working as a wood carving artist since 1963. He is a self-taught illustrator whom considers his education to be “by experience”. Each piece that he creates tells a story. He began his carving career by working with ivory, stone, antlers and wood. Through the years he has discovered art truly comes alive in his carvings with wood the most and presently he is exclusively working with wood. Steve has lived and has been crafting in Wyoming for some time now, but just recently became a member of Campbell County. His goal is to make his mark across the west. Steve says, “The West is my canvas”. He has made it his life’s ambition to keep the spirit of the west and its values alive for each person he commissions for. He is able to do this with his imagination and his unlimited talent to design whatever it is he is asked to create.

ave you ever flipped through the news to watch or read about those people that are competing in various types of running events and been amazed at what they have done or are about to go through? We have all heard of some common terminology that goes along with the running world — 13.1 = half marathon, 26.2 = full marathon, 5k = 3.1 miles, 10k = 6.2 miles, Mud Runs = running along a path and completing crazy obstacles over the course of several miles. Sometimes we look at those events and laugh it off and tell ourselves we would never be able to do something like that. Other times we look at those events and tell ourselves to get out there and try it. You never know what the outcome will be if you don’t just

The word “challenge” is defined in an online dictionary as a test of one’s abilities or resources in a demanding but stimulating undertaking.1 A challenge to one person is not necessarily a challenge to another. It depends on how familiar you are with something and whether or not you would attempt to conquer the challenge. I personally believe that all of us should endure challenges in our lives at some point in time. About 7 weeks ago I had a friend “challenge” me to run a half marathon with her. Of course I looked at her like she was crazy and told her that there was no way that I would ever do that. I proceeded to teach my fitness classes that day and went home that night and I started thinking about it. I thought about this half marathon for about 12 hours or so and I decided to accept this challenge. I took the next week to develop a training schedule that I would be able to adapt to with my busy schedule. Then the first run day came and I thought to myself, “There is no way this is going to work. This is not fun at all.” But, I reminded myself that I was challenged to do something and I’m not a quitter so I was not stopping now. I was going to finish this no matter what I had to do to get there. I was up running very early in the morning for most of the days leading up to the event. As the event neared I was having more doubts about being able to finish. I used words of encouragement from friends and family to get me over those doubts and be confident that I would complete this half marathon successfully. Race day came and I cannot even begin to explain the many emotions I was feeling that day. I wanted to cry and laugh all at the same time. This challenge was not only challenging my body to do something it had never done before but

And then the run started. I felt over joyed to be able to have the health and confidence in myself to get to the end — 13.1 miles left...wow...that’s not too far. As I was running and nearing the finish line, I reflected back on the last 7 weeks and I was proud of myself for continuing on with this challenge. Finally, I did it! I completed a half marathon! By no means did I win the race amongst all those other women, but that is not what I was there for. I won the race for myself and I conquered a challenge! As a personal trainer and a fitness instructor, I come into contact with both sides of the spectrum. From the people running all over the country doing all sorts of events to those that are comfortable in their everyday activities and would never imagine themselves to be doing anything out of the norm for them. With that being said, I challenge you to find something that you have always wanted to do but never had the courage to do it. It is time to make a bucket list and add those things that you think you can’t do but would do if you had the opportunity. Speaking from experience I can tell you that you are much stronger than you think you are. Now is the time to challenge yourself to get out of the norm and do something exciting. The Social Security Commission currently projects an average retirement of 19 years for a man and 21 years for a woman (assuming retirement at age 65). So sharing the same vision of retirement (or at least respecting the difference in each other’s visions) seems crucial to retirement happiness.1 WHAT KIND OF RETIREMENT DOES YOUR SPOUSE OR PARTNER IMAGINE? During years of working, parenting and making ends meet, many couples never really get around to talking about what retirement should look like. If spouses or partners have quite different attitudes about money or dreams that don’t align, that conversation may be deferred for years. Even if they are great communicators, assumptions about what the other wants for the future may prove inaccurate. ARE COUPLES DISCUSSING RETIREMENT, OR NOT? It depends on who you ask – or more precisely, what poll you reference. A 2013 survey of 5,400 U.S. households by Hearts & Wallets (a research firm studying retirement money management trends) found that just 38% of couples plan for retirement together. Keeping up with them and that energy is a balancing act that Brittany performs on a daily basis while still working full time at the restaurant. Chey and Brittany rarely have days off together as one of them

Brittney says they need and want to expand but they don’t want to lose the integrity and friendly homey environment they have created in the small space they have now. The new restaurant will just be a few doors down from where they are now. They will be moving to the space that Radio Shack is in now. The new restaurant has a full bar, conference room, and a stage for the fabulous bands they bring in to entertain and seating for at least 200 customers. Wow, now that’s growth. They told me that hopefully, if all goes well, they will be moving by October of this year to the new location. Chuy is always hard at work creating new dishes and menu items for the restaurant he is very particular about the cuisine he creates and how they are presented for the menu. A perfectionist, per se, and if you have eaten there you will have experienced this. Everything from their scrumptious starters to main entrées. While he is accommodating the kitchen, Brittany is in the front of the establishment implementing the same sort of perfection on the appearance, atmosphere and employees, she has handpicked each member of her wait and hostess staff from experience. Brittany “I have known my staff for years and their capabilities. They are some of the best”. This combination of Chuy’s and Brittany’s insight, dedication, and experience shows through every day they open those doors. They run daily lunch and dinner specials, they have holiday and birthday specials, drink specials and on Sundays all children under the age of 8 years old eat for just .99 cents. I did have to ask Brittany about the 7lb Burrito challenge I had heard so much about. This would be a huge challenge for any individual! The rules are you have 60 minutes to eat it and it’s free, you also get a t-shirt and your picture on the Wall of Fame. If you are not able to complete the challenge you pay $20.00 and get your picture on the Wall of Shame. This is just an example of some of the fun that goes on there. So if you are brave and feeling really hungry try this challenge out. Good Luck! I feel privileged to have been given the opportunity to meet and get to know this young couple. ocated in the southern end of Campbell County is the great town of Wright. This town has seen its’ boom and busts through the years. They have weathered tornados and hail storms. Through it all they remain a close nit community that is overlooked most of the time by the rest of Campbell County. Overlooked even more than anything are the eating establishments located in Wright. Not many of us think about driving to Wright for a steak or sandwich. There is Subway. We have so many Subways in Gillette, no one is going to run down to Wright for a sub. Hank’s Café is a regular eating establishment for many a coal miner, railroad worker or oil field worker. The bar may be more of an attraction after a long day at work than the café. Recently we had the opportunity to choose a place in Wright to eat. Without very many choices, we wanted something different. Located by the Wright Hotel is the Open Range Steakhouse. It is not really what you would expect from a steakhouse upon first entering the establishment. At first, it is almost like a cafeteria decorated in western attire. It is very open and in the middle of

the foyer is a huge fireplace that goes up through the vaulted ceiling. We sat down by the windows. Outside the window is a deck that is also set up for dining. The view is stupendous as the sun sets in the west. The menu is loaded with steakhouse favorites at reasonable rates. One of the appetizers is Hog Wings: meaty pork wings served with a sweet and spicy dipping sauce. Sounds appetizing! As gals from Wyoming and South Dakota we opted for the prime rib and a salad bar. The salad bar was small but good. It is located in a corner of the restaurant by a window that shows the cooking staff as the work their magic. After eating our salads, the prime rib was served. Medium rare with mashed potatoes, how can you go wrong? At the Open Range Steakhouse, the prime rib is definitely worth the drive to Wright. No wrong turn with that choice. The serving staff are polite and helpful. They offer recommendations and are definitely worth a 20% gratuity. Still hometown, the Open Range Steakhouse located by The Wright Hotel is one eating establishment in Campbell, County we should all experience.

So, it’s either a swing through the drive through, reach for the phone to order pizza or throw in another “healthy” boxed dinner, which costs an arm and a leg and has so many ingredients that only a PhD in

Chemistry is able to pronounce. But it doesn’t have to be that way. Freezer Cooking has become a “thing” these days. And this is a “thing” I can get behind 100%. I would rather spend one day in the kitchen mincing, chopping, weighing, measuring and pro-cooking, than surrender to one of the options mentioned above. At first I was very intimidated by all of the ONCE-A-MONTH-COOKING (OAMC) recipes I found. I have a small kitchen and just couldn’t see myself chopping 2 lbs. of celery, 5 lbs. of potatoes and 4 lbs. of carrots while browning 20 lbs. of ground meat. But OAMC is not the only option out there. When I searched “Freezer Cooking” on the Internet I got 6,620,000 results in 0.30 seconds! There have got to be one or two options out there for me. I have to mention that I can’t cook – I can read and follow a recipe! Big difference!!! Since I am capable of reading recipes I have A LOT of them. All of them sounded really good and I was “defi-
