The architecture, formerly known as the Union Building was erected in 1916 in free Renaissance style and was the first structure in Shanghai to employ a full skeletal steel framework, a pioneering design of its time to create the first open-plan office in China. It was first used as the China branch office of the Union Insurance Society. Later in 1935 the Mercantile Bank of India moved into the building and eventually bought it in 1941. In 2004, the unique heritage building was transformed into Three on the Bund by renowned American architect Michael Graves. The pioneering project focused on the

C H I -Q INNOVATIVE KOREAN

CHI-Q, latest project by Three on the Bund with Chef Marja and Chef Jean-Georges Vongerichten as inspiration and culinary partners, is a traditional yet innovative Korean experience composed of local and organic ingredients. It is a gourmet’s embrace of the strong and long lasting Korean culinary culture interpreted in a contemporary twist with the intent of bringing it to a new international dimension.

CHI- Q

M E R CATO

CHI-Q’s menu is comprised of dishes that were developed by marrying Chef Marja’s traditional Korean homemade-style recipes with Jean-Georges’ modern spin to satisfy the taste of an international clientele in search of culinary adventures. An important feature of the menu is Korean BBQ, an elegant yet playful sharing style experience, where guests grill fresh and savory meats, seafood and veggies, customizing each mouthful with a vast variety of homemade kimchis, seaweeds and pickled veggies, while bonding with their friends and family around the table. The food will be complemented by a beverage menu reflecting the favorites of Korea, from imported juices, beers, makkolli to an extensive selection of Korean sojus including several premium labels which are designated as “Intangible Cultural Assets”. Creative cocktails made from Korean liquors are also an absolute must try. The design concept by Neri&Hu celebrates the beauty of the

26

dramatic yet hidden three-story atrium of Three on the Bund. It created an abstracted landscape and interiors providing guests an architectural experience to complement the unique gastronomic experience.

JEAN -G EO RG ES FRENCH FINE DINING

World-renowned chef JeanGeorges Vongerichten presents a masterful spin on French tradition with Jean-Georges Shanghai, his first and only signature restaurant outside New York. Since opening in 2004, the restaurant has set the bar for fine dining in Shanghai with inspired cuisine, an elaborate wine list, and impeccable service.

“The discerning cuisine at Jean-Georges Shanghai features a mix of the finest natural ingredients blended together in unique and surprising ways that light up the eyes and the taste buds.” Under Jean George’s gifted direction, the Shanghai team transforms classic French dishes through the use of bold, Asian-inflected seasonings and unexpected flavor combinations. Fresh vegetable juices and aromatic herbal infusions act as natural flavor enhancers that create depth and complexity without the heaviness of traditional cream or meat-based sauces. Bringing bright modern flavors to traditional cooking techniques reflects the core of their culinary philosophy. It draws the basic essence and

nuanced flavors of quality ingredients to the fore and allows them to truly shine.

“All of Mercato’s pizzas start with a special dough, made daily in-house with the finest

Designed by celebrated American architect Michael Graves, the restaurant interiors are inspired by the grandeur and romantic French influence of Old Shanghai. The 1,500 square meter space offers 200 seats, a beautifully appointed semi-private dining room, and a spectacular wine cellar which doubles as a unique private dining venue. A wide expanse of windows suffuses the airy space with natural light, and ensures that the stunning Bund vistas are in full view from every seat.

MERC ATO VIBRANT ITALIAN

Mercato, a vibrant Italian restaurant from celebrated three Michelin star chef Jean-Georges Vongerichten and Three on the Bund, is one of the most popular restaurants and food lovers’ favorite choice on the Shanghai dining scene. Mercato is passionately committed to providing guests with a pure and refreshing dining experience. The best Italian cooking is noted for the simple, yet elegant preparation of quality ingredients. Mercato embraces this philosophy by combining the finest Italian products with the freshest local bounty to create a naturally vibrant culinary experience unlike any other. A central feature of the restaurant is the stunning Pizza Lounge which is illuminated by the glow of an Italian wood burning oven.

Italian semolina flour. This unique dough is incredibly flavorful and makes for a wonderfully light and chewy crust.” The pizza is then covered with bright and savory toppings, and roasted in the wood burning oven which imparts a beautiful crackling texture and satisfying char. A seat at the Pizza Lounge offers guests a full sensory experience that will not soon be forgotten. The Mercato Bar also features a completely original selection of cocktails made with the finest Italian spirits, freshly muddled fruits and aromatics.

such as Salmon Carpaccio with Avocado Wasabi Coulis and Candied Ginger dressing, or Pan Fried Scallop served with Homardine Sauce and Quinoa. Also available is a choice selection of South East Asian classics from Hainan Chicken rice to Singapore Laksa. A wide range of boutique and New World wines make the perfect accompaniment to any dish. The contemporary design by Neri&Hu features blond-wood floors, cool chrome seating and funky sheathed chandeliers. Floor-to-ceiling glass walls frame postcard views of the Bund, and have the effect of bringing the outside in. The bright airy dining room leads through to an upbeat bar area where stainless steel counters and mirrored walls reflect the sparkling lights of the Shanghai night cape.

“When the sun goes down, N EW H EI G H TS MODERN EUROPEAN

Situated atop Three on the Bund, the aptly-named New Heights is a modern European brasserie offering casual all-day dining. With a vibrant atmosphere and warm, friendly service, the 180-seat New Heights is the perfect place for guests to share an al fresco meal, enjoy a refreshing cocktail, or indulge in the simple pleasure of afternoon tea. New Heights offers an eclectic mix of Modern European cuisine. Perennial favorites like Seafood Platters featuring the freshest and best products from around the world, Australian Beef Rib Eye, or Slow-cooked Salmon in Shitake Broth served alongside inventive new dishes

New Heights’ bar comes to life with soulful tunes and moving beats, bringing a distinct groovy vibe to the floor. The breezy rooftop terrace which presents unrivaled views of the Bund and Pudong skyline is the perfect place to revel with friends or enjoy a sexy cocktail under the star.” WH AMP O A C LU B CONTEMPORARY CHINESE

“Since opening in 2004, Whampoa Club has

palates giving food lovers a reason to indulge.” The design of the restaurant captures both the illustrious past and contemporary spirit of today’ Shanghai. It is envisioned as a “modern take on art deco,” and was described by Condé Nast Traveler magazine as “beautifully done up in 1920s Shanghai style, with lots of polished floors, red and gold lacquer, leather club chairs and crisp napery”. The main floor, private dining rooms and wide hallways feature dramatic colors, geometries and textures, with gem-toned stained glass, shantung silk, ostrich skin and hammered metal panels creating an ambience of glamour and decadence. While its art deco-inspired furnishings recalls the glorious 1920’s Shanghai era, the cooking invigorates classic Chinese recipes with a contemporary flair. Whampoa Club uses classic Shanghainese and Cantonese tastes and flavors, prepares the dishes with disciplined finesse to accentuate those flavors and present them in an elegant and creative style. In addition to the superb cuisine, guests can also choose from a range of 50 specially selected exclusive listed teas from the farthest reaches of China, elegantly served in traditional tea ceremony presentations. To add to the experience, professional tea sommeliers will be on hand to help diners choose from the vast selection.

A collaboration with London-based restaurateur Alan Yau. A new restaurant concept that celebrates Beijing roast duck at its heart with a menu extending to a wide range of favourite dishes from different regions across China such as authentic Kung Pao Chicken and Dandan Noodle recipes. Jing Yaa Tang utilises the best ingredients sourced in the region and is MSG free. The restaurant is set within a striking contemporary Chinoiserie theatrical style design. The interior opens into a central social dining space or “Tang” taken from the literal Chinese translation of hall. Interior design accents reveal layers of dark lacquer application with plum and burnt orange detailing and ornamental highlights to capture and intrigue. Elevated dining viewing platforms run parallel on each side of the central area replicating theatre itself with intimate private dining booths positioned in each adjacent corner. A communal table to share snacks, a central bar and a scene setting duck oven command a centre stage.
