SABABAY CREATING LOCAL WINE LEGACY IN INDONESIA With the growing demand and supply, local wines are set to experience a bloom in Indonesia as well as in Asia. The opportunity is there and the future is bright. The wine market in Indonesia is currently dominated by imported products with local wines representing a mere 5% of the volume consumed. A time to develop the local potentials.

The last couple of years have seen North Bali becoming a grape growing and wine producing destination. The establishment of the New Latitude wines highlights Alphonse Lavallêe grapes’ suitability and great potential for this tropical land.

Evy Gozali, the CEO of Sababay stated “I know there is going to be growth in Asian wine production, in particular in Bali, an example of creative economy with added

value from grapes to wine. We want to be the spearheaders of the Integrated Farming concept that will benefit the local grape growers”.

There is a misperception that Indonesia cannot produce wine because of its climate.

Grapes do enjoy rather dry weather with cool evenings and with appropriate location and grape variety selection do prosper very well to the satisfaction of the local growers and winemakers. It is a pity the Indonesian capability to grow grapes is not yet recognized due to the lack of awareness from the visitor.

Sababay sources its grapes from the local growers in Buleleng. Through Asteroid Vineyards the collaboration has been established to form a corporate farming concept which is a partnership to exclusively trade for a fair price and aim for sustainable good harvests. Soil management, use of

composting as mean of fertilization, rootstock selections, disease and pest control, canopy management, irrigation techniques and quality control have opened parts of the world previously thought unsuitable to wine production.

Sababay Winery has proudly introduced five premium wines of Indonesia - PINK BLOSSOM (rose), BLACK VELVET (red wine), WHITE VELVET(white wine), LUDISIA (sweet red wine) and soon will be releasing sparkling wines. AGE OLD INDONESIAN RITUALS Recognizing Bali’s struggles with nondescript spa parlours, DaLa Spa Ubud opens its doors with a very different approach to health and beauty. If you think you’ve had it good with it’s sister spa in Legian, then you’re definitely in for a surprise. Brought by the very same woman who established the grandeur DaLa Spa in Villa de daun, Legian, this time Alaya’s DaLa Spa decided to push the limit even further, catering more than just exceptional service and opulent designs.

Upon walking into it’s lobby, there’s that sense of familiarity hitting you in every corner, except this time, the jewel itself is encapsulated in a sea of beauty that is nature. It makes one feel like they’re on a parapet of two worlds. Still mimicking a strong French-Boudouir accent to its look, DaLa Spa Ubud completes itself by amalgamating its very concept with nature, and better still, ancient Indonesian rituals. Through the Batik stamps down the staircase and to the treatment rooms, an air of sophisticated Indonesian flair surrounds the atmosphere. A discreet technique of blending the Indonesian touch together with DaLa’s initial French Boudouir concept has been executed in all the right ways.

DaLa Spa, has been known to impress its guests with a variety of techniques, the most evident one being its very seductively stunning

rooms. From its choice of ornaments down its hallway to the rooms named after renowned local Balinese floras, one will discern that everything has been meticulously picked by the illustrious conceptor, Michelle. The whole idea here is to evoke different emotions from each unique treatment rooms. The Hydrangea for example really puts you in a cool, contemplative mood. Not only it is visually appealing, DaLa Spa has a comprehensive list of treatments notwithstanding its very own crafted natural ingredients, which we will further venture upon later.

Treatment wise, DaLa Spa doesn’t stray too far from its roots. If it ain’t broken, why fix it right? True, yet they’ve added several unique treatments to the list such as the Manis Klepon and the Bunga Rampai Ritual.

Like other DaLa Spa Treatments, the Manis Klepon pays homage to an age old Indonesian ritual. To be specific, it is inspired by the colourful ingredients of a traditional Balinese rice flour cake (Klepon).

A warm gentle bath for your feet signifies the commencement of the ritual itself. An exfoliating coconut and palm sugar scrub is then applied to the body to eliminate impurities lingering around. This is then followed by a fragrant body mask made from pandanus and suji leaves. You will then be soaked in a warm bath infused with seven Balinese flowers washing away the remnants of the mask. Finally, we’ve come around to what I’d say is the “mains”; a classic Balinese massage utilizing long strokes and applications of pressure resulting in a deep relaxation.

Little things make the difference. There’s a preparation area where one will get to witness ingredients used for treatments, providing a lot of visual and sensorial experience before the treatments. It’s one thing having the experience, and it’s another taking it home with you. Thus far, one will discern the countless amount of effort to differentiate DaLa Spa from your every day spa parlours. And its spa lessons, is one of that you’ll be able to take home with you, after a lengthy relaxation in one of their exclusive treatment rooms. Since DaLa has most of its guests hailing from overseas, they’ve also decided to use ingredients that are less of a pain to search for out there. And this visual demonstration of grating, and blending of the products, will further enlighten your experience. With just the right touch, you’ll be ready to take your treatments home even if home means a hundred thousand miles away. In additional to the spa

classes, there are also Jamu-making classes whereby guests will master the art of creating one of Asia’s celebrated herbal medicine, Jamu. Guests in Alaya will get a daily complimentary Jamu from DaLa Spa, yet a whole nother different kind of experience you’ll only get in Alaya Ubud.

Unlike its sister spa in Legian, DaLa Spa Ubud offers a tad bit of extra serenity and serendipity. Aside from the spa class conducted at its main quarters, there is a succulent spa organic dining area that bears a collection of healthy lifestyle choices all jumbled in a very tempting menu. Needless to say, one can only dream that the food here, is something you’ll see in your daily lunch box. Nothing completes a soothing spa session with a healthy lunch.

A couple of years back, we watched how Seminyak instantly boomed into travelers’ catalogues, making ways for a rampant of villas. Contrary to most beliefs, it’s actually quite a challenging task to locate a romantic getaway in the upscale area of Seminyak.

There are those that are inaccessible to any modes of transportation, those that don’t deliver as promised and then there’s Four on Drupadi. There’s something quirky and definitely an air of grandiose surrounding Anantara Seminyak’s SOS Supper Club. A good friend recently brought up a good point telling me that most of the rising new bars in Bali are carbon copies of bars and clubs in Ibiza.

Now that you think of it, the resemblance is rather uncanny. Fortunately this is not the case here and for those who have spent numerous quality times in the SOS Supper Club, you will be happy to hear that it hasn’t strayed too far from it’s roots. The establishment of Potato Head Beach Club is considered by many to have completely revitalized the Seminyak area, with its cutting edge design and now legendary parties.

From the outside, Potato Head gives off a vintage, old feel with it’s enigmatic design of rustic, faded yet colorful shutters.

Designed by acclaimed architect Andra Matin, Potato Head is a modern take on the coliseum; the towering elliptical façade is crafted in Potato Head’s seminal trademark of mismatched teak shutters collected from all over the Indonesian archipelago.

I remember receiving the invitation for its grand opening in 2010. Never in a million years would I have imagined something so magnificent in proportion. Not only was the venue at maximum capacity, the look of it was actually stunning. At the time, no one thought it was possible for. Bali to have a cool chic beach club as such. A landmark was born.

With a personal touch from co-owner Ronald Akili, Potato Head was born to cater to the alternative, outlandish crowd of the island.

Food wise, Potato Head Bistro serves comfort food inspired by international home recipes. Lilin offers a tapas selection of Southeast Asian cuisines and choices of exotic seafood as its highlight. The spa itself is a generously sized facility that incorporates an elegant lobby in the form of an open pavilion complete with its own dining terrace serving organic cuisine. A collection of six treatment rooms is located on a lower level beneath the lobby with views of the nearby river and its native landscape.
