Aviyal is a mild dish which can be served well with rice and also very nutritious . The uniqueness of aviyal is that this tasty dish is usually made of all the leftover vegetables.

How to prepare Chop all the vegetables to fine pieces. Heat coconut oil in a pressure cooker or thick bottom vessel.

Ingredients

Add vegetables, turmeric water, little salt and mix well.

Raw Banana - 1/2 cup peeled and cut lengthwise

Add ½ cup boiling water and cook it on a low flame until the veggies turn soft.

Brinjal - 1/2 cup cut lengthwise Drumstick - 1/2 cup cut lengthwise Potato - 1/2 cup cut lengthwise Carrot - 1/2 cup cut lengthwise Elephant Yam - 1/2 cup cut Cucumber - 1/2 cup cut lengthwise String Beans - 5 cut lengthwise Cluster Beans - 5 cut lengthwise White Pumpkin - 1/2 cup cut

Grind coconut with green chillies and cumin seeds and Shallots into paste and keep it aside. Heat 1 tsp coconut oil in a fry pan. Add the cooked veggies and stir well. Add the coconut paste and combine.

Snake Gourd - 1/2 cup cut Turmeric Powder - 1.5 tsp Salt to taste Water - 1/2 cup to 3/4 cup Sour Raw Mango - 1/2 cup Tamarind Pulp - 2 tsp or to taste

For Grinding: Coconut - 2 cup grated Green Chilli - 4 to 5 Cumin Seeds / Jeerakam - 1 tsp Shallots - 1

For Tempering / Seasoning:

Remove from fire and allow to cool. Add Sour Raw Mango and Tamarind Pulp and mix gently. 1Garnish it with curry leaves. The yummy and tasty Aviyal is ready. Aviyal is a nostalgic food for all the Keralites. It is healthy, because it can contain all kinds of vegetable in one dish. You can have it with rice during lunch or dinner. Aviyal is a must dish in all vegetable feasts.
