Campers learn new tricks the old-fashioned way By Gigi Ekstrom “Eat a Bug and a Biscuit” is the title of just one of the unique and fun-filled summer camps in full swing at Lakehill Preparatory School. “Our camp teaches the basics of fly fishing, so the fish actually eat the bugs, which are the artificial flies tied to the end of the fishing line,” explained the camp’s lead instructor Ray Dent. “The kids also learn the basics of cowboy cooking outside in Dutch ovens, so
all the campers get to eat the biscuits.” Dent, who is also Lakehill’s director of development and alumni relations, taught the week-long camp at Lakehill Preparatory School’s Alice and Erle Nye Family Environmental Science Campus. Assisting him with the camp instruction was his son, Travis, vice president at Holmes Murphy in Dallas. “This was the first time to catch a fish with a fly rod for

Ministry needs volunteers

By Janie Autz The English Language Ministry is looking for proctors, tutors, and office volunteers for this summer and fall. Some jobs are a one-time commitment, others ask for your help on a regular basis for part or all of the school year. Giving of your time to ELM helps build family literacy in the East Dallas area. Only have time to volunteer an occasional morning or afternoon? We need: Proctors for computerized CASAS testing – weeks of August 11 and 18,
and September 15 and 22. A testing session takes about two to three hours in either morning or afternoon. Volunteer for one morning, one afternoon, one day or several. Before proctoring, volunteers are required to take a CASAS computerized proctor training and certification session. This may be done on your home computer and takes about one to one and a half hours. Tutors for the Fall 2014 – Spring 2015 school year. Tutors teach one

Family spreads flavors of Mexico to Texas By Lucy Higginbotham For someone who “never cooked” it’s a little ironic Leticia Salas helped create Molli — a unique and flavorful line of jarred sauces that capture the flavors of interior Mexico. Since last year, she and her husband Rodrigo, who does love to cook — decided to take recipes they grew up with in Mexico City and make them available to anyone who wanted fast, easy, quality food. “I am not a good cook in the creative, throw-something-together-from-scratch sense. I grew up a staunch feminist and thought I would never cook. I burn water!” she said. “But I can follow a good recipe. We wanted to make something anyone can use and feel good about eating themselves or serving guests.” The Salas,’ both Mexican natives, are also Lakewood residents since 2007. They started toying with the idea of creating their own line of

We just never found any that we thought were good. So we made it ourselves at home,”
Roderigo said. Both had busy careers, but when Rodrigo got laid off in 2012, he decided to throw himself into the full-time commitment of developing their dream.
He worked tirelessly to develop recipes, logos, learn the intricacies of bringing a product to market in the food industry and finding a way

Happy Birthday, America! Across the entire United States, the annual Fourth of July events make for happy festivities as we celebrate Uncle Sam, Betsy Ross and America — this year marking the Mary Spencer 238th birthday of our nation. It also only seems appropriate to celebrate the
many wonderful happenings at Dallas Animal Services — including the PetSmart Charities Everyday Adoption Centers’ announcement of breaking the 1,500 mark for adoptions since the opening last Fall. This time last year, these 1,500 plus animals were in need of a forever home; today, in conjunction with our nation’s birthday celebration, they can honor the Fourth of July with their new family. Since we are on the topic of celebrations, I want to share a recent pet story with a happy ending, adding to the magic of this spectacular
