Smoked Prime Rib
Ingredients:
1 prime rib roast (5-6 lbs)
2 tbsp olive oil
2 tbsp kosher salt
2 tbsp freshly ground black pepper
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp smoked paprika
Fresh rosemary sprigs
Instructions:
Preheat your smoker to 225°F.
Rub the prime rib with olive oil and season generously with salt, pepper, garlic powder, onion powder, and paprika.
Place the roast in the smoker and insert a meat thermometer.
Smoke for 3-4 hours or until the internal temperature reaches 130°F for medium-rare.
Remove from the smoker, cover with foil, and let rest for 20 minutes before slicing.
Garnish with rosemary and serve.
