y seven-year old is always asking me what my favourite things are. It’s a very important issue after all. She needs to know my favourite colour (orange), favourite animal (cheetah), favourite sport (rugby) and so on. She doesn’t though, have to ask me what my favourite season is. “Mummy, I don’t even need to ask you, it’s spring obviously because of the flowers.” And of course she is absolutely right. Spring is my favourite season and it’s on its way!

The big gardening feature we do each spring is one of the favourite ones we do all year, I’m always on the lookout for places to buy plants and supplies for the garden. I hope you are as keen as I am to see who’s in this year’s feature, it starts on p39. And we have plenty of other great things to read in March’s edition, including a trip to see the Northern Lights in Finland, Indian recipes from The Food Wife, competitions to win tickets to Avon Vale races (p18) and a free lunch for four at The Westbrook (p22) too. t is estimated that up to 1.5 million people in the UK have a learning disability. In Wiltshire, young people with learning disabilities are taught at special needs schools and mainstream schools with special resources. When they are 16, they

can move to specialist colleges such as Fairfield Farm College in Dilton Marsh or other colleges with specialist facilities. Students from Fairfield Farm College help with a whole manner of

different jobs across Hope Nature Centre, from serving in the café to helping with the animals. In the café, students learn to serve customers, operate the tills, help prepare food and learn to make a variety of hot drinks and coffees. In our Animal Park, students help with a variety of different tasks, from feeding the animals to helping with maintenance around our 15-acre site. By visiting Hope Nature Centre Animal Park & Café, you’ll not only be helping to support the Fairfield Farm Trust charity, but also giving students the opportunity to learn a whole host of skills to help them obtain a job in the future. When it’s your day off, what local pub/restaurant do you visit? I like to pop to my local pub for a pint, The Greyhound, Bromham. When you cook for friends, what is on your menu? At this time of the year it's usually game and most recently I did a venison loin, cranberry tempura, garlic dauphinoise, smoked parsnip puree, charred leek & rosemary reduction. Your favourite kitchen gadget? My knives. And your guilty pleasure? Pork crackling!

What was your first job in catering? I started at the Old Parsonage (Care Home) as a Kitchen Porter and worked up to Commis. Then I arrived here as a Commis and have worked up to become Head Chef in 4½ years.

Last month we featured recipes from Japan and Korea, this month FRAN STEVENS, aka The Food Wife, offers three delicious recipes from India... My husband loves cheese, as do I, but he loves it so much he wrote a book about it. His family love reciting the story of him leaving a family wedding with a wheel of cheese tucked under his arm.

MAKE YOUR OWN PANEER Makes 250g

A family get together always involves a cheeseboard but we hosted the latest celebration and decided we’d also have a cheese dish as part of the main course, a saag paneer to accompany a chicken curry. Whilst paneer is readily available from the supermarket, it’s easy to make your own and takes only two ingredients and just an hour (during most of which you don’t actually have to do anything) and you’ll have your own homemade batch, plus the satisfaction of knowing you’ve made your own cheese! Ingredients 2 litres whole milk Juice of 1 lemon

Method Heat the milk in a heavy-bottomed saucepan until it begins to froth and boil (be careful though as a moment too long and the milk will cascade

out of your pan; I’m speaking from experience!) then lower the heat and stir in the lemon juice. Continue to stir until the milk curdles and separates into the lumpy curds and watery whey. Line a large sieve with a muslin or cheesecloth and place over a pan or large bowl. Carefully pour the curdled milk through, so the curds remain. Run some cold water through the curds to rinse off any whey.

Tie the curds in the cloth to hang from the tap for 10 minutes to allow excess whey to drip from it. Remove the cloth-tied curds from the tap and place on a plate, with a heavy object (I used the same milk pan filled with water) on top for 40 minutes. By this time the curds should be set and your paneer ready to use. Store in the fridge, and any remaining cheese can be frozen.

SAAG PANEER

After a few seconds add the onion and cook for a few minutes until softened.

Armed with your homemade paneer, here is a simple recipe to use it in a meal, suitable as an accompaniment to a curry, although it also makes an excellent wrap/flatbread filling with any of the leftovers.

Add the ginger, garlic and chillis and cook for a further couple of minutes. Add the coriander and a pinch of salt.

It’s best to make this at the last minute to ensure the spinach keeps its vibrant green, although you can prepare the first couple of steps in advance. Before continuing to step 3, ensure your paneer and puréed spinach are ready to use. Ingredients 250g paneer, cut into cubes 800g-1kg frozen spinach, defrosted and blitzed to a purée 2 tbsp oil 1 tsp ground cumin 1 onion, cut into small dice 1 inch of root ginger, peeled & finely chopped 3 cloves of garlic, finely chopped 1-2 green chillis, left whole but pierced three times with the point of a knife 2 tsp ground coriander 1 tsp garam masala Salt Juice of half a lemon 50-100ml cream Method Heat the oil in a large frying pan over a medium heat and add the cumin. 30 THEWESTWILTSMAGAZINE

Add the puréed spinach and stir, cooking for just a minute or two until warmed through. Fold through the paneer and cream. Season with the lemon and garam masala and check if more salt is needed. Garnish with coriander (optional) and serve immediately.

CHICKPEA & SPINACH CURRY Serves 6

Good for all the family, this mildly spiced, creamy curry, is quick to make and suitable for a range of dietary requirements: dairy-free, gluten-free, and vegan.

Method In a heavy-bottomed pan, heat the oil over a medium heat. Add the onions and cook for five minutes or so; when softened add the garlic and ginger and cook for another two minutes. Add the spices and cook for two minutes, stirring frequently. Add the chickpeas, lentils, coconut milk and stock. Bring to a simmer, then cover with a lid and cook for 20 minutes or until the lentils are soft. Add the spinach, cook for a couple more minutes and then check the seasoning and adjust as necessary before serving. n.b. Add the spinach at the very end to keep its vibrant green colour. It’s made with standard store cupboard (or freezer) ingredients so you probably won’t need to do a special shop for it either and can easily fling it together on a weeknight without too much effort. Serve with rice (I like it with nutty brown basmati) or with flat breads. It would also make a suitable side dish for a bigger Indian meal.

THE CALL OF THE WILD KATIE THOMSON ventured to the spiritual lands of Lake Inari in the far north of Finland in search of adventure, ancient culture and those ephemeral Northern Lights...

ometimes, in the world of life admin, mortgages, work stresses and general 'adulting', you are given an opportunity to do something that makes you reconnect with your childhood self. I was given that chance when I recently set forth on a journey that would have utterly delighted my five year old self, heading into a real-life winter wonderland in the wild, snow-covered landscape of Finnish Lapland. We began our journey to the far north - bound for Lake Inari. Inari is the third largest lake in Finland and the ancestral home of the native Sami people. A sacred place where spirituality is bound together with the vast, ruggedness of nature - the land the midnight sun in summer and, in winter of dark, unending winter nights with dancing skies.

After a short dash through Helsinki and a connection to Ivalo, our first breath of that pure Finnish air was wonderful. We were transferred from the airport to our home for the next four nights, the Wilderness Hotel Inari. The hotel is perfectly located for the whole spectrum of winter activities - its unobstructed northern views make it perfect for aurora spotting and the vastness of its shoreline means you can set forth for snowmobiling right from the hotel.

It was a magical moment, and because of our quick dash from the room we came without cameras, so we just stood gazing at it in its unearthly magnificence, drinking in its magnitude without distraction.

The next morning was slightly clumsy after our late night excursion, but we rallied after a hearty breakfast and pulled on our specialist snowsuits and boots. One of the activities I was most excited about was husky sledding. If you regularly come home from work to an expectant pooch, multiply that by about ten and that will give you an insight into the excitement of a pack that’s ready to run. Our sled was pulled by a mix of speedy huskies and powerful malamutes - they deftly guided us through the virgin snow. After the run, we met the breeder

As the sky darkened, we readied ourselves for an Aurora Safari. Anyone who has gone in search of the Northern Lights knows just how elusive they can be - conditions need to be just right - that means complete darkness, little cloud cover and good KP values (the magnetic field), and you need a little luck too. Unfortunately, fairly consistent cloud cover meant that our glimpses of the famed green haze were fleeting but magical all the same. You can immediately understand how the magical local legends surrounding

the aurora came about - my favourite story is that derived from the Finnish word for the Northern Lights Revontulet - which translates as 'fox fires'. The firefox – tulikettu – is a mythical creature of the north. As it runs along the frozen ground, the fox’s flaming tail whips crystals of snow into the sky and the fur scratches the trees, setting the skies on fire. Apart from husky sledding, one of the main modes of transport in Inari is the snowmobile. With an expert guide we had a thrilling ride through the forest down to the shores of a frozen lake to try our hand at ice fishing. Fishing for our supper, we drilled into the ice and tried to beguile and beckon the fish from the icy depths. Thankfully the guides came prepared with salmon soup in case we didn't enjoy

The unifying factor in all the activities was the immense knowledge of the guides and their clear pleasure in giving guests glimpses into their world. Most of them moved into guiding from office jobs, such was the pull of the wild. The Finnish often talk of being most at peace in nature - be that hunting auroras, hiking in the forests or fishing on the shores of their pristine lakes. Unlike so many places popular with tourists, these guides aren’t going through the motions - they share a genuine

our property could be your most valuable asset. As well as maintaining your buildings and garden it is important to give your boundaries the attention they deserve. Here are 6 pointers about your rights and obligations at the extremities of your property.

The legal boundary is a line of no width, where land belonging to one person meets that belonging to their neighbour. In contrast, a garden fence, wall or hedge has a width, which can be substantial and which will either stand astride the legal boundary, or be wholly on land belonging to one or other neighbour.

Bath Rugby has some rising stars earning international recognition at age-grade level with 3 call ups for the U20s and 4 for England U18s.

t is one of the stated aims of Bath Director of Rugby Stuart Hooper to have 50% homegrown players by 2023. To achieve that aim Bath is going to have to improve the output of their academy. Following heavy investment, their plan is starting to show promise with a number of academy players currently featuring in the U20s Six Nations Championship. The best known of these are winger Gabe Hamer-Webb, who has made some eye-catching performances for the first team this season, and centre Max Ojomoh (son of Bath legend Steve Ojomoh). Prop Archie Griffin has also been named in the Wales U20s Six Nations squad.

England U18s will play two standalone fixtures this month against Scotland at Hawick RFC (Sunday 15 March, 14:00 kick-off ) and France in Bourges (Sunday 22 March, 16:00 kick-off GMT), before April’s U18 Six Nations Festival in As well as success at U20 level, England U18s Head Coach Jonathan France. As well as creating a strong local feel with players who have grown up with links to the club and city, Premiership clubs are incentivised to produce homegrown players under the RFU agreement. Exeter Chiefs have been the most obvious beneficiaries of the academy system over the past few years as they have brought through large numbers

of homegrown players into their first team, including the likes of Jack Nowell, Henry Slade and the Simmonds brothers Sam and Joe. The success of Exeter is something Bath would no doubt like to emulate in seasons to come. Of the current first team squad the likes of Nathan Catt, Tom Dunn, Charlie Ewels, Zach Mercer, Beno Obano, Chris Cook and Max Clark have all come through the academy, as have exciting prospects like Tom De Glanville and Miles Reid. THE BIATHLON MAN

n our house we love watching a bit of live sport. Being from round these parts rugby is top of the tree – we’re always at Bath’s home games and watch them and other live games on the TV at weekends. And there’s the Six Nations at the moment too! It’s very much the rock around which we build our weekend viewing habits. My wife is also particularly fond of cricket. Always in the summer but also in the winter. She loves watching England playing test matches in foreign climes where they have sunshine and warmth. If she had her time again I’m sure cricket correspondent would be top of her list of career priorities. Now don’t get me wrong, I enjoy the sound of leather on willow as much as the next man, or woman, but for me, it’s all a bit hot and bothery… Those of you who read these words regularly will already know how fond of the winter I am. Hearty winter stews, crackling log fires, snowy walks and warming cuppas is what I’m all about. Yes watching the cricket is mildly diverting but I prefer my sport a little cooler… Yes my friends I enjoy nothing more than watching winter sports. Biathlon is my fave although I have been known to also get involved in watching the skiing. Biathlon, for those of you who don’t know (apparently not everyone is as obsessed with it as I?!) involves cross country skiing with the added jeopardy of having to stop every so often and shoot at targets the size of a 50p piece 50m away. That sounds hard enough in itself but then you realise that before they shoot

(sometimes standing up, sometimes lying on the ground, obvs) they have bring their heartrates down enough - after the exertions of their skiing - to be able to shoot accurately. Sometimes they’ve expended so much energy you can see them shaking. And if they miss they have to do penalty loops and everything it’s riveting stuff people! I tend to watch the women’s races, the men’s are a bit of a foregone conclusion and so a bit boring. The

Plenty of my friends have, over the years, taken the plunge and strapped long, thin, wood and carbon fibre strips to their feet and then tried to get down a mountainside on one of the most slippery substances known to man….why you would do that I just don’t know!! The other thing that has always put me off is the people. Not the type of people necessarily, just the sheer volume of them. If I could go to a beautiful mountain with pristine,

As well as the standard races, they do relays and mixed relays too. The slightly odd side of this – according to my wife at least – is that I should be so keen to watch winter sports despite having inclination, whatsoever, to try them. Now no-one in their right mind is going to let me loose with a small caliber rifle, especially on snow, knowing my reputation for clumsiness. Can you imagine the carnage?! So that side of it isn’t an option but the skiing has never tempted me either. I used to think I might like the apres ski… I could just wait back at the lodge, or in a bar, drinking Gluhwein, eating Apfelkuchen and watching everyone falling over but as I don’t drink anymore that doesn’t hold the same

untouched ski slopes fresh, virgin snow and not another soul around maybe I’d give it a shot but having to slide around with hundreds if not thousands of other people is just not my idea of fun. I’m not sure why people find it surprising that I enjoy watching something that I don’t want to have a go at. I also enjoy watching rugby and boxing and I’d rather not try those things out anytime soon thank you!! Phil Rockliffe
