on the grill and cook for 7 to 9 minutes per side.

The tomatoes will be soft and have charred marks on them.

Put the tomatoes back into the bowl and cut them into coarse pieces. You can use your kitchen shears or I have an old cabbage chopping tool that I use. While you are cooking your tomatoes, go ahead and cook your pasta according to the directions.

Drain the pasta when you are done and put the tomatoes and pasta in a large nonstick skillet and heat for a few minutes and serve.

My family’s pasta of choice is tortellini.

breast of chicken c grape tomatoes, sliced T Kalamata olives, diced T capers T oil (olive) servings of pasta

I go ahead and grill two filleted chicken breasts over medium heat until I have nice grill marks on both sides, but I save one breast for another meal. While you are grilling your chicken, heat up your water to cook the pasta. Angel hair pasta goes nicely with this meal. Cut up the grilled chicken breast into bit size pieces.

Put the chicken bites back into a large non-stick pan. Put the oil, grape tomatoes, olives and capers in with the chicken on medium low heat.

Cook your pasta according to the directions. Drain the pasta and add that to your Mediterranean chicken.

Add the pasta and cook another 4 to 5 minutes over medium low heat.

Sometimes it’s easy to get into a rut cooking for our families. I found a recipe and gave it a try. I was pleased when my family wanted seconds and even wanted to pack the leftover pasta for lunch the next day. Sometimes something a little bit different from our usual comfort foods can be a good thing.

Shrimp in Herbs 1 lb shrimp, uncooked, peeled and deveined 1 ½ T olive oil ½ t garlic salt 1 c plum tomatoes, diced ¾ T chives, minced ¾ T parsley, minced ¼ t pepper 1T butter In a nonstick pan, melt your butter over medium heat and cook the shrimp for 2 to 3 minutes. Mix the other ingredients in a small bowl and add to skillet. Cook for another 3 to 5 minutes and serve.

This is a very simple recipe and it is a different way of including shrimp in dinner. My son, Will loves having seafood, enjoying most fish and truly loving shrimp and crab legs. This recipe is something he can prepare if we are running behind for dinner and I need help. If you have a large family, you can easily double the recipe, but I would cut back some on the oil. ya d ki n va l l e y l iv i n g . co m

Tomato Rosemary Focaccia 1 tube refrigerated pizza crust or dough from scratch 1 T rosemary, minced 2 ½ T olive oil ¼ t garlic salt to taste 2 plum tomatoes, sliced thin Red onion, sliced thin Preheat oven to 425°F. Pat out dough on greased baking sheet. Combine the olive oil, minced rosemary and garlic salt in a small bowl and spread over pizza dough. Top with tomatoes and onions. Bake for 15 minutes or until golden.

My son really likes this recipe and suggests that I make it more often!

Tomato Rosemary Focaccia is a nice addition to a grilled chicken salad.

Pasta Sauce 3 to 4 lbs Tomatoes 1 to 1½ T oregano 1 T pepper ½ T garlic salt Med onion, chopped fine Sugar, to take way the tartness 1 lb of hamburger 1 sml can tomato paste 2 cans mushrooms Brown and drain hamburger and onion; set aside. Put your tomatoes in a pot of boiling water for about 5 minutes making them much easier to peel. After you have the skin off you may cut your tomatoes or use a potato masher to make them more like the sauce texture you desire. Or if you let them cool you can squish them in your hand. It can be messy, but it is fun! Put your tomatoes in a large nonstick sauce pan and add the oregano, pepper and garlic salt. Cook over medium heat for an hour and a half until it is gets nice and thick. Add the can of tomato paste and mushrooms.

Cook for another 10 minutes and add your meat and onions. Use it over any pasta your family likes.

Roasted Plum Tomatoes 4 plum tomatoes, sliced thin ¾ T olive oil ¼ t each of salt, pepper and parsley Preheat oven to 425°F. Mix the tomatoes, olive oil and spices in a mixing bowl and transfer them to a baking sheet. Make sure they are in a single layer. Bake for 25 minutes, though it may need more time depending on your oven. Parmesan cheese is a tasty touch for the top.

As you can tell, plum tomatoes are my favorite tomatoes. They are great in so many recipes, a perfect tomato that is good hot or cold.

Are you ready for those juicy, sun ripened, homegrown tomatoes? One of the greatest pleasures of summer is picking the beautiful produce straight from the garden and tomatoes are favorites. Tomatoes are not only delicious to eat but they are also a nutrient dense superfood packed with vitamins A,C, E, K, potassium, folate, fiber and lycopene. The powerful antioxidant, lycopene, is known to help protect our bodies from cell damage therefore helping to fight diseases. Not only is the fresh tomato packed with many nutrients but the nutrients become more concentrated after cooking.

History of the tomato dates back to 500 B.C. where it is thought to have originated in the highlands of South America and southern Mexico. At that time, the tomato was yellow in color.

Spanish conquistador Hernan Cortés is thought to be the first to transfer the yellow tomato to Europe after he captured the Aztec city of Tenochtitlan, now known as Mexico City in 1521.

Soon the yellow tomato was introduced to the colonies of the Caribbean. Most people initially used the tomato plant as a decorative tabletop ornament because of concerns for toxicity. The botanical family of tomatoes is in the same nightshade family as tobacco, potato, eggplant and the poisonous belladonna which created the toxicity concern. It was discovered by

the 17th century that the fruit is delicious and nutritious, even though the plant’s leaves are actually toxic.

Tomato recipes from Spain were found in a cookbook published in Naples, Italy in 1692. The earliest written references in North America date back to 1710 by the herbalist William Salmon who saw tomatoes in the area of what would be South Carolina today. It is thought the tomato was introduced to the area from the Caribbean. Another report told Thomas Jefferson ate tomatoes in Paris and sent some seeds back to America.

Through the years, the tomato has gained in popularity with several states adopting the tomato as a state fruit or vegetable. Reynoldsburg, Ohio calls itself, “The Birthplace of the Tomato,” claiming the first commercial variety of tomato was bred there in the 19th century. New Jersey has designated the tomato as the state vegetable and Arkansas has named the tomato as the state vegetable and fruit. In 2009, the state of Ohio passed a law making the tomato the state’s official fruit which brings up an age old question. Is the tomato a fruit or a vegetable?

Botanically, a tomato is a fruit from a flowering plant but it has a lower sugar content than other fruits.

Generally, tomatoes are served as part of the main meal so it is considered a vegetable for most culinary uses.

Tomatoes are one of the most common garden fruits in the USA; usually out producing the needs of the grower.

Preserving through canning and freezing provides ways to enjoy their great taste through the coming months.

For immediate storage, place ripe, unwashed tomatoes out of direct sunlight. To encourage ripening, place in a brown paper bag. To prolong shelf life, store with the stem side down.

Tomatoes are best served at room temperature but can be stored in the refrigerator. Refrigerated tomatoes remain edible but the cold temperature causes them to lose flavor.

Tomatoes are served in many ways from sauces to drinks! One of the most enjoyable ways are fresh in salads. Try some of the following recipes to expand your enjoyment of eating tomatoes this summer!

Tomato/Asparagus Salad 1 lge tomato, chopped 1 - 10 oz frozen asparagus, cut, thawed 2 T green onions, thinly sliced 3 T. plain yogurt 1 T grated Parmesan cheese 1 t prepared mustard 10 lettuce leaves

Chop tomato and onions. Thaw frozen asparagus; drain well. Combine tomato, asparagus, onion and set aside. In another bowl, whisk together yogurt, cheese and mustard. Add to the vegetables; toss until well coated. For serving, line the plates with romaine or butter lettuce leaves.

Spoon salad on top and sprinkle with additional green onions, if desired.

Bring the vegetable stock to a simmer over medium heat. Heat olive oil in a skillet over medium heat. Stir in couscous; cook and stir about 10 minutes or until golden brown. Stir couscous into the hot vegetable stock; return to a simmer. Cover and cook until the stock has been absorbed into the couscous, about 15 minutes. Dump into a large bowl, fluff with a fork and cool at room temperature. Place basil, parsley, garlic, oregano, thyme and olives into a food processor. Pulse until coarsely chopped. Stir the herbs, tomatoes, cucumber, onion and feta cheese into the couscous.

Mix together vinegar, ½ c olive oil and lemon juice. Drizzle over couscous/vegetable mixture. Toss lightly until combined.

1 c balsamic vinegar ¼ c honey 3 lge tomatoes, cut into ½-inch slices 16 oz fresh mozzarella, cut into ¼-inch slices ¼ t kosher salt ¼ t ground black pepper ½ c fresh basil leaves ¼ c olive oil Mix together balsamic vinegar and honey together in a small saucepan; place over high heat. Bring to a boil, reduce heat to low. Simmer until vinegar mixture reduces to 1/3 c (usually takes about 10 minutes). Set aside to cool.

1 c cottage cheese 2 tomatoes, chopped 1 T fresh basil leaves, chopped ½ t salt Black pepper, freshly ground 2 T balsamic vinegar Combine all ingredients but the balsamic vinegar. Chill if desired.

Tomato and Cucumbers

Cherry Tomato Salad

4 med tomatoes, cut into 1-inch chunks 1 lge cucumber, sliced ½ onion, diced ¼ c mayonnaise 2 garlic cloves, minced 1 t black pepper Salt to taste

4 c cherry or grape tomatoes, halved ¼ c vegetable oil 3 T cider vinegar 1 T parsley, chopped 1 T basil, chopped 1 T oregano, chopped ½ t salt 1 ½ t white sugar

Toss together tomatoes, cucumbers, onion, mayonnaise and garlic. Season with pepper and salt.

Mix together oil, vinegar, herbs, salt, sugar. If you prefer to use dried herbs, reduce the amount to 1 teaspoon per herb. Pour dressing over cherry or grape tomatoes; gently toss to coat. Chill for 1 to 2 hours. Before serving, stir from the bottom to coat all tomatoes.

May serve on a lettuce leaf, if desired.

Cherry Tomatoes

Orzo Salad with Tomatoes 1 c uncooked orzo pasta ¼ c green olives, sliced 1 c feta cheese, diced 1 tomato, chopped 3 T fresh parsley, chopped 2 T fresh dill, chopped ¼ c olive oil 1/8 c lemon juice Salt and pepper to taste Bring a large pot of lightly salted water to a boil.

Cook orzo for 8 to 10 minutes or until al dente.

Drain orzo; rinse with cold water. Set aside to cool.

In a small bowl, mix together oil and lemon juice.

Pour over pasta. When orzo is cool, mix in olive, feta cheese, parsley, dill and tomato. Season to taste.

Chill before serving.

Corn and Tomato Salad 3 ears corn in husks 2 T butter, melted 2 roma tomatoes, chopped ½ red onion, finely chopped 2 cloves garlic, minced ½ bunch fresh cilantro, chopped 1 jalapeno pepper, seeded and chopped fine Salt and pepper to taste Dash of lemon herb seasoning Peel back the husks of the corn, but leave attached. Remove silks; fold the husks back over the corn. Cook in the microwave for 5 minutes on high.

Cool corn to be able to touch. Cut corn off the cob and place in a bowl.

Stir in melted butter, tomatoes, onion, garlic, cilantro and jalapeno pepper.

Season with salt, pepper and lemon herb seasoning. Mix well and serve warm or chilled.

C’S BAR-B-QUE – Mocksville NC Since 1989, C’s Bar-B-Que in Mocksville has claimed they have finer and tastier foods this side of Heaven (other than Mama’s or Grandma’s cooking). So, the Dining Divas set out to give it the test. We decided to give our group a little change with meeting for breakfast instead of dinner. We arrive around 9:00a which was a great time for missing all the early morning crowd. We were recommended to try the pancakes which turned out to be quite a surprise. One pancake fills an entire large plate and is large enough to share or take leftovers home. It was really good and has an added twist to the batter; tasting like no other pancake we had ever eaten, though we couldn’t determine the secret ingredient!

Breakfast is served from 7:00a until 10:30a. The breakfast menu consists of plates, omelets, sandwiches, biscuits, pancakes and side orders.

Lunch and dinner menus consist of barbecue, salads, plates, vegetables, sandwiches, wings spaghetti, seafood. Seniors’ and Kids’ menus are also available.

Specials for the day are listed as you enter the restaurant. Several of the Dining Divas have dined at C’s before reporting the seafood was delicious, plus the barbecue was just about as good as Lexington’s barbecue. Barbecue is available in the Family Pack Special and whole chopped shoulders.

Our group enjoyed this relaxing atmosphere where friends sat around the table and talked. On a scale of 1 to 5 forks with 5 being the highest, the Dining Divas rated C’s Bar-B-Que a 5 fork.

Avocado 1. When buying avocados, you want to purchase one that is firm, yet has a slight give to it. If the avocado has a very soft Robert A. Penry feel to it, odds are that it is already over Admissions Classroom ripe on the verge of going bad. Some Presenter-Culinary say that you can look under the stem Johnson & Wales University portion of the avocado. If the stem is green, you are good to go and if the stem is brown, it is over ripened.

2. The best way to remove the pit of the avocado is to slice it in half lengthwise. With a chef ’s knife, knock the pit until the chef ’s knife is slightly embedded into the pit. Gently twist the knife and the pit should come right out. Be careful when removing the pit from the knife, as they can be slippery. It is best to remove it by using a kitchen towel to grip the avocado pit.

3. If you are using chopped avocado in a recipe, you can help slow down the browning process by sprinkling the avocado lightly with lemon or lime juice.

4. Storing avocados can be a bit tricky and it ultimately depends on when you plan to use them. If you are going to wait to use them, it is best to store them in the refrigerator before they have ripened. If you are going to use them in two or three days, you can leave them on the kitchen counter. If you find that the avocado is not quite ripe and you plan to use them within a day or so, place them in a brown paper bag and place on the kitchen counter. This will speed up the ripening process.

5. If you find yourself with a surplus of avocados you can simply freeze them and they will keep for 3-4 months.

It is best to cut the avocado, remove the pit, wrap tightly in plastic wrap, and store in a freezer zip top bag. When you are ready to use them, simply defrost them in the refrigerator.

My earliest cooking memory is of spending long August days during corn season in my parent’s Ohio kitchen shucking, blanching and scraping sweet corn right off the cob into freezer bags.

My mother would pull those bags out during the winter to serve with supper, and I remember them tasting like liquid gold. When the corn was ripe, we’d eat it on the cob, scraped off the cob, in cornbread, corn cakes, corn fritters and corn casserole. I didn’t appreciate at the time how perfect corn is just a few minutes after picking, and how hard it would be later to recreate that amazing flavor. So, for me, it really feels like summer with my first taste of fresh sweet corn.

Corn and wine are actually really good friends. Corn is bursting with sweetness, and rich, ripe flavor. A wine that mirrors those flavors will give an incredible tasting experience.

For simple fresh corn, served with good butter and a bit of salt, try buttery chardonnay. A pretty California one, with a bit of oak is perfect. This is one

of those pairs that really, really work.

In fact find the right wine, and you’ll want to have this combination again and again. I like to use this pair, even with (gasp) winter corn to illustrate how like flavors can enhance each other when teaching chefs about pairing food and wine.

If you like your corn grilled, a wine with a bit of complexity might be a fun pair, as the caramelization from the grill needs a bit of oomph in the wine.

Try a Pinot Gris from Oregon, or the Alsace region of France, or one of North Carolina’s pretty white blends.

Adding a pat of herbed butter, perhaps some fresh chives, dill or tarragon creates some interesting flavor combinations when paired with a wine that expresses some herbal qualities, like a Sauvignon Blanc or Grunter Veldtliner.

If your corn is dusted with hot spice before grilling, a hint of sweetness in the wine is perfect. It’s kind of like the sweet, spicy and salty vibe of Kettle Chips. A Riesling with a little bit of sweetness will play off the spice and create a whole new, fabulous flavor profile, and one of our distinctively sweet and grape-y muscadine or scuppernong wines is a lot of fun.

I love to make this salad after a visit to the farmer’s market for pretty fresh tomatoes, and ripe sweet corn. It just tastes like summer. It’s tasty with a pretty dry rose wine, or a glass of icy sweet tea.

8 ears of corn 2 T lemon juice 1 ½ t kosher or sea salt 3 T good quality olive oil 1 pt of fresh cherry tomatoes (I like to find an assortment of colors) ½ c finely diced red onion ¼ c fresh basil, very thinly sliced Cook the corn in boiling salted water until tender (about 4 minutes).

Drain and cool; slice off the cob. Add the remaining ingredients and toss. Top with some freshly ground black pepper.

Note: this is also delicious with some grilled chicken or poached shrimp added and keeps for a day or two.

Cancer Fighting Benefits of Granola

By Anne Smith, MS, Dietetic Intern with Cancer Services, Inc. Whole grains are part of a balanced diet and are full of fiber, B vitamins, and cancer fighting phytochemicals (plant nutrients). All these essential nutrients aid in keeping your cells healthy to fight cancer and other diseases. These nutrients are also often found in nuts and seeds which are plant based proteins to keep you feeling fuller longer as well as improve digestive health and speed up healing.

Granola is an excellent source of all of the protective foods. It can be

expensive to buy so sometimes it’s best to make your own. By making your own granola, you can customize it to your preferred tastes but still get plenty of nutrients you need to stay healthy.

Customizing this recipe to your preferences is easy. A few ideas to include are ½ cup dried fruit like blueberries, cranberries, or banana chips.

Berries are full of antioxidants and other vitamins and minerals; 1/2 cup of dried fruit is counted as 1 serving of fruit. Various nuts; pistachios, almonds,

and cashews are lower in saturated fat than many other nuts. All you need is ½ ounce of nuts to count it as a serving of protein—that equates to 12 almonds, 24 pistachios, or 8 cashews.

In just ½ cup of this granola, you can get 8 grams of protein and 6 grams of dietary fiber. My favorite way to eat granola is served over plain greek yogurt with some fresh or frozen berries (as seen in the photo).

Granola can also be served with milk (like cereal), as a topping for a yogurt cup and it's also great over a scoop of ice cream!

Preheat oven to 325°F. Line a baking sheet with parchment paper. In a medium mixing bowl, combine all dry ingredients, including nuts, excluding dried fruit or candy. In a separate bowl, combine all of the wet ingredients. Add wet ingredients to the dry; mix until all of the dry ingredients are coated. The color of the oats will get darker. Pour mixture out onto the baking sheet into a thin layer. Bake for 10 min at 325°F. Remove from oven; stir. Return to oven; bake for an additional 10 min, watch carefully to ensure granola doesn’t burn. Remove from oven; add dried fruit, if you desire.

How about some fresh ideas to enhance the fun!

Let’s start with a fresh twist on an old game… TWISTER. Supplies needed to make Outdoor Twister: A pizza box or other piece square cardboard. A box works best as it contains the overspray.

Craft knife or very sharp knife Large mixing bowl, something at least 12” round Pen (I know, this is probably assumed!)

Red, blue, yellow and white spray paint—Rust-Oleum Professional Inverted Marking Spray Paint is designed for spraying the ground and comes in brilliant colors.

Spinner from an old Twister game or make your own!

Even simpler, put the game moves on pieces of paper that you can draw from a jar using 1 piece of paper, scissors, two containers of some sort to hold the slips of paper.

Step 1: Make the circle stencil. Use a large piece of card board and trace a large, round circle in the center using 12” round item; cut out circle. The circle itself can be used for the spinner if you choose to make your own.

Step 2: Decide on a flat large area of the yard—no limitation on size as you can easily enlarge depending on your crowd.

Step 3: Place stencil box in the upper left hand corner; paint your first color row.

Step 4: Paint 4 rows of 6 circles. Each circle should be 6 inches away from each circle on all sides.

Step 5: Let your painted circles dry overnight.

Make slips of paper saying: Head, Right Foot, Right Hand, Left Foot, Left Hand. Put in one jar. Also make color slips: red, blue, yellow, white. Put color slips in a different jar. When it is time to play, the caller pulls one slip out of each jar. IE: Left Hand, Red You may find this easier than trying to make a spinner or spending $13 on a new one.

Your twister board will grow out in about 1 to 2 weeks.

Repeat the paint—it will NOT hurt your grass.

Fill a glass 2/3 with ice. Spoon strawberries and syrup over ice. Pour lemonade over strawberries. Garnish with lemon wedge. Serve in mason jars with pretty straws. Note: To accommodate any diabetics at your party, make this recipe with a sugar-free lemonade and put a little sugar substitute on your strawberries instead of sugar.

Citrus Pound Cake (7-Up Pound Cake) This recipe has been around in print and on TV. I made this cake for my mother for her birthday in April. She just couldn’t get over how good it was!

3 sticks of softened butter 3 c sugar 3 c flour ½ t salt 5 eggs, room temperature

1 c of any lemon-lime soda 1 T lemon zest 1 T lime zest ½ t lemon or vanilla flavoring

Preheat oven to 325°F. In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar. Add eggs one at a time, mixing after each addition. Combine flour and salt; add 1 c at a time, alternating with 1/3 of the lemon-lime soda; mixing after each addition. Add 1 T of both lemon and lime zest; mix. Scrape bowl; mix again. Thoroughly spray a bundt pan with nonstick baking spray; lightly flour or use Baker’s Joy spray. Add large spoonfuls of batter until the pan is filled.

Tap down and then even out the surface. Bake for 1 hour 10 minutes to 1 hour 15 minutes. Remove pan from the oven; let it sit in the pan for 15 minutes. Carefully turn it out onto a cake plate; let it cool.

2 c sifted powdered sugar 1 T lemon juice 1 T lime juice 1 T water or the amount you need to make glaze the consistency you want Combine all the glaze ingredients in a bowl; gently whisk until thick but pourable. Use a large spoon to drizzle it all over the cake. Let the glaze set, then slice and serve!

Add some fun to your deviled eggs with a little color. After you boil, cool and peel your eggs, place them in a glass bowl of water that has been tinted with green food color.

Gently stir them around until you get the desired color of green (this may take several minutes). Remove eggs from water; pat them dry with a paper towel. When you cut the egg, you will get a pretty green ring around the slice. Use your favorite recipe to make the filling; display eggs next to your ham sandwiches or ham biscuits.

Fluffy Biscuits 4 T butter, sliced 2 1/2 c Bisquick (Heart Smart can be used) 1/2 c sour cream (light or Greek yogurt can be used) 1/2 c (diet or regular) lemon-lime or clear soda, room temperature Preheat oven to 450°F. Melt butter in a 9"x9"- baking dish in the oven; watching closely so it simply melts, not browns. In large bowl, place Bisquick, sour cream and lemon-lime soda. Mix with fork until blended. Flour your hands. Make 9 biscuits, placing on top of butter and patting down some. (It isn't necessary that the pan be totally filled.) Bake about 12 to 15 minutes or until top is browned. No need to serve with additional butter as the crust will take care of that part for you. Slice open; insert a couple slices of warm country ham…yum!

Even if your party is just a neighborhood gathering or a Sunday afternoon with extended family, a little creativity can make your guests feel special. Dollar store finds are some of my favorite: plastic tablecloths and paper products are reasonably priced and are always offered in seasonal colors. For pattern, use chevron or polka dots. Pinwheels placed in your flower garden or flowerpots add color and movement and a fun activity for small children.

A bunting banner is easy to create and welcomes your guests. It can be made from paper or fabric and attached to white rope and strung between trees or posts.

Summer Sandwich Creations by Carmen Long Summertime brings the opportunity for picnics and simple meals that don’t require spending much time in the kitchen. If you are looking for something different to add to your menu, try a sandwich. You may think how can a sandwich be different and have visions of endless peanut butter and jelly or lunchmeat? If we think creatively, sandwiches are the perfect choice for something quick, easy and the possibilities are endless.

Growing up I took sandwiches in my lunch to school, typically peanut butter and honey or peanut butter and marshmallow cream. Give’em a try if you have never experienced one! They are delicious, especially on homemade bread. We often had “make your own” on Sunday night to give my Mom a break from cooking. more carbohydrates. Choose water or another sugar-free beverage to drink and maybe save that piece for fruit for a snack later in the day.

Several years ago my parents and an aunt and uncle were visiting us from out of state. We planned a picnic on a beautiful day and things were going great until we started unpacking the food and realized no one had packed the bread. We improvised and made delicious wraps of meat and cheese rolled up in lettuce leaves which were enjoyed by all.

We were really just a step ahead of a current trend. Lettuce wraps are another option for individuals counting carbohydrates. Not having to count the bread provides the opportunity to enjoy other carbs, like that potato or pasta salad or a small piece of a favorite dessert.

Through the years bread options for sandwiches have really increased.

Homemade bread is still a family favorite, but is more of a “special occasion treat” than the norm. When shop-

ping for bread, read the labels and look for the word “whole” on the list of ingredients. Just because it is brown doesn’t mean it is a whole grain product. Multigrain is just what it says, multiple kinds of grains but not a whole grain product. Try some of the new 100 calorie sandwich thins, whole wheat pita bread, high-fiber English muffins or different types of wraps and strive to make one half of your grains whole grains each day.

Choose 1 ounce of meat—meat you have cooked ahead: ground beef, roasted chicken, turkey or roast beef are great or use low-fat, low-sodium sandwich meats like ham or turkey.

Choose ¼ cup chopped, slicked or shredded fresh vegetables. Use one vegetable or mix a few together to equal ¼ cup: cucumbers, slaw mix, onions, green peppers, spinach, carrots, tomatoes, lettuce, or celery.

Choose ¼ cup grated or 1 slice of cheese: low-fat Cheddar, low-fat American slices, or part-skim Mozzarella.

Now coat one side of the tortilla with spread. Add the meat as the second layer. Toss on the veggies. Add cheese as the

A 50 year tradition comes to an end...

Find or see a need and fill it—that’s the key to any successful business start up. That is exactly what happened in 1960 when good friends Dempsey Lilly, Hever Key and Allen White opened a hardware, furniture, appliance and lawnmower store in King.

These gentlemen shared what remains instilled in the White Family today—a strong work ethic. That was the expected and it was delivered by an age group of men now known as the Greatest Generation—long hours, good customer service, quality merchandise and standing behind the product with service always paid off and so it did for Dempsey, Hever and Allen.

Allen’s son David began working weekends and summers in the store during his teen years and by 1976 wanted to have a more active part in the business by buying out Hever share of the company. Dempsey also ran his own company in King, Lilly Electric. More and more of the day to day operation of Northwest was handled by Allen and David. “Working with my dad was fantastic!” says David. “We had a great father/son relationship that carried across into the business,” he continued.

“My favorite part of the store was dealing with customers and the closeness you develop with them all.” But what David says he cherishes most is the active part the store had in the growth of the community over the years. One of David’s proudest efforts was being instrumental in making the King YMCA

a reality. He served on the board and contributed financially to the project.

The honor of being an integral part of the community started with the first generation. David says, “My dad and Dempsey and their wives were the backbones of the our community. From the scoreboards at the high school to the public library, they considered it important to give back. David, who is now retired, continues to volunteer in local organizations such as King Outreach Ministry. Son, Brad, the current leader of the business also gives to and supports his community.

David feels remorse of “...one of the greatest losses of our time are the smaller, independent local businesses. As the mom and pops go away and the big box stores come, you lose more and more of the businesses that support the community on the grassroots level. That same remorse is also on the business side. He talks about the mainstay of Northwest Appliance’s business with Whirlpool—a company they had a 50-year relationship with. “You used to have factory reps that would “court” and support you. Now they concentrate on the few big name stores. There just aren’t many independents left—I think those local outlets will be missed.”

Just as David worked with his father, the current manager is son, Brad. Like David, Brad worked in the store as a teenager. Talk about work ethic, up until the last couple of years, Brad worked 80-hour weeks. That fulfilled his passion for the store but didn’t leave much time for family and personal interests.

Brad faces the end of Northwest excited, yet apprehensive. “I’ve never known anything else though the future is wide open for a man of 42!” Brad’s plans now are to spend more time with his wife, Heather, son, Jordan and daughter, Meg. “I want us to have the fun of some “scrapbook” worthy trips together and be able to be at all of the kid’s events.

Both Brad and David wanted to talk about their employees and how they were such an important part of the success of Northwest Appliance. “We’ve had employees who have been with us for years.” Both men say they are so very grateful to their employees and their 50 years of loyal customers.

As time passed, the store closed out the furniture line of the business and the Whites continued to change their products to meet the times. So why close now? Because they want to leave while on top—successful. Brad says he is ready to go, to start a new chapter. If his kids were to be fourth generation owners, it would be decades before they would be old enough to takeover.

A final thought from David and Brad, “Support your local businesses—they in turn support your kids, your schools and churches.”

As for Brad, when asked how long the going out of business sale would last, he replied, “I don’t know, this is totally new for us, we’ve never not been striving to grow the busi-

ness—we’ll just have to play it by ear.” With their huge inventory of hardware and appliances, the closeout will take awhile.

One thing is for sure, the salesman in Brad won’t go away—he wanted you to know he’ll be glad to special order appliances for you as long as the doors are open!

As 2014 continues to pass, we continue to celebrate the 100 year anniversary of the Cooperative Extension Service. Cooperative Extension is perhaps best known for its agriculture, 4H, family and consumer science programs. Always planning for the future, North Carolina Cooperative Extension recently launched a strategic visioning and planning initiative to determine how best to adapt to this new economic reality and develop a plan to continue delivering relevant, quality programming to improve the lives of North Carolinians.

Each office has different plans and opportunities to celebrate with their community. Two offices are looking forward to new offices. Bill Hanlin in Wilkes is keeping all his celebratory plans when the staff gets settled in new offices and Colleen Church in Yadkin County is anxiously awaiting a ground breaking event.

When North Carolina Cooperative Extension got its start a century ago, the goal was simple, but ambitious: to extend the knowledge of our nation’s universities to the people so that they might lead better lives. And that goal remains the focus of our efforts today.

But as the needs of those people have shifted, so have Extension’s programs. An example: In the early part of the 20th century, farmers needed help with highly eroded, worn-out soils, and Extension responded. Today, amid concerns about improving the quality of life-sustaining waters in ponds, lakes, rivers and streams, we help individuals and communities find ways to curb runoff from farms and from towns and cities.

As we address each high-priority issue, we strive for a holistic approach: one that involves the many audiences who have a stake in that issue. These people include farmers, agribusiness professionals, consumers, gardeners, community leaders, school teachers

7TH ANNUAL NC PAWPAW FESTIVAL

In the early stages of our country’s birth, there was a North American fruit that was quite well known. It could be found along meandering creeks, streams and rivers throughout most of the eastern part of the US from Florida to New York and westward to Kansas, Missouri and Texas. This fruit can still be found growing wild in almost all of NC's 100 counties though not nearly in the numbers that it once was.

This fruit had been feeding native Americans long before any Europeans stepped foot on these shores. Not only was the pawpaw a very important food source for native Americans, they actually cultivated the trees and certain

patches were highly coveted.

Early pioneers and settlers were very familiar and most were fond of this newly discovered food.This fruit chilled was said to be George Washington's favorite dessert and Thomas Jefferson was also among its fans as well as Daniel Boone and Mark Twain were among its admirers.

As the pawpaw became more rare in the wild due to many factors, it has fallen by the wayside and relatively few in today's society have even heard of the fruit. But things are slowly changing. There has been a revival of sorts going on for the last 20 or so years. Do an Internet search and you will see what I mean.

The pawpaw fruit has many things going on in its favor such as a tropical like flavor and texture that cannot be found in any other temperate grown fruit. It is also very nutritional and beats out most commonly eaten fruits such as apples containing many vitamins and minerals. The pawpaw has an unusually high amount of protein for a fruit. The fruit is even being looked at as a possible treatment for cancer.

For anyone interested in growing the tree, it has some definite desirable qualities. For one, it is native to our region and is much easier to grow than any other fruit I can think of. You will not have to fool with any spraying as it is very disease free and very few insects will bother the tree. The tree is quite ornamental with its large and long droopy leaves that turn a beautiful butter yellow in the fall before dropping.

Kentucky State University has been leading the way since the 1990s in hopes of commercializing this fruit and many breeders and scientists have shown lots of interest in the last several years. Neal Peterson, a breeder from West Virginia, has been working with pawpaw trees since the early 1980s.

He has recently released six improved varieties with very large size, fewer seeds and great flavor. Pawpaw is North America's largest native fruit and resembles a medium sized greenish yellow mango with a flavor that many describe as a cross of banana, mango and pineapple. I would add vanilla to this list. It is quite sweet and has a texture very much like a creamy avocado or firm pudding.

With the pawpaw having so many assets one might wonder why its fall into obscurity. Probably the most likely single reason is the fruit is highly perishable—thus a short shelf life. Breeders are trying to work on this trait and a few newer

varieties do indeed have a somewhat thicker skin.

Since the interest in pawpaw has exploded in the last several years there are several festivals in different areas of the country. Ohio has a festival each September, attracting thousands from literally all over the world. But you do not have to travel very far to see and learn more about the pawpaw.

The 7th annual NC Pawpaw Festival will be held on Saturday, August 23rd from 9:00a to 4:00p at the Forsyth County Agriculture building in Winston-Salem. There will be tours of our pawpaw orchard throughout the morning.

This is a family fun free event and will feature free foods made with pawpaw as long as they last. Ice cream is an annual favorite. You can hear lectures on pawpaw culture and cooking. There will be pawpaw trees and likely fruit for sale among other things.

Among the speakers scheduled to speak are Neal Peterson, a well known pawpaw breeder, Michael Williams a local grower and seller of fruit from Mocksville and Andy Moore from Pittsburgh, PA who has a book coming out on the pawpaw.

Come join us and learn more about the pawpaw which we are hoping is destined to become once again a favored fruit as it was in the past.

White GRUBS

As a kid, I remember digging for worms to go fishing and coming upon big, white juicy “worms” my grandmother called grubworms. Immediately, I would envision hauling in a big bass from the farm pond using such a meal as bait. I don’t remember if the fish bit any better but that big bass I imagined never hit my hook.

White grubs are turf pests found throughout North Carolina. They have cream colored bodies with yellow to brownish heads and six legs. They are usually found lying in a “C” shaped position and ¼ to 1-1/2 inches in length. White grubs are the larvae form of several types of beetles the most important and destructive of which is the Japanese beetle.

White grubs have a one year life cycle, ten months of that being spent underground. The female Japanese beetle burrows into the soil in mid to late June and lays her eggs. The eggs hatch in mid to late July. The young grubs move up in early August and begin feeding on grass roots severely damaging the root system. Feeding continues until cool weather arrives in October at which time the grubs move deeper into the soil in preparation for winter. The grubs return to the root zone as the weather warms in March to resume feeding now, however, as full size adults. The larvae pupate in late May and emerge as beetles in early June.

Birds, moles, skunks and raccoons all enjoy feeding on grubs to some extent. The presence of those animals and perhaps unexplained brown patches of grass serve as indicators of grub problems. All grasses are susceptible and can be destroyed by an unchecked grub infestation.

Animals rooting or burrowing in search of grubs cause further problems. You can check for grubs by peeling back one square foot sections of turf over several areas of your lawn. Cut down about three to four inches and 60

examine the root zone area. If you average five or more grubs per sample, treatment is recommended.

Grubs are easily controlled with pesticides but timing is critical.

Treatments applied in late August and early September are recommended because the grubs are small and very close to the surface. Spring treatments are effective but the pest is much larger and may require higher rates of chemical. Keep in mind that waiting until spring means you have allowed the grub to feed in early fall and to serve as a mole or skunk magnet. There are several chemical grub controls on the market including carbaryl, lambda-cyhalothrin, permethrin and trichorfon. Read product labels carefully as grubs typically require higher application rates than what would be required for fleas, ticks, etc.

An organic remedy for Japanese beetle grubs is Milky Spore.

These “spores of bacillus popilliae” are applied topically to the soil. The spores multiply in the soil and are ingested by the grubs. The spores multiply inside the grub eventually killing it.

Application can be made any time the ground is not frozen but is recommended in the fall. The initial cost of Milky Spore is high

NOVEMBER-DECEMBER: Grubs are mostly full grown and go to depths 4 to 8 inches below surface to pass winter in earthen cell.

but one application can last up to ten years. Factored over the long term, Milky Spore is half the cost of annual chemical applications. Be advised, however, that control via Milky Spore is not immediate as it may take the bacteria some time to establish itself in the soil especially in heavy clay. Chemical applications may be necessary the first year.

I don’t recall a year like 2014 in which we have had so many customers come in looking for solutions to high mole activity. I was a bit surprised, however, when three individuals told me they had little to no mole activity in areas where they applied milky spore.

In conclusion, it’s very important to read product labels.

Some need to be watered in; others do not. Soil moisture is important as well in that grubs tend to stay low in the soil during hot and dry conditions. Finally, don’t expect grubs to necessarily show up on the soil surface after treatment. June bug beetles will rise to the surface after treatment whereas Japanese beetle grubs die in the soil.

Create a Hummingbird Haven

Diversity is key for creating a thriving hummingbird habitat. A true hummingbird habitat includes trees, shrubs, vines, and herbaceous plants of various heights and bloom dates with areas to nest, roost, and find shelter from the elements; several feeders; and a water element for bathing. Hummingbirds also appreciate a source of small insects and spiders, which are the predominant food source for their young and a protein source for adults. Butterflies and moths prefer similar conditions, so expect them to frequent the habitat as well.

When selecting plants, choose perennial and annual flowers with different flowering periods that produce a lot of nectar and have little fragrance. Include plants that bloom from early spring through late fall. Space them out so the hummingbirds can move freely throughout the area and so one bird does not claim them all, since they tend to be territorial.

Hummingbirds generally prefer tubular, odorless flowers. Color favorites are red, then oranges and pinks, followed by purples, blues and yellows. Some favorite native hummingbird flowers include trumpet creeper, bee balm, trumpet honeysuckle, spotted jewelweed, red columbine, Canada lily, Indian pink, red buckeye, and Catawba rhododendron. Some exotic flower favorites include pineapple sage, giant blue sage, cypress vine, shrimp plant, mimosa, lantana, butterfly bush, rose of Sharon, common foxglove, and cigar plant. The Japanese honeysuckle found along many forest edges and roadsides is another favorite. There are many other flowers available to plant for hummingbirds, and variety is best. Contact your local Cooperative Extension Center for additional recommendations.

Aside from these sunny flower gardens, hummingbirds need access to natural areas with trees, shrubs, vines, groundcovers, wildflowers and even weeds. These protected areas provide shelter from the elements and sites for roosting and nesting.

Feeders are recommended in a habitat area to provide a nectar source in the absence of blooming flowers, especially during the early spring and late fall months. They are also useful for drawing in those first early spring birds and enticing them to nest in the area.

Consider hanging overripe fruit or banana peels near feeders to attract flies for them to eat. Some butterflies enjoy feeding on these fruit as well. Hummingbirds like to bathe frequently, so provide a constant water source. They enjoy running water, and a small mist element is perfect. Bird baths work too, just place a couple of flat stones in them for the hummingbirds to use.

With a little care and work, hummingbirds can be a frequent and fascinating addition to any garden. Happy Gardening!

We are seeing definite trends in men's formal wear. The top two priorities on the groom's list; color and fit.

Grey, in all shades, is the forerunner in the color department, as more men steer away from basic black, grey is the perfect neutral to pair with other, bolder colors. Tan has been making an appearance for several seasons now and it the perfect color for destination or a more casual wedding. Navy is hitting the market in a big way this year

The tuxedo manufacturers are now offering slimmer cut coats and pants, which give a more tailored appearance. This is a huge contrast to the more traditional "boxy" looking coat styles most of us are used to seeing. These slimmer styles are being asked for and greatly appreciated by grooms and groomsmen alike. Also, there are now three pant options to go with most jacket styles; a traditional pleated front pant, the more modern flat front and even a slim fit. All I am waiting for now is a low rise tux pant and we should really be able to make the guys happy.

We are excited to be able to offer grooms these trend options, plus all of the traditional styles that we still love too.

Have you heard those two words, “I’m bored,” yet this summer? Hopefully the following activities will get your kids up and moving again. Kids love water activities. One cool activity is to make your own water bombs. Buy some kitchen sponges (ones without the scrubber pad) and some fishing line.

Cut the sponges into fourths lengthwise. Stack two layers of four sponges and tie with fishing line as tightly as possible around the sponges.

Now just fan the sponge pieces out, soak, squish and have at it!

The kids are for sure going to love making and playing with water beads and glow sticks.

You can find water beads at a craft or even Dollar store. They are used in floral arrangements. Empty two small canisters of water beads into a clear, baking dish. Next, add several colored glow sticks. Observe what happens when a glow stick hits a water bead.

Why not make a family summer bucket list.

Some examples include make tie-dyed shirts, homemade ice cream, play flashlight tag, make s’mores and go on a picnic. The possibilities are endless and can range from free to as much as you want to spend. Another idea is to host a

scavenger hunt. Print out a list of outdoor items to find such as a bird’s nest, bug, a chewed leaf, a beautiful rock or even something you think is a treasure.

Have the kids help you brainstorm an extensive list of items you can find around the house. Gather a group of kids and let them find as many of the items as they can in a specific time range.

Now, for some educational summer activities. Remember, we have to keep those young minds fresh over the summer. Make math fun by playing some water balloon math. There are many variations to this game and many different educational levels. Using a sharpie, write an equation on the balloon, anything from simple addition, to algebra, even geometry terms. Now, add water and the kids can answer the math question and throw at the desired target if the answer was correct. This game can even be played like hot potato by tossing the balloon back and forth, which will usually end up with someone getting soaked, which the kids love!

Do you have a play pool? If so, try out this baking soda and vinegar play pool activity. Spread baking soda over the play pool. If you have liquid watercolor paint, you can sprinkle some of that over the baking soda for a more colorful explosion. Next, fill balloons with vinegar. You can even mix half water and half vinegar to fill up the balloon. Sneak in a few with just water so when you throw them, you never know what you might get. Now, toss the balloons into the play pool hard enough to bust and watch the colorful explosions. No worries about cleaning up those popped balloons because they should all be contained in the pool.

What is Your Learning Style?

by Eva Tomko “It’s not how smart you are; it is how you are smart”. I heard this quote in college and it has always stuck with me and I’ve seen it evident in so many ever since. With that being said, this also parallels the study of cognitive or learning styles. Learning styles are basically how the brain interprets and processes information the best.

Everyone has a natural learning pattern that follows a specific style more so than another and the brain will react more positively towards a learning environment if they are taught with their favored method. The three types of learning styles are: visual, auditory, and tactile. So, let’s explore what type of learning style you prefer.

First, there is visual learning which means that you learn more from seeing.

You might prefer to sit closer to the front so you are not distracted and don’t have any obstructions in your view. Many people who are visual learners take very detailed notes and can remember seeing what they took notes on. They remember and notice more body language and facial expressions. They are also more apt to remember pictures, diagrams, illustrations, videos, and charts.

Another type of learning style is auditory which means you learn more through listening. There are many methods in which you can acquire information, memorize, and learn from this style. Using books on tape, reading aloud, or using rhymes of chants will help cement information into your memory more so than the other types.

People who learn more through auditory methods usually learn best from lectures, discussions, and debates. ya d ki n va l l e y l iv i n g . co m

Learning can also be affected by tone, pitch, and speed in a conversation.

Lastly, there is tactile or kinesthetic learning which means that you learn more from touching, moving, and doing. This type of learner may be best noted as not being able to sit still to take lots of notes nor listen to lectures, but instead have a need to explore and be hands-on in the classroom. This type of learner will learn more through experience therefore needing teachers to allow them to do science projects, experiments, go on fieldtrips, role play, or actively explore the world.

These types of sensory preferences will influence the way students learn.

Therefore, there needs to be some variety in the teaching methods that a student experiences in school and at home.

If a teacher uses a variety of methods when presenting the curriculum and appreciates different ways of learning, communication will be enhanced and more learning can occur. It becomes easier for teachers to motivate students if they can make their lessons appeal to more than one type of learning style. It can also become easier for a parent to help their child learn important educational information through homework, studying, or just teaching their child a subject themselves, if they first understand the way their youngster thinks, understands, and learns best. If one of these learning styles sounds like what you or your child prefers, remember to use these tools when studying or learning about a subject.

People do not just learn in one spe-

cific style only but instead, we favor one style over another and your brain can hold information easier if it is presented to you in your preferred approach. One other idea to consider when trying to figure out what your dominant learning style would be is to consider learning about and taking a Myers-Briggs Personality Test. This will also explain and unlock other differentiated approaches to learning and allow someone to emerge into the workforce in a field that they will be successful and happy in. As the famous psychiatrist Carl Jung once said, “What appears to be random behavior is actually the result of differences in how people want to use their mental capabilities.”

Take A byHike!

Jessica Owens Wall, MPH Literally! Living in the foothills of the North Carolina Mountains gives us a great opportunity to get out and take a hike. Hiking is a great outdoor activity the whole family can enjoy together. And hiking is an activity that is inexpensive and doesn’t require a lot of equipment.

Hiking is a cardiovascular activity to get the heart pumping and helps strengthen muscles in the body. According to the American Hiking Society, hiking can also help with weight control and help in dealing with stress. Some conditions that can be addressed with hiking are heart disease, hypertension, diabetes, osteoporosis, obesity, and anxiety. Of course, weight control or loss is also aided by watching your diet or making diet changes, but hiking is a great way to get everyone off the couch and out from in front of electronic devices.

There is no need to start off on a very difficult course. There are many types of trails in different terrains. If you are new to hiking, choose a trail that is easier so there isn’t as much impact on the joints and is not as much of a cardiovascular strain. Also an easier trail will not change elevation as much or as often. You may also want to start with shorter trails. As you get more experienced and get in better shape, you can add on more miles or strenuous trails with more changes in elevation.

If you are new to hiking, there are things you want to remember and pay attention to other than the difficulty or length of the trails. Remember when you are out hiking, you are out in the wilderness and can be exposed to the elements. Think about the shoes you will wear and wear layers of clothing to keep you from getting too hot or too cold.

Look at the weather before leaving, so you know of any storms in the area. The National Park Services suggests bringing a walking stick to help provide stability.

Hiking is a good time to remember Slip, Slop, Slap, Seek, and Slide: slip on a shirt, slop on some sunscreen, slap on a hat, seek some shade, and slide on some sunglasses.

Take a look online at the park or trail you are going to hike, and bring a map with you so you don’t get lost. Make sure you understand what color or shape blaze (trail marker) you are following. Blazes are often palm-sized, in bright colors, simple shapes. These may be on posts or nailed to trees. Take along water and snacks and plan or breaks along the way to rest and re-charge. You may want to consider a hiking pack to help carry all your gear. They come in all types and sizes, with some having built-in water reservoirs.

Use the buddy system when hiking. Hiking in groups helps if there is an injury and can help prevent getting lost.

Living in the Piedmont puts you close to some great hiking. Hanging Rock, Stone Mountain and Pilot Mountain State Parks are all within a short drive. Each of these locations offers different trails with varying levels of difficulty and length. CAN TOO MUCH BOTOX BE BAD? THERE ARE OTHER ALTERNATIVES

Although Botox has so many positive benefits, both cosmetically and medically, there are also risks associated with it. As we age, many of us are faced with the prospect of changing our living arrangements. We may want to stay in our homes as long as possible, but at what cost financially, physically or socially? If you feel the costs of maintaining your home are becoming unmanageable, that you cannot or do not desire to deal with the upkeep of your home anymore, or you just feel cutoff from the outside world, an independent living retirement community may be something to consider.

The facility is located in a tranquil wooded setting, and includes a dining room where residents can receive freshly prepared meals, a game room complete with a pool table, and common areas where residents can relax and visit. Personnel and security are on-site 24/7/365 and weekly maid service and grounds maintenance are provided, so living is as carefree as possible.

Most independent living facilities do no offer medical care or a nursing staff. On-site medical care is usually 74

Housed within the walls of the former Salvation Army Chapel, the staff of New Winston Museum has constructed exhibits centered around local photographs, oral histories, and multimedia presentations.

Touring the museum allows visitors to step inside the pages of history and take a personal look at life in Winston-Salem and Forsyth County as experienced through the eyes of the locals.

“We are unique and a ‘new’ kind of museum, both in the way we exhibit and the way we tell the stories of the people who live here in this city,” Chris Jordan, the Director of Education and

Programming, explained. “It’s not just THEIR story,” he continued. “It’s their story in THIS PLACE.” “We take a virtual approach, “Katherine Foster, Executive Director of the NWM added. “We focus on the stories that create a tangible legacy from 1849 until the present, a period not covered by other local museums.” Rather than showcasing artifacts and presenting a list of historic events, NWM strives to share Winston-Salem’s history through interpretive exhibits and unique programs such as the Oral History Project and the Salon Series.

To date, NWM has video interviews with more than 50 people and produced oral histories featuring city leaders, activists, and artists. Along with period photographs displayed on the red and yellow walls, visitors actually hear the voices of the participants as they speak on mounted TV screens, reflecting on happenings in the photographs and recalling events from times gone by. “Several of the luminaries interviewed including Mr. Frank Hanes, Mrs. Copey Hanes, Mr. John Medlin and Rev. Jerry Drayton, have unfortunately passed on,” Katherine reported. “But their legacies will live forever in our community.”

Another unique feature of the museum is the NWM Salon Series, where community members gather to discuss a topic of historical or cultural interest to the city. Past events have included: “Front and Center: The Jewish Influence on the Development of WinstonSalem’s Downtown Business District,” “WinstonSalem Writers and NWM present City Memoirs,” and “ The War at Home—Dr. John Francis Shaffner: Civil War Surgeon from Salem.” All of these are free and open to the public. They are also recorded and posted on YouTube for anyone who is unable to attend but is interested in viewing the session.

Adjacent to a small gift shop, the museum also provides a gallery in which local artists show their work focusing on life in Winston-Salem and Forsyth County.

Visitors, young and old, may peruse the pieces on display and learn about a particular artist’s style.

One of the future goals of the New Winston Salem Museum is to develop “Travelling Trunks” for use in the classroom when a field trip’s not possible.

Katherine and Chris have been working closely with the public schools to align programming with curricula, developing lesson plans and activities to support humanities classwork.

Although the museum is currently privately funded through community grants and donations, the staff is exploring avenues to create public/private partnerships and ways to secure municipal funding, so they may continue to provide quality programming for the community. Membership is now available through their website. In addition, the Friends of the Museum Program is open for anyone interested in volunteer opportunities, such as docents or hosts. “We seek community involvement and we want to be a community resource,” Chris pointed out.

Chris Jordan and Katherine Foster are true professionals devoted to the task of making the New Winston Museum a state of the art facility dedicated to preserving the past for the future.

Together they make a great team.

Walkertown Area Historical Society: History in Action by Mike Marshall One thing is for sure, whoever said history is boring isn’t a member of the Walkertown Area Historical Society.

Walkertown, by the way, is a town of just over 4,600 people tucked away in northeastern Forsyth County, in North Carolina’s Piedmont Triad.

The Society—or WAHS as it is better known locally—has only been around since 2008, but in the six years since its formation, its members have made great strides in capturing and preserving Walkertown’s history and that of the surrounding area.

Today, the archival material it has assembled is housed in WAHS’s own Center and Museum located on Church Street in Walkertown—next to Love’s United Methodist Church. Thanks to volunteers, the facility is open the first Monday of every month from 2 to 5 p.m., and visitors are always welcome.

The collection housed there includes a large and growing inventory of oral histories, photographs, documents, and physical artifacts of historical significance.

But WAHS members don’t just col-

lect stuff, they also do things, lots of things. For example, they won a blue ribbon in the Educational category at the Dixie Classic Fair for one of their history-related entries. And they also received prizes for the best decorated float in three of Walkertown’s annual Christmas parades.

And that’s not all. Members also keep busy with an assortment of activities aimed at raising the funds needed to help WAHS accomplish its mission, especially book sales. In 2009, they produced a cookbook called Collection of Favorite Recipes: Preserving the Gift of Heritage that was featured in the pages of this magazine in the January/February 2014 issue. More recently, they compiled a pictorial account of Walkertown published by Arcadia Publishing as part of its Images of America Series; the book included more than two hundred photographs of people, places, and artifacts important to the town’s history. Not only that, work is currently underway on two more books. One will feature an account of Walkertown High School

during the years 1924-1962, and will include photographs of students that graduated there. A second book will examine the spookier side of the Walkertown in a collection of ghost stories. Another fundraiser is the annual potluck picnic and silent auction— this year will be the 6th in that series.

The Society’s regular meetings are generally held on the 3rd Tuesday of every other month (January, March, May, July, September and November).

They begin at 6:30 p.m., and, with the exception of the potluck picnic and silent auction, are held at the Walkertown library located at 2929 Main Street. The potluck picnic and auction take place at the WAHS Center and Museum.

In April, the WAHS was honored by Preserve Historic Forsyth—a countywide historic preservation group— which held its annual membership meeting in Walkertown. The 1891 Crews House, a Walkertown icon, was opened to the public as part of the event.

In under 300 fictional pages, Winston-Salem author George W. Hicks can satisfy totally all Revolutionary War fictional history aficionados in his novel General Washington’s Affair. Hicks claims all of his "characters within this adult novel have elements that are figments" of his imagination.

He has authored six other books— all nonfiction describing the Southern experiences during this fight for independence with descriptions of the camps, the horses and the culture of the time. The author includes a helpful general military nomenclature, selected bibliographies and a cast of his characters in order of their appearances—some factual, some fictional and a map of Richmond and Petersburg, Virginia in 1780.

Note: General Washington's Affair is an adult novel. The paperback is published by Publish America.

Carolyn Boyles transcends seven generations in Pilot Mountain. Most of her research was based on stories from parents and grandparents. Imagine yourself entering the Grand Ballroom of the Mandarin Oriental Hotel in Washington, D.C. awaiting introduction to His Royal Majesty Bhumibol Adulyadej, the King of Thailand. You have been specially invited to celebrate the King’s 86th birthday. For Mt. Airy’s own Betty Bunker Blackmon, it happened such as this. For you see, Betty is a direct descendant of the original Siamese twins.

She is, in fact, the great-granddaughter of Eng Bunker.

Accompanied by her eldest son, Zack Blackmon, Jr. and his wife, Sherry, Betty and her family were among the chosen ones to be honored guests at this auspicious occasion. Betty felt like Cinderella at the ball.

In her 83rd year, Betty recalls when she was a small child and she and her Mama, Lucinda Emmaline “Emmie” Gambill Bunker, and Daddy, Albert Montgomery Bunker, lived in a little four room house with no running water or indoor plumbing. Electricity was added when Betty was in second grade. There weren’t even closets in her humble abode. “Why, we hung our clothes on a nail on the back of the door,” she explained. “and now I have four closets full of clothes and don’t know what to wear!” she laughed.

“But what we didn’t have in material things, we made up for in love. We were one happy family.” She especially enjoyed visiting with her grandfather and other relatives on the weekends. “I always looked forward to playing with my cousins,” Betty said.

As a teenager, Betty worked as a waitress to earn extra spending money at the Blue Ridge Hotel in the evenings and on weekends. Two days after her high school graduation from Franklin School in 1949, she was married. Being an only child herself, Betty longed to start a family. She and her husband had, in her own words, four “beautiful, precious children” - Tanya, Zack Jr., Albert Montgomery “Monty,” and Deidre. Now her children are grown and married with children and have grandchildren of their own. “When we’re altogether, there are thirty of us,” Betty said proudly.

“Deidre always says, ‘Mom, you’re responsible for this!’ and we all laugh.”

Sadly, last year, Betty lost Monty. A diabetic since he was an infant, Monty fought the illness bravely, but died due to complications after surgery in January 2013. “My Monty,” Betty said softly as her voice trembled and her eyes filled with tears, “was such a special person. There was nobody else on earth like him. He never complained and was good to everybody and was always smiling. Everybody loved him.”

Determined to forge ahead, Betty remains dedicated to helping others. She visits her Aunt Ginny regularly at the nursing home and is always there for a friend in need, bringing a meal when someone’s ill or just stopping by to lend support during a difficult time. For twenty-six years, she volunteered at the hospital and received the “Extra-Mile” Award for her unselfish service and a plaque for being a “Lifetime Volunteer.” The Mt. Airy Jaycees named her an Outstanding Senior Citizen. Betty was a member of the Mt. Airy Chapter #18 Order of the Eastern Star for 32 years.

Always her faith has been an important part of her life.

Betty has attended the First Baptist Church in Mt. Airy for

the past fifty-five years. “I have the best Sunday School class there is,” she said, “the Rebekah Class.”

Betty is a proud member of the Surry Arts Council and attends every event on the calendar! She thoroughly enjoys the plays and performances by the bands at the amphitheater. And, she invariably looks forward to Mayberry Days each fall.

In her spare time, when Betty isn’t visiting with her children and grandchildren, she loves to go to jam sessions, listen to bluegrass music at the Earle Theater (she might even flatfoot when she hears her favorite song), play bridge with her friends, and eat breakfast with the regulars at the Dairy Center. “My family and my friends are my life,” she said.

“They mean everything to me.”

Her devotion to her family is evident when she speaks excitedly about the upcoming Bunker Reunion. “Every year, it’s held in Mt. Airy the last Saturday in July,” she told me.

“All of us gather and eat and talk and have a big time. It’s just wonderful,” she added. On two occasions, once in 1999 and then in 2001, Betty and several of her family members actually visited Thailand, the birthplace of the original Siamese twins, Eng and Chang Bunker.

“My family and I have had such a good life and have been truly blessed, Betty said in closing, “I feel very fortunate.”

The Edwards-Franklin House Is the Scene of Activity and Excitement

Spring and early summer has been a busy time at the site of the historical Edwards-Franklin House in Mount Airy. The house was built circa 1799 near the Lowgap community. Neighbors and visitors have been hearing hammers ringing, saws whirring, and flaking paint being scraped from the outside walls at the historic Edwards-Franklin House on Haystack Road. In addition to the sounds, the odor of paint has permeated the air. The Surry County Historical Society has spent two years in consultation, planning, and implementation of these much needed repairs to this wonderful architectural treasure. With such a major undertaking to continue the maintenance of this cultural and historic property owned by the Surry County Historical Society, the organization engaged in consultations with Paul Fomberg, Senior Restoration Specialist with the North Carolina State Historic Preservation Office, for advice to identify proper techniques to make necessary repairs to the structure. Fomberg’s technical restoration expertise enabled the society’s Board of Directors to determine a plan of action, according to society president Dr. Annette Ayers.

Repairs include new tongue and groove decking, new column bases, and replacement of missing pickets being installed on the front porch. Crown molding and window sills were replaced on the porch where needed. Several decayed boards had to be replaced near the chimney. Siding, shutters, windows and frames, and door frames were scraped, and sanded in preparation for painting.

The fireplace hearths were repaired and leveled on the first floor of the house.

The separate kitchen and restroom building received repairs to the bottom siding board and missing roof shingles were replaced. Kidwell and Company, Inc. of Mount Airy completed the repairs and painting for the historical society.

Visitors will notice the large welcome sign has been moved to a more visible location on the lawn and re-lettered to conform to the other improvements at the Edwards-Franklin House.

Following completion of the repairs and painting, the Edwards-Franklin House will be open free to the public on the second weekend of each month through October from 1:00-5:00 p.m.

A special Open House to allow everyone to view the repairs and improvements to the EdwardsFranklin House will be held on July 12 and 13 from 1:00 until 5:00 p.m.

Light refreshments will be served.

Members and the public are invited to join us on this special day to view the improvements to the property!

The annual Sonker Festival will be held there on October 4 from 1:00 to 5:00 p.m. Servings of a large variety of sonkers and beverages will be available for a nominal fee. Old time music will be performed and a Civil War exhibit and a quilting exhibit will be displayed.

New signage to the slave cemetery will be displayed listing the first names of the slaves who are buried there.

Memberships assist in preserving and maintaining the properties owned by the society and in preserving our local history and culture. Membership in the Surry County Historical Society is open to the public; individual memberships are $20.00 and family memberships $35.00 per year.

by Jeremy Halsey Our neighboring Alleghany Historical-Genealogical Society has earned yet more awards on historical preservation form the NC society of Historians. At the 72nd Annual Awards Ceremony in Mooresville, the Alleghany HistoricalGenealogical Society, (AHGS), brought home eight wins.

Imaging Specialists, Inc., Sparta, won a Paul Green Multimedia Award for the "Trip to the Museum" series prepared for Alleghany Community Television in addition to a Joe McLaurin Newsletter Award for the AHGS Newsletter and a Willie Parker Peace History Book Award for Four Brothers in Gray, the story of the Proffit family of Wilkes County and their struggles during the Civil War. The AHGS's series, "Alleghany Memories" won another Paul Green Award for five episodes : interviews with the new Haven Quilters, Pauline Meals, Jeanette Anders, Walter Bell and a special presentation on the history of Alleghany CARES. The Walter Frank Osborne, Jr. Detachment 1298 Marine Corps League won another Paul Green Award for another set of the same series featuring interviews with Bobby Irwin, J.T. Pardue, Bill Sebastian and Charles Pugh.

Dr. Suzanne Mellow-Irwin won a Clark Cox Historical Fiction Award for her book, Stratford Oaks Tales: The Tale of Clyde published by Imagaging Specialists Inc., (ISI). Zach Hamm won for his illustrations.

Jeff Halsey AHGS Chairman and president of ISI says of the awards, "Thank you to the NC Society of Historians for your support and encouragement inspires us to continually try to improve. We are proud to be a part of the North Carolina history preservation community."

Collecting It Had To Be Blue...

Collecting Blue-Banded Pottery

by Miranda N. Burgin Allison’s love affair with blue-banded pottery began on the hearth of her mother’s kitchen in the 112-year-old farmhouse their family continues to call home.

“I suppose I really began collecting before I left home,” Allison fondly recalled. “I remember eyeing crocks in my parents home that I loved and wanted. My Mother has been kind to release those things to me over the years.”

Strong, built to last, made for a purpose, and beautifully simple, these pieces of pottery hold a special significance for Allison, who works in arts education and cultural preservation.

“I loved the massiveness of the food storage crocks in addition to the warm quality of their glazed putty color with blue insignias, symbols, or bands,” said the devoted collector.

“I started out with just a few crocks from my home place, which were pieces that belonged to my grandparents,” recalls Allison. “To them they were simply utilitarian objects, necessary for life on the farm. Today, for me, they are timeless pieces that hold precious memories.”

In the days of their original purpose, the crocks were used for storing lard, making kraut, pickles, and other pantry items. The crocks would be covered by cheesecloth to keep flies out and allow the contents to "breathe.”

They played a vital role in preparing and preserving food for the family.

The collection began to grow beyond family pieces with additional items acquired through countless hours of scouring antique stores, flea 88

markets, and yard sales. Over time, Allison began to add blue-banded pitchers, smaller jugs, and containers to the collection. A love for putty or tan colored backgrounds with blue accents remains a constant as she adds carefully chosen pieces. Her collection numbers around 25, but considering the size of each item, this represents a big collection.

Among the known markings included in her collection are Ohio Pottery Company, Roseville, Ohio, and Western Stoneware Co. in Monmouth, Illinois, which features a lovely blue leaf insignia. Some of the larger crocks have openings at the base sealed with a cork. Other markings show a Native American profile in a circle of stars.

Although each item is dear to her heart, a few pieces of pottery stand out as especially unique examples. “I eventually would collect crocks that were large enough to add a glass top and now serve as my lamp tables in the living room,” Allison shares. “They are 20 gallon sizes, approximately 24 in. high and 18" across.”

“My favorite one was found at an antique store in North Iredell,” she continued. “It still had a stained paper label on it with the recipe for mixing a crock full of horse liniment. That crock still has a very distinct odor inside!”

Like so many collectors, Allison still thinks about the piece that got away, “My greatest regret in collecting was passing up a crock large enough to make a dining table out of. It was over 3 ft. tall and would hold 90 gallons.

The price was way out of my budget!”

Putting her artistic talent to good use, Allison has found innovative and creative ways to display the collection in her home. In addition to using large crocks as lamp tables, she displays a number of crocks and drink dispensers on the under shelf of an antique table from the old B.M. Miller's General Mercantile in Hiddenite, NC. Pitchers are displayed on an antique dry sink from the family home place.

The blue bands that grace the beloved pottery in Allison’s home forever bond generation to generation. They represent the timeless connection that comes from collecting with the heart.

In a previous issue, our daughter, Carrie Williams, introduced readers to a pup named Cercie who found us (“The Gift that Came with Fleas, Nov 2013). Cercie was filthy and sick, but she stole our hearts and took over our home from the beginning, and I’m sure you would like to hear an update.

I could brag about how well Cercie has integrated into our household and how many words she understands and how adorable she is in general. Or we could talk about how she’s not invited for play dates because her, um, ambitious playfulness disgusts all of her friends. But I think you might be more interested in the things this little mutt has taught herself.

Cercie loves squeaky toys! She loves to tote them around, chase them, and murder them. Her all-time favorite is a blue rubber octopus whose legs curl out and back in when it squeaks. Meanwhile, she had been ignoring another toy, a soft Frisbee I call “the doughnut.” One day, she picked up the doughnut, arranged it over her muzzle and commenced attacking the octopus through it.

Whenever the doughnut would get knocked akimbo, she’d use her paws to readjust her armor and return to battle. She played this game for several days.

When that game grew stale, she invented another one. This time she chose a soft toy that has squeakers on each end. Using her paws and teeth, she pulled the squeaky toy halfway through the doughnut hole, and then shared this newly devised toy with me in a game of tug-of-war.

She also loves to play ball, and when we weary of throwing, she’ll toss a ball in the air herself and run after it. Just last night, she was toting one ball, using it to bat a second ball around the floor. Pup hockey!

But the thing she did that still has me baffled involved her kennel. For the record, Cercie spends very little time incarcerated, but a kennel does

come in handy when we travel. I had brought the cage into the house from the car and set it on the floor with the door double-locked. There was a toy still inside it, but I was too busy to get it out. From the other room, I could hear Cercie rattling the kennel, and I

knew she wanted to get her toy, but I thought she’d just have to wait. In a minute, here came little Miss Houdini lugging her toy!

If you think we might have our hands full with Cercie-girl, you would be correct!

Women Must Know What to Expect—from Social Security Everyone needs to be aware of the financial resources they will have available in retirement. But if you’re a woman, you must be particularly diligent, for a variety of reasons. And that means you’ll need to know just what to expect from Social Security.

Why should you, as a woman, pay extra attention to Social Security? For one thing, women often take time off from their careers to care for children and older parents, so they may accumulate less money in employer-sponsored retirement accounts, such as 401(k) plans. And women still live several years longer than men, according to the Census Bureau.

Clearly, then, you need to get the most you can from Social Security. To do so, you will need to consider at least three key factors: Age — You can start taking retirement benefits as early as 62, but your benefits may be reduced by up to 30% unless you wait until your “full retirement age,” which is likely 66 or 67. If you delay taking benefits until 70, your monthly benefits may be up to a third larger than if you started collecting Social Security at your full retirement age. You’ll need to weigh a variety of factors — such as family longevity, income from employer-sponsored retirement plans and your anticipated financial needs — in determining when 94

you should start taking Social Security.

Employment — If you work while receiving Social Security benefits before you reach full retirement age, your benefits will be reduced by $1 for every $2 you earn over an annual limit, which generally increases each year. In the year you reach full retirement age, your benefits will be reduced by $1 for every $3 you earn over the limit before your birthday. But once you reach full retirement age, your benefits will no longer be adjusted for earned income.

Marital status — As a spouse, you can generally receive Social Security payments based on your own earnings record or collect a spousal benefit of up to 50% of your husband's Social Security benefit. The benefit will be reduced if you start taking it before your full retirement age. To start collecting Social Security spousal benefits, you must be at least 62 years old and your husband must also have filed for his own benefits. If you’re divorced, and you’re not currently married, you can generally receive benefits on your ex-husband’s Social Security record, as long as you meet certain conditions.

(For example, you had to have been married to your ex-husband for at least 10 years.)

No matter how much Social Security you ultimately receive, it’s almost certainly not going to be enough to pro-

vide all the income you’ll need. So during your working years, try to contribute as much as you can, for as long as you can, to your IRA and your 401(k) or other employer-sponsored retirement plan. At the same time, look for other investment opportunities. And when you reach retirement, create a withdrawal strategy that allows you to stretch out the income you receive from your investments for as long as you can.

By saving and investing as much as possible during your working years, maximizing your Social Security payments and carefully managing your financial assets when you’re retired, you can help improve your chances of enjoying the retirement lifestyle you deserve.

America—Still Beautiful In 1893, thirty-six-year-old Katharine Lee Bates, an English professor at Wellesley College in Massachusetts, took a train to Colorado Springs, where she would be spending the summer. During the trip, the sights she inhaled into her spirit exhaled onto the paper, creating the poem she titled Pikes Peak. Upon publication in the 4th of July edition of the church periodical The Congregationalist in 1895, the name was changed to simply America.

After consideration for a tune for Bates’ poem, Samuel A. Ward’s music created in 1882 for the hymn O Mother Dear Jerusalem seemed to fit best.

The poem and music were not conglomerated until 1904, one year after Ward’s death. It was published in 1910 and titled America the Beautiful.

Bates, however, lived to experience the song’s rising popularity. The song was revised three times before she died in 1929.

Like Bates, anyone with a considerate eye should observe that America still holds much beauty. But the view from the pulpits around America seems to indicate a spiritual decline. Some prophetic teachers say that America will soon be nonexistent, as she plummets deeper into immorality and deviates from the Bible’s teaching. The picture both sickens and frightens me! How could America, “a thoroughfare of freedom, ever collapse to ruin? And in regard to those who blatantly confess to hate this country, I reiterate what I’ve heard Pastor John Hagee say many times: “If you don’t like America, there’s a plane leaving every hour. Get on one!”

But along with acknowledgment of her flaws, I feel obligated to consider what America has done for me throughout my life.

I was born free in 1949. (Unfortunately, my dark-skinned neighbors were not. I learned about the Civil War in school and how the slaves were freed, but I didn’t understand why local restaurants wouldn’t serve some of my friends because of the color of their skin. The American mindset, especially here in the South, still needed work.)

For the most part, I felt safe growing up in rural America. Terrorism was something far-away countries experienced. Hunger, poverty, and government cruelty belonged to Third World countries. And where I lived religion was synonymous with Christianity. And Christianity was the Gospel of Jesus Christ as depicted in the Bible. Well, at least in the radius of my small world.

School was where I went to learn and play. I made friends and I don’t recall anything tantamount to what news anchors now refer to as “bullying”. Kids picked on other kids and I’m sure some were hurt by the careless words of classmates, but I honestly don’t remember any instances of displayed troublemaking. And it never entered my mind that a teacher might possibly violate a student or a depressed student might deliberately bring harm to other students. We respected the flag and what it stood for.

Sang hymns and patriotic songs during assembly. And the principal read verses from the Bible without fear of repercussion.

As the protests for civil liberties and the Vietnam War loomed in the 60s and early 70s, America’s strengths and weaknesses surfaced. Looking back, the fact that there were still people in the human race who had an unbalanced view of equality seems incomprehensible. We seesawed between what was and what should be, and as in most battles, blood was shed. And as for the War on foreign soil, like all wars, people’s lives were taken and families were altered as the wounded in mind and body returned.

Still, I would be amiss if I didn’t tell you about my country’s response to my personal battles. I remember well the day a man from Vocational Rehabilitation walked into my hospital room and explained that I would soon start receiving two monthly checks from the government. One for myself (as long as I remained disabled) and one for my son (until he graduated from high school). I didn’t ask for this financial aid from my country, but my country was there for me when I saw no possible way to continue to effectively earn a living. For this I am thankful.

Yes, America has many problems, but she still has a remnant who hold fast to the morals on which she was founded. And as a less familiar verse of Bates’ illustrious song states: “America!

America! God mend thine every flaw. Confirm thy soul in self-control, Thy liberty in law!” I cannot tell you the fate of this country, but this I know from Proverbs 14:34: “Righteousness exalts a nation, but sin is a reproach to any people.”

Is America still a beautiful nation? A good place to live and grow a family? As long as the remnant, referred to in Scripture as the Bride of Christ, remains, my answer is emphatically: Yes! From sea to shining sea!
